After tasting Aviation gin for the first time, Ryan Reynolds claimed it was the best he had ever tasted and went on to purchase the boutique gin producer. JAPANESE POT-ROASTED RARESHANKS ROAST LAMB BEEF SALAD

PERFECT MATCH

INGREDIENTS (SERVES 4) • 1 tbsp olive oil • 2 beef fillet steaks, each 5cm thick • 3cm piece of fresh root ginger, peeled and grated • 2 tbsp Japanese soy sauce • 2 tbsp rice wine vinegar • 1 tsp wasabi (Japanese horseradish) paste • 1 bunch of watercress, trimmed • 8 cherry tomatoes • 5cm piece white daikon radish (or 8 normal radishes), peeled and sliced into thin matchsticks • 8 red radishes, quartered • 2 spring onions, thinly sliced • Black and white sesame seeds

METHOD Heat the oil in a frying pan until it's really hot. Season the steaks with salt and pepper and sear them for 20 seconds on each side – the meat should be fairly dark on the outside and still really rare in the middle. Remove from the pan and leave to rest for 1 hour in the freezer until the meat firms up and is almost frozen (a restaurant trick that will make it easier to slice). Mix the ginger, soy sauce, rice wine vinegar and wasabi paste in a small bowl.

When you're ready to serve, remove the beef from the freezer and slice thinly, aiming to cut 12 slices from each steak (You can sneak the end bits as a chef's perk). Lay 6 slices, overlapping each other, on each plate. Top with the watercress, tomatoes, a sprinkling of daikon radish, the red radishes and spring onion, and pour over the soy and wasabi sauce. Finally, sprinkle with sesame seeds and serve.

The Hill & Valley Shiraz is made with vibrancy and dimension front of mind, with grapes from some of the Barossa’s top sub-regions. The colour is deep and bright with a purple hue, and aromas of lifted charred spice and plum fill the nose. The palate is soft with an abundance of fresh blue fruits and dark cherries, with fine long tannins. Enjoy while fresh and young, or comfortably cellar for up to 10 years.

This wine has an intense crispness, with a lively passionfruit aroma. It combines layers of gooseberry and stone fruit to create a wonderful complexity. Its fullness coats the mouth and produces a long well rounded finish.

Our Adelaide Hills vineyards grow elegant, complex Chardonnays with clarity of fruit and regional expression. Select parcels of fruit were handpicked and whole-bunch pressed before fermentation in small batches using a combination of wild and cultured yeast and natural malolactic fermentation. The wine was left to mature on lees with regular barrel stirring to build texture and complexity.

BYRON BAY BREWERY HAZY ONE PALE LAGER This one is a hazy, straw coloured lager, loosely based around the Australian Lager. Loving a lager is almost part of being Australian and this one brings some extra flavour to the style. Take in the light fruity and floral aromas. Enjoy a little bitterness balanced by the biscuit-like malty notes that gives this beer a rounded fullness.

FIXATION BREWING COMPANY The Fixation Brewing Company was launched to do one thing, make the best Indian Pale Ale (IPA) possible. Drawing inspiration from brewers all over the world, this watering hole has a particular USA west coast flavour. SANGRIA. A PACKED PUNCH. This classic wine cocktail is a popular pick across the globe during the warmer months of the year. And with an abundance of Summer BBQ’s ahead, here are some fun facts, tips and tricks to put you ahead of the Sangria curve. Been around the block

The origins of Sangria cannot be pinpointed exactly however many believe it to be a descendent of the middle ages’ Hippocras. This was traditionally a wine served with various spices to add flavour.

The name game The term Sangria dates back to the 18th century. It is believed to have been taken from the Spanish word sangre which translates to ‘blood’ - a reference to the red colour of the drink.

Play by the rules Only Sangria made in Spain and Portugal can be labelled “Sangria”. Concoctions from any other region must have an alternative label.

Method to the madness There is no set recipe for Sangria, but it is typically made from soda water, fruit juice, red wine, ice and brandy. The rest is up to you!

Celebrate and appreciate The 20th of December is National Sangria Day. Write that down.

Spice it up Traditionally Sangria was made with red wine however, nowadays, it is not uncommon to see the beverage jazzed up with white, sparkling, or rose wine instead.

Patience is a virtue If you plan on making Sangria this Summer, leave it in the fridge overnight. Best served cold, it also allows time for the wine to soak up all the flavours of the fruits, adding to its richness.
