With so many spring and summer weddings, guests can get wedding fatigue, but an event in the mountains in winter will definitely be something people can look forward to. Unique style. From your colour palette to flowers and décor, winter inspires some beautiful themes. There are so many lighting options with candles, tea lights, open fires and lanterns, and you could even create your own hot signature cocktail to serve to guests. Stunning photo opportunities. The flattering winter light lends itself to gorgeous photography. And with stunning backdrops from snow-capped mountains to rugged bushland, your photos will definitely stand out from the crowd.

Just remember to bring some spare shoes and a big coat for getting from one place to another (and maybe some mulled wine). Guests (and you) can have fun dressing up. Depending on your theme, guests can really get into the season, from fur coats over sequinned dresses and tuxedos to an “all-white” ensemble. Fun activities. A TASTE OF WINTER Cuisine’s Jean-Michel Gerst shares his winter recipe inspiration Jean-Michel Gerst is a talented, passionate and creative chef hailing from Alsace, France. After having worked in some of the finest establishments around the world, he moved to Australia giving him the opportunity to draw on this worldly inspiration and make his own path. This path eventually led him to the beautiful Snowy Mountains which he says in many ways feels like home; the climate, the European influences and the snow. His cooking is inspired from his French traditions and family recipes, emphasising wholesome comfort food which he says “warms you up and gives you all the energy you need for a big day out on the slopes”.

Frangipane

10ml Williams pear schnapps

100g butter, softened

600g puff pastry, pre-rolled

100g caster sugar

1 egg, lightly beaten

70g eggs, shells removed

2 pears, peeled and thinly sliced

120g almond meal

100g dark chocolate (semisweet) bits

40g plain flour

2 tablespoons milk

For this cake, make sure you choose juicy pears and use a good-quality dark chocolate. You can shape the galette however you want, there is no real rule, the only one is to enjoy it. For the frangipane, whip the butter until it is smooth, then add the sugar and mix together until well combined and pale in colour. Add the eggs, almond meal, flour and the schnapps and mix until combined. Cut out two discs of puff pastry, 20cm in diameter. Place one disc onto a lined baking tray. With a pastry brush, paint around the edge of the pastry with a beaten egg. Spread the frangipane mix in the centre of the pastry with a palette knife. Place the sliced pears on top of the frangipane and sprinkle with the chocolate bits. Place the other disc of pastry on top and press down around the edge, marking with a fork. Brush the pastry with beaten egg and milk. Put in the fridge for 30 minutes. Remove from the fridge and egg wash again to make it more shiny. At this stage, you could make some designs on the pastry with a knife, if desired. Place back in the fridge for a further 30 minutes and then bake in a preheated oven at 220°C for 30 minutes.

3. RETAIL THERAPY If the weather is not in your favour, take a trip into Jindabyne 15 minutes from the Resort and visit Nuggets Crossing Shopping Centre. Nuggets Crossing is the ideal place for retail therapy or to simply purchase the essentials. There a stores offering souvenirs,

clothing, giftware, a bakery and supermarket along with the movie cinema close by to cosy up and watch the new releases.

4. CATCH A TROUT! Eucumbene Trout Farm is a family friendly farm where you can learn about trout fishing and ‘throw in a line’ with the chance to catch a trout in Stony Lake, or the more relaxed sure catch pond. At Eucumbene Trout Farm, have your freshly caught trout prepared for you to be cooked on the BBQ’s on site or taken home.
