Fixing Foxmoor

Township condemns Miry Run

Developer secures new tenants, begins restoring derelict shopping center

Nearly 160 acres of country club to become open space

By RoB anthes

By RoB anthes

Progress might be hard to see today, but the new owners of Foxmoor Shopping Center say the gears have been set in motion to make it a whole new plaza by this time next year. Pennmark Management Company Inc. has told Robbinsville Township officials that the long-ignored complex on the Hamilton-Robbinsville border is on track to be fully leased within 2019. The plaza will soon receive cosmetic and operational improvements to match its reemergence as an in-demand location. Pennmark purchased the center for $7.5 million during an online action Aug. 1, and closed on the property Sept. 13 after some delay with the final paperwork. Now more than three months after taking over, Pennmark says phones are ringing off the hook with businesses looking to get space in the center. Two new leases have been signed, with two more under negotiation and even more in the early stages of talks. Fit Body Boot Camp has signed to take 3,000 square feet in the old Everson’s Karate location, and Mathnasium will occupy 1,500 square feet in the former Bricks 4 Kidz suite, said Justin Bartholomew, head of leasing See FOXMOOR, Page 14

Robbinsville Township took the first step in seizing ownership of nearly 160 acres of Miry Run Country Club, filing condemnation paperwork in New Jersey Superior Court Nov. 29. The Sharon Road property, which includes a golf course, swimming pool and clubhouse, has sat idle since 2015. The filing starts the process of condemning 158 acres of the property, including all existing facilities. A 3-person commissioner board will determine whether the township’s filing is valid and its offer fair. A township appraisal values the land at $1.34 million. If the commissioners accept that offer, the condemnation process is over, and the township will pay the property’s current owners, Spring Garden Country Club, Inc., the appraised value with money from the township open space fund. If the commissioners feel Robbinsville’s appraisal is too high or too low, they can adjust the price, a process that can take months. The township plans “passive recreation” for the land. It could remain a golf course or be converted into a facility with walking paths, Frisbee golf or soccer golf, Robbinsville Mayor Dave Fried said. The township will See MIRY RUN, Page 12

Robbinsville native Nick Ouzounov is one co-founder of Geltor, a start-up that produces collagen without animal products for skincare products and vegan gelatin.

On the cutting edge Nick Ouzounov goes from basement lab to the forefront of biotechnology field By siDDhaRth mUchhaL Since leaving Robbinsville, Nick Ouzounov, along with his colleague Alex Lorestani, has found himself on the forefront of biotechnology. Together, they created Geltor, a synthetic biology start-up that produces collagen without animal products for uses such as skincare products and vegan gelatin. The science

and business worlds have taken notice of their advancements. Ouzounov started on this path from an early age. His family moved to Lawrenceville from his birth country of Bulgaria in the mid-1990s, when he was in third grade, before moving to Buffalo, New York, and then settling in Robbinsville in 1999. Since Robbinsville did not have its own high school then, Ouzounov attended Lawrence High School, and graduated in 2005. He went on to study molecular biology and biochemistry as an undergraduate at Rutgers University before gaining admission into Princeton University’s molecular biol-

ogy graduate program. At Princeton, he studied how microbes establish and maintain cell space. Throughout his childhood, Ouzounov developed a love for science, specifically biology, and the opportunities for entrepreneurship. His parents were both scientists, which gave him exposure to medical research as well as companies such as Johnson & Johnson and BristolMyers Squibb. “I’ve always liked programming and coding, and I started looking at working with DNA in molecular biology as something similar to working with See OUZOUNOV, Page 10

Pictured are (back) Shawn Werdal, Danny Marincas, Andy Neumann, Assistant Scout Master Eric Blum, Scout Master Alex Marincas, (front) Mark Dailey, Ian Keller, Philip Sapienza, Nicholas Began, A.J. Koch, Jacob Decker and William Blum. Boy Scout Troop 79 held a special Eagle Court of Honor Dec. 3 to honor and recognize the achievements of the scouts over the past six months and to celebrate the advancement of two scouts who achieved the rank of Eagle, Philip Sapienza and Nicholas Began. Eagle Scout is the highest advancement rank in Scouting, and represents the culmination of years of dedicated work towards a single goal. To achieve the rank of Eagle, a scout must achieve 21 merit badges including 13 Eagle required badges as well as pass all of the rank requirements of the previous 5 ranks including Scout, First Class, Second Class, Star and Life Scout. By the time a scout reaches Eagle, he has participated in hours of community service ending with the completion of his own Eagle project. For his Eagle project, Sapienza led the troop in collecting over 4,200 books for the school children of Trenton while Began chose to assist Robbinsville Township in the development of property on Meadowbrook Road into a firepit and recreation area. Other scouts recognized at the court of honor were Andy Neumann, who achieved the rank of Life Scout, and A.J. Koch and Ian Keller, who achieved the rank of Second Class Scout. Robot mishap sickens workers at Amazon An incident at the Robbinsville Amazon warehouse injured more than 50 workers and left one employee in critical condition Dec. 5. First responders treated roughly 54 employees at the Amazon fulfillment center on New Canton Way after a 9-ounce aerosol can of bear spray discharged inside the building, according to a statement from township spokesperson John Nalbone. The workers had difficultly breathing and experienced a burning sensation in their eyes and throat, Nalbone said. Two dozen employees were transported to local hospitals for treatment, and additional employees were treated at the scene. One person was in critical condition, but was expected to recover. Doug Davidson of the West Windsor Health Department said an automated machine punctured the can of bear repellent. The repellent had a highly concentrated amount Capsaicin, which produces a burning sensation when mammals come in contact with it. Residents were never in danger during the incident, the township said. An outside service cleaned up the affected area on the third floor of the warehouse’s south side, and that portion of the facility was back up and running a day later.

Girl Scouts work on Silver projects

Robbinsville Girl Scout Delaney McEvoy (pictured above) is training her dog, Sneezy, to be a therapy dog by attending three training classes. They learned how to greet people and be comfortable around medical equipment. Sneezy passed his therapy dog exam, and can now visit hospitals, schools and nursing homes. Meanwhile, the Silver Award project of Robbinsville High freshmen Swetha Ramachandran, Katelyn Haegley and Maitri Shah involves working in the Dutch Neck Presbyterian Church’s Grover Memorial Garden. As a part of that, the students planted and maintained the tomato and basil rows. The produce is donated to the R.I.S.E. Food Pantr y. Various improvements have been made to the garden, such as building a bench and making a sign.

OUZOUNOV continued from Page 1 software,” he said. “I started noticing a lot of opportunities in that space that I thought were fascinating.” During this time, he designed his own biology lab in the basement, which got him interested in the do-it-yourself biology field. These humble beginnings also made him aware of the possibility for funding and lab space to develop an idea from scratch into a product or company. This experience became useful when Lorestani and he began critiquing the current applications of biological products. “We saw a lot of technologies that have been implemented in the production of medicine, and we saw an opportunity for that to be applied to consumer products, partially because of the decreasing cost due to new technological advancements,” Ouzounov said. The roots of Geltor started off at a table inside Princeton’s Small World Coffee, where Ouzounov and Lorestani sat around a table writing calculations on a paper about how to make actual protein using microbes. Their first and main target was creating collagen, the most abundant protein in a human body and a major component of connective tissue. Collagen is also the substance that makes up gelatin, which is used as a core ingredient in countless products. Being able to synthetically produce gelatin, a substance that was previously animal product, would be a huge scientific breakthrough. The idea is revolutionary because

Alex Lorestani and Nick Ouzounov met at Princeton University, and formed the beginnings of their start-up while sitting at a coffee shop. bring to the table,” he said. To advance their idea, Ouzounov and Lorestani applied to IndieBio, a renowned biotechnology start-up accelerator in San Francisco, in July 2015. After being accepted, the pair worked on producing a proof of concept, evidence that the concept is feasible, for the accelerator demo day in February 2016. The process of scaling a product and process to size can be quite difficult. “When Alex and I had our first proof of concept, it was in milligrams, and so scaling that to produce kilograms took a lot of work and effort from the whole team,” Ouzounov said. “Making the process cost-effective was also difficult, along with making it work for various collagens and proteins.” Another difficulty that the pair faced in initial pitches was explaining the specifics of their product to those without prior knowledge. “A lot of customers were coming to us, and we had to translate some difficult concepts about molecular biology so that non-scientists are able to understand as well,” he said. However, by demo day, they were able to produce a substantial amount of product, which helped create excitement amongst investors and helped them raise $2.5 million. This capital funded their move to San Leandro, California, where they rented out lab space to hire employees and build their new company, Geltor. For Geltor, Ouzounov serves as the chief technology officer, and handles all the technology and production, while Lorestani handles the business side as CEO. Their first and main product is N-Collage 1% Solution, a high performance collagen without animal product, and the “first ever vegan collagen technology engineered for unparalleled skincare performance,” according to Geltor’s website. Because of its unique design and broad utility, the product

won the Cosmetic Executive Women’s 2018 Innovation Award. While Geltor is one of the first, there is a rapidly growing industry around synthetic biological production, though it is in the early stages. “Depending on the application, a lot of the industry is still in the research and development phases,” Ouzounov said. “A lot of other companies are looking at cellular agriculture, recombinant proteins, or egg production, but there’s a lot more regulation in the food path. Currently, we’ve found a good application for our product in the cosmetic space, where we see a lot of opportunities for improvement, since the collagens we produce surpasses anything our customers are used to.” To expand, Ouzounov and Lorestani are exploring other possibilities with their products and methods. “Collagen is pretty exciting, and we’ve only scratched the surface, since there are 28 types of collagens, and there are different sequences for each with different animals,” he said. “However, we’ve developed a system that can be applied to other proteins as well. We’re always looking at things that can be applied and have functions that are beneficial to humans but difficult to access through normal methods.” Looking ahead, Ouzounov is excited to explore the next stage as Geltor scales production and gets the product into as many hands as possible. He said it’s been exciting seeing how excited the world has been for what he’s created. He concluded by mentioning the importance of this field for not only scientists, but all people. “The technologies we’re developing, in my mind this is like the ’70s and ’80s for the computer age, in terms of how this new technology can impact the lives of everyone,” Ouzounov said. “This can improve biology, technology on the consumer level.”

MIRY RUN continued from Page 1 also consider converting the abandoned pool facilities at Miry Run into a township pool or splash park. The remaining 30 of Miry Run Country Club’s 188 acres will act as a runway safety area for Robbinsville Airport, with ownership of that land staying with Spring Garden Country Club, Inc. The developer also owns the airport. Negotiations with Spring Garden to buy the country club outright did not bear fruit, Fried said, leading the township no choice but to take the land through condemnation. But, before it could file the paperwork, the township had to hash out how much land to include as the airport buffer zone, causing further delay. “I think most people are going to be happy it’s finally getting done,” he said. “It’s frustrating for some people how long these things take. But you also want to be really, really fair to property owners. You don’t want to use condemnation willy nilly. It’s something you should be thoughtful and deliberate about.” Condemnation is relatively new tool for municipal governments to preserve open space. In December 2007, the New Jersey Supreme Court decided, in a case between Mount Laurel and a developer called MiPro Homes, that municipalities have the statutory authority to condemn property for open space, if the condemnation is in the public interest. The case set a precedent that Robbinsville now has followed twice. Normally, a municipality and devel-

Mir y Run Countr y Club, which has been closed since this photo was taken in 2015, was condemned by the township last month. (File photo.) oper will avoid condemnation by working together to settle on a price—just the threat of condemnation is enough. But it wasn’t in the case of Miry Run, just as it wasn’t in 2016 when the township condemned 225 acres on RobbinsvilleEdinburg Road approved for a housing development called Washington Woods. Negotiations for Washington Woods proved even more contentious than Miry Run, with the developer ordering

construction on the housing developing to start in September 2016 despite not having the proper approvals from the township. Robbinsville Police responded to the construction site several times that month, writing summonses for violations to each of the crew members. Crews worked illegally for two weeks, clearing soybeans and topsoil, as well as removing trees at the back of the property.

The township has only just started to undo the damage, with Phase 1 of the Washington Woods restoration project beginning in late October 2018. The Phase 1 includes filling in excavated stormwater basins, redistributing stockpiled topsoil, installing soil seeding and stabilization, and the installation of soil erosion measures such as a silt fence and a stone riprap. The fight between the township and developer continued even after Robbinsville filed for condemnation, with a dispute over Washington Woods’ value. It took six months before the court-appointed panel settled in July 2017 on a price of $8.7 million for 225 acres. The township appraisal had the land valued at $8 million. Miry Run is different in a few ways. The land at Miry Run has a lower value because it is only zoned for a golf course. It doesn’t have approval to build residential buildings currently. And, unlike Washington Woods, the landowner has no active construction or even a plan for development in the near future on the property. Still, the township feared the possibility of housing units on the land and moved to buy it. The funds will come from generated by a 1.5-cent increase of the municipal open space tax, a hike pitched to township residents in 2016 as a way to preser ve Washington Woods and Mir y Run Countr y Club. Township voters over whelmingly approved a ballot question on the issue in November 2016. “You have to be really, really, really

careful,” Fried said in September 2016 during the Washington Woods negotiations. “Other than roads, we just don’t do it. We’ve talked about doing it, even [in Foxmoor Shopping Center]. We’ve given Foxmoor lots and lots of time because, to me, when you take someone’s property, you’ve got to think long and hard about whether it’s the right thing to do. Does it really make sense? Is it really in the best interest of the community? It’s a slippery slope. Once you start, where do you stop? I’ve always tried to avoid it, and I would have preferred to avoid it here as well.” The township did avoid using condemnation with Foxmoor Shopping Center, a fact Fried uses to bolster his claim that he doesn’t want to take land unless it’s the last resort. Robbinsville officials had tried to negotiate to buy at least part of the Miry Run land as early as 2015. A few months after closing the club, Spring Garden approached the township to discuss other uses of the property, including construction of a new housing development or a senior housing complex in conjunction with a smaller golf course. This was despite the developer not having zoning approval to build residential units. Hoping to avoid the addition of more housing in town, the township started efforts to purchase Miry Run, rebuild-

ing it as a municipal golf course. Tim McGough, then the township’s director of community development, said at the time he believed the revenue created by the course would offset the cost of land maintenance. While the township negotiated to obtain the property, it watched as the developer worked to sell it from underneath them. In 2017, it appeared Spring Garden had worked out a deal with a developer for at least a portion of the Miry Run property. Titusville-based Sethi Development Corporation planned to take over 24 acres— including Miry Run’s clubhouse—and construct a large banquet hall there. The developer’s application to the Robbinsville Township Zoning Board generated a substantial amount of backlash from residents in the area, who cited traffic and noise concerns. In the face of the public outcry, Sethi pulled its application. Since then, nothing much has been heard of Miry Run publicly. Fried said during his years of negotiating with Spring Garden, he got the sense the developer didn’t have a realistic goal for Miry Run’s land. “I don’t think the property owner had a good plan for the property,” Fried said. “I don’t know the answer [to what they planned for the land].”

Temporar y signage is up for some of Foxmoor Shopping Center’s new tenants, such as Mathnasium shown here. (Staff photo by Laura Pollack.) FOXMOOR continued from Page 1 for Foxmoor Shopping Center. Under negotiation currently are a lease for a 4,000-square-foot unit and another for a 15,000-square-foot portion of the old Thriftway anchor. Bartholomew said the business looking at taking some of the anchor space is anxious to find and open another location quickly. “We’re getting calls every day,” Bartholomew said. “It shows the strength and potential of this center.” Additionally, Pennmark has had discussions with a franchise about taking 2,000 square feet in Foxmoor; this is the second round of talks with the organization, which Bartholomew declined to name. The parties were close to a deal earlier in 2018, but the deal fell apart when original franchisee moved to Florida. The corporation is now back negotiating with a new franchisee. Pennmark also did a market study about the viability of a grocery store in Foxmoor Shopping Center, and told Robbinsville Township officials they are focusing on bringing a smaller, niche market to the plaza. For years, residents in the township have lobbied to bring popular grocers Trader Joe’s or Whole Foods to the center, but Robbinsville Township Director of Community Development Hal English said Pennmark probably won’t be able to fulfill that wish. “No, not Trader Joe’s,” English said. “They’re not coming.” That said, Bartholomew acknowledged they have heard the community regarding its desires for Foxmoor Shopping Center, and have kept them in mind while populating the center. “We’re looking at all the directions people wanted us to go,” Bartholomew said. “We’re not ready to say no to any potential tenant at this time.”

While Pennmark has kept an open mind when it comes to the future of Foxmoor, the company actually has declined to do business with a couple of potential tenants. English said Pennmark management told him the company will not lease to tenants in their facilities that “don’t help other tenants or don’t fit the demographic.” “They don’t just lease space, and say, ‘Well, let’s get it up and running,’” he said. “We’re very happy to hear that.” Saying “no” to business may seem like an unwise strategy based on Foxmoor’s last decade, but it appears to be a luxury Pennmark has. Since taking over Foxmoor at the lowest occupancy rate in its history, Pennmark has wasted no time in putting its mark on the center. Existing tenant Gifted signed a lease to expand into a second, neighboring suite. Several businesses are vying over available corner units in the existing standalone building fronting Route 33. Pennmark also has explored the potential of adding a pad site to the complex in the future. Crews have removed dead trees, an act that cleaned up the plaza and opened it up to allow improved visibility from Route 33. This month, the developer and Robbinsville Township officials will ask the state Department of Transportation to allow them to build a right-in and right-out driveway on Route 33 that will allow direct access from the highway to the shopping center. (No left turns would be allowed into or out of the center from this driveway.) The buildings themselves will get a new facade soon, as well. Pennmark would have liked to have the facelift finished already, English said, but improvements are stalled until someone can find the architectural plans for the center. The plans are needed in order to look at the

buildings’ structure, but the architect that built Foxmoor Shopping Center went out of business and previous owners did not have blueprints to share. In mid-December, Robbinsville Township staff were in the process of searching to see if anything exists in the municipality’s records. Pennmark also plans to redo the parking lot, landscaping and signage in Foxmoor in the coming months, English said. He did not know the exact timeline, which will be part of a forthcoming plan Pennmark will present to township officials. The developer has been in constant communication with Robbinsville, though. On Nov. 28, Bartholomew attended a township planning board meeting and explained Pennmark’s plans going forward to members. Pennmark CEO Donald F. Cafiero met with Robbinsville administration officials and council members Dec. 6 at the municipal building to give a similar briefing. Robbinsville officials have said that they are overall pleased with how

Pennmark’s ownership of Foxmoor has gone so far, a sentiment the developer shares. Bartholomew said Pennmark has done no advertising for the center or its availabilities yet, and has sold space just by word of mouth. Pennmark’s main focus has been restoring the center, cleaning up vacant stores and actively showing the spaces a few times a week. Maintenance staff is there every day, ensuring everything is clean and operational before Pennmark enacts any improvement or expansion plans. “Our first priority is stabilizing the patient,” he said. “We’re not quite there yet.” Still, English says he notices a difference at the center already, despite no new businesses opening yet. “I drove over to take a look, and I just sort of pulled over in the main road,” English said. “I must have had three or four cars beep and go around me. I’m not used to that kind of traffic in there. That’s a good sign.”

FOOD & DINING

It’s Greek to me: sampling a few of Mercer’s gyros By Joe Emanski

jemanski@communitynews.org

There’s no particular reason that I haven’t ever eaten much Greek food. I mean in a sense I’ve been eating Greek food my whole life, if you consider that many diners in the area have been Greek owned for years, and I’ve eaten more meals in diners than you can count. But if the food in question is souvlaki, spanakopita, dolmas or moussaka, then I have to admit, I’ve eaten little to none of it in all my years on Earth. Even baklava, that rich, gooey, decadent dessert, I had somehow never tried until a couple of years ago. And gyros. Living in the middle of the Great Melting Pot, having made many visits to New York where every other corner is redolent with the aromas of spit-roasted meats, somehow until last month I had never had a gyro (don’t call it a jye-row.) Now seemed like as good a time as any to change that. The decision to go Greek came in part because of my curiosity about Pi Greek American Grill (3815 Crosswicks Hamilton Square Road, Hamilton; 609438-9941; facebook.com/pipitapizza), which opened in May in Deerpath Pavilion, site of the lost, lamented

Harry’s Army Navy. I had heard that the food was good, but also that the restaurant had a bit of an identity crisis. And it’s true that Pi can be confusing for first-time visitors. For one thing, you could be forgiven for thinking that the restaurant is called Pi Pita Pizza, inasmuch as that is what the sign reads on the exterior. That was the name, but it has been renamed since opening. When you walk into the small, functional restaurant, the first thing you see is an assortment of thin-crust pizzas on the counter. On the wall is a large menu featuring an assortment of Greek dishes, but it is an abridged list of the full menu, which can only be found on the tabletops. Even then, the menu is white letters all caps on a black background with all the words pushed together in strange ways. It’s like trying to read an eyechart. It’s worth getting past this. Eventually you’ll figure out that in addition to pizza, this family-run restaurant features a range of Greek favorites, including souvlaki, moussaka, pastitsio (AKA Greek lasagna) and falafel. On a trio of spits behind the counter are the pork, chicken, and beef/ lamb mix they serve on their gyros. I ordered the pork gyro special, which included french fries and a fountain drink

for $8. The gyro was enormous, served wrapped in foil paper as is the tradition, dressed with onions, tomatoes and a dollop of house-made tzatziki. The serving of french fries was also quite large. I wasn’t sure I wanted pork—usually when I’m trying something at several places, I like to get the same thing at each stop so I’m comparing, well, beef/ lamb gyros to beef/lamb gyros. But the cashier, who is also the owner, informed me that the pork was back on the menu after an absence, apparently due to popular demand, so I went for it. It was good. The hot pork was not super moist, but that also means it wasn’t greasy, and it was plenty tender. It was very peppery, but I happen to love black pepper, so it was right up my alley. The tzatziki added a gentle garlicky counterpunch. I perceived less of a vinegar kick than I would at the next two places I visited. The standard-issue fries were also treated with a healthy dose of black pepper. Where this gyro really won me over was the pita. It was a perfect combination of fresh-soft and toasty-crispy. I would have happily eaten it by itself. For dipping my fries, I asked for a serving of the spicy tzatziki that comes on their “fire gyro.” The owner provided a gener-

ous cup of it with a smile, and later asked me how I liked it (it was good). The next day I stopped into Mikonos (50 Scotch Road, Ewing; 609-883-9333; mikonosrestaurant.biz), which opened in 2011 and which a lot of people still think of as the old Stewart’s Root Beer. The interior of the sit-down restaurant is decidedly blue and white, the colors of the Green flag. I ordered the lamb and beef gyro ($10), which as at Pi came with a side of peppery french fries. The Mikonos gyro had the most pronounced vinegar presence of the dishes I was served; for a moment I had the feeling I was eating an Italian hoagie. The ground, spit-roasted meat was extremely tender and tasty. At Mikonos they put the tzatziki on first, so that you don’t encounter it until you are partway through your sandwich. As was the case at Pi, the gyro was heavily seasoned with black pepper. The pita was again fresh and pillowy soft, nicely toasted. If forced to pick, I would probably say I preferred the meat at Mikonos and the pita at Pi, but I wouldn’t drive a long way to eat at one if I were already near the other. By the way: if you’re at Mikonos and suddenly you see the server light a dish on fire before extinguishing it with a squeeze of lemon juice and delivering it to a table

The gr yo and fries at Pi Greek American Grill on Route 130 in Deerpath Pavilion comes with a fountain drink and costs $8. nearby, you’ve just seen saganaki ($8), or kefalograviera cheese sautéed before it is flambéed tableside. A conversation starter for sure. I capped off my three-day Greek extravaganza by stopping in at The Simple Greek (957 Route 33, Hamilton; 609-890-4976; thesimplegreek.com), a new chain restaurant which opened in September. The Simple Greek has been described as “the Greek Chipotle,” which is apt for sure. The concept is simple: you order either a bowl ($8.95—with rice, salad or lentils) or a pita ($6.95), which you can then personalize with a protein (traditional gyro,

chicken gyro, grilled steak or grilled chicken), sauce (including tzatziki and Greek dressing) and a variety of other ingredients (including shredded lettuce, tomatoes, roasted red peppers, pepperoncini and garbanzos). As a clerk makes your bowl or pita, you can choose exactly which ingredients you want put inside. I chose the traditional gyro with tzatziki and village salad (tomatoes, cucumbers and onions in vinegar). French fries ($2.55) are a la carte; unlike the other restaurants, The Simple Greek serves handcut, Boardwalk-style fries. The gyro was pretty good, although not at the standard of the

other two restaurants. The meat had less flavor and less texture, and the onions in the village salad were so strong I had to pick them out. The pita was good, but not toasted, and not as pillowy soft as the others. That said, The Simple Greek’s fries were my favorite, and I think a lot of people will enjoy the flexibility it offers in terms of how your meal is made. I also ordered baklava to go at all three restaurants, since there was no way I was eating it there after my enormous lunches. Mikonos ($6) had by far the tallest and the moistest of the three; a sweet syrup continuously oozed from it. Being so moist it was also the least crispy, although the many layers of phyllo still managed to provide that satisfying textural juxtaposition of flaky crust, crunch nuts and sugary liquid. Pi Greek American Grill’s version ($5) was not as tall or as moist. Though it was plenty sweet, it was probably the least sweet of the three, and came with the most nuts. The Simple Greek’s take ($2.95) had the fewest layers of the three I would say, and was also by far the least expensive. It was the driest of the three, but still tasty. After three straight days of gyros, I didn’t need to eat again for a week. But I enjoyed all my meals quite a bit. It’s safe to say it won’t be 46 years, or even 46 days, before I have another one.

Notre Dame swimming looks to local duo to lead By Rich Fisher Never let it be said that Robbinsville provides run-of-the-mill captains for high school athletic squads. Take the Notre Dame High girls’ swim team, for example. Two of the Irish’s three senior captains are from Robbinsville and are about so much more than just the pool. Lauren Nance is an accomplished equestrian, while Kaylee McEvoy spent last summer touring Spain just to make sure she honed what she learned in class. Irish coach Henry DeSandre, however, is more enamored by what they have in common—the ability to contribute to his team. “Lauren has an energy that just blows me away,” DeSandre said. “She’s a strong swimmer. She’s a strong middle stance freestyler and a strong backstroker. She’s a good meet leader, a good team leader with a lot of positive reenforcement. Kaylee is a distance girl who has great work ethic and she really identifies with her teammates. Both girls are tremendous advocates of Notre Dame swimming.” Despite being from the same town, the girls did know each other until their freshman year of high school when they met through riding the bus and going out for the swim team. Nance took her first lessons at The Atlantic Club in Manasquan before

last year with Peddie. “I have been doing swim as long as I can remember,” Nance said. “My parents signed me up for swim lessons as soon as I was old enough and I have

been doing it ever since. I’ve spent so much of my time on this sport and it is a huge part of my life.” It’s likewise with McEvoy. “I started swimming in preschool and I cannot remember a time I my life when a significant amount of my time was not in the pool,” she said. “I initially got involved because my mom made me go to lessons, not realizing the commitment she signed up for. She simply wanted me to learn how to swim so I could be safe but I ended up loving it. Eventually, the coach at the pool where I was taking lessons asked me to try out for the team. After making the team at four years old, I continued swimming until today.” McEvoy swam for Peddie from kindergarten to 3rd grade before switching to the New Jersey Stingrays, where she continues to compete. Unlike Nance, who has always loved the 50 and 100 freestyles and 100 backstroke, which she has done all her life, McEvoy had to be “coerced” to do distance. “When I was younger I would switch events every few months,” she said. “I swam breaststroke at one point and even fly. At our Trenton meet my freshman year, Coach DeSandre forced me to swim the 500 free for the first time. I honestly thought that he was crazy and that there was no way I would make it through the swim, but I swam it anyway and loved it.” DeSandre loved how she did it, as he put her there again in their next meet

against Robbinsville. “I ended up placing in the event and he informed me that I would be swimming it again at MCTs (Mercer County Championships),” McEvoy said. “At the beginning of my freshman year, I never would have expected to have to swim that far or enjoy doing it, but the instant I swam it, I knew I had finally found my event and I have not stopped swimming it since.” The two have had varying degrees of success. McEvoy has fared well in dual meets but has yet to find success in states and counties. Nance has had top-six finishes in the counties for three straight years, following in the footsteps of her brother Austin, a 2017 ND grad. “My brother has definitely influenced me,” Nance said. “We swam on the same club teams growing up and pushed each other to do our best. I went to his swim meets at Notre Dame and knew I wanted to be part of the team too. I saw how great the coaching staff was and saw the great chemistry throughout the team. He always loved Notre Dame swim and I’m glad that he passed the love onto me.” It is a love that has consistently burned passionately for Nance, although that has not been the case for McEvoy. DeSandre noted that she “had to fall in love again with a sport that is sometimes so easy to fall out of love with.” The issue stemmed from a back injury that surfaced last season, leaving McEvoy to wonder about her future. “On top of that, my intense amounts of school work, as well as trying to balance both Notre Dame swimming and club swimming, became difficult,” she said.

“The stress from all of that when dealing with my back injury forced me to ask if swimming was worth the risk when I was already hurt. After taking some time off over the summer, I missed swimming and knew I had to go back. Since then I have continued to struggle with my injury but I can definitely say that the risk is worth it since I get to do something.” There was a good reason why she took the summer off. McEvoy plans on studying Spanish in college and already completed all the Spanish classes Notre Dame offered. Not wishing to forget what she learned before getting to college, she visited the ultimate classroom. “I went to Spain on a language immersion program, and I was there simply to gain confidence with the Spanish language,” said McEvoy, who is now taking Italian III at Notre Dame. “I traveled across the country to different locations from cities and small towns to mountains and beaches. I truly experienced the various regions and ways of life throughout Spain, and most importantly I learned more about the culture through both lessons and experience. “However, the only form of ‘culture shock’ I experienced was not being able to swim every day. After five weeks, I still did not want to go home but I had definitely accomplished my goal of improving my Spanish.” And while McEvoy was traipsing about Spain, Nance stayed home and enjoyed one of her true passions on dry land. “I love horseback riding so much,” she said. “I first started in second grade during a summer camp and from then

on haven’t stopped. I have competed in shows, but now I do it for my own enjoyment. I try my best to ride at least once or more a week, but sometimes it becomes challenging with the demanding schedule of swim. I would definitely love to continue riding the rest of my life. It is something that brings me so much peace and happiness.” Swimming also brings happiness, if not much peace, but Nance hopes to enjoy the ruckus for four more years. She is keeping her college options open and if the right fit comes along, she will try to extend her career. McEvoy has applied to schools that all have Division I programs, so she figures her future is either on a club team or swimming independently. Until then, the two are focused on one more high school campaign together. Nance looks to swim a low 24 in the 50 free and “do my best during championships and in all my meets,” while McEvoy’s goals are to improve her times in the 500 and 200 and “cheer the rest of my teammates on through their personal successes.”

The duo will certainly cheer on each other, as they have become great compadres since meeting as freshmen. “I know that she will always be there for me,” Nance said. “I think that we definitely push each other in a positive way. I have enjoyed having her as a great teammate throughout high school.” McEvoy echoes those sentiments. “Throughout the past four years Lauren and I have had each other’s backs throughout every season,” she said. “Lauren pushes everyone on the team to do the best that they can and is a constant source of positivity and encouragement for all of us. She is not only my teammate but she has become a close friend of mine through the years. I can honestly be as weird as possible around her and she won’t judge me for any of it, she always understands. We can actually talk for hours about everything both in and out of the pool. I could not be luckier to have a teammate like Lauren.” DeSandre feels the same way about having both on his team.

Bork eyes big finish to truncated RHS basketball career By Rich Fisher Cory Bork’s ankle issues may have been exactly what he needed. The Robbinsville High senior is the leading returning scorer for the Ravens boys’ basketball team this year, averaging 17.5 points in a breakout junior season. It wasn’t long ago, however, that pigskin was his passion. “The sport I wanted to play was football, that was my main sport growing up,” said Bork, who played in the Robbinsville Ravens football program and for the Notre Dame High freshman team before transferring to RHS. “But I started to injure my ankle.” Over and over again, as he suffered a series of three ankle sprains in four months. By the end of Bork’s freshman year, he decided to focus completely on basketball. “Football was just too dangerous to play, and I picked up basketball pretty quickly,” he said. “I was a middle linebacker and a running back, and I loved it, but I didn’t want to get injured and mess myself up for basketball.” It was the classic cliché springing to life—a door closes, a window opens. “It was like a blessing in disguise,” Bork said. “I do miss football, but I would miss basketball so much more if I stopped playing. It equals out. I still have to wear ankle braces. My ankles are weak from all that wear and tear. I

have to treat them right.” He showed no issues last year, as his first full season with the Ravens proved he was a top-flight varsity performer. After playing hoops in Robbinsville Recreation, Bork played AAU with the New Jersey Titans, coached by Ron Simpson. He moved on to the Bucks County Rebels, and learned valuable lessons with both programs. Simpson impressed the need to become a good defensive player, and with the Rebels, Bork learned how to play in a methodical, fullcourt offense rather than just running up and down the court. As a Notre Dame freshman, he played one game and hit a 3-pointer in a program that was loaded with talent. Bork’s classmate was Isaiah Wong, who would likely be the Colonial Valley Conference’s top player this year had he not been one of six transfers to head elsewhere. But just one year of practicing with ND paid dividends for Bork. Senior Cor y Bork dunks the ball “It was great,” he said. “At the begin- during a scrimmage Dec. 12, ning of the year, he put all the incom- 2018. (Photo by Suzette J. Playing around people like that most people can’t do,” Hayes said. “He’s just makes you that much better.” After transferring to Robbinsville, extremely athletic, so right away he could Bork had to sit out the first 30 days of shoot from the outside, he could get to the season. Conor Hayes was in his first the rim, he has a real quick first step. cult to fit him in with all the changes we were already making, then having him sit 30 days and we were having some success. We were on a six-game win streak when he became eligible. So it was tough to mix things up that year.” Bork averaged 5.9 points and hit seven 3-pointers in 14 games. Things changed drastically last year as he hit double figures in all but three games and had eight games of 20 or more points, including a high of 32 against West Windsor-Plainsboro South. Bork enjoyed a three-game stretch in which he scored, 24, 25 and 24 in consecutive games with South Plainfield, Steinert and Allentown. He was also one of the team’s top defenders, often times taking on the other team’s top offensive threat. “We were heavily dependent on him scoring 18, 19 points every night,” Hayes said. “I like him on the wing, he has a great first step. He was an electric scorer for us last year, and we’re expecting a lot of big things from him this year.” Bork is well aware of that. And while Robbinsville has an improved team this year, Bork realizes he will be a big part of any success. That is why he spent an entire summer working feverishly on his game. Rather than play AAU, Bork only played with the Ravens in their summer league while devoting himself to the weight room. He is now a solid 6-foot-1, 160 pounds after adding 10 pounds of muscle.

“I just focused on getting heavier and stronger for basketball,” he said. “I wanted to up my weight because I was so very skinny last year, I got pushed around. I was in the gym every single day or did box jumps or squatted or stuff like that. As far as basketball, I was in the gym every day I could get in the gym. I would go outside if it wasn’t raining, or to the YMCA. Every day I was trying to work out and play basketball. It paid off. This year I’m able to windmill the ball and dunk it easily. I just learned that this summer.” Bork possesses a lethal outside shot as witnessed by his 53 3-pointers last year. But in order to keep defenders from getting up on him, he realizes he has to penetrate as well, which he feels is his most effective way of scoring. For that, he needed strength. “I think my best way of scoring is driving and finishing with all these huge defenders around me,” he said. “My vertical (leap) has gotten insane. I feel like I’ve improved so much on finishing through contact and some crafty ways around defenders. Now I can rise up and dunk the ball if a defender is in the way.” If that wasn’t enough, Bork also worked on one other skill. “His first step is so quick and just gets him by the person, and once he gets two feet in the paint he becomes really dangerous,” Hayes said. “’And now, the biggest thing he’s improved on is finishing with his left hand. He always showed it in practice, but he really committed to any time he was going left, he was finishing with his left all summer.
