Bacon-Feta Chicken Rolls Recipe Prep: 15 min. Bake: 35 min. Servings: 8 Ingredients: • 16 bacon strips, cooked and drained • 8 boneless skinless chicken breast halves (4 ounces each) • 2 cups (8 ounces) crumbled feta cheese • 8 roasted sweet red pepper halves, drained and patted dry • 1 teaspoon salt • 1/2 teaspoon pepper • 2 tablespoon olive oil • 1 teaspoon Italian seasoning Directions: • • • • • • • •

-Flatten to 1/4-in. thickness. Top each with two strips bacon, 1/4 cup feta cheese and a red pepper half; sprinkle with salt and pepper. Roll up starting with short side, bringing the ends to meet. Tie at 1-1/2-in. intervals with kitchen string. -In a large skillet over medium heat, brown chicken in oil on all sides. Transfer to an ungreased 8-in. square baking dish. Sprinkle with Italian seasoning. -Bake, uncovered, at 350° for 35-40 minutes or until chicken is no longer pink. Remove string.

Servings: 4 Ingredients: • 4 boneless skinless chicken breast halves (6 ounces each) • 1/2 cup shredded cheddar cheese • 4 tablespoons cream cheese, softened • 2 tablespoon butter, melted • 4 teaspoons chutney Directions: • Line a small baking pan with foil and grease the foil. • Flatten chicken to 1/4-in. thickness. • Combine the cheddar cheese and cream cheese; spread over chicken. • Roll up and secure with toothpicks. Place in prepared pan. • Combine butter and chutney; spoon over chicken. • Bake, uncovered, at 350° for 25-30 minutes or until juices run clear. • Discard toothpicks.

1 tablespoon olive oil, divided 2 flour tortillas (10 inches) 1/4 cup grated Parmesan cheese, divided 1/8 pound thinly sliced deli ham 1/8 pound thinly sliced provolone cheese 1/8 pound thinly sliced hard salami 1/4 cup julienned roasted sweet red peppers 1/2 cup shredded part-skim mozzarella cheese. In a large saucepan, melt butter and blue cheese over low heat. Unroll dough. Separate into six sections. Cut each double breadstick into six pieces; place in a foil-lined 11-in. x 7-in. baking pan. Pour cheese mixture over dough. Bake at 400° for 20 minutes or until butter is absorbed and rolls are lightly browned. Carefully lift foil out of pan; transfer rolls to a serving plate. Serve warm.


Toasted Almond Crab Dip Recipe Prep/Total Time: 25 min. Bacon Wrapped Shrimp Total Time: 20 minutes Servings: 2 Ingredients: • 1/2 orange, sectioned, seeded (if there are any) and chopped • 1/2 hot red Chile, stemmed and chopped • 1 scallions, white and green parts, chopped • 1 tablespoons chopped fresh cilantro leaves • 1 tablespoons extra-virgin olive oil Salt and freshly ground black pepper • 4 large shrimp, shelled and deveined • 3 to 4 slices bacon, cut into 2 to 3-inch sections • 4 leaves Bibb or Boston lettuce Directions: • • • • • • • •

-Preheat the broiler. -In a bowl, stir together the chopped orange, Chile, scallions, Cilantro, olive oil, and salt and pepper. -Wrap each shrimp in a section of bacon and secure with a toothpick. -Put the shrimp on a baking sheet and broil, turning once, until the Bacon is crisp and the shrimp is cooked through, 2 to 3 minutes each side. To serve, lay a lettuce leaf on the cutting board. Remove the toothpick from 1 Of the cooked shrimp and center the shrimp on the lettuce leaf. -Spoon a little of the citrus sauce on top, wrap it all up in the lettuce like a Burrito, and put it seam-side down on a plate. -Keep going in the same way to wrap all of the shrimp. -Serve hot.

Servings: 8 Ingredients: • 1/2 cup mayonnaise • 1 teaspoon Worcestershire sauce • 1/2 cup (2 ounces) shredded sharp cheddar cheese • 1/2 medium onion, chopped • 3/8 cup slivered almonds, chopped • 3 bacon strips, cooked and crumbled • 1/2 loaf (1/2 pound) French bread Directions: • In a bowl, combine the mayonnaise and Worcestershire sauce; stir in cheese, onion, almonds and bacon. • Cut bread into 1/2-in. slices; spread with cheese mixture. Cut slices in half; place on a greased baking sheet. Bake at 400° for 8-10 minutes or until bubbly.
