Welcome to Six09 To our readers:

Tony Nami is celebrating his 25th year as owner of the 110-year-old Prior & Nami Business Systems on Hamilton Avenue in Hamilton Township. This year already has been a banner year for Hamiltonbased Prior & Nami Business Systems. The company is not only celebrating its 110th anniversary in 2020, it is also the 25th year of Tony Nami taking over as owner and the 23rd year since Prior & Nami moved to Hamilton Township from Ewing. The company has a history of serving the community, working through World War I, the Great Depression, and World War II as well as the more recent tragedies of 9/11, Superstorm Sandy and now the Covid-19 crisis. During these trying times, Prior & Nami Business Systems is considered an essential business, and we are fortunate to be open to provide our services to keep other essential business running. Prior & Nami has provided IT hardware, software and advice to employees and students working from home. When local schools acted quickly to shift to distance learning in March, Prior & Nami offered assistance with printing student packets for distance learning. Local governments have purchased laptops from us, at a discounted rate, to enable more employees to work from home. We have continued delivery of supplies and service to open essential businesses such as doctor’s offices, lawyers, banks, title agencies, realtors, municipalities, churches, fire departments, and car dealerships/service centers to name a few. We have also offered the service of our Konica Minolta telepresence robot, which we use for demonstrations, to any area hospital who may have a need. Employees are practicing safe distancing and using masks in the office and in the field. A limited number of office personnel are working reduced hours. Customers are requested to make an appointment to drop off equipment for repair. A limit of only two customers, with face masks, are allowed in the showroom at any given time. Our cover story this month (which starts on Page 5) is on an experimental album celebrating the Trenton music scene. Created by Bill Nobes and his Jacobstown-based recording studio, Analog Trenton attempts to capture the unique, exciting sounds coming from the capital city. It’s just the kind of story we love to tell. Of course, (609) covers a large area, so we’re bound to miss great stories every now and then. Welcome to the inaugural issue of Six09! We hope that what you have in your hands explains itself, but allow me to introduce us anyway. Six09 is a regional arts, food and culture publication that covers what’s happening throughout the (609) area code. Each month, we will feature stories that highlight the experiences and personalities that make the (609) an exciting place to be. The (609) region is diverse and vibrant, so our editorial offerings will follow. In our pages, you might read about the next big event, the newest restaurant receiving rave reviews, or something on the fringe that makes our area unique. You might find a feature on a local person who has done something exceptional. Our content will be active, energetic and at times edgy. It will capture the essence of life in this part of New Jersey. All these disparate topics will come together in one guiding mission: we believe in our region as a destination and a place to be. By reading (609), we hope you will, too. perspectives Richie Cole: a life in music By Peter Lauffer

Editor’s note: Alto-sax jazz legend Richie Cole, who was born and raised in the Trenton area, died of natural causes on May 2 at the age 72. A graduate of Ewing High School, Cole first left the area to attend jazzfocused Berklee College of Music in Boston. His college years ended when he got an offer to play with famed drummer Buddy Rich’s band in 1969. He later joined bands led by Lionel Hampton and Doc Severinsen, playing with the Manhattan Transfer, and then creating his own group, the Alto Madness Orchestra. He grew up in the local music scene and ended his career here, playing regular shows at Trenton’s Candle Light Lounge. Peter Lauffer, a pianist and music educator, grew up with Cole, and played music with him regularly. Lauffer’s words follow: It was the summer of 1961 when my father, James Lauffer, came to Trenton to begin his tenure as choral music director at Ewing High School. I remember him coming home quite excited from a get-acquainted meeting at Fischer Junior High. “I heard a couple of 8th graders who were absolutely tearing up Dave Brubeck’s Take Five! Unbelievable!” he said. That was, of course, burgeoning saxophone great, Richie Cole, and a most talented pianist and my former babysitter Karla Geiser. They became part of the remarkable if not staunch music program at the high school led by instrumental head, Lloyd Snyder, and my dad, known as “Jimmy” by his students. That particular generation produced a number of successful musicians: master cellist Sue Poliacek, jazzmen Barry Paskiewics (alias Bo Parker), Cedric Jensen, and Dominick Defrancesco, blues master Joe Zuccarrela, Lamplighter big band leader Bob Smith, and many others. One of the remarkable aspects of the program was that musicians were shared between the vocal and instrumental programs, so even if orchestra and band were your specialty, you still ended up in choir for a while. Much later, Richie confided in me, “I was always scared to death of your Dad. I never called him Jimmy....always Mr. Lauffer, but I couldn’t believe the stuff (not exactly the term) he got me to sing.” It is somewhat odd to think of Richie singing the Bach Magnificat, but it happened. After Ewing High, Richie began his stellar career. His full scholarship to the Berklee School of Music in Boston was interrupted by being commandeered by the Buddy Rich Band,

which led to the first alto chair in Doc Severinsen’s Tonight Show band, which led to his collaborations with the Manhattan Transfer and his dear friend and mentor, Eddie Jefferson. This time was peppered with appearances in Trenton, notably at Lanzi’s Lounge on Liberty Street. Great Jazz and famous musicians were there, but Richie always let us youngsters sit in, and his encouragement was inspiring to us. It was 1996 when I strolled into Joe’s Mill Hill saloon on South Broad, and the music was blazing. Four horns were in the front line with guitar bass and drums. Nobody was at the piano so the leader, Richie Cole, asked me to sit in. This was the beginning of the now world-famous Alto Madness Orchestra (AMO) which characterized the last phase of Richie’s vast career. Of course the Joe’s Mill AMO was the Philly/ Trenton version of the band, and there were many musical adventures even up to our appearance at the 1867 Sanctuary in Ewing last Christmas. Now there is an AMO in every town. “The Boys” (as Richie called us regardless of which version of the band it was) exist in New York, Chicago, Las Vegas, San Antonio, LA, Tomsk in Russia, Trento, Italy, etc. etc. I am particularly grateful to our colleagues in the Pittsburgh AMO who have embraced him the last 4 or 5 years and produced the last flurry of eight or 10 albums for the world to enjoy. Richie and I had spoken on occasion the last couple of months, and I know it had been saddening for him not to be able to work, as it is for all of us who perform music. Shortly before his passing, maybe the day before, he performed a solo concert outside of his apartment complex for his neighbors. This proves, as if there is any need to, that he was put on this earth for a very important reason: to spread joy and happiness through his music and his beloved saxophone. Well done, good and faithful servant.

Princeton Festival goes on (virtually) By Rob Anthes

Like nearly all purveyors of arts and culture, the Princeton Festival has been forced to consider an existential question: How does one put on a series of live performances if venues must be empty? The Princeton Festival’s answer is a new digital performance series called “Virtually Yours,” which starts Monday, June 1 and will run throughout the month of June. Virtually Yours will feature a variety of musical and educational content, including full-length streaming of past opera productions, a live musical theater revue, artist videos, recordings, online workshops, lectures, and a promise from organizers for a “generous helping of online bonhomie.” All content will be available free of charge on the Princeton Festival website and Facebook page, with content published every day. The series runs in place of the festival’s annual June season. Princeton Festival announced April 7 that it had cancelled all 22 performances in its June 2020 season, along with all lectures, workshops, and special events scheduled for April through June, due

to the coronavirus epidemic. Events canceled include the opera La Traviata, the musical Into the Woods, the Latin jazz dance band Fleur Seule, a multimedia presentation, chamber music, and Baroque orchestral and choral programs. Ticketholders were offered options for redeeming, transferring, or donating the value of their purchases. Festival officials said in April that they were looking at the possibility of presenting a few performance events in the fall, assuming restrictions related to COVID-19 had passed. The popular fundraising Gala, originally scheduled for April, had already been moved to October. “We appreciate the tremendous support from our patrons and donors who make it possible for the Festival to continue its mission to excite and inspire our community,” executive and artistic director Richard Tang Yuk said in April. “We’re planning for a brilliant lineup of events next June, and a fall mini-season would help everyone transition from disappointment to renewal.” Turns out supporters of the Princeton Festival won’t have to wait until fall. Three years ago he launched his “collaborative multi-media production space that would facilitate authentic creation without over-production.” “As long as I have the day job, I am using the studio to explore and create,” he says of his non-commercial venture. And while he says it seemed “like a ridiculous idea at the time, it has since gone insane.” That translates as several regional artists actively using the studio to develop new works and approaches — that is until the lockdown put the

music on pause. It also means experimenting with online presentations and pursuing creative opportunities, like Analog Trenton. Nobes says his entry into the project and Trenton’s music scene started when he accepted Wrightstown tattoo artist Josh Adair’s invitation to take him on a city tour. In addition to illustrating the skin of many Trenton-based musicians, Adair is a guitarist who travels in the city’s musical circles. It was also a regular daily stop for artists and musicians. Backing up his earlier claim regarding serendipity, Nobes says he soon found himself talking to two live wires in the Trenton music scene. The other was Nikki Nalbone, a musician, manager of Championship Bar and its independent music scene, and the daughter of the owners of the legendary Trenton music venue City Gardens. A participant in the artistic renaissances in both Hoboken and New York City’s meat packing district, Nobes sensed something in the air. As he says in an online statement, he soon found a music scene that was “the most unique and interesting in the country. not only in the same venues but often with the same artists.” Nobes says he soon joined the scene and experimented with events at the Trenton Coffeehouse Roaster — creating an installation with several 16-millimeter film projects and a small theater presentation. Then he brought up Analog Trenton, a project that “had a life of its own” and reflected a “let’s do it attitude.” “It was all about supporting each other in Trenton — far more than anywhere I had been,” he says. “And I wanted to capture that. I wanted to make a document and capture it the best way I could.” He also wanted to create a production focusing on an actual performance with the audience also experiencing a recording session. The sessions were also videotaped. With Championship Bar and Trenton Coffeehouse Roaster selected as the venues, Nobes moved his Jacobstown studio to Trenton for the scheduled dates, including one as part of the annual Art All Day event. Inspired by the musicians, he also expanded his initial goal to record 20 bands to 40, resulting in a tonal testament of styles, themes, moods, and attitudes generated by committed regional performers such as the Molly Rhythm, Black Collar Biz, Nikki Nailbomb (aka Nalbone), Doris Spears, Ray Strife, Bentrice Jusu, and others. However, the increase in musical tracks also inflated the original budget of $12,000 to $18,000. “Most of it came out of my pocket,” says Nobes. “Having a day job helps me do that.” The rest came from an Indiegogo campaign that raised several thousand dollars, contributions from Nobes’ colleagues, and industry supporters, including the Bordentown-based Independent Record Pressing Company. Trenton visual artists also embraced the project and artists Jon Connors (aka Lank), Lori Johanson, Kate Graves, and others provided artwork for promotional materials and CD and vinyl packaging.

The project also engaged respected professional studio engineer and founder of SRG Studio in Hamilton, Sean Glonek. He made himself available to record tracks at both venues and provide a homogenous sound. “Everyone was there to make art,” says Nobes. “When we were at the Champs recording session, just the energy and love was an experience, a milestone. Whatever happens in my life that will be one of the best memories.” It will be one of many for the Belmar native whose frame shop-owning parents did not support his interest in the arts. Initially the Asbury Park High School graduate worked as a graphic designer providing sales presentation support for the New York Times’ magazine division. However, Nobes says, he found himself drawn to the theater—or back to it. “I started my first theater company when I was 10 in my garage,” he says of his lifelong interest. “I decided to become a stage manager and learned how to do it. I did it for free and then started getting paid. I was then working at the Ridiculous Theater Company founded by Charles Ludlam (the adventurous American stage director and writer of ‘The Mystery of Irma Vep.’ After its funding was cut, I moved to Mother,” an independent theater center on 11th Street in New York City.” There he “did everything”: technical direction, stage management, lighting design and installation, set construction, and anything else that was needed to create a production. “I was there seven days a week. It was a very busy venue.” He also had his aesthetic sensibilities sharpened and learned the importance of creating “emotional connections that are powerful and significant.” That’s something that shapes his approach to recording and his choice of using analog over digital recording. “Tape is an interesting medium. It just doesn’t record. It is an instrument in itself,” he says, “You have to record what you have. The effect is on the sound and

capturing the vibrancy of the music.” The emotional and human connections are also something that shaped the making of Analog Trenton. “Within that experience, with that witnessed creative effort, we show what a community can achieve solely with its passion, desire, and will,” he says in a statement. But voice to voice, he adds, “It never ceases to astound me that when you are able to open up and allow yourself to be guided that all opportunities arise.”

Restaurants adapt to the pandemic era Acacia adds take-out, delivery, comfort food to its repertoire By Joe Emanski

The phone calls really started coming in to Acacia Restaurant around the second week of March. Not calls for dinner reservations, or people hoping to schedule birthday luncheons. Cancellations. A lot of them. Lauren Voigtsberger was the person taking the calls. She and her husband, chef Chris Voigtsberger, have owned and operated Acacia for five years now. She manages operations, and he runs the kitchen. So they know the rhythm of the seasons. Spring is when they normally count on reservations, especially for larger events — celebrations, milestones — to help keep the Lawrenceville restaurant in the black. The future at that moment was very uncertain. This was after the WHO had declared COVID-19 a pandemic, but before Gov. Phil Murphy ordered

ness is things like graduations, wedding showers, weddings. So that was an ‘Oh my God’ moment, where all these events were getting canceled and getting postponed. Our immediate reaction was being scared, to be honest with you.” When Murphy formally shut down all restaurant dining rooms the following week, restaurateurs were forced to make a choice: stay open and provide take-out and delivery service—even if that was something they had done little of before—or close, and wait to see when things might return to normal. The Voigtsbergers chose to stay open. “We took a deep breath and sat down and said, ‘OK, how do we do this? How do we evolve?’” Voigtsberger says. Over the course of the last 10 weeks, Acacia has evolved. Right off the bat, they started offering delivery as well as curbside pickup service. They settled on a new schedule—Wednesdays through Sundays for dinner only— and a menu that changes weekly and skews a little more toward comfort food than it did in the past. Like many restaurants, Acacia has also added family-style servings to the menu. And for holidays, Chris works up special menus to suit the occasion. For instance, Acacia’s Memorial Day menu included trays of meat and salads, sides by the quart, and even a four-pack of premade, uncooked burgers with fixings. They have adjusted as formerly plentiful food items, like chicken breasts, have become scarce or prohibitively expensive. And Lauren has also been active on social media, sharing menus, photos, even videos on Facebook to keep Acacia in people's minds. “Chris and I did a good job of getting our name out there and changing

our menu to really fit what people are looking for,” she says. “They’re able to get a nice entree at home if they want, but also comfort food like a sandwich, like mac and cheese. Things that we wouldn’t normally have on our menu, but that have allowed us to evolve.” Lauren says the shift to all take-out and delivery has affected the menu as well. For a chef like Chris, who has worked in high-end restaurants like Eleven Madison Park in New York and the Blue Bottle Cafe in Hopewell, presentation is an important part of the job. “I can tell you he is definitely putting some things on the menu because he knows they will travel better,” she says. “And there are certain things we haven’t put on the menu because, in his eyes, the presentation of that order is not going to be the best by the time it gets to your home.” Voigtsberger says if there is a bright side to the whole experience, it’s that she feels it has given her a clearer picture of what Acacia’s customers are looking for. “People want good food, but they also want that comfort food. When Acacia’s dining room is open again, I think we’re going to have more of that balance in our dishes than we had before,” she says. “These new dishes we have that people are really liking, like our Acacia smash burger or our Griggstown fried chicken, I think they will be on the menu.” *** As an independent neighborhood restaurant, Acacia had a relatively small staff even before the pandemic. Even so, they have had to let many people go, especially dining room staff. Voigtsberger says over time they have been able to hire some people back, though in different roles from


what they did before. Instead of busing tables or serving customers, they are taking orders, packing them up or even delivering them. She looks forward to the day when business conditions are such that more can return. She says she and Chris talk every day about the restaurant’s future, both in the short and long term. “As happy and excited as we are to open up our dining room, hopefully soon, we expect that we will be keeping this model of takeout and delivery for quite a while,” she says. “I think it will be part of our new normal. Even though we will be taking every (safety) precaution, we know people will be more comfortable eating at home for a while.” She knows that would mean that Acacia won’t be able to count on groups and family celebrations to fill up the books any time soon. “It’s definitely scary looking into the future, but we will just have to keep up and do what we can,” she says. Both Lauren (Steinert High School Class of 2003) and Chris (Notre Dame ’03) grew up in Hamilton. They live there now with their one-year-old son, Dylan. They both attended Fairleigh

Dickinson University in North Jersey, although they didn’t meet until after graduation. He followed a culinary route in college, while she got a degree in hospitality, business management and tourism. The blending of their skills made it possible for them to open a restaurant together. But it also means they both depend on the restaurant as their source of income. Until the restaurant can support a full staff, they will have to deal with the challenge of balancing work and home life. Voigtsberger says at times like these, she is grateful for the support of their families. She is also grateful to the Lawrence community for the support it has shown Acacia during the crisis. “The support has been overwhelming. We’ve got so many new customers who I think will be with us for a long time,” she says. “We've been seeing a lot of good in people, and that makes it easier for us to say we’re going to keep going and fight. Delivery services eat into restaurant profits One might expect that the COVID19 pandemic has not been so bad for restaurants that have traditionally done a brisk take-out business. But the public health crisis has wreaked havoc with every business, regardless of business model. Sam Zheng owns Taco Rito, a Tex-Mex restaurant with locations in Hightstown and Robbinsville. He says before the pandemic, Taco Rito had a pretty even split between take-out and dine-in customers. Taco Rito had already used delivery services, such as Grubhub and DoorDash, but that represented only 10 to 15% of its overall business. For now, of course, Taco Rito has no dine-in business. But delivery has grown to take its place. Zheng estimates that third-party delivery now accounts for between 60 and 70% of his sales. And that’s not good, he says, because those services take commissions as large as 35% of a bill. “There’s some days, it looks like we’re busy, but [the delivery services] are taking $300, $400 out of us,” he says. “But, we’re still staying afloat.” Zheng understands that many customers right now will not pick up their food unless it can be provided curbside. Unfortunately, he says, he has been unable to keep staffing levels high enough to provide curbside pickup. For some restaurants, staff levels are low because dining rooms are closed and revenues are down. Zheng says the problem for Taco Rito has been ensuring that his staff

are in total health. Zheng says if any of his workers has so much as a sniffle—even if it can probably be attributed to allergies— he requires them to take two weeks off. The result has been that his workforce at any given time is reduced to 50% or less. On Cinco de Mayo he would normally be staffed up to handle higher demand. Last year, he had 10 or 11 people working in each restaurant on May 5. This year he had six. He says the restaurants were so overwhelmed that he had no choice but to close. The good news, he says, is that business has picked up in May after a poor March and weak April. Right now the greatest challenge for Taco Rito, he says, is the high cost of meat. Steak prices have doubled, and ground beef costs have risen even more than that. Zheng says he has had no choice but to raise his prices to compensate. Some restaurateurs have indicated that they are eager to reopen their dining rooms once the governor gives the go ahead. But Zheng says he is in no hurry. “Once a vaccine comes out, I won’t mind having the dining room open again,” he says. “Right now ... you get one case come in and everybody could get sick. I won’t lie to you, we still have customers coming in (to the restaurant, for pickup) without masks. They even sit down to eat sometimes. I’d rather keep the dining room closed. Toscano expands its culinary empire Bordentown’s famous eatery has a new neighbor: Angelo’s By Joe Emanski

For Zack Melker, Toscano Ristorante and Steakhouse in Bordentown City is “everything I dreamt it could be.” Since opening in 2006, the restaurant has become known as a special occasion kind of place, just the right venue for romantic anniversaries and milestone birthdays. It has also become, as Melker notes, a “true steakhouse.” And he confesses that as much as he loves Toscano, he also loves making pasta. And he wants to make more if it. Which is why, even in the middle

of a pandemic, Melker is preparing to open a second restaurant in Bordentown: Angelo’s Trattoria. Melker is gearing up to open Angelo’s in the former Oliver building on Farnsworth Avenue, just a few blocks down from Toscano. Tentative plans are to open in early June. Melker, a graduate of The French Culinary Institute in Manhattan, says Angelo’s will feature a seasonal, changing menu with a focus on handmade pasta dishes. “Homemade pasta, a lot of fish, a smaller menu,” Melker says. “Some peasant dishes. It’s going to be a lower-end Toscano, pretty much. Toscano became a true steakhouse. At Angelo’s, I’ll have more of a free rein, I’ll be able to do more with pasta.” Melker envisions a menu that will be half regular items and half weekly

I’m really excited to get back into making fresh pasta.” In addition to prepared meals, Melker expects to sell premade sauces and packaged fresh and dried pasta for customers who want to cook at home. He also has a pasta machine on order that he plans to put in the front window of the restaurant so passersby can watch as it is made. Restaurants are a family affair for Melker. He opened Toscano with his uncle, Gianni Antinoro, and another restaurant, Ravello by Toscano, in Robbinsville with his cousin, chef Dominic Conti. In March, after COVID-19 grew into a pandemic and the governor ordered restaurants to close their dining rooms, the partners made the decision to temporarily close the restaurants. Ravello reopened in April, Toscano in early May. “We closed for the safety of our employees, number one, and number two our customers,” he says. “We have some employees who have been with us for 15 years. When we reopened, we just felt it was a little bit safer, we just felt it was a better time.” At Toscano, they used the down time as wisely as they could by doing some long awaited renovations. When the dining room reopens, customers may notice fresh paint and new floors. Angelo’s has also been fully renovated and will look very different from its Oliver days. Melker is prepared to do takeoutonly when Angelo’s opens. And he says whenever restaurant dining rooms do reopen, he and his staff will follow the guidelines set forth by the government. “We’re going to follow social dis-

tancing, we’ll make sure everyone will be 6 feet apart, we won’t overload the dining room at all,” he says. “We’re already talking about a new table plan. We’re going to make sure everyone is safe in all of our restaurants.” It hasn’t been easy trying to open a new restaurant during a pandemic, but Melker remains committed to making it happen. “This was not the game plan, but we’re sticking with it 100%,” he says. “You have to.
