The nose shows an intense mix of varietal cassis, blackberry, cedar, tobacco, vanilla and charry oak. With a taste that’s smooth and beautifully integrated, the complex palate offers dark fruit and smoky oak, with notes of vanilla and spice and fine textural tannins.
A rich full palate, with fleshy mulberry fruits. Subtle use of oak further adds complexity with good flavour and balance with some fine, powdery tannins evident. A well-balanced wine with great depth, length and structure.

HARE & TORTOISE PINOT GRIS Pale in colour with radiant green and yellow hues. Freshly cut pear, lemons, ginger and faint pine needle aromas lead to a mouth-filling burst of fruit flavour. Pear, green apple, light spices and white flowers on the palate are pulled tight by refreshing acidity. A satisfyingly easy wine to have on its own but will partner well with fresh salads, seafood and white meat dishes.
BERTON RESERVE CHARDONNAY THE CROSSINGS SAUVIGNON BLANC An elegant and fresh style wine, with tropical fruit flavours and hints of citrus. The palate is filled with pure fruit flavours, nicely balanced with a crisp mineral finish.

This wine has generous aromas of white peach beautifully balanced by spicy oak with toasty undertones of vanilla and cinnamon. A rich and toasty palate shows flavours of honey dew and peach with hints of lime which linger to create a lovely, balanced wine with a long and persistent finish.

ONE PAN CHICKEN POT-ROASTED WITHSHANKS BOCCONCINI LAMB AND OLIVES
PERFECT MATCH
INGREDIENTS (SERVES 4) • 2 large Chicken Breast Fillets • 2 teaspoons dried oregano • 1 tablespoons olive oil • 1 brown onion, thinly sliced • 2 garlic cloves, thinly sliced • 400g can cherry tomatoes • 400g can diced tomatoes • 1 cup (120g) pitted mixed olives • 180g bocconcini, coarsely torn • 1/3 cup (90g) basil pesto
TAYLOR MADE CHARDONNAY
METHOD STEP 1 Cut each piece of chicken in half horizontally. Sprinkle the chicken with oregano. Season. Heat half the oil in a large frying pan over high heat. Cook the chicken for 2 mins each side or until golden brown. Transfer to a large heatproof plate. STEP 2 Heat remaining oil in the pan. Add the onion and garlic. Cook for 1 min or until onion softens. Add cherry tomato and diced tomato and bring to the boil.
STEP 3 Return the chicken to the pan with the olives and bocconcini. Reduce heat to medium-high and cook for 8 mins or until the chicken is cooked through and sauce thickens slightly. Serve drizzled with pesto.
This is a wine with great delicacy showcasing white stone-fruit flavours along with attractive subtle brioche character. The barrel fermentation brings a delightful creaminess to the midpalate. Overall, the wine is beautifully balanced with well-integrated oak acting in support of the fruit and the tight acidity ensuring freshness. The length is superb and the wine finishes with enjoyable persistence.
PHILIP SHAW 'THE WIRE WALKER' PINOT NOIR
CALABRIA THREE BRIDGES CABERNET SAUVIGNON
The Wire walker is garnet red in colour. Perfumed and fragrant. This wine displays a generosity of ripe berry fruits complimented by savoury spice. The palate is generous offering sumptuous fruit framed by elegant supple tannins.
Three Bridges, adjacent to the historic Calabria Winery were built in the early 1900’s to supply water from the Snowy Mountains via the Murrumbidgee River. A full-bodied smooth palate with big notes of ripe fruit and five spices integrating with vanillin oak, providing complexity, ensuring a well-balanced, mouth filling and flavoursome finish.

BIG-TICKET TIPPLES Though basic ingredients of certain alcohols may be incredibly similar, the taste, age and packaging can make a world of difference in the final price of a drop. While buying a seven-figure bottle of liquor may not be at the top of your grocery list, here’s a sneak peak in to some of the world’s most affluent liquor cabinets.

Whilst ridiculously expensive, if you were able to withhold the temptation of opening a bottle of Dalmore 62, it would prove to be quite the investment. This whiskey spent 62 years in a cask before Dalmore transferred it in to just 12 bottles, making it one of the rarest alcohols on the planet.
Wondering how a bottle of Vodka can sell for upwards of a million dollars? Well, DIVA Vodka is made with natural spring water, triple distilled and filtered through charcoal before being filtered through sand that was made from diamonds and gem stones. Oh, and it comes in an exquisitely designed bottle that features Swarovski crystals stacked through the centre.
THE MACALLAN 64-YEAR-OLD IN LALIQUE $630,000 The most expensive whiskey ever sold. This rare Scotch was vatted from three sherry-seasoned Spanish oak casks — the first was filled in 1942, the second in 1945, and the third in 1946. And, in honour of the 150th anniversary of the birth of famed crystal artisan Rene Lalique, Macallan decided to bottle the blend in a one-of-a-kind Lalique decanter.

THE GRIFTER BREWING CO Established in early 2012, The Grifter Brewing Company began when three home brewers were offered the space to make a commercial batch of beer in the just-about-to-open Young Henrys brewery. YOUNG HENRY’S NEWTOWNER APA Young Henrys wouldn’t be what it is without Newtown. It’s our home, community and inspiration. So, when the suburb celebrated its sesquicentenary and we were invited to brew a unique beer to celebrate, we jumped at the chance. The resulting beer was an Aussie Pale Ale called Newtowner.
YOUNG HENRYS “Serve the people” is Young Henry’s motto and damn, do they do it well. As popular today as the day it opened, the brewery has become integrated with its local community like few others. Most notably, the brewers at Young Henry’s have collaborated with the likes of Dune Rats and the Foo Fighters in the past to make unique, refreshing flavours.

60 mL Woodford Reserve 15 mL Demerara Syrup 3 dashes Angostura Bitters 2 dashes Regans’ Orange Bitters
INSTRUCTIONS Add the above ingredients to a mixing glass with ice. Stir the ingredients for 30-40 seconds and then strain into a serving glass. Finally, garnish with a lightly expressed orange peel and enjoy.

PORT OF CALL A perfect post-dinner drink or an accompaniment to your dessert, Port is a sweet, red, fortified wine. Amidst a flurry of interesting facts surrounding Port, we’ve picked out the ones every fortified wine lover should know. Tasting notes
There are several different blends of Port, each producing its own distinct flavour. The 2 primary styles of Port are: - Ruby Port – younger, slightly less sweet, berry and chocolate flavours. - Tawny Port – older, slightly more sweet, caramel and nutty flavours.
Exclusively Porto Many other wine regions make Port-style wines however, if they aren’t produced in the Douro Valley (Porto, Portugal) they’re not true Port.
The Big 5 There are more than 100 grapes that can be used to make Port however the most commonly used are: Tinta Roriz, Tinta Barroca, Touriga Nacional, Tinta Cão and Touriga Francesa.
Vintage Options Thinking of trying a vintage Port? We have it on good authority that the following years from Douro Valley were rather excellent: 1997, 2000, 2003, 2007.
Serving Size Port glasses are smaller than regular wine glasses due to the higher alcohol content and added sweetness of Port wine. A single serving is approximately 85ml. It should also be served just below room temperature, around 16 °C.
Pairing Port Port wine pairs wonderfully with richly flavoured cheeses (including blue cheese and washed-rind cheeses), chocolate and caramel desserts, and salted and smoked nuts.
