Be Still and Know! The Psalms are masterpieces of psychology and theology. They are honest, earnest and trustworthy expressions of life lived in positive response to God, to both the reality of God and of His precious assurance that we may know Him, follow Him and trust Him. The Israelites were at their end. They were surrounded on every side by those who wished to kill them. Their provisions were exhausted, and so were they. They braced themselves to be massacred. And then God spoke: “’Be still, and know that I am God; I will be exalted among the nations, I will be exalted in the earth.’ The Lord Almighty is with us; the God of Jacob is our fortress” (Psalm 46.10, 11). Our world can well appreciate. The terroristic travesties of Paris and Nice, of Belgium and Germany, the trauma of Fort Hood, Charleston, Ferguson, San Bernadino, Dallas and Baton Rouge only accentuate an existent and persuasive reason for anxiety and fear. My dear wife and I recently contemplated our own demise. I had suffered four heart attacks last year and, thinking that I had turned a corner for the better, was attacked again in May. My scorecard has been five heart attacks, three atrial fibrillations (you know; when the heart should be pumping at 60 but ups the ante to 158 beats per minute!), four catheterizations and over two weeks in Hotel Einstein-Montgomery (where at least I could watch Turner Classic Movies while awaiting the insertion of wires into my ticker!). My wife, who had been dutifully looking after me, had to visit the ER just a few days after my return home. Five days later she came home, but only with a return engagement for surgery, as the doctors had discovered cancer. That’s a very cold word, especially when applied to your body! And it doesn’t help that it is simultaneously determined by one’s husband’s doctor that he will require a special cardiac procedure called an ablation. My surgery entailed “burning” marks in my heart. A week later, Peggy had one-third of her colon removed, replete with malignancies, as well as all of her CONSHOHOCKEN (610) 940-0540 ______ WAYNE (610) 964-9535 ______ PHEONIXVILLE (610) 917-3333 WWW.The Great American Pub.com

lymph nodes for the purpose of biopsy; cancer, you see, has a nasty way of spreading. The doctors used “robotics” on her; the latest, we were told, in surgical technique. I am delighted to report that Peggy’s surgery was successful, and that she was deemed to be cancer-free. We give thanks and praise to God! His favor had clearly been cast upon us throughout the ordeal. It assuring to the core to know that Someone is watching over you when the roof caves in. I’m fine; too, at least for now – and thank God again! We heard His Word: “Be still, and know that I am God.” We want the world to know: He is to be exalted among the nations, and in the earth. And we wish to invite you to join us in gratitude and praise, for He wishes to be your fortress and your God; also!

Summer Giambotta When summer provides an abundance of veggies, make Giambotta! Giambotta is an Italian, vegetable stew. The smell of giambotta cooking brings back many memories of warmth and love. For good reason, this recipe has continued to be an adult favorite of mine. It is quick, simple, and takes only one pot to make! This means more flavor and less clean-up. Once the basics of the recipe are understood, it can be modified based on what is seasonal and available. This means, adding fresh, locally grown, nutritious produce to your Giambotta! This recipe is packed with nutrients and health benefits. Studies show that incorporating plant based foods into your meals can lead to decreased risk for heart disease, recurrent heart attack or stroke, decreased risk for diabetes, longer life span, healthier weights, and decreased risk of developing cancer. One study showed a significant inverse association between total vegetable and fruit consumption and incidence of ischemic stroke among a group of men. Tomatoes, especially in the cooked form, are high in lycopene. Lycopene is a potent carotenoid antioxidant that helps protect our body’s tissues against damage. It also helps to prevent certain types of cancers. Another benefit to eating more veggies is they are high in fiber and water so eating them helps you feel fuller and satisfied; helping to maintain a healthy weight. Quite delicious benefits to consider! 2 cups chopped potatoes (russet or sweet potatoes) 2 cups chopped zucchini 2 cups chopped yellow squash 2 cups eggplant chopped 1 cup chopped yellow onion 1 large bell pepper (red, yellow, orange, or green) seeds and ribs removed, chopped 1 cup of crushed tomatoes *variety with no salt 1 cup kale, chopped ½ cup white wine - variety you like to drink 3- 4 garlic cloves, minced 3 tbsp. olive oil ¼ cup of chopped fresh basil ¼ cup of fresh parsley 1 tbsp. grated pecorino Romano cheese (nutritional yeast for dairy free) 1 tsp salt 1 tsp pepper Its important to add ingredients in a stepwise fashion because each ingredient will cook at a different speed! Add olive to a thick bottomed pot or cast iron Dutch

oven. Turn heat to low and allow to heat for about a minute. Add onions and sauté until translucent, about 5 minutes. Add garlic and sauté for 2-3 minutes, stirring so it doesn't burn. Deglaze the pan with the white wine or water. *Deglazing means is adding cool liquid to the hot pot and mixing, scraping all the brown bits up into your liquid. That's where the flavor is! Cook for 2-3 minutes. Add eggplant into the pot. Cook for 5 minutes. Add crushed tomatoes, salt, pepper, and half the basil. Mix. Add potatoes, peppers, cook for 5 minutes. Mix your pot and made sure no ingredients are sticking to the bottom! Add squash, zucchini, and cook for 5 minutes. Cover and simmer for 15 - 20 minutes. Ingredients should be fork tender but not mushy or falling apart. Plate in a bowl. Garnish with cheese and basil. TIP: If you want to incr ease the hear tiness and protein, you can add cannellini beans at the same time as the zucchini and squash. Planning a Summer Vacation?

Check First with Your Travel Agent!

Working with a good travel agent is like a finding a good dentist or mechanic. Once you find them, you’ll never want to give them up. If you are like most Americans, travel is likely your biggest discretionary spend in any given year. And if you also have a limited amount of time, you want to make sure it’s done right. Why not have an expert do the research for you instead of searching for days—maybe months—on the internet only to come up with the exact trip a professional could have booked for you in a matter of hours or minutes; and usually at no extra cost to you! In fact, if you were paying yourself for the time it takes to research your own travel, a travel agent actually saves you money even before the trip is booked. An agent can provide access to unique benefits that you may not even know about or that you simply cannot get for yourself. Ever wonder why the couple in the room or cabin next to yours had free champagne and you did not? Their travel agent knew how to add in extras to ensure a better experience which may include free room upgrades, spa credits, food and beverage credits, hard-to-get restaurant reservations, exclusive or priority access to attractions, and other amenities that add more value for your travel dollar. Your agent is educated and often has personal experience. They can provide tips, insider advice, and guidance backed by feedback from clients and their agent network. Your agent gets to know you and your needs as well and can be on the lookout for that special experience you might miss. In addition, an agent can step in and fix things if a trip goes awry. An agent provides a safety net. You can rely on them to assist you, to suggest and arrange alternate travel arrangements, help you to deal with any travel emergency you may have, and put you in touch with the right local people to answer your needs should something go wrong during your trip.

Unless you really enjoy researching your own travel, there’s rarely a financial advantage to booking yourself. Most hotels and travel services are parity priced which simply means you get the same price booking yourself that the agent would get. Your travel agent, however, may know of comparable services that will save you money or provide the same or better experience. They are on the cutting edge of what’s new and happening in the industry and are the first to know about news resorts or cruises. They have a relationship with travel partners and are interested in creating and keeping a great relationship with you as well. If you haven’t yet booked your summer vacation, it’s not too late! There are some great last-minute deals out there, and your travel agent knows about them. Time to make that call!

CONSHOHOCKEN COMMUNITY GARDEN Before heading to my parents’ house for a family 4th of July weekend gathering, I stopped by my plot at Conshohocken Community Garden and picked 3 beautiful zucchinis and a big bag of rainbow chard, plus some

rosemary, basil, and a few hot peppers. My brother and his 4 teen kids were also at my parents’ house. The first night I asked, “Do you kids like zucchini?” “Probably not, but we never really have it.” I said, “Well at least

STEEL MILL The mill was a sun that never set, and the lives of the townspeople spun around it, pressing close to its molten core. Work was steady, money was good, and son followed father followed grandfather into the furnace. But there is a Promethean debt for the audacity of creating a sun. Dues were collected from each— fingers, hearing, the sight in one eye, an entire arm or leg. McFadden got too close one day and parts of him were delivered to his family’s parlor already nailed inside the box. His wife wailed for a last look that would have seared her to her core, while her young sons, silent, knew they would be working at the mill within the month. By: Beth Moulton, Conshohocken Resident

THE BEST DOG EVER! Recently, after a morning run with my newly adopted 5 month old collie mix, I looked over at her as she panted rapidly sitting next to me in the passenger seat of my SUV. “You just might end up being the Best Dog Ever” I said out loud. She glanced over in her happy exhaustion as if to acknowledge ‘why sure’! As soon as the words came out of my mouth I experienced and AHA! Thirty years earlier I rescued my first dog off the streets of Philadelphia on a record freezing morning in January. COMMUNITY GARDEN try it.” I sliced the 3 zucchinis, put a little olive oil on them, and put them on the grill at our family cookout. The kids were hungry and sat to eat before the adults did. I put the grilled zucchini on the table, went to help my father with the rest of the food, and came back. Not one piece of zucchini was left. “This is better than anything my mother ever makes!” “Do you have more?” The next night I cooked the chard with the peppers and herbs. Same story – the bowl was empty in no time. “This is way better than lettuce.” “It’s sort of sweet.” “Do you have more?!?” Vegetables from the grocery story often look pretty and perfect due to lots of chemicals and genetic engineering (or else are ridiculously expensive), but taste like nothing. They offer little. Vegetables that are grown locally and organically in a community of love and care will taste amazing and fulfilling with satisfying flavors. Tasty vegetables can reclaim our lives (and our children’s lives) from chronic obesity and diabetes. Few residents of Conshohocken have a space to grow their own vegetables, and even fewer have a community to teach and support them on how to successfully grow organic and non-genetically modified fruits and vegetables. Conshohocken Community Garden offers the land, healthy soil, water, sunshine, and most importantly a community to grow healthy, tasty, economical vegetables and fruits. Our gardeners range from beginners to those approaching master gardeners. They range from elementary school kids (with their families) to retirees, and everything in between. Our gardeners offer as much diversity as do the vegetables grown. We have plots with individuals, families, churches, Conshohocken elementary school, our local Rotary chapter, and more. The garden is located on East Elm Street between Cherry and Apple. We have approximately 70 plots (some of which are shared plots) plus a shaded common area for celebrations, discussions, and simple relaxing. We provide land, water, great soil, compost, tools, and most importantly community. We share herbs, blueberry bushes, and a fig tree, and we are growing over 40 varieties of fruits and vegetables, ranging from common produce like cucumbers, lettuce, tomatoes, strawberries and watermelon, to less common venerates such as okra, opo squash, black tomatoes, and tomatillos. We kick off our fall season in mid-August. Fall is arguably the easiest season to garden, and you should easily be picking lettuce, spinach, kale, chard, beets, carrots, and much more through early January. If you are interested in fall gardening, please stop by the garden and pick up an application or email at conshohockencommunitygarden@gmail.com.
