FEATURE

DRINKS e d a c e d by the From light spirits to dark, juice mixers to soft drink, and simple methods to the more complex – cocktails, like fashion, have been through many a trend over the years. For a taste of cocktail history, we’ve curated a list of each decades biggest hit for you to ‘research’. #ThrowbackThursdayTipple anyone?

1910-19

1930-39

Manhattan

BLOODY MARY

The birthplace of the Manhattan remains hazy at best however, a popular belief suggests the cocktail was created at the Manhattan Social Club during the turn of the century. • 30ml Sweet Vermouth • 60ml Rye Whiskey • 2 dashes of bitters • 1 cherry/orange peel for garnish

Originally just half vodka and half tomato juice, the Bloody Mary was the morning pick me up back in the day and remains a brunch favourite today. • 45ml Vodka • 20ml lemon juice • 2 dashes of Tabasco sauce • 5 dashes of Worcestershire sauce • Pinch of salt • Pinch of pepper • 150 ml Tomato juice • 1 stick of celery for garnish

1920-29

1940-49

CLASSIC CHAMPAGNE

Mai Tai

Unlike many other classic cocktails, the Champagne Cocktail is yet to make a roaring comeback. Perhaps the 2020’s could see its resurgence? • 10ml Cognac • 1 Sugar cube • 2 dashes of bitters • 1 cherry/orange peel for garnish

Although debatable, a man by the name of Victor J. Bergeron claimed to have invented the Mai Tai in 1944, the name was allegedly taken from the Tahitian word for ‘good’. • 30ml white rum • 30ml dark rum • 15ml orange curacao • 15ml amaretto liqueur • 15ml sugar syrup • 1 lime, juiced • 60ml orange juice

SOVINO AUTUMN 2019

1950-59

1990-99

Martini

Long Island Iced Tea

The first James Bond novel was published in 1953. You do the maths. • 75ml Gin • 15ml dry vermouth • Lemon peel twist/olive for garnish

1960-69

Whisky Sour During the 60’s whisky was king. While an Old-Fashioned was an obvious choice, a Whisky Sour was known to kickstart the party. • 60ml Whiskey • 30ml lemon juice • 15ml sugar syrup • 15ml egg white • 1 cherry/orange peel for garnish

1970-79

Harvey Wallbanger After the dark spirited 60’s, clear spirits took command in the 70’s; no spirit more so than Vodka. Mixed with some simple, full flavoured fruit and you had a now-forgotten classic The Harvey Wallbanger. • 45ml Vodka • 120ml orange juice • 15ml Galliano • 1 cherry/orange peel for garnish

1980-89

B-52 A layered, super sweet shot, the drink was named after the new wave band, The B-52s. How very, very 80’s. • 15ml Kahlua • 15ml Bailey’s • 15ml Triple Sec

The Long Island Iced Tea was created in – you guessed it – Long Island, New York. Although invented years earlier, the cocktail made its mark during the 90’s and has remained a popular drink of choice to this day. • 15ml Triple Sec • 15ml Light Rum • 15ml Gin • 15ml Vodka • 15ml Tequila • 30ml Sour mix • 210ml Cola • 1 lemon wedge for garnish

2000-09

Cosmopolitan Although delicious, it’s no secret the Cosmopolitan gained huge popularity from its starring role in the hit TV Show Sex and the City. • 45ml vodka • 15ml Cointreau • 30ml cranberry juice • 1 squeeze of fresh lime • 1 orange peel for garnish

2010-19

Old Fashioned Another prime example of pop culture’s influence over the popularity of cocktails; a little more than a century later, the iconic cocktail has made a comeback thanks to Mad Men’s leading man, Don Draper. • 60ml rye whiskey • 3 dashes of bitters • 1 sugar cube • 1 cherry/orange peel for garnish

JACOBS CREEK DOUBLE BARREL CABERNET SAUVIGNON

BERESFORD MCLAREN VALE SHIRAZ

The nose shows an intense mix of varietal cassis, blackberry, cedar, tobacco, vanilla and charry oak. With a taste that’s smooth and beautifully integrated, the complex palate offers dark fruit and smoky oak, with notes of vanilla and spice and fine textural tannins.

A rich full palate, with fleshy mulberry fruits. Subtle use of oak further adds complexity with good flavour and balance with some fine, powdery tannins evident. A well-balanced wine with great depth, length and structure.

TOP 5 > UNDER $25

HARE & TORTOISE PINOT GRIS Pale in colour with radiant green and yellow hues. Freshly cut pear, lemons, ginger and faint pine needle aromas lead to a mouth-filling burst of fruit flavour. Pear, green apple, light spices and white flowers on the palate are pulled tight by refreshing acidity. A satisfyingly easy wine to have on its own but will partner well with fresh salads, seafood and white meat dishes.

BERTON RESERVE CHARDONNAY THE CROSSINGS SAUVIGNON BLANC An elegant and fresh style wine, with tropical fruit flavours and hints of citrus. The palate is filled with pure fruit flavours, nicely balanced with a crisp mineral finish.

*Not all products available in all stores

ONE PAN CHICKEN POT-ROASTED WITHSHANKS BOCCONCINI LAMB AND OLIVES

PERFECT MATCH

INGREDIENTS (SERVES 4) • 2 large Chicken Breast Fillets • 2 teaspoons dried oregano • 1 tablespoons olive oil • 1 brown onion, thinly sliced • 2 garlic cloves, thinly sliced • 400g can cherry tomatoes • 400g can diced tomatoes • 1 cup (120g) pitted mixed olives • 180g bocconcini, coarsely torn • 1/3 cup (90g) basil pesto

TAYLOR MADE CHARDONNAY

METHOD STEP 1 Cut each piece of chicken in half horizontally. Sprinkle the chicken with oregano. Season. Heat half the oil in a large frying pan over high heat. Cook the chicken for 2 mins each side or until golden brown. Transfer to a large heatproof plate. STEP 2 Heat remaining oil in the pan. Add the onion and garlic. Cook for 1 min or until onion softens. Add cherry tomato and diced tomato and bring to the boil.

STEP 3 Return the chicken to the pan with the olives and bocconcini. Reduce heat to medium-high and cook for 8 mins or until the chicken is cooked through and sauce thickens slightly. Serve drizzled with pesto.

This is a wine with great delicacy showcasing white stone-fruit flavours along with attractive subtle brioche character. The barrel fermentation brings a delightful creaminess to the midpalate. Overall, the wine is beautifully balanced with well-integrated oak acting in support of the fruit and the tight acidity ensuring freshness. The length is superb and the wine finishes with enjoyable persistence.

PHILIP SHAW 'THE WIRE WALKER' PINOT NOIR

CALABRIA THREE BRIDGES CABERNET SAUVIGNON

The Wire walker is garnet red in colour. Perfumed and fragrant. This wine displays a generosity of ripe berry fruits complimented by savoury spice. The palate is generous offering sumptuous fruit framed by elegant supple tannins.

Three Bridges, adjacent to the historic Calabria Winery were built in the early 1900’s to supply water from the Snowy Mountains via the Murrumbidgee River. A full-bodied smooth palate with big notes of ripe fruit and five spices integrating with vanillin oak, providing complexity, ensuring a well-balanced, mouth filling and flavoursome finish.

SOVINO AUTUMN 2019

BIG-TICKET TIPPLES Though basic ingredients of certain alcohols may be incredibly similar, the taste, age and packaging can make a world of difference in the final price of a drop. While buying a seven-figure bottle of liquor may not be at the top of your grocery list, here’s a sneak peak in to some of the world’s most affluent liquor cabinets.

THE DALMORE 62

DIVA VODKA

$300,000

$1.4 MILLION

Whilst ridiculously expensive, if you were able to withhold the temptation of opening a bottle of Dalmore 62, it would prove to be quite the investment. This whiskey spent 62 years in a cask before Dalmore transferred it in to just 12 bottles, making it one of the rarest alcohols on the planet.

Wondering how a bottle of Vodka can sell for upwards of a million dollars? Well, DIVA Vodka is made with natural spring water, triple distilled and filtered through charcoal before being filtered through sand that was made from diamonds and gem stones. Oh, and it comes in an exquisitely designed bottle that features Swarovski crystals stacked through the centre.

THE MACALLAN 64-YEAR-OLD IN LALIQUE $630,000 The most expensive whiskey ever sold. This rare Scotch was vatted from three sherry-seasoned Spanish oak casks — the first was filled in 1942, the second in 1945, and the third in 1946. And, in honour of the 150th anniversary of the birth of famed crystal artisan Rene Lalique, Macallan decided to bottle the blend in a one-of-a-kind Lalique decanter.

HENRI IV DUDOGNON HERITAGE COGNAC GRANDE CHAMPAGNE $2.8 MILLION If the jaw-dropping 100-year old aging process of Henri IV wasn’t enough, how does a sterling platinum, 24-carat gold bottle covered in 6,000 diamonds sound? Named in homage of King Henri IV, this drop is one of the rarest Cognac’s in the world.

PASIÓN AZTECA, PLATINUM LIQUOR BOTTLE BY TEQUILA LEY $4.8 MILLION The most expensive tequila in the world. While the liquor itself has only been aged four years, the million-dollar price tag stems from the packaging. A platinum and white-gold bottle that features 6,400 diamonds. Just make sure you still have money left over for some lime and salt!

SYDNEY’S ART OF THE CRAFT WHILE BEER CAN BE PURCHASED FROM ANY BAR, THERE'S SOMETHING SPECIAL ABOUT DRINKING IT RIGHT FROM THE SOURCE. INDEPENDENT BREWERIES ARE OPENING AT A RAPID RATE ALL AROUND THE COUNTRY AND THE HARBOUR CITY IS NO EXCEPTION, HERE’S A FEW OF OUR FAVOURITES FROM THE REGION.

THE GRIFTER BREWING CO Established in early 2012, The Grifter Brewing Company began when three home brewers were offered the space to make a commercial batch of beer in the just-about-to-open Young Henrys brewery. Their first keg sold out in two hours and it became clear it was time to trade-in their apartment kitchen for a proper brewery. Quality over quantity is always the motto as they focus on producing unique beers that remain highly drinkable. MODUS OPERANDI

SAUCE BREWING CO

After a beer-inspiring motorhome adventure around the USA, Grant and Jaz Wearin returned home to the Northern Beaches with one mission – brew the best beer in Australia. Modus Operandi is Latin for ‘method of operation’ and this brewery’s process is nothing short of impressive. Their beer is brewed with fresh, live yeast flown in from the USA and paired with the finest specialty malts and hops sourced from all over the globe. Every single Modus Operandi can, or keg displays a packaged-on date and is kept permanently cold, so you know you’re drinking fresh, local beer.

Sauce Brewing Co launched in to Sydney’s inner west in 2016. Lovers of diversified craft beer, the brewers take pride in creating flavoursome beers that can be enjoyed by everyone. In their own words, “Whether you’re a hop-head, a sour-freak, or you just like good quality, drinkable ales, we have a beer for you.” MUST-TRY Mega Hop Sauce (Double IPA) ADDRESS 1A Mitchell Street Marrickville NSW 2204

OUR PICK

YOUNG HENRY’S NEWTOWNER APA Young Henrys wouldn’t be what it is without Newtown. It’s our home, community and inspiration. So, when the suburb celebrated its sesquicentenary and we were invited to brew a unique beer to celebrate, we jumped at the chance. The resulting beer was an Aussie Pale Ale called Newtowner.

YOUNG HENRYS “Serve the people” is Young Henry’s motto and damn, do they do it well. As popular today as the day it opened, the brewery has become integrated with its local community like few others. Most notably, the brewers at Young Henry’s have collaborated with the likes of Dune Rats and the Foo Fighters in the past to make unique, refreshing flavours.

ENJOY OVER 200 FLAVOURS FROM A SINGLE SIP. The Old Fashioned is the perfect drink to showcase the flavour of a perfectly crafted bourbon – and Woodford Reserve is all about flavour. Did you know that Woodford Reserve bourbon has over 200 detectable flavours? The perfectly balanced taste of Woodford Reserve includes bold grain and wood notes, to sweet aromatic, spice, and fruit and floral notes. Woodford Reserve makes the best Old Fashioned because of its rich, complex, and balanced flavour profile. All bourbon is created using the same five sources of flavour, but Woodford Reserve does something special with all five. Our whiskeys are crafted through a process that creates bourbon, rich in complexity, with a distinct taste and crisp, clean finish.

GRAIN RECIPE Our grain recipe includes 18% rye, which is high for a bourbon, but allows our whiskey to have a spicy character. WATER SOURCE We use iron-free limestone-filtered water, which is full of rich minerals. FERMENTATION Our fermentation process is among the longest in the industry. It creates a great depth of character and a complex range of flavours. DISTILLATION The perfectly balanced flavour of Woodford Reserve comes from a careful batching process of whiskey distilled in pot stills and whiskey distilled in column stills. MATURATION To qualify as bourbon, Woodford Reserve must be entered into new, charred, white oak barrels. Barrels are selected based on flavour, not age.

A WORLD OF COPPER POT STILLS AND TOASTED WHITE OAK BARRELS. The art of making fine bourbon first took place on the site of the Woodford Reserve Distillery, a national historic landmark, in 1812. The Woodford Reserve Distillery is home to cypress wood fermenters, iconic copper pot stills, and heat cycled warehouses for maturing barrels – every aspect of our process helps give Woodford Reserve its colour and signature flavour. *Source: The world’s 50 best-selling cocktails, Hamish Smith, 17 April 2015, Drinks International *Not all products available in all stores

MCWILLIAMS 660 RANGE

Elevate your senses. The McW 660 Reserve range is inspired by the relationship between the land, the climate and the winemaker. Every ebb and flow of the landscape defines the distinct character of the wines. Crafted by the McWilliam’s Wines family, McW 660 Reserve showcases the elegance and intensity of high altitude, cool climate regions of New South Wales. The inspiration for the range was borne out of the topography of the vineyards (reflected in the label design) and the landscape where the grapes are grown which shapes the taste profile of the wine. Harvested from vines grown at an average of 660 metres above sea level, these food-friendly wines are medium bodied, yet intense with great natural balance and structure. Sourced high in the hinterland of NSW, the skilled winemakers are experts in selecting only the best quality fruit to express the elegant flavours that are well suited whether you are dining out, celebrating an occasion or looking to unwind after a long day at work.

Since its release, the McW 660 Reserve range has been highly awarded at prestigious wine shows throughout Australia. Chief McWilliam’s Winemaker, Andrew Higgins, believes it is the style and the winemaking philosophy alongside the amazing regional offering that has been key in making these wines so outstanding. Andrew’s advice on choosing wine? “Don’t get too hung up on everything, it’s only a drink. Be adventurous”. This is supported by his own vision for McWilliam’s which is to ‘deliver contemporary wines of a superb quality’. The wines made by McWilliam’s are more than just benchmark expressions of Australian winemaking. They are wines that tell a story of a family’s passion for winemaking and draw on more than 140 years of experience. Elevate your senses and discover a contemporary collection celebrating six generations of McWilliam’s winemaking excellence.

‘‘IT IS THE STYLE AND THE WINEMAKING PHILOSOPHY ALONGSIDE THE AMAZING REGIONAL OFFERING THAT HAS BEEN KEY IN MAKING THESE WINES SO OUTSTANDING.’’

SOVINO AUTUMN 2019

PORT OF CALL A perfect post-dinner drink or an accompaniment to your dessert, Port is a sweet, red, fortified wine. Amidst a flurry of interesting facts surrounding Port, we’ve picked out the ones every fortified wine lover should know. Tasting notes

There are several different blends of Port, each producing its own distinct flavour. The 2 primary styles of Port are: - Ruby Port – younger, slightly less sweet, berry and chocolate flavours. - Tawny Port – older, slightly more sweet, caramel and nutty flavours.

Exclusively Porto Many other wine regions make Port-style wines however, if they aren’t produced in the Douro Valley (Porto, Portugal) they’re not true Port.

The Big 5 There are more than 100 grapes that can be used to make Port however the most commonly used are: Tinta Roriz, Tinta Barroca, Touriga Nacional, Tinta Cão and Touriga Francesa.

Vintage Options Thinking of trying a vintage Port? We have it on good authority that the following years from Douro Valley were rather excellent: 1997, 2000, 2003, 2007.

Serving Size Port glasses are smaller than regular wine glasses due to the higher alcohol content and added sweetness of Port wine. A single serving is approximately 85ml. It should also be served just below room temperature, around 16 °C.

Pairing Port Port wine pairs wonderfully with richly flavoured cheeses (including blue cheese and washed-rind cheeses), chocolate and caramel desserts, and salted and smoked nuts.
