Now, whether you’re hosting a casual neighborhood open house or a formal sit-down dinner, we spoke with sought-after Denver caterers to hear their expert advice, tricks of the trade and even menu ideas to help you become the “hostess with the mostest.” Speaking of hosting, you don’t want to forget the wine! Paul Stroud of Craft Wines Colorado has shared his go-to bottles to pair with your holiday dishes, and beyond. If you’re looking forward to winter like I am, you must book a stay at Trapper’s Cabin in Beaver Creek. This luxurious cabin on the hill is poised to be your annual winter get-away, complete with epic snow! But if your wanderlust veers more on the posh side, be prepared for the wow factor that is Belmond’s Orient Express train from Paris to the French Alps. I cannot get over the opulent 1920s décor and superb attention to details that make this a trip of a lifetime. Finally, I want to send a special thanks to everyone who works to make this magazine so wonderful. This year has been tops, and I am so proud of the entire Wiesner Media team, which brings not only each issue of Colorado Expression to life but also Mountain Living and Colorado Homes and Lifestyles as well as Colorado Biz and Pittsburgh Magazine. I also want to send a heartfelt appreciation to all our readers and supporters—what gifts you all are in my life! I raise a glass to YOU this season, and wish everyone health and prosperity in 2024. Don’t miss the 44th annual Mile High Holiday Mart featuring over 100 merchants and one-of-a-kind gifts presented by the Junior League of Denver. Merchants will be selling everything from spices to jewelry, wines, toys and more. This event has helped raise over $6.1 million since 1980 in support of projects in the Denver community.

Every November, a master swordsman sabers champagne bottles Napoleon-style in the middle of the atrium lobby of Denver’s historic Brown Palace Hotel. The champagne is then poured into the uppermost glass of an elaborate 6,000-glass pyramid rising nearly two stories. There is a dinner on Nov. 11, followed by the cascade champagne toast on Nov. 12. This year, the VIP level benefits the Make A Wish Foundation as an iconic way to celebrate the giving season in Denver.

oogle “stress-free holiday entertaining” and this is what you get: Plan the party, set the menu, and don’t be afraid to ask for help.

With a wide selection of talented caterers and party planners in Colorado, this is more than achievable. As Jennifer Whitman, creative director at Catering by Design, aptly sums it up: You can’t do it all! The No. 1 goal is to create a space for everyone to connect. Guests will look back on your party and remember enjoying the time spent with one other—not the mishaps that may have happened or the little things that weren’t perfect. Getting lost in the fear of throwing the ideal party makes us all forget to be present in the moment. Whitman suggests bringing in someone to deep-clean your home the day before the gathering, creating a holiday playlist on Spotify, using elegant disposable dishware options (or using an equipment rental company), and lighting an array of candles throughout your home to set a festive tone and mood.

THE FORMAL NEW YEAR’S EVE DINNER

For a sit-down dinner option, host a New Year’s Eve gathering and request formal, holiday-themed attire. Make sure to greet everyone at the door with a chilled glass of champagne. “Hosting a sit-down dinner during the holiday season shares the most precious gift of time. It’s a moment for guests to forget about exhausting December calendars packed with light shows and traditions, and take part in an evening where they feel thoughtfully taken care of and can reflect gratitude for another year flown by. Festive cocktails and light bites greet guests as they arrive to celebrate the season. The conversations continue to an elegant, candle-washed dining table thoughtfully set with personalized name cards. Warm soup poured table-side eases guests into a serene evening, where beautifully presented courses are surrounded by laughter and toasts to a New Year.” Colbert Callen director of sales and marketing, Footers footerscatering.com

But when we gather to light the Hannukah menorah and spin the dreidel, everyone’s gotta eat! THE NEIGHBORHOOD OPEN HOUSE A thoughtful way to thank and celebrate those in your immediate vicinity is to host an open house for your neighborhood friends, with a flexible swinging-door policy so all can come and go as they please. “Creating a warm and inviting experience from start to finish is both the challenge and the joy of the holidays. But it’s where we thrive. Capturing the season through taste, a visually appealing display of foods, and a unique touch is how so many local caterers can deliver. This way you can focus on the importance of your gathering, which is to engage with your dear friends. Once we do our part, you can focus on the more appealing details of your party, such as the candles, music, flower arrangements and decorations. And together, we bring all the finite details together for a truly stress-free holiday.” Brian Hubner owner/chef, 2 Taste Catering 2-taste.com

THE KIDS’ TABLE What fun to let your children invite their best friends over for a holiday party of their own! A cookie-decorating table provides hands-on entertainment for the kids, and they can munch and nibble on the colorful buffet while sipping festive mocktails. “Hosting a holiday cookie-decorating party for the kiddos can be so much fun if you plan ahead and keep it simple. Buy cookie cutters in a variety of shapes—and remember, you don’t have to choose classic shapes. There’s no reason you can’t choose dinosaur holiday cookies. Give every baker a chef’s hat and an apron. (If you want to personalize them with a glitter pen, go right ahead—it’s fun and practical for the baking, and great for photos.) Speaking of which, set up an area for photos by picking up some inexpensive removable holiday decals for a wall in the kitchen, so the kids in their chef’s hats can get pictures with their creations. Finally, start to simmer cider and mulling spices before guests arrive. In addition to being delicious and easy to make, it pairs well with a tot of bourbon for the grown-ups, topped with a fresh slice of orange and a cinnamon stick!” Jennifer Whitman, creative director, Catering by Design cateringbd.com Photo courtesy of Catering by Design

chilly Colorado day is the perfect time for afternoon tea, where you can sip a steaming cup of tea in an elegant setting while sampling savory finger sandwiches, pastries and scones. We are fortunate to have a wide variety of tea houses in our state, so make a date now, as most of these spots are reservation-only and fill up quickly during the holiday season. After all, there’s no better way to celebrate than to get dressed up and treat family and friends to the indulgence of a classically British afternoon tea—a relaxing and much-needed respite during the craze of the season. Here, a sampling of afternoon tea offerings.

Dushanbe Tea House This tea house was officially presented to Boulder as a gift from its sister city, Dushanbe, Tajikistan, in 1990 and has since become a favorite for locals and visitors alike. The structure itself is a piece of art, with a decorative interior that is a swirling, dynamic expression of the Tajik region, including a hand-carved traditional ceiling reflective of Central Asia. Tucked inside a lush, tranquil tea garden, the afternoon tea service is offered 3-5 p.m. ($27 per person, $15 per child ages 9 and under) and includes one selection from an extensive tea menu and a three-tiered tray of confections. The History of Afternoon Tea (courtesy of the Boulder Dushanbe Tea House)

The elegant ritual of afternoon tea is credited to Anna, the Seventh Duchess of Bedford. As was customary during the late 1700s and early 1800s, people would eat a huge breakfast, a tiny lunch and then a substantial dinner around 8 p.m. The Duchess, describing a “sinking feeling” during the afternoon, began to request tea and cakes to tide her over. Soon, she invited her friends to share the ritual with her, and it quickly became a fashionable, treasured custom.

’TIS THE SEASON TO TOAST Find the perfect wine for holiday celebrations Story Cynthia Pasquale Photos courtesy of Craft Wines

N

ovember through December are ripe with festive gatherings and holiday cheer, but it’s not always easy to know what wine to pair with each holiday dish.

Laura Stroud, who with her husband, Paul, owns Colorado's Craft Wines, a wholesale distributor representing 50 winemakers and growers from the Central Coast of California to Oregon, says a general rule of thumb for pairing wines and food is “if it grows together, it goes together.” That means varietals found in the classic regions of France and Italy pair well with their corresponding cuisines.

Sometimes you might prefer a wine that plays off the food, or just the opposite—one that offsets flavors. “For example, rich, fatty foods pair great with brighter, more acidic wines. French fries and champagne are a match made in heaven for this reason,” Laura Stroud says. “But perhaps you need something big and bold like a cabernet to stand up to a rich roast.” Paul Stroud founded Craft Wines in 2014. Most of the small-production farmers and winemakers the company represents bottle fewer than 4,000 cases per year. All of them farm their vineyards sustainably, organically or biodynamically. “Our producers are stewards of the land and share a passion for responsible farming practices that result in authentic, terroir-driven wines that are some of the most sought-after and celebrated wines among wine professionals and restaurants,” says Laura Stroud. One vintner who Craft Wines represents is Gina Giugni. The second-generation grower creates her own compost and eschews pesticides, instead fighting off diseases, mildews and pests with cultivated teas and other indigenous plants to provide good bacteria and

Craft Wines sells and distributes its portfolio of wines throughout Colorado to high-end liquor stores and restaurants. “These small, boutique wineries are not paying marketing departments or national sales teams,” but are putting their resources into the vineyard and the wines, says Laura Stroud, adding that consumers get great quality wines for the price.

favorite guest if you brought a magnum of champagne to my New Year’s party. For a still option, Paul Stroud's go-to special occasion wine is a white burgundy, specifically anything from the Chablis region of France.

◆ Because the holidays bring together a variety of foods and palates, choose

medium-bodied wines like pinot noirs and chardonnays that “don’t go to extremes,” that is, those without a lot of oak, too much acidity or a high alcohol content. California's Scar of the Sea, which produces a variety of medium-body varietals at crowd-friendly prices, is a great option for seasonal celebrations.

◆ As the weather grows colder, we tend to gravitate toward red wine,

but Thanksgiving foods are so rich that we like something lighter and refreshing that will pair with a variety of dishes. Try a cru Beaujolais. This often-overlooked wine offers incredible quality for the price, which can be important when serving a large crowd. We love the Sonoma County Jolie-Laide gamay for this holiday.

◆ If you are looking to step it up, pinot noirs from California's Santa Rita

◆ Since traditional Christmas foods can range from lighter seafood fare to

rich, heavy roasts, choose a wine with versatility and balance. A great, cost-friendly choice is a domestic grenache, which has a medium body

◆ Sparkling wine always makes a party feel more festive. You would be my

Paul Stroud, a former sommelier and restaurant director, has one last piece of advice when choosing wines: Drink what you like. But do not be afraid to try something new. “The best thing you can do to expand your wine horizons is to find a small, local wine shop and establish a relationship with one of the sales associates,” says Laura Stroud. “The staff at these smaller shops are usually very knowledgeable and/or aspiring wine professionals. They have tasted a lot of wines and know a lot about different producers. If you work with the same sales associate, you can let them know what you like, do not like, how much you like to spend, and give them feedback” each time you return for more recommendations. coloradoexpression.com/holidaywinepairings Cynthia Pasquale is a Denver writer.

Special Advertorial

How Catering by Design has grown its award-winning catering company into a full-service powerhouse.

As the director of sales and marketing at Catering by Designs, Allie Piazza has her plate full to the brim—but lucky for us, she made time to answer a few questions about what it takes to pull off remarkable events in Colorado and beyond. It’s one thing to be in charge of the menu for an event, but to be responsible for everything from the design concept to the décor, flowers, lighting and every other minute detail. How did the company evolve to become experts in all these areas? Ingrid and Cade Nagy started Catering by Design as a simple casual catering company in 1996 and the company grew rapidly, but the aim was never to be the biggest caterer. It was to offer great food, professional yet approachable service and spectacular presentation. Fast forward to today, we now have a creative department lead director, Jennifer Whitman, who after 15 years of producing large-scale events on the East Coast (and all over the world), decided to make the move to Colorado and become part of the Catering by Design family. From planning through design and production, she has a wealth of experience working with luxury brands, as well as corporate, non-profit and private clients. She utilizes events as a tool to foster relationships with donors, friends and clients—as well as to cultivate new prospects. She has helped people raise millions for countless charities, has produced events at the White House during the Obama administration, on the outfield in a glass tent at Fenway Park, to a cow pasture in the middle of nowhere— not to mention numerous museums, warehouses, private homes, tents—you name it, Jennifer has done it! Her passion for creativity and innovation allows our decor division to highlight everything beautiful in an event, from soft seating, floral accents and detail enhancements to custom design, which provide a unique service to our clients by integrating fantastic food in a curated environment. The events that Catering by Design are involved with are all so highly curated. What is the secret to making each client and each event seem fresh and new? We really see ourselves as a boutique concierge service for our clients and at the end of the day, the most important thing we focus on is helping our clients by collaborating as much as possible and providing insight and advice on anything they need. To do that, we rely on every member of our team to contribute to the creative process, inviting new ideas and points of view from all employees. It’s this collaborative work environment that makes us stand out and think outside the box. It can be time consuming to brainstorm all the possibilities for our clients but it’s worth it to get to the end result.

Can you take us through the steps Catering by Design takes to execute bespoke events? Whether it’s a casual picnic, a corporate conference for 1,000 people or a beautiful wedding in Aspen, the process is always the same. Every event starts with a phone call but evolves to so much more, with relationship building being an integral piece of how we connect and come up with new ideas. This begins with our sales team, but often involves every other department in order to round out the concept. For us, personalization is the highest form of luxury, and without taking the time to listen to the needs of our clients, we cannot deliver on our promise to give them an unforgettable experience. Every menu and look is carefully curated to ensure our events are unique to clients’ priorities, needs, wants and visions for how their events are executed. What Catering by Design has found success in is taking the client’s dreams and utilizing our combined experience from every department to ensure flawless execution. As mentioned, we put a large value on our ability to collaborate, so without the contributions of sales, culinary, creative and operations, we would not be as successful as we have grown to be today. It takes incredible planning to be able to make all this happen; every department has to be dialed in and the margin of error is thin. As we embark on a new year, what’s next for Catering by Design? How do improve upon what you’ve created and accomplished over the last 27 years? Right now, our greatest focus is expanding our Creative and Design Division. We have spent 2023 uplevelling our offerings and are bringing to market a concept that is currently unmatched in Colorado. We bring a fresh new perspective, and are excited to show what we’re capable of, not only with catering but in design as well.

Colorado Feeding Kids

Invest in Kids

For 15 years, Colorado Feeding Kids has been providing easy-to-prepare, vitamin-fortified meals and family meal boxes to local food pantries, school weekend backpack programs, churches and seniors in need. To date, we have produced and distributed more than 9 million meals to the hungry. All of our meals are packaged by volunteers at our Englewood warehouse; we are always looking for more volunteers to help us pack meals at our bimonthly packing events! We have also provided meals to those affected by natural disasters, including sending our meals to Houston after Hurricane Harvey, to Puerto Rico after Hurricane Maria and to Colorado firefighters battling wildfires. Every bag of food contains enough to feed a family of six. We are an all-volunteer 501(c) (3) organization that receives no government funding, relying solely on donations and volunteers. At a time of such need, your donation on Colorado Gives Day will help us continue to help children, families and seniors in our community.

Invest in Kids (IIK) works to ensure that every Colorado child has a strong start in life. Serving more than 14,000 children and families annually through its three evidence-based programs—Nurse-Family Partnership®, The Incredible Years®, and Child First®—IIK helps improve the health and well-being of young children in under-resourced areas across all 64 Colorado counties. Invest in Kids raises funds to support its three programs and the nurses, teachers and social workers who work alongside families in these programs every day. Looking ahead to 2024, IIK is enlisting sponsors and participants for its 25th annual Jane-A-Thon ski-a-thon event, set for March 1-2 at Mary Jane Mountain in Winter Park.

2023 Giving Guide

FOR OUR COMMUNITY Butterfly Pavilion

Denver Rescue Mission

A staggering 97 percent of Earth’s animal species are invertebrates, forming the backbone of our planet’s ecosystems. Their survival is intrinsically tied to our own. Yet, invertebrates remain largely understudied, underappreciated and misunderstood. This is where the Butterfly Pavilion steps in. Since 1995, the Butterfly Pavilion has been an integral part of the Colorado community. As the world’s first Association of Zoos and Aquariums accredited, stand-alone, nonprofit invertebrate zoo, our responsibility is clear: to lead the way in invertebrate research, education and conservation. We achieve this by delivering distinctive, hands-on educational experiences within our exhibits and programs, pioneering new research that sets national standards for zoos, and innovating solutions for invertebrate species and habitat conservation worldwide. We can’t do it alone—your generosity drives our mission. Join us this end-of-year season to protect the web of life.

Denver Rescue Mission serves the most vulnerable men, women and children in our community and is grateful for the generous support from Colorado Gives Day. Donations help people experiencing homelessness and addiction through emergency services, rehabilitation, transitional programs and community outreach across the metro area. Last year, the Mission provided more than one million meals and 427,952 nights of shelter. Its New Life program graduated 84 men, and the Bridge program helped hundreds of families transition off of the streets into secure housing, setting them on a path to lasting stability. Support of the Mission from the community has helped to restore families, bring hope to the hopeless and change lives for the past 131 years.

Chatfield Farms is a 700-acre native plant refuge and working farm in Jefferson County. On-site are historical buildings dating back to the 1800s, nature trails and wildflower gardens. Special events like the Corn Maze and Trail of Lights are perennial favorites. The Gardens provides programs for more than 35,000 children annually, conducts cutting-edge research, and cultivates plant collections specially selected for our Rocky Mountain region. Your support helps us maintain both locations and our work on Mount Goliath and programming at the Plains Conservation Center in Aurora.

The Denver Zoo is dedicated to providing the communities it serves with an inspiring and informative firsthand encounter with the wonders of nature. The 84-acre campus is home to 3,000-plus wild animals that serve as ambassadors for their wild counterparts all over the world. Freedom Service Dogs

Junior League of Denver

Freedom Service Dogs (FSD) transforms lives by partnering people with custom-trained assistance dogs. Since 1987, this Denver-based nonprofit has provided hundreds of highly skilled service dogs to people in Colorado and around the country—including veterans with PTSD or combat-related injuries, children with autism or other neurocognitive disorders, and individuals with physical disabilities—completely free of charge. Want to help make a difference? FSD always needs volunteer puppy raisers to help raise and train our service dog hopefuls, as well as volunteers to work in our nursery or foster our adult dogs on weekends. And on Colorado Gives Day, your gift to Freedom Service Dogs will help provide excellent care, expert training and purposeful placement of service dogs with people who need them.

Founded in 1918, the Junior League of Denver is a women’s training organization empowering women to become civic leaders and impactful community volunteers. Having helped to start countless organizations and programs in Denver, the league is currently working to disrupt the cycle of systemic poverty for women and families in the metro area. In 2022-23, volunteers contributed nearly 3,000 hours to the community, served nearly 7,000 children and adults, distributed more than 1,500 books, served almost 2,500 meals and granted $33,000 to area nonprofits. The league hosts signature community programs, partners with fellow nonprofits, and advocates on behalf of women and families at the Capitol. Your Colorado Gives Day donation will help the Junior League continue these important efforts.

Among those, more than 40 percent are uninsured or underinsured. “With your help,” executive director Dana Davis says, “we can help keep patients healthy and one day find a cure.” Davis adds that the foundation’s holiday wish list includes monetary donations that will be used to fund critical patient programs and gift cards from local businesses to bestow upon food-insecure patient families. The extreme costs of supplies and insulin take a heavy toll on families affected by Type 1 diabetes. Donate to families in need so they don’t have to choose between buying life-saving insulin or being able to afford their rent.

For 124 years, National Jewish Health has been at the forefront of research and medical care focused on lung, heart, immune and related disorders. At this nationally recognized specialty care hospital, doctors, scientists and caregivers come together to find answers, develop new treatments and solve medical challenges. Caring for kids and adults and finding cures for many serious illnesses are cornerstones of the work done at National Jewish Health. Support from the community, including during programs like Colorado Gives Day, is key in continuing life-changing research and in providing unique programs such as the Morgridge Academy, a kindergarten-through-eighth-grade school on the hospital campus that is designed for children with chronic illnesses.

FOR THOSE WITHOUT A VOICE Colorado Pet Pantry

The Wild Animal Sanctuary

Colorado Pet Pantry distributes pet food to people who are struggling to feed their pets due to lack of funds. The goal is to keep pets with the families who love them and out of animal shelters. It costs the organization $5 to feed a pet for 30 days because all of the pet food is donated. Colorado Pet Pantry now has more than 100 pet food banks statewide and also works with 100-plus animal rescues and animal welfare organizations to share pet food and supplies. Send your donation on Colorado Gives Day so people don’t have to choose between food for their children or food for their beloved pet.

The Wild Animal Sanctuary is the world’s largest sanctuary for many endangered species and other wild and exotic animals such as lions, tigers, bears, wolves and wild horses. Operating four separate facilities that encompass more than 33,000 acres, the Wild Animal Sanctuary specializes in providing unprecedented freedom to the animals it rescues. Since 1980, the Wild Animal Sanctuary has rescued thousands of animals throughout the United States and around the world. Staffers rescue animals from dreadful circumstances of abuse and neglect and bring them back to the wide-open space of large natural habitats, where they have plenty of freedom, exceptional diets and proper veterinary care for as long as they live. The Wild Animal Sanctuary is a nonprofit organization and does not receive government support or special funding. One hundred percent of its support is given by people and organizations who care about saving these animals. Your gift on Colorado Gives Day 2023 makes all the difference in the lives of these animals.

BECAUSE IT MATTERS

For over 100 years, Kiwanis International Clubs have been improving the world one child and one community at a time. The Kiwanis Club of Southeast Metro Denver’s (SEMD) signature project is supporting the prevention of youth suicide in Colorado. Pediatric mental health was recently declared a crisis by Children’s Hospital Colorado, and each year since 2017 around 100 children and teens have died by suicide in Colorado. Kiwanis SEMD hosted its second annual Pints & Pinots for Youth Suicide Prevention Fundraiser in May 2023. Over the past two years, SEMD has donated $45,000 to Second Wind Fund, a local organization that provides no-cost mental health treatment to Colorado youth at risk of suicide. Other local nonprofit organizations supported by Kiwanis SEMD include Colorado Feeding Kids, Clothes to Kids of Denver and the Ronald McDonald House. kiwanissemd.org 303-549-7044

Judi’s House Judi’s House was created with the belief that all bereaved children and families should have access to effective and compassionate care. Former Broncos quarterback Brian Griese was just 12 years old when his mother, Judi, died from breast cancer. Brian and his wife, Brook Griese, PhD, a clinical child psychologist specializing in trauma and loss, founded Judi’s House in her memory. For the past 21 years, the organization has worked toward its mission to help children and families who are grieving a death find connection and healing. The organization’s research arm, JAG Institute, furthers this mission through comprehensive research and training initiatives. All services, provided by mental health professionals, are offered at no cost to the families they serve. Last year, Judi’s House moved to a new, purpose-built home, created by and for the community, at the crossroads of Aurora and Denver just east of the Stanley Marketplace. judishouse.org 720-941-0331

Warren Village

Urban Peak

Warren Village provides low-income, single-parent families with the space and resources to achieve economic mobility through affordable housing, workforce development, post-secondary education support and early childhood education. As inflation and the cost of living in the Denver area continue to grow, more families are facing housing instability and struggle to find safe and affordable housing. Warren Village builds community that empowers families to strive for economic and personal independence at its two current campuses, and at its new campus, Warren Village at Alameda, opening at the end of 2024. Become a part of the Warren Village community on Colorado Gives Day.

Urban Peak ignites the potential in youth to exit homelessness and create self-determined, fulfilled lives. Urban Peak is the only organization in the Denver area providing a full convergence of services solely focused on one of the most vulnerable populations in our community: youths ages 15 through 24 experiencing homelessness. These young people face challenges that are hard to imagine. They have little experience living independently and are often developmentally unprepared to find stability without supportive adults or safe and caring connections. Urban Peak puts youths on a path toward self-sufficiency and success through programs including street outreach, a drop-in center, shelter, housing, support services and case management. In 2024, Urban will open a highly anticipated new campus, lovingly known as The Mothership, that will offer expanded shelter, independent living options and on-site support services. The generous support of individuals and organizations through Colorado Gives Day and throughout the year allows Urban Peak to continue this innovative and critical work.

hen the lifts roll to a stop and the last skiers and snowboarders schuss toward the lights and revelry of Beaver Creek’s base area, those fortunate enough to snag a stay at the exclusive Trappers Cabin in Beaver Creek get to ski to a very different experience. Perched on the mountain adjacent to, but removed from, the ski runs near McCoy Park, Trappers is a three-story, four-bedroom, idyllic retreat exuding the character of the log cabins built by early settlers while providing the luxury that guests have come to expect from the resort that boasted the tagline “Not Exactly Roughing It.” In 1986, Vail Associates’ mountain planner Mike Larson came up with the idea for Trappers Cabin in anticipation of the upcoming 1989 World Alpine Skiing Championships. Vail Associates owner George Gillett endorsed it; his wife, Rose, was the first interior designer. “Trappers was actually built at the top of Bachelor Gulch before Bachelor Gulch (and The Ritz-Carlton, Bachelor Gulch) was even in a concept phase,” says Kori Beckman, director of lodging and general manager for Beaver Creek Hotels. The idea was inspired by the 10th Mountain Division’s backcountry hut system, a collection of log cabins that sleep up to 16 guests. The 10th Mountain Division huts are situated at various points near Vail and Aspen and can be described as rustic and utilitarian. Designed by Vail-based architect Jack Zehren and Zehren and Associates, Trappers Cabin, though similar in concept, can only be described as posh, palatial and plush. Built at the same time as Beano’s Cabin, which is known for adventurous (it’s only accessible by snow cat during the winter) fine dining, Trappers’ first promotional brochure described it as a “unique blending of old and new … . This isolated log cabin with its large fireplace sleeps no more than 10 comfortably arranged. Quiet and serenity are assured. There is no television or telephone yet the kitchen houses modern appliances and a Jacuzzi hot tub soothes muscles wearied by strenuous days of downhill skiing and cross-country touring on nearby trails.”

Trappers Cabin was renovated in 2008, updating the amenities (including a game room) while elevating the alpine chic feel. Features included all new bedrooms, baths, fireplaces, wood floors, appliances, furniture and hot tub; there’s even a discrete television. The Cabin Keeper will stock Trappers’ commercial kitchen with the supplies requested by guests, who can also work with the Beaver Creek dining team to arrange for personal chef services. But all of the luxury is not necessarily the main draw. Instead, the most appreciated features can be found not in Trappers itself but in its surroundings. Panoramic views can be enjoyed from the porch and the hot tub; the murmur of the aspens and occasional birdsong replace the hubbub of normal life. Visitors are by invitation-only, unless the occasional deer, elk or bear wanders by. “Staying at Trappers Cabin is a unique experience because of the remoteness, the tranquility,” Beckman explains. “During the winter you get fresh tracks, first tracks, every single day. You're already on the mountain, skiing out from Trappers—you can start skiing before the chair lifts even start running.” If you go: Trappers Cabin is open for reservations from early December until the base areas on the western hillside of Beaver Creek close for the spring; it’s also available in early July (after elk calving season) until mid-October. Rates range from $1,500 a night to $8,000 a night with a three- to seven-night requirement. • coloradoexpression.com/trapperscabin Katie Coakley is a freelance writer based in Eagle County. She’s written for a variety of local and national newspapers and magazines. She's currently recruiting nine other people to book a stay at Trappers Cabin next winter.

hen deciding to travel, how you get there is often just as important as where, why and when. This winter, Venice Simplon-Orient-Express (VSOE), a private luxury train service currently owned by Belmond, is introducing a more decadent way to travel to the slopes. VSOE currently has 76 routes available from hotspots including Brussels and Budapest, Venice and Vienna. This new route is of particular interest to the snow-loving set, journeying from Paris to the prestigious peaks of the French Alps. But this is no ordinary commuter train. Stepping onto VSOE’s historic carriages is like stepping into a different era. The train's carriages, lovingly restored to their original 1920s and 1930s splendor, exude an air of opulence and refinement. Intricately carved woodwork, plush upholstery and polished brass details set the stage for a journey through time. Departing from Paris in the evening, guests can unwind in the Art Deco surroundings with a glass of champagne as the train gathers speed to the Alps. The heart of the train is Bar Car 3674, where musicians provide an auditory accompaniment to the carefully sipped cocktails. When dinner is served, guests can meander to one of three dining cars, each with its own unique character and ambience. The culinary team on board is led by French chef Jean Imbert, who curates a collection of seasonal menus that promise a gastronomic journey to remember. Indulge in a selection of Petrossian caviar before choosing from comforting dishes such as filet of beef with a wine mushroom sauce and puff pastry filled with lobster in a spinach cream sauce. Guests can return to the Bar Car for a nightcap with fellow travelers, or retreat to their cabins, transformed by their steward for nighttime. The plush bedding and soft, warm lighting make for a perfect night's rest as the train continues its journey through the night. In June, Belmond unveiled a new cabin category with eight new suites aboard the legendary Venice Simplon-Orient-Express, further elevating the original legend of the rails as it crisscrosses through Europe. Bridging the train’s iconic history and authentic craftmanship with modern comfort and luxuries, the lavish new accommodations feature a private marble ensuite and a spacious lounging area by day that seamlessly transforms into either double or twin beds by night. Additional amenities include a personal 24-hour cabin steward and a complimentary robe and slippers. The new suites complement the two existing cabin categories, Historic Cabins and Grand Suites. The Historic Cabins exude timelessness in the Art Deco carriages, transforming from daytime lounge into cozy upper and lower beds at night. For the epitome of luxury, the Grand Suites feature private bathrooms with showers, double beds and a living area with underfloor heating. Grand Suite amenities include 24-hour cabin service, free-flowing champagne and private transfers to and from the train. »

Making tracks across Europe, the Venice SimplonOrient-Express is bringing back over-the-top opulence to luxury travel.

great escapes After a restful evening lulled to sleep by the rocking of the rails, the following morning brings the enchanting scenery of the Rhône-Alpes. There's something truly magical about waking and watching the world pass by in a blur of snow and sky. As the Alps rise majestically on the horizon, their peaks dusted with freshly fallen snow, the train snakes its way through pristine valleys and alongside frozen rivers, offering passengers an unrivaled opportunity to witness breathtaking natural beauty. To refuel before an afternoon of skiing and alpine activities, a multi-course brunch is served in the dining cars before the train arrives in Albertville, the first of the three alpine stops. (Moûtiers and Bourg-Saint-Maurice are also options.) As passengers disembark for a day of exploration, the winter activities offered are as diverse as the landscapes themselves. Skiing and snowboarding are a popular pastime, and enthusiasts can take their pick of ski resorts: Megève and the Mont Blanc; Courchevel and Three Valleys; and Tignes-Val d’Isère. Not a downhiller? Snowshoeing and ice skating are also available, as well as exploring picturesque alpine towns. In short, there's something for everyone to enjoy in this snowy paradise. The Venice Simplon-Orient-Express offers more than just a train journey; it offers a glimpse into a bygone era when travel was an art form and a destination in itself. From the moment you step on board in Paris to the moment you bid adieu in the French Alps, this winter voyage is a testament to the timeless allure of luxury, romance and adventure.
