Heat the oil and pop in the mustard seeds. After a minute, sweat the leeks in but don’t let them catch any colour. Add the rice and stir for a couple of minutes until pearly and shiny. Add the stock and cover. Bring to the boil and turn the heat down to a minimum. When no steam comes out from under the lid, check with a chopstick that all the liquid has been absorbed (it should feel as if it catches slightly on the bottom of the pan). Fluff up with a fork and stir in the spinach. I normally cook this recipe in an ovenproof pan with lid, so I can pop it in a 240ºC oven after reaching the boil. It cooks more evenly, especially when doing larger quantities!
