Green chile, salsa and margaritas – Oh my! By Tammy Kranz For owner Gina Von Ah, three things make La Estrellita stand apart from other Mexican restaurants. “We always advertise that our green chile is the best in Brighton, and so is our service and margaritas,” she said. “Our staff works really hard to be the best and (winning Best Mexican Restaurant) is quite an accomplishment.” The Montoya family operated the first La Estrellita in Fort Lupton from 1955 through 1968. In 1986 their son John Montoya opened the Brighton restaurant. Von Ah is John Montoya’s daughter. “We’re all a big family here and our customers have become a part of that family,” she said. She added that most of her employees have been there for five years or longer. Customers generally praise the restaurant for its green chile. “It’s the most flavorful on the market,” Von Ah said. “It actually has pork in it — in other restaurants you have to search for it.” The restaurant’s green chile and salsa are available for sale online at www.laestrellitasalsa.com. The restaurant started bottling its salsa and offering it for sale in 1995 due to an enormous demand from customers. The restaurant promotes its salsa, green vegetarian chile and enchilada sauce as being 100-percent natural and made in Brighton. The restaurant offers catering services around the Denver metro area and can host parties from 10 to 100 people.

By Mike DiFerdinando Since opening its doors in August of 2013, Castle Rock Adventist Hospital has provided emergency and outpatient care for a community that otherwise wouldn’t have it. Among other services, Castle Rock Adventists provides 24/7 Emergency Services, Level III Trauma Center, Labor & Delivery, Level II NICU, Orthopedics, Critical Care Services (ICU), Cardiac Services, pediatrics and medical imaging. “Prior to us coming, any member of the community had to basically leave the community in order to get those services. Now they’re able to get all of those things right here in the community,” Chief Executive Officer Todd Folkenberg said. “We already have numerous examples of people in the community whose lives we saved, that, you never know for sure, but had they have had to be transported an additional 20 or 30 minutes up the road may not have had those same positive outcomes.” Castle Rock Adventist currently has 50 beds but has its eye toward expansion as the community grows. “I think there’s been a significant economic impact to the community as well. We have hired over 450 people here in Castle Rock,” he said. Folkenberg said women’s health and the birthing center are areas where they expect to expand services in the near future.

In 2010, friends John Paulsen and Scott Garrity made their dream of owning their own coffee company a reality when they created LostCoffee and began selling it around the Denver Metro area in their food truck, Brewtus. Brewtus serves custom espresso beverages, blended coffee Frappes and fruit smoothies. “We were really one of the first coffee trucks,” Paulsen said. “We were one of the first full on espresso bar-type coffee trucks in Denver, if not the country.” Since then, they have opened two traditional coffee shop locations, one at 390 Perry Street and one at 3980 Limelight Ave, in Castle Rock. LostCoffee specializes in combining the convenience and consistency of a large chain coffee shop with a small-shop, artisan approach. According to the company, LostCoffee combines speed with quality and convenience and friendship. “We knew all along that the idea was to generate enough revenue with the tuck and with our brand to grow into stores,” he said. “Scott and I have always told each other, it’s five stores in five years. We’re both ambitious enough to know that we’re building a coffee company not a coffee shop, where our wives and us will work behind the counter and stuff like that. We’re building a business.” LostCoffee has designs on opening three more stores in the near future. Paulsen said they are interested in Parker and Lone Tree as possible locations. They also haven’t ruled out expanding into Denver but said the location would be a key factor on where and when a move into the city happens. LostCoffee truck “Brewtus” has been serving custom espresso beverages, blended coffee Frappes and fruit smoothies since 2010.

It’s a great blend of science and artistry.” Rejman has treated close to 5,000 patients, and has extensive experience with all types of malocclusions, including the most severe cases that require surgical correction. Dental peers also voted Rejman a top orthodontist in 5280 magazine in 2012, 2013 and 2014. Dr. Rejman prides himself on being refreshingly conservative and honest about Early Treatment (Phase One), allowing parents to leave his office with peace of mind, knowing that if treatment is recommended, it is necessary. “One of the reasons that we’ve been successful is that I try to answer all of the questions I get as an orthodontist, but also as a dad,” he said. “We have three kids. A different path to health By Jim Benton John Stebbins was treating an overweight man with a pack of cigarettes in his pocket for a heart attack while he was a paramedic for the Chicago Fire Department. That’s when he figured there must be a better alternative. “As a paramedic I worked in the ghettos of Chicago,” Dr. John Stebbins, O.M.D. recalled Stebbins. “We had 18 to 20 ambulance runs in a 24hour shift. I was in my early 20s, so I wasn’t taking care of myself and I got burned out.” Stebbins moved to California with a desire to some way stay in medicine and eventually was introduced to acupuncture and Chinese medicine. “At the time I was very disillusioned with Western medicine,” said Stebbins. “About halfway through my training in Oriental medicine, I realized the key philosophical element in Oriental medicine is balance. That was the day I realized there’s a place for Western, there’s a place for alternative and we should be working together.” Stebbins is a doctor of Oriental Medicine and a National Board Certified acupuncturist. He’s been a licensed acupuncturist since 1987 and owns the thriving Natural Balance Wellness Center in Centennial. Patients are offered several services including traditional acupuncture, sports injury acupuncture, asyna advanced electro-dermal screening, bioSet natural allergy reduction therapy and BAX 3000 laser allergy reduction therapy. “If somebody has a health problem, they should look at some of the natural things that can be done and then if that doesn’t work they can go to the pharmaceuticals, surgeries and things like that,” said Stebbins. “Sometimes those are necessary. “The bottom line is we want to help people. My philosophy is to try to do it in as few treatments as possible. We do use herbs and vitamins and things like that but we do try to get things done as fast as possible, but the body is limited.”

By Tom Munds Branch manager Mackenzie Roberts said that while Friday is the busiest day at Arapahoe Credit Union’s Englewood office there is always time for the tellers to chat with customers. “I am proud to be part of Arapahoe Credit Union because the organization is committed to provide service to its members and to the community,” she said. The organization was chartered as a credit union in Arapahoe County in 1937 to provide financial services for school district employees. Over the years, the focus has shifted and now Arapahoe Credit Union offers its services to anyone working, living or going to school in Arapahoe County. There have been a variety of locations, including an office in Englewood until 2007. That office closed but a new office reopened in 2009 when the organization reorganized the former bicycle shop at 303 E. Hampden Ave. into its branch office. Roberts, who has worked in credit unions for 15 years, was brought in to be the manager and open the new Englewood branch. “Our credit union members tend to be teachers, hospital employees and other Arapahoe County residents,” Roberts said. “We have 10 employees here in our branch. Our focus is to provide the best service we can to all our members.” Arapahoe Credit Union also has a branch at 3999 E. Arapahoe Road, Centennial. That branch offers lobby services plus there is service for members who use the drivethrough.

By Amy Woodward Michael and Marci Fassel are running “the best” horse boarding and training facility in Jefferson County and Michael Fassel is not shy about that title. “There can only be one,” Fassel said. “We are ‘the best’ horse boarding and training facility in Jefferson County,” he repeated. “We also have a lot of fun.” With 75 horses on the property, Silver Quarter Acres has been operating since 2007 although the Fassels having been boarding horses since 1986. Their barn offers 7,000 square feet of space with 25 stalls. Shared or individual outdoor pins are available, as well as a fairly large 90 feet by 160 feet indoor arena, an outdoor arena and a ton of other shelters and runs that those outside of the horse training community may not be too familiar with. “Other than simply being the best, our nutritional program is pretty cool,” Fassel said. Quality Purina feed products are available including grass, alfalfa hay and organic barley fodder that is grown on site, he said. Activities offered satisfy all age groups and skill levels with weekly campfires around the fire pit. It’s a down to earth attitude that Fassel permeates and it’s definitely an attitude that defines the facility’s environment. “We’re just a family friendly community,” he said. A taste of France in Highlands Ranch By Sonya Ellingboe Pain au chocolate is the favorite, but the delicious-looking bakery case near the door contains dozens of beautiful, flaky pastries — “Les Viennoiseries,” they are called on the website of the Pierre Michel Café and Bakery in Highlands Ranch. Think: croissants, jalousies, tarte au pommes, portefeuille raspberry and blackberry jalousie — yum! This inviting café, with it’s crisp white tableclothes, also offers breakfast and lunch menus with omelettes, breakfast sandwiches, salads, a quiche of the day, assorted sandwiches in a freshly baked baguette, croc’ monsieur — and croc’ legume or vegetable sandwiches for the vegetarian diner. The café will offer a summer dinner menu from 6 to 8 p.m. Wednesdays through Saturdays — in the café or on the patio just outside the entrance, which faces Wildcat Reserve Parkway. A bit of history on the website: Quiche Lorraine traces back to the 16th century. And a customer can order mini-quiches for a catering order, as well as other items on the menu. The owners, Eric and Isabelle Vivier, grew up in northeastern France and had a bakery in Lyon before they moved to Colorado with their twin daughters. Both attended culinary school in France and prepare everything fresh each day from organic ingredients, including lots of butter. It’s best to arrive early on the weekend because the favorite pastries tend to sell out.

By Hannah Garcia While plans are the in the works to expand its office, Highlands Ranch Smiles is far from down in the mouth after winning Colorado Community Media’s “Best of the Best” award for best dentist in the community. For the past three years, dentist Michelle Haynes and husband Johnny have been running the practice. Dentist Courtney Lundin is also on staff. “We market ourselves to the whole family,” Johnny Haynes, who helps with marketing and day-to-day operations, said. “Our patients range from 1-year-old to 90.” Johnny Haynes said the practice sees around 3,000 patients and “focuses on treating people the way we would want to be treated.” “No one gets excited to go to the dentist, but we try to make it as comfortable as possible,” he said. “We’ve created a staff that focuses on the patient and it seems to be working.” The practice is currently planning to expand into space available next door, which will double the office from about 1,800 square feet to just less than 3,600 and from six exam rooms to 11. Construction will end some time in September, Johnny Haynes said. “We’re redoing our old space as well, so it will be an entirely new office when it’s done,” Johnny Haynes said. “We’ll be able to accommodate more patients and they hopefully won’t have to wait long, if at all.”

Jake’s Brew Bar has more to celebrate than just winning the title of Littleton’s Best Brew Pub. The owners, Vanessa Menke and her mom, Jayne Barth, are also celebrating their second year in business and the grand opening of their new and very hip outdoor beer garden. “We were busting at the seams,” said Menke. “We were able to take over the patio in time for summer.” The two originally opened Kate’s Wine Bar just north of Jake’s on Nevada Street, then added the brew bar. (Kate and Jake, by way of fun fact, are Barth’s parents.) Selling Kate’s freed up time and money to devote to Jake’s new, roomier incarnation. They laid claim to the storefront just east of Jake’s, formerly home of The Fat Frog, and effectively tripled their space. They now have all their beer on tap at that bar, upping their capacity from 24 to 38 taps. Menke rotates them out regularly, including local, domestic and international selections, so that regulars get a different variety every week. It’s not just coffee they’re serving up on tap, either. They recently added a cold-brew coffee, which comes in a keg on nitro for extra zing. For the more traditional at heart, selections from Novo, Corvus and Method Coffee Roasters pair nicely with pastries by Trompeau Bakery in Englewood. For dinner, those in the know follow Jake’s on Facebook to find out which local food trucks will be serving up their specialties at Jake’s, Thursday through Sunday. Recent choices include Brava! Pizzeria and La Casita. “My philosophy is community, great products and great atmosphere,” said Menke.

By Jennifer Smith When you walk into K. Cherie Spa Salon & Profumeria, you’d swear you just set foot in a posh salon in Italy or perhaps France, far away from Littleton’s historic downtown. But according to owner Kim Cherie Geiger, there’s not much difference. “I decided to move my business to downtown Littleton because Kim Cherie Geiger, Owner, K. I think it is one of the Cherie Spa Salon & Profumeria most beautiful and charming cities in all of Colorado,” she said. “Downtown Littleton is full of beautiful architecture and charm while still being close to major highways and the light rail. And with it being so centrally located, it’s easy for all of my clients to get there. A lot of my clients that travel from a further distance make a full day out of shopping spending time in downtown Littleton and then enjoying their time at my spa.” Geiger, an aromatherapist and herbalist, has been providing services to clients for 25 years. “My goal is to bring solutions to clients that bring total balance and well-being,” she said. Her particular passion is creating fragrances with herbs, essential oils and botanicals, natural alternatives to many of the harsh chemicals found in commercial products. She produces small batches known as “profumerias,” each a custom line of fragrances that she says are as unique and beautiful as her clients. “K. Cherie was created to be a place where clients can truly relax and be pampered from head to toe,” she said. Services include European and Thai facials, Diamond Dermabrasion, Micro Current biolift, natural and traditional chemical peels, body treatments and wraps, aromatherapy and herbal consultation, haircuts, highlights, color, perms, bridal and special-occasion styling and nail services. The secret? “The product itself,” said Heidi Hamilton, a Castle Rock mom who owns the shop with her husband Darren. “I think it speaks for itself.” Hamilton and her employees bake 15 different flavors of cupcake daily. They can be purchased individually or in multiples. Twice as large as traditional cupcakes and frosted with artistic flair, the cupcakes are a popular choice for birthday parties and other special occasions. Just looking at the cupcakes’ cheery exteriors is enough to elicit a smile; a condition Hamilton said is contagious. “This doesn’t feel like work,” she said. “It always feels like Saturday.” Flavors range from unusual — like maple bacon and chai tea — to the more traditional chocolate cream and pink vanilla. The cakes range in size from mini to large, with the most popular large size priced at $3.25 apiece. Smallcakes is a Kansas City-based chain started in 2009. Lone Tree is its only Colorado location. But if Hamilton’s hints are any indication, that won’t be true for long. The franchise now includes almost 60 shops in 13 states.

Taking the time to do it right By Tammy Kranz The cooks at Famous Dave’s in Thornton do not cut corners. One of its signature dishes — St. Louis-Style Spareribs — has a three-day cooking process, General Manager Jamie Schreck said. “The Georgia Chopped Pork and Texas Beef Brisket are smoked eight to 10 hours overnight,” he said. “Those are great examples at the time it takes us to produce all our recipes. We have six prep cooks that work nine-hour days. They take a lot of pride in everything they make.” Schreck also noted the Wilbur Beans that are popular with customers, himself included. He said the dish includes pieces of brisket, pork and ribs. “I think they’re the best beans around. We go through a whole lot of Wilbur Beans,” he said. Famous Dave’s, which is a national chain, opened its Thornton location at 16539 Washington St. in March 2007. Schreck credits the staff and their dedication to the customers and quality food for the restaurant’s success. “I think the biggest thing is it’s a made-from-scratch kitchen,” he said. “Quite a few restaurants now use frozen food. We spend the time, money and effort to make sure it’s made fresh.” He also gave credited to the customers, some he said come in six or seven times a week. Dave Anderson opened the first Famous Dave’s in 1994 in Wisconsin. Currently, there are about 200 nationwide.

He added that HNCU did not have to answer to any out-of-state stakeholders. “We exist to serve our members.” HNCU, which has been at 11455 Pearl St. in Northglenn since the mid-1990s, is a full service financial institution serving the metro north area, specifically the staff, students and parents of the Adams 12 Five Star School District. It also won Best Annual Event for its annual shredding day. “We have to shred a lot of our own internal documents,” Harvey said. “We realize our members and members of our community had documents that needed to be shredded as well.” Harvey said each employee is important to the company, and that may reflect why the managers won Best Boss. “I think we have a very positive work environment and we really value everybody,” he said. HNCU has 8,000 members and Harvey said there are plans to expand to north Thornton in the next couple years.

Co-director Anitha Harshan said a focus on independent learning, facilitated by the caring instructors at Parker Montessori, is meant to “bring each child to its full potential.” The 130 children — infants through 6-year-olds — learn fundamentals, social development and cultural understanding in an environment that leans less toward competition and more toward individual achievements and progress. Experienced and certified American Montessori Society teachers use specifically-designed materials to help children learn skills and concepts for the development of independence, language, sensorial concepts, science, geography, art, music, peace and nature study. There also is a particular emphasis on personal respect and conflict-resolution. Parker Montessori’s intent is to form well-rounded, compassionate kids through not only one-on-one interaction, but group activities, like delivering valentines to local senior care facilities or collecting canned food for the Parker Task Force, Harshan said. “We want them to be good citizens for the world,” she said. By Chris Michlewicz Murdoch’s has made quite an impression since moving into Parker in fall 2011. “There was a need apparently,” said Stefan Mamula, general manager of the store at Lincoln Avenue and South Parker Road, which was named the town’s best Western store by Colorado Community Media readers. Murdoch’s in Parker attracts customers from Castle Rock, Franktown, Elbert County, Aurora, eastern Arapahoe County and, of course, Parker. The “ranch and home supply” store carries a massive selection of power equipment, tools, equine products and pet supplies. Its clothing department has “just the right amount of the West infused into fashion,” according to the company’s website. We try to put in the extra effort, and I think over time it shows,” he said. “We know a lot of folks by name and that’s a big draw right there. For a town like this, that’s pretty cool.” The high volume of repeat customers is testament to the customer service, not to mention the quality products on the shelves and the convenient location.

Kidding around for 22 years By Ashley Reimers The mission of the Hyland Hills Foundation is simple: promote and support the recreational and cultural opportunities of the residents of Hyland Hills. The organization is run by all volunteers and keeps a major focus on children by providing recreation scholarships to allow all children in the district the opportunity to participate in sports and other recreational activities. Founded in 1992, the foundation also provides the BeA-Fish program, which has provided free swim lessons to over 8,000 in the district. The foundation also offers free activities to residents like the annual Hyland Hills Easter Egg Hunt, Putts for a Purpose, a yearly Missoula Children’s Theater production, the annual Halloween Spooktacular and more. The foundation was recently voted favorite local nonprofit in the Best of the Best campaign. Foundation president Don Ciancio is proud of the recognition. “The Hyland Hills Foundation has been helping area kids for 20 years,” he said. “To receive this recognition affirms the work our board has been doing in the community for a long time and we are very proud to receive it.” This July, the foundation will be hosting their annual golf tournament to raise money for recreation scholarships. The event will feature food, gifts, and prizes. The tournament is July 18 at The Greg Mastriona Golf Courses at Hyland Hills, 9650 North Sheridan Blvd.

He strives to always be honest with his customers, and teaches his staff the same view. “We always strive to do the best thing for the customer,” he said. “We’re good at correcting any mistakes we do, we act with integrity and are always honest with our customers.” Lake Arbor Auto, 9146 Marshall Place in Westminster, was founded in 1992. The business is a Triple-A approved repair shop providing a range of repair services including air conditioning, oil change, scheduled maintenance, steering repair, engine repair and water pump replacement. Lake Arbor Auto has received the Automotive Service Association’s Blue Seal of Excellence with five ASE Certified Master Technicians on staff. The business was recently voted best auto service during the Best of the Best campaign. TePoel said to be recognized by his customers is validation of his business model. “Being voted best auto service confirms that doing the right thing and telling the truth makes you successful,” he said. “It’s all about relationship building with our customers and building that trust.”

Best chiropractic office gets cracking By Ashley Reimers In business for two-and-a-half years, Dr. Christine Wrabetz at Mountain Range Chiropractic has been providing chiropractic care to patients in Westminster, Broomfield, Thornton, Northglenn and Federal Heights. She specializes in treating pain from sports injuries, back pain, headache and auto collision injuries. Husband and office manager, Brian Wrabetz said his wife, who previously worked in an office with other chiropractors, wanted to branch out on her own, devoting more time to her patients. “She wanted to do things her way, spending time with her patients learning their needs,” he said. “Instead of just running her patients through a quick process, she wants to make sure she is providing the best treatment to help her patients feel better.” Christine does manual adjustments, but also addresses other issues the patient may be experiencing. Her Mountain Range Chiropractic office was recently named best chiropractic office in the Best of the Best campaign. Brian said hearing feedback from patients is very important to Christine, something she values. “To be recognized is fantastic,” Brian said. “It’s the best indication that Christine is doing the right thing. Having happy patients and customers makes us successful. Hearing from customers and word of mouth is the biggest compliment we can get.”

A mother of two, Dr. Melinda O’Rourke is an ophthalmologist working at Northwest Eye Center in Wheat Ridge. When she’s not at work, she can be found at Stout Street Eye Clinic volunteering to the help metro Denver’s homeless. She and her husband, Paul, are also part of Vision Health International. They frequently travel to Latin America, where she provides valuable care to those in need. A Colorado resident through and through, O’Rourke received her bachelor’s degree from University of ColoradoBoulder in 1980. Four years later she graduated from the University of Colorado School of Medicine. She is a member of the academic honorary societies, Phi Beta Kappa and Alpha Omega Alpha. From 1985 to 1990, O’Rourke continued post-graduate training at the University of Colorado, completing her residency and internship programs. In 1987, O’Rourke researched ophthalmology at CU. Her work has been published in Archives of Ophthalmology and the Journal of Pediatric Ophthalmology and Strabismus. Her work has also been presented at professional meetings in Vancouver and Oxford. She opened the Northwest Eye Center in 2005. For leisure, O’Rourke prefers running, skiing and travelling to places where she doesn’t know the language.
