THE CHRISTMAS CASE
£235
We’ve put together a seasonal selection with everything you need – from sparkles to dinner whites and reds, pudding wine and Port.
S EASONAL FOOD & WINE MATCHING RED MEAT Beef
If you are planning to eat red meat over the Christmas period, perhaps as an alternative to Turkey, you will find that red Bordeaux is a classic match. You could also try going further afield with bolder flavours of more southern climes or the new world.
Château Barrail du Blanc Grand Cru Saint Emilion, 2009 Cabernet Sauvignon, Domaine de Saissac, 2011 Psi, Peter Sisseck, 2010, Quimera, Achaval Ferrer, 2010
PORK Ham | Gammon | Pork
For some Christmas is not complete without traditional Christmas ham or honey-glazed gammon. A firm favourite is a cool white Burgundy, though some prefer a more aromatic wine like Viogner. Perhaps try pairing a Rhône wine for those who love their reds.
Chablis, Domaine Millet, 2011 Viognier, Terre de Lumiere, 2012 Côtes du Rhône, Vignobles Gonnet, 2010
POULTRY Christmas Goose
If you are roasting the popular alternative to turkey - a succulent goose this Christmas, choose wine that has acidity to cut through the fat and fruitiness to complement the strong flavours. Pinot Noir is a popular choice for red wine lovers. For a white wine option a Riesling would be perfect.
Pinot Noir, Carmel Road, 2011 Riesling, Carmel Road, 2009
Christmas Turkey
For most people Christmas isn’t Christmas without Turkey and all the trimmings. Again Pinot Noir is a great choice as well as traditional Clarets. Chardonnay is a wonderful choice as is Sauvignon Blanc.
Pinot Noir Reserva, Vina Mar 2012 La Forge de Tart 1er Cru Morey-Saint-Denis 2008 Corney & Barrow House Claret 2010 Mâcon Verzé, Domaines Lefliave 2010 Sancerre, Domaine du Nozay 2012

THE ULTIMATE CHRISTMAS CASE
£425
Pull out the big guns this year, with this selection of extra-special wines, from some of the world’s finest producers. Sit back, savour and enjoy.
Never mind Christmas, game for supper is a very welcome and heart-warming dish at winter. Mature red Bordeaux, Barolo, Barbaresco, red Burgundy, Chianti Riserva, aged Cabernet and Syrah are a superb match.
Château Trotanoy, Pomerol, 2007 Les Songes de Magdelaine, Saint-Emilion Grand Cru, 2006 Barbera d’Alba Cascina Francia, Giacomo Conterno. 2008 Shiraz viogner, The Lane, Adelaide Hills, 2011
FISH & SEAFOOD White fish | Scallops | Prawns and shellfish | Raw and smoked fish
Dry white wines such as Chablis or any lightly oaked Chardonnay and Sancerre are the best match for the most delicate of white fish and shellfish. The meatier fishes can be matched with fuller bodied whites - perhaps with a little oak and reds such as new world Pinot Noir. Of course serving smoked salmon is the perfect excuse to open up a bottle (or two) of bubbly.
Sancerre, Domaine du Nozay 2012 Chablis, Domaine Millet 2011 Delamotte Brut, Le Mesnil-sur-Oger NV Wiston Estate Cuvée Brut, Traditional Method 2010
VEGETARIAN Nut roast
Nut roasts are a typical mainstay for a vegetarian Christmas. This dish is rich and full of powerful flavours. Medium bodied dry Chardonnay and medium to full bodied Bordeaux wines are great accompaniments.

DELAMOTTE BLANC DE BLANCS, LE MESNIL-SUR-OGER 2002
DELAMOTTE ROSÉ, LE MESNIL-SUR-OGER NV
With a minimum of seven years’ ageing before release, this Champagne is harvested only in the finest vintages (and punches way above its price point). Full-bodied and elegant, its citrus and peach notes blend with honey and nuts.
Delamotte is one of a few producers that make their rosé through contact with the skin of the grape, rather than the standard addition of red juice – resulting in a wonderfully soft pink colour, delicate texture and fresh berry taste.

CABERNET SAUVIGNON, DOMAINE DE SAISSAC, PAYS D’OC 2011
From a winery nestled in the South Downs, the elegant fruity, orchard flavour is a result of tiny, expertly focused yields… a new benchmark for English sparkling wine.
This fashionable wine is cultivated in salty sea air near the famous oyster-beds of Bouzigues – so it’s no surprise its silky, apricot and lime tones go with all things seafood.
Deep red-black with oak-aged notes of cassis and cedar, this is probably one of our longest standing wines (and one of our own personal favourites).

CORNEY & BARROW CLARET, BORDEAUX, MAISON SICHEL 2010
Wild ponies run wild in the centuries-old family-run vineyard, and they’ve made it onto the label of this fruity, citrusy, slightly almondy sparkling wine.
Producteurs Plaimont are renowned for the quality and consistency of their wines, which has impressed us during our 20 year partnership. This is our own special blend – a zingy, infinitely versatile dry white.
From the shores of San Francisco to London’s top restaurants, this sommelier-favourite benefits from a cool climate, exuding luscious honeysuckle and white blossom.
Mixing traditional with fresh style, this approachable Claret’s vivid red fruit and floral notes come from a family-run vineyard in Bordeaux.

Chardonnay blends with fresh, ripe red Merlot grapes, in this Italian petal-pink wine from the Ruggeri family’s fine-tuned vineyard.
Acacia blossom and wild peaches come to mind in this refreshing, aromatic wine, hailing from one of the oldest-established wineries in the Languedoc.
Celliers Jean d’Alibert is a long-term supplier in the South of France, and is one of Languedoc’s oldest and most quality-focused wineries, renowned for their consistent excellence and finesse.
The Casablanca Valley produces some of Chile’s finest wines – and Viña Mar (meaning ‘wines by the sea’) is spicy, plummy perfection with roast duck or lamb.

CHABLIS, DOMAINE MILLET 2011
MEURSAULT CLOS DU CROMIN, OLIVIER LEFLAIVE 2011
This is Chablis in its purest form, from a family estate where Philippe Millet and his sons tend three hectares of 30-year-old vines. A pale lemon with crushed seashell and stone fruit, it’s crisp, tangy and rich.
To the north-east of Mersault and surrounded by a brick wall (the ‘Clos’), this vineyard has its own microclimate, creating a ripe and rounded, moreish white with a subtle minerality.

The minerality of this wine comes from the unique mixture of clay, chalk and marine fossil in the soil of the region, and it’s elegantly balanced with a concentrated, creamy fruity taste.
Glittering gold and aromatic with grapefruit, orange and beeswax, this is Francois Carillon’s sublime debut after following in generations of his family’s footsteps and setting up on his own.

QUIMERA, ACHAVAL FERRER, MENDOZA 2010
This pioneering boutique winery in Argentina was founded by two French wine makers in 1998, and uses high altitudes to preserve freshness. It’s a fantastic alternative to many of the classic Mendoza wines.
One of the very few examples of 100% Petit Verdot in Argentina (and with its name taken from local legend) this intense, full-bodied wine’s juicy black fruit and liquorice notes go perfectly with red meat.
In 1998 a group of entrepreneurial Italian and Argentine friends created this successful winery. Quimera, roughly translated as ‘Utopia’, is a multigrape blend from three vineyards, offering dark, concentrated fruit with an earthy backdrop.

HARE’S BREATH PINOT NOIR, MUDDY WATER, WAIPARA 2009
Argentina is fast gaining a reputation for its incredible Torrontés, and this fantastically fruity white was cultivated 1400m up (in some of the highest vineyards in the world), giving it fresh flavours of jasmine, citrus and honeysuckle.
Har and Sophie Eradus knew they’d made the right decision when they found the initials H, S and E carved on a door in their newly bought New Zealand winery… and those initials are now on every bottle. In 2004 Hanna and Michiel Eradus took over the reigns.
In the cooler climate of the Adelaide Hills, wellknown Australian winemaker John Edwards and his family make sure each vine complements the soil it’s in. The tiny addition of Viognier helps bring perfume and softness to this richly-fruited Shiraz.
Muddy Water is a direct translation of the Maori area where these Pinot Noir grapes are grown. Crop levels are kept low, so the fruit is concentrated and flavourful.

CARMEL ROAD PINOT NOIR, MONTEREY COUNTY 2011/2012
From an award-winning family owned vineyard in South Africa’s Paarl region, this crisp white benefits from proximity to the temperatureregulating Atlantic – resulting in a gentle, herbaceous wine overflowing with finesse.
Born from a joint venture between two historic winemaking families in 2000, this hedonistic Californian Chardonnay combines new world ripeness with old world balance, and has an opulent, citrusy tang.
The Pacific’s cool sea breezes drift over this boutique winery in the heart of Monterey County – and this dark, elegant Pinot Noir’s leafy notes combine with dark cherries to create a sublime, silky balance.

BARBERA D’ALBA CASCINA FRANCIA, GIACOMO CONTERNO 2008
Unlike most Pinot Grigios, this hails from the Friuli hills near the Slovenian and Austrian borders. The region’s unique soil is a rare mix of sandstone and marl, and is key to this white’s exceptional flavour and fragrance.
An earthy, opulent red from the wilds of the Val d’ Orica in the south-east of Tuscany, this plumcherry aromatic red is a pure triumph from Andrea Franchetti’s extraordinary estate.
From one of Piedmont’s leading producers, this serious, brooding red invites you to rethink Barbera, with its spiced, dark fruit and marked minerality.

AMARONE DELLA VALPOLICELLA CLASSICO, TERRE DI CARIANO, CECILIA BERETTA 2007
From an estate founded in the 1980s as a centre for advanced agricultural study, this smooth, silky red is of the highest quality – a well-structured, complex wine with a long, chocolatey finish.
This stunning wine recently won three bicchieri from leading Italian publication, Gambero Rosso (the ultimate accolade). Hand-picked grapes are kept cool and dry for 120 days, giving this red a wonderful concentration of balanced fruits.

Tuscan sunshine, poured into a bottle… this versatile, plum-ruby wine is easy to drink – with a red berry, herby and pepper aroma – and excellent with food.
A dream with beef, this beautifully balanced, delicately spiced red was created by the pioneering spirit of Marchese Lodovico Antinori.

SANCERRE, DOMAINE DU NOZAY 2012
PSI, PETER SISSECK, RIBERA DEL DUERO 2010
This single-vineyard clean, crisp Sancerre is the product of the de Benoist family’s passion for creating the perfect Sauvignon Blanc. And they’ve done it: this multi award-winning wine is considered the very best of the region.
The name comes from the resemblance of the wine’s old, gnarled vines to the Greek letter – as well as being a play on Bordeaux-trained Peter Sisseck’s initials. This wine is generously fruity, with a long, harmonious finish.

CHÂTEAU BRIATTE, SAUTERNES, BORDEAUX 2007
This beautifully made slice of ‘Rhône-in-a-bottle’ was born not far from Châteauneuf-du-Pape, so benefits from similar soils (with the classic ‘pudding stones’). Spicy liquorice, dark fruit and fresh acidity make for a rustic yet elegant flavour.
Located in the commune of Preignac, this ten hectare vineyard is split into three diverse areas, giving this Sauternes a balancing, natural richness.

DOMAINE DES VAROILLES & DOMAINE VINCENT DAMPT Thursday 16th January
As hosts of this special dinner, we’re bringing together two very distinctive and highly acclaimed wineries.
34
The Domaine des Varoilles name comes originally from a premier cru monopole first planted in the 12th century. The vineyard holdings have expanded over the years, and now cover ten hectares and eight appellations. Under the strict stewardship of Gilbert Hammel, the Domaine is now producing extremely fine wines of finesse and elegance, which have soared in quality. Domaine Vincent Dampt is one of Chablis’ rising stars. The youngest generation of an impressive Chablis lineage, Vincent is the son of Daniel Dampt and grandson of Jean Defaix, both admired Chablis producers. Respectful of family tradition, Vincent is nonetheless determined to build his own reputation creating classic Chablis wines with a touch of opulence.
