coming up The show goes on at Beach Haven’s Surflight Theatre By Rob Anthes

Steve Steiner had a choice to make. The producing artistic director could resign Surflight Theatre, his 450-seat venue in Beach Haven, to the same fate as performance spaces around the globe—stay closed this summer, miss out on a full season of performances and revenue, and most likely never reopen. Or, he could figure out a way to safely house performers and crew, find an outdoor performance space, learn everything he needed to know about how to make that space comfortable and operational amid a pandemic, put all the pieces together in a matter of weeks and attempt to salvage some sort of normalcy in a time where nothing is normal. The staff at Surflight Theatre decided to, in their words, “focus on the ‘can’,” and chose to do what they could to take the optimistic yet difficult path to proceed with their season. As a result, Surflight Theatre became one of the few arts venues in the entire country to successfully open this summer. “This is really important to this community and the people who live near here as well as vacation on Long Beach Island,” Steiner said. “We really wanted to be able to offer most of what we were going to do. We know we’re going to lose money this year. And there’s nothing that can be done about that. But if we would not have done anything, the loss would be so great

that reopening next year would probably be impossible.” Surflight Theatre has existed on Long Beach Island since 1950, and the neighboring Show Place Ice Cream Parlour, which features a waitstaff that sings and dances, celebrates 45 years this summer. Both have become a tradition on LBI for yearround residents and vacationers alike. Motivated by this history, Steiner and his four-person staff had all the plans in place to open both Surflight Theatre and Show Place

by May. All they needed was New Jersey Gov. Phil Murphy to lift restrictions on outdoor dining and gatherings. In June, Murphy gave the go-ahead for outdoor dining, and Show Place opened a few days later, on June 19. The quick start was thanks to the advanced preparation the Surflight staff had done, with Show Place’s performers already weeks into rehearsing the songs and choreography they would need. A week later, Murphy allowed outdoor gatherings of less than 250 people. Surflight already had government approval to use Veterans Memorial Park across the street from the theater as a venue, and had a connection for large tents—the same company set up an open-air tent on the patio at Show Place to make an outdoor dining space there. Crews built the stage, moved the theater’s sound system into the tent. Some lighting equipment couldn’t be moved, and had to be rented. Meanwhile, performers rehearse wherever they can outdoors, including on the sidewalk outside the theatre and in the park. Nearly all the performers are not from Long Beach Island, and all live together for the season—a Surflight tradition that just happened to work in their favor this year. Performers live, work and socialize only with each other, which created a bubble similar to the ones professional sports leagues have tried to create in an effort to restart their seasons. The staff at Show Place live together in their own apartment, and abide to similar rules isolating performers. All Surflight and Show Place employees have their temperatures taken twice a day, and are regularly tested for COVID-19. Steiner said they haven’t had any positive tests for COVID-19 yet, which has allowed

shows to go on without a hitch. The main stage production of Cabaret premiered July 10, and its 23-show run will end Aug. 2 to make way for Mamma Mia! Aug. 4-30. Surflight also has a series of musicals for families, such as Frozen, Jr., and regularly hosts touring comedians and musicians. In August, comedian Mike Marino (Aug. 9) and country/gospel group The Oak Ridge Boys (Aug. 31) both are scheduled to make appearances under Surflight’s tent. Surflight requires visiting acts to be temperature checked, as well. The venue itself adheres to social distancing and sanitizing protocols. Steiner estimated the tent could seat 700 people in a normal arrangement, but Surflight limits its shows to no more than 220 people. The actual seating capacity varies show-to-show, depending on how people buy their tickets. Groups sit together, with six feet of space on all sides. A family of five, for example, would sit together, six feet away from the next closest group. Someone buying a single ticket would have a solo chair with six feet of distance from the next group. Chairs are cleaned and rearranged before every show. Steiner said he has been contacted by others looking to Surflight as a prototype of how to operate an arts venue amid a pandemic. He—like everyone—hopes the Surflight model won’t be needed much longer. But should it have use beyond this summer, Steiner is proud to share it, saying that he’s always preferred to tackle problems head on. “I would always say there’s a solution to every problem,” Steiner said. “We just have to find it.” Surflight Theatre, 201 Engleside Ave., Beach Haven, N.J. Palmer Square in Princeton (left) was conceived during a Colonial Revival movement taking place in the late 19th and early 20th century. The Tuckerton Seaport (right) is a recreation of one of the colonial era’s most important ports of entry. FAUXCATION continued from Page 5

man speaking group, architecturally it represents an approach that isn’t “classical” or geometrically balanced designs found in Greek and Roman temples and early 20th century banks. Instead the Gothic employs an organic use of shapes and tensions. With its battlements, pointed arches, leaded glass, bay windows, and gargoyles—including one of Cram’s face at the entrance of the chapel —the Princeton Gothic is worth a look.

Time Traveling in New Jersey For those still holding a grudge over 18th century British taxation without representation and want to make Colonial American great again, take a slight trip to downtown Princeton’s Palmer Square. Here visitors can find rows of shops all sporting the early 20th century reinterpretation of Colonial America—part of a movement that was brewing as the university was busy going British. As the Historical Society of Princ-

eton tells it, “The Palmer Square development was the dream of Edgar Palmer, heir to the New Jersey Zinc Company fortune. Palmer’s plan, which he announced in February of 1929, called for the creation of a new municipal center in the heart of Princeton. The design, prepared by architect Thomas Stapleton, was part of the Colonial Revival movement taking place in America at that time.” A lengthy and costly on and off again process, Palmer Square’s transformation wasn’t completed until the 1980s when stores and townhouses were added on the north and east sides of the square. Some stops include the Bent Spoon ice cream shop, Olsson’s Fine Foods, and the Nassau Inn where in the appropriately named Yankee Doodle Tap Room you will see another artifact of the era: Norman Rockwell’s mural of Yankee Doodle himself, painted in 1937. The Colonial Revival movement originally started with the 1876 Philadelphia Centennial. There, visitors seemed to renew their faith in the still new nation by embracing an architecture that many saw as outdated and obsolete.

Accordingly, the decades up to around 1940 witnessed Americans reclaiming their Americanism by imitating an era that used symmetry and balanced proportions—ironically in a general style named Georgian, for the series of British kings named George. As one U.S. government publication noted, “The goal of Colonial Revival was to evoke sentimentalism regarding the early history of the United States.” Unfortunately, as in the case of Palmer Square, this evoking of a romantic past American included the odious practice of building on the former homes of relocated Princetonians of African ancestry. Palmer Square is a free commercial district across from Princeton University, which interesting has one of the most historic Colonial buildings in the country: Nassau Hall. While Palmer Square evokes the feeling of Colonial America, the Tuckerton Seaport and Baymen’s Museum is the recreation of one of the colonial era’s most important ports of entry. Located on the mainland across from Long Beach Island, which protected the port from stormy seas and

waves, the town was settled in 1698. It had been called several names until 1791 when what was then known as Clamtown was renamed for Ebenezer Tucker. That year, prominent town resident member and Revolutionary War veteran was appointed the port’s custom’s collector by a few friends in high places, namely George Washington and Thomas Jefferson. The maritime village and museum, which opened in 2000, consists of 20 historic and recreated buildings connected by a boardwalk. One of its main attractions is the reconstructed Tucker’s Island Lighthouse. Tucker’s Island was basically a sandbar where a lighthouse had been built in order to guide ships between Barnegat and Absecon lighthouses. After years of withstanding decades of the island’s sand erosion, the lighthouse became the victim of longshore currents that pulled the structure down in 1927—as one of the exhibitions in the recreated lighthouse makes clear. Another intriguing display focuses on ships wrecks along the New Jersey shore. As a member of the Council of

A small village at Grounds For Sculpture in Hamilton celebrates impressionist artworks and the French locales that inspired them.

American Maritime Museums and home of the Jersey Shore Folklife Center, Tuckerton Seaport is serious about preserving and sharing the region’s maritime history. And in addition to having historically accurate building replicas it maintains a historically vital link to living traditions. When the seaport is past its current limited re-emerging phase, visitors can visit decoy carvers and visit a workshop where the regionally specific cedar wood boats designed for shallow water use are still made. And while one can walk the boardwalk between the buildings ($5 per person), the seaport’s current attraction is taking water ferry trips from Tuckerton to Long Beach Island (Saturdays, Sundays, and Mondays) or 50-minute creek tours (Tuesday and Thursdays). Check for times and costs as well as building re-openings at the information listed at the end of the article.

Belgium and France? Oui (in Hamilton) If English Gothic and Colonial American are not your cups of tea and you would rather escape to a French styled café to philosophize about architecture over a glass of wine, then take a trip to the Gallic-inspired buildings at Grounds For Sculpture in Hamilton Township. That’s where visitors will find a small European village housing Rat’s Restaurant, Toad Hall Shop and Gallery Artisan Boutique, and offices and artist studios. While a 19th century Belgian Village was the original concept that inspired GFS founder and artist Seward Johnson, there are several reasons that these buildings visually speak with a noticeable French accent. First it sets a tone. As Johnson told a New York Times reporter just as the restaurant was opening in early 2000, “I lived in Paris for a year, and I saw that French people mix their culture with their food. They have places to eat, places to sit and ponder—they have bathrooms! If you bring in a good restaurant, you bring in people with cultivation, and that is good for us.”

They also provide a visual reference for Johnson to celebrate his love of impressionist artwork and the French locales that inspired them. That includes the town of Giverny, where famed French Impressionist painter Claude Monet lived, created, and painted lily pad ponds and elegantly curved Japanese bridge. According to the 1994 final instruction to architects regarding the village, that connection became more and more important to the “idea” of the village: “Mr. Johnson visualizes the development as having the look and feel of Monet’s house and gardens at Giverny,” and quotes the artist and Johnson & Johnson heir as adding, “It is to have the feeling of a country house turned into an inn, and look like it has been there forever.” The Hamilton French building and landscape also provide the proper backdrop that gives life to Johnson’s sculptural-interpretations of French Impressionists paintings. That includes Gustave Caillebotte’s “Paris Street; Rainy Day, 1877” and Vincent van Gogh’s “Tarascon Stage Coach,” both greeting visitors as they approach the restaurant and the gift shop. PierreAuguste Renoir’s “The Luncheon of the Boating Party,” Edouard Manet’s “Argenteuil,” and Claude Monet’s ‘Woman with a Parasol” are waiting nearby on the other side of the buildings. Other period interpretations seamlessly emanate from this visual anchor to the rest of the park. GFS project manager Bruce Daniels says the buildings were specifically designed to house a restaurant; the Atlantic Foundation, the organization that provided funding for the grounds; and apartment-work studios for artists, including one for Johnson. “One thing I don’t want it to look is institutional. I think that I would hate to see a modern building because I think it would look institutional,” says Johnson in the instructions. “(The buildings) should not be the same as the sculpture park buildings. They should have a different and individual character, but still work with the Grounds For Sculpture structures,” continue the instructions. See FAUXCATION, Page 8

Miss indoor dining? Roots Ocean Prime has a fix By Joe Emanski

Miss eating inside restaurant dining rooms? It is (legally) possible to do it in Princeton right now—despite the restrictions placed on restaurants due to the coronavirus pandemic. Roots Ocean Prime, the surf-andturf restaurant in Princeton’s old train station complex, reopened last Thursday for lunch and dinner and, thanks to Gov. Phil Murphy’s recent decree, for both indoor and outdoor dining. Murphy signed an executive order on July 8 allowing bars and restaurants to serve patrons indoors if they can open at least 50% of their walls to the outside. Observers saw this as a means of allowing bars and restaurants along the Jersey shore to start doing business again, since many of them have open-wall designs to take advantage of warm summer weather at the beach. But Roots Ocean Prime, located in the old Princeton train station complex, can open 70% of its walls to the outside, says general manager Chris DeLuca, meaning it can offer guests an experience that most have not had in months. FAUXCATION continued from Page 7

Interestingly the proposal was won by Brian Carey and AC/BC Associates, the contemporary-oriented firm that had won the GFS park design competition in the 1980s. Daniels says Carey refocused his approach and visited Giverny (in northern France) and Monet’s studio. “So what Carey designed for Seward is very close to that. When (Carey) set the model down. Seward was amazed and said, ‘This is what I want.’ And Carey received the contract to design everything except the restaurant interior. That contract was given to the Philadelphia design firm DAS and involved hands-on participation by Johnson. Daniels says most of the 36,600 square foot “village” is made of cinder block and concrete from New Jersey, but other elements are imported from France. That includes some of the building’s limestone and tile and Rat’s Restaurant’s zinc bar and Bonnet range—that $225,000 French import required keeping a wall open during construction and closing it after the stove was installed in the building. “I think we spent something over $12 million,” says Daniels about the expenses of the original development of the village starting in 1997 and continuing to the open of Rat’s Restaurant on January 4, 2000. After that came the Dance Pavilion in 2000; the Gypsy Wagon front entrance in 2001; and the Toad Hall Shop & Gallery in 2002. Overall the Belgium-French design

“Response has been great. All our reviews we have received through our reservation system have been extremely positive,” he says. “People love the fact that that main dining room is like a breezeway now.” The restaurant is open for curbside pickup and delivery as well as indoor dining. Lunch is served Wednesday through Saturday from 11:30 a.m. to 4 p.m. and Sundays from noon to 4. Dinner is available Wednesday through Sunday from 4 to 9 p.m. DeLuca says Roots is serving nearly its full menu for lunch and dinner, with only a few of its more labor-intensive dishes temporarily removed. Updated menus are available online. Roots Ocean Prime is a restaurant in the Harvest Restaurant Group, which also owns Agricola Eatery on Witherspoon Street as well as a number of restaurants farther north in New Jersey. “We’re in a lot better position than a lot of restaurants,” DeLuca says. “We have these big round booths that we’ve turned around, so it’s like one big patio looking out. It’s really nice.”

Between the indoor tables and 9 tables on the patio with umbrellas, Roots has about 20 tables available for seating—and DeLuca says that all 20 For more from Mercer Eats, find us were taken at one point July 11. on Facebook and Instagram.

is connected to pleasing arrangements and symmetry, even country houses embraced the use of traditional natural elements such as plaster, stone, glass, and slate. The earth toned structure reflects elements of an older and simpler elegance and creates a smooth connection to both an English Garden (a seemingly freer approach rather than the highly geometric structured design associated with French Gardens) and a waterscape, a Japanese element Monet employed in Giverny. The result, as one writer about Giverny noted, reflects the French 18th century delight in the artificially natural. And as another writer writing on Belgium architecture notes, the building created outside the restaurant—originally designed as a dance hall but now used for events—reflect the popular Belgium preference for extensions or outbuildings. Yet there is more. Johnson saw the approach “as sort of a theme park of the subconscious where there will be echoes of things that we all know, like Monet’s bridge . . . You pick up these things from your unconscious, and so you feel at home right away for a reason you can’t describe. I see this project as a work of art.” The square includes Rats Restaurant which currently offers some limited outside upscale dining at a cost. GFS is in its first phase of reopening, with limited timed tickets available online. Tickets must be pre-purchased.

India in Robbinsville— at the BAPS Mandir The BAPS mandir—or temple—in Robbinsville is only about 10 miles away from Grounds For Sculpture, but its architectural roots are 7,000 miles away in India. And with the living tradition being handed down for over a 1,000 years and brought to the United States, there is nothing faux about this extraordinary addition to the region’s landscape. But its authentic cultural presence in New Jersey fits the bill for a quick slip to India. BAPS stands for Bochasanwasi Shri Akshar Purushottam Swaminarayan Sanstha. The name mixes the town where the religious group’s first mandir was built, the name of a significant and revered deity, an ideal devotee to that deity, the person who inspired the formation of the spiritual group, and the word for organization (sanstha). One of 3,850 such complexes around the world, the Robbinsville mandir began being built in 2010, was inaugurated in 2014, and reflects the region’s growing presence of people from or connected to India. It is reported to be one of the largest mandirs in North America, attracting an estimated 1,000 visitors per week. A 2019 article noted that the structure measured 12,000 square feet and was 42 feet tall, but that was part of a phase that of a project that plans of a complex that will encompass 160 acres by 2021. The marble construction that began in India and reassembled in New Jersey follows Hindu architectural tradi-

tions and reflects the ideas of duality and harmony, the movement of time, and the flow of creativity. At its heart is a chamber where the spiritual and physical worlds meet and energy radiates outward in all directions. The Robbinsville mandir has 40 spires, 10 domes, 98 carved pillars, and carvings of symbolic animals, sacred figures, and ceiling and floor designs. In normal times, tour guides and materials are on hand to help explain some of the imagery, which includes animals, spiritual teachers, and devotees. The buildings are closed to the public currently, due to the pandemic, but the grand grounds still provide plenty to make you feel like you’re in another land.

Shola boosts Mercer food scene By Joe Emanski

Mercer County’s diversifying food and dining scene got another boost in mid-July when Shola Kabob and Curry opened on George Dye Road in Hamilton Township. Shola, a new business venture for Hassan and Seema H. Sheikh, is the first Pakistani restaurant in the area, featuring skewered halal meats grilled in a tandoor oven as well as a variety of curries and other regional specialties. Hassan Sheikh says that Indian and Mediterranean influences meet in Pakistani cuisine. Kabobs like chicken tikka and lamb tikka will be very familiar for someone who likes Middle Eastern cuisine, while the curries, including coconut chicken curry and lamb masala, can claim Indian origins. The menu as listed on the restaurant website also includes specialties like Chicken Karahi and Lahori Channa (a vegetarian chickpea dish), as well as naan and hummus, samosas and pakoras, and familiar sweet treats like mango lassi and gulab jamun. Hassan and Seema Sheikh moved to Lawrence from Las Vegas last year. This will be the first new business for the couple, who have four children, three girls and a boy, ages 6 to 12. Both have a background in restau-

Old Hights Brewing opens in Hightstown By Joe Emanski

Hightstown became one of the latest New Jersey towns to welcome a craft brewery when Old Hights Brewing Company opened its online store for business on June 16. In reality, Old Hights has been around for more than two years — that’s how long co-brewers Alex Costantino and Brian Woodward and their partners, Charles “Lee” Stults and David Puskar, had been working on their passion project. The newly built brewery on West Ward Avenue kicked things off with four varieties of beer: Porch Tour Pale Ale; Raspberry Fizzle, a fruited sour ale; West Ward Abbey Ale, a Belgian-style tripel ale; and All Together, a collaborative IPA that has been brewed by more than 550 breweries across the country in support of the hospitality industry, which has been hit hard by the coronavirus. Those first beers sold out within the first few days of going on sale, leaving the new brewery without any inventory until the next batches were ready to go. Four more canned beers went on sale a few weeks later, and last week, Old Hights released its third quartet of beers. Because of the pandemic, Old Hights has been unable to welcome the public into its custom designed taproom. However, in mid-July the brewery did

open its outdoor beer garden, an area with tents adjacent to the brewery. Parties can reserve tables for 90-minute windows on weekends and some weekday evenings. Customers can also pick up canned beer to go if they purchase it online ahead of time. The new venture has enjoyed strong early sales, as well as enthusiastic support from social media followers, which was evident even before opening. “Since we started doing this project, I’ve never gotten so much positive feedback over anything I’ve ever done in my life,” says co-founder and co-brewer Alex Costantino. “Everyone is so excited, and they just want to help in any way.” *** Rennie DiLorenzo used to tell people that there was great beer being brewed right there in Hightstown. DiLorenzo was the owner-chef of 12 Farms Restaurant then. He was also neighbors with Alex Costantino, a musician and music educator who had a homebrewing hobby. “He tasted my beer and he said, ‘We need something like this in town,’” says Costantino, who grew up in Hamilton and graduated from Nottingham High School in 2001. DiLorenzo is the sort of restaurateur who likes to circulate in his dining room and get to know his guests. “He would tell people we have a brewer, we have great beer in town,”

PRINCETON BALLET SCHOOL the official school of American Repertory Ballet

Old Hights Brewing Company’s Brian Woodward, Lee Stults, Alex Costantino and Dave Puskar.

Costantino remembers. If Costantino happened to be present, people would ask him when the brewery was opening. “Even though there was no plan to open a brewery,” he laughs. But DiLorenzo had planted a seed. Charles “Lee” Stults was another neighbor—and another catalyst. Stults had a similar reaction to DiLorenzo after tasting a Belgian saison Costantino had made. “Lee came over and drank some in my backyard, and he was like, ‘Man, this is really good,’” Costantino recalls. “He still brings it up to this day.” Stults has deep Hightstown roots. He is a member of Hightstown Borough Council and a partner at OGP Architects on North Main Street. Like DiLorenzo, he encouraged Costantino to start up a brewery in town. “Everything really started evolving

when Lee got involved. Having him involved — I don’t think he recognizes how vital he is,” Costantino says. “Everyone knows Lee, everyone trusts Lee.” Costantino says things really started to come together when David Puskar got involved. The East Windsor resident works for Bloomberg and has a doctorate in finance. “He was like the missing link,” Costantino says. “I guess we had a lot of good ideas and when Dave came around, he was able to organize everything.” Costantino remembers the day DiLorenzo, who has since sold 12 Farms and moved to Brooklyn, called and asked him if he was busy. “He said, ‘Hey listen, what are you doing tonight? I’ve got a spot picked out for you downtown, let’s go check it out.’” The building DiLorenzo took Costantino to see was the old Hights Theater on Main Street. Built in the 1930’s, it had been subdivided into multiple retail shops over the years, but now was available for renovation. In the end, the space wasn’t right for a brewery. But there is a way in which the location will always be tied to the brewery: it inspired the name. “I thought, hmm, Old Hights,” Costantino says. “I looked it up. No one had trademarked it. We went to historical society to double check—they gave us their blessing. So we settled in on Old Hights Brewing Company. The dream was we’d be in the original movie theater location. But just due to circumstances we ended up in the spot we’re in now.” The spot they’re in now is a former lumberyard on West Ward Avenue, next to Grove Supply. The newly built facility has a cozy, two-level tasting room all with a view of the 7-bbl steam brewhouse with four 7-bbl fermenters and one 14-bbl fermenter. It’s the kind of place that beer drinkers love to gather in, if only gathering in indoor spaces were permitted by law. ***

All of the partners in Old Hights Brewing Company have full-time jobs. Costantino is a band director for a number of Hamilton Township elementary schools. He also plays tuba with the New Jersey Capital Philharmonic Orchestra. Co-brewer Brian Woodward, who lives in Princeton Junction, teaches instrumental music in the West Windsor-Plainsboro School District. He is also a musician with the Capital Philharmonic, playing the trumpet. Costantino sees a lot of similarities between brewing and music. And he thinks maybe that’s why he was drawn to brewing in the first place. “Brewing is very relatable to music,” he says. “Like in music, brewing is always thinking on your feet, it’s having to adjust to things as they happen. In brewing there’s a recipe, but then like in music there’s quite a lot of creativity involved. And I have an instrument repair background, and you’ve got to have some mechanical piece in you, in brewing and in music. You have to figure out problems with the equipment, tinker with things, pull things apart and put them back together.” Woodward and Costantino share a few hobbies. Brewing is one. Barbecue is another. “One of our first bonds was barbecue. We both got Big Green Eggs and were always making barbecue on them,” Costantino says. “We just always were talking about hobbies

we both shared and everything just kind of progressed into a great friendship, and now a partnership.” When Costantino proposed opening a brewery together, Woodward agreed to do it. “When I asked him to come aboard, I don’t think either of us knew what we were getting into, but he jumped in with both feet,” Costantino says. Woodward and Costantino are both graduates of The College of New Jersey, as is Puskar. TCNJ is also where Costantino met his wife Lisa, who is a choir teacher in Monroe. Old Hights Brewing Company may have partners, but it is very much a family affair. Lisa Costantino set up the Old Hights website and does social media and marketing for the brewery. She also designs the can labels. Amy Woodward set up the brewery’s online store, and Hilary Swanson, partner of Lee Stults, does merchandising and is responsible for the curbside pickup process. “Everyone on the team is very work-driven,” Costantino says. “We set goals for ourselves and we make sure it all happens.” *** Costantino and Woodward have spent time the past few years visiting and shadow brewing at breweries in the midAtlantic, including Montclair Brewery in Montclair, Four City Brewing Company in Orange, and District 96 Beer Factory in Rockland County, New York.

“This industry is so welcoming,” Costantino says. “We’d introduce ourselves, say we’re a friend of a friend, and the brewers would say ‘Come on over!’ That helped us really figure out the kind of brewing system we wanted.” Costantino says he and Woodward are hopheads who love to brew India pale ales. “We love IPA’s, we’re always trying to figure out how we can get more aroma, how we can get more flavor, we’re always trying all the new hops varieties coming out. That’s kind of our thing,” he says. But Costantino says they are committed to filling their 16 taps with a variety of beer styles. “We wanted to be able to have enough taps to have something for everyone,” Costantino says. “We made a raspberry gose (a salty, tart style of ale) and we gave it out on people who said they don’t like beer. And they were like, ‘I didn’t know beer could taste like that.’ So that’s what we’re going for.” Ordinarily, opening a brewery means opening up a taproom at the brewery where thirsty people can stop in and order draft ales to drink in house or get packaged ones to go. As the popularity of craft beer has skyrocketed In recent years, breweries have been able to make a significant portion of their revenue from tasting room sales. And Old Hights Brewing Company has a custom-designed, reclaimed-

wood tasting area all set to go. Alas, the coronavirus pandemic changed everything. Old Hights finished installation of its brewing equipment in March, only for the governor to shut the state down due to the pandemic. Eventually, Alcoholic Beverage Control gave Old Hights the go ahead to brew, but by that time, taprooms were closed throughout the state. “The brewery is such a cool hang, which is what we wanted, but no one can hang there, which is such a drag,” Costantino laments. Originally, they had not planned to sell any prepackaged beer at all. But because of the pandemic, they ended up selling the bulk of their first eight beers in fourpacks of 16-ounce cans available through their online store. Customers could pick up their purchases at the brewery on weekends during designated hours. Starting July 11, Old Hights opened its outdoor beer garden, pouring halfand full-pints of its first eight beers.
