DOMAINE FR ANÇOIS CARILLON 2020 Blink and you’ll miss it… Just as customer demand for these wines hit an all-time high, Mother Nature has put a squeeze on supply. 2020 is small and next year’s 2021 will be truly tiny. We have been the domaine’s exclusive UK agent since the inaugural 2010 vintage and are also proud to work with the wines in Hong Kong, Singapore and China. The domaine, which sits in the very centre of the village of Puligny-Montrachet, was established following the retirement of François’ father, the highly regarded Louis Carillon, whose vineyards were divided between François and his brother Jacques. François’ wines hit the sweet-spot between pristine fruit, precise acidity and a certain textural richness, which we adore. 2020 is also the third vintage of our ‘C&B label’ Bourgogne Chardonnay, bottled for us by François.

THE DOMAINE IN NUMBERS François is the 16th generation of Carillons in Puligny-Montrachet. The family has made wine in Puligny since the 16

th

century.

Domaine François Carillon was established in the 2010 vintage, after François’ father retired and Domaine Louis Carillon was split between François and his brother Jacques. François started working with his father in 1988 (he was responsible for the vineyards). 2020 is the domaine’s 11th vintage – as well as C&B’s as exclusive UK agents. C&B is proud to have been Domaine François Carillon’s exclusive UK agent since the beginning.

THE VINEYARD The vineyards were François’ responsibility at his father’s domaine. Domaine François Carillon owns 6.5 hectares of vines and has access to more via long-term leases. These are managed in accordance with lutte intégrée principles – as naturally as possible, but with the option to treat the vines if required. No weed-killers are used, just ploughing, either by horse or tractor. Production is controlled by a strict pruning regime, followed by de-budding, the aim being to have no more than eight bunches per vine.

THE CELLARS All wines undergo alcoholic and malolactic fermentation in oak barrels, where they remain for one year, followed by six months in stainless steel vats prior to bottling.

The percentage of new oak, from the Tronçais and Alliers forests, is decreasing at the domaine and is now around 10% for villages wines and 15% for premiers crus. Bottling takes place during a favourable period in the lunar cycle.

THE 2020 VINTAGE A mild and rainy autumn and winter allowed the water tables to recover quickly after the dry 2019 summer. Spring started early, with a sunny March and April. Strong, sustained winds kept the vineyards healthy. March to May coincided with Covid lockdowns in France but fortunately the crucial vineyard work was able to continue. Flowering in late May took place amid warm, dry conditions. By the traditional 100-day countdown from flowering, this suggested harvest between late August and early September. Although the 2020 Burgundy harvest was uncommonly early, the growing season was not especially short. This is a crucial difference between 2020 and, say 2003, in which the heart of the growing season was much shorter (85 days was not unusual in 2003). A rainy and cool June re-hydrated the soils before the hot, dry summer set in. The consistency of heat and the absence of heat spikes is a key point of difference with 2019. The second week of August saw sustained temperatures in the mid-30s, contrasting with heat spikes of over 40°C in 2019. Thanks to this summer heat, harvest started even earlier than initially predicted. The habitual ‘saving rains’ of early August fell as a sprinkling on 17th August and then more generously on the 22nd.

2020 TASTING NOTES REGIONAL BOURGOGNE BOURGOGNE ALIGOTÉ

BOURGOGNE CHARDONNAY LE VIEUX CLOS

Made from the Aligoté doré clone, this wine is a selection from parcels in Puligny-Montrachet and Corpeau, to the south. Bright, juicy orchard fruit, with expressive ripe green apple, finishing with a fine chalky minerality. It remains in 500L barrels for 11 months, with no new oak.

The first vintage of Le Vieux Clos was 2014. It is a selection of the best barrels of the regular Bourgogne Chardonnay, plus one other vineyard in Puligny-Montrachet. More substantially proportioned, more generously fruited, lending itself to fine dining, as François remarked – he often reserves this for top restaurants. 10% new oak, all vinified in 228 litre barrels.

C&B LABEL BOURGOGNE CHARDONNAY 2020 is the third vintage of the C&B Label Bourgogne Chardonnay, made for us by François Carillon. This comes from five hectares, spread over various plots in PulignyMontrachet. Generous aromas of ripe peach, apricot and juicy pear lead into a seductive palate of fleshy stone-fruit and just-so cedary spice, lifted by bright acidity. SAINT-AUBIN SAINT-AUBIN 1ER CRU MURGERS DES DENTS DE CHIEN This vineyard overlooks the great Puligny grands crus and is across the road from Les Champs Gains. The name refers to the vineyard’s stones being as sharp as dogs’ teeth. 2013 was François’ first vintage from this 0.67 hectare parcel. Pure apricot fruit with orange blossom perfume and a grapefruity, bitter-phenolic twist to the finish. Really good, an over-performer. Coming from a low-altitude vineyard, behind Meursault and protected by the Hautes Cotes, this is a warm site. Pale gold colour. Aromas of citrus, orchard fruit and stony minerality. Instantly enjoyable on the palate, this is gourmand, with the signature roundness of Francois’ winemaking. You want another glass right away. SAINT-ROMAIN COMBE BAZIN This is a vineyard up on the hill of Saint-Romain. Tasted after the Monthelie, one clearly feels the influence of the altitude and the poor soils. There is a high content of rock in the white calcareous soil. The wine is nervy, zesty, sharp. Citrus, green apple and green pear flavours abound, leading into a lemony finish. PULIGNY PULIGNY-MONTRACHET

PULIGNY-MONTRACHET 1ER CRU LES FOLATIÈRES

In a way, this is the flagship of the domaine. It is made from four hectares of vines, spread over eight lieux-dits: Derrière la Velle, Reuchaux, Corvée, Levrons, Aubues, Tremblots, Les Noyer Bret and Les Rousselles. Aromas of white flowers, bright pears and peaches. The palate is insinuatingly fine and linear on the entry, opening onto a core of tangy lemony acidity around which unwind layers of rich stone-fruit. Wonderful. 10% new oak.

François has 0.4 hectares of Folatières, spread over two parcels on sparse soils which drive the roots deep. This is the most flamboyant of the Puligny premiers crus, planted with 50+ year old vines. Aromatically delightful, playful jasmine and honeysuckle rising from the glass. Rich and expressive on the palate, the intense, weighty stone-fruit refreshed by brisk acidity. Francois calls Folatières “an artist – l’enfant terrible”…

PULIGNY-MONTRACHET CLOS DU VIEUX CHÂTEÂU MONOPOLE

PULIGNY-MONTRACHET 1ER CRU LES COMBETTES

Just behind the village of Puligny-Montrachet, this small monopole of 0.8 hectares is a warm site with deep claylimestone soils. The location lends greater natural richness and ripeness, but in harvesting this first of all, François has preserved a translucent freshness. Vinified in 350 and 400 litre barrels, to keep its vibrancy.

The domaine has a half-hectare holding in Combettes. Part was planted in 1992 and part in 1972. Forceful, immediate aromas of white peach and pear fruit. The rich apricot-fruited palate’s phenomenal power is offset by a fine chalky-mineral bite and lifted by fresh acidity. This is aged mostly in 350 litre barrels, 10% new oak.

PULIGNY-MONTRACHET 1ER CRU LES PERRIÈRES

This is a steeply sloping two-hectare plot, planted with 50+ year old vines, high on the slope alongside St-Aubin Murgers Dents de Chien. Cool, white-fruited and chalky on the attack, fleshing out on the mid-palate, with flashes of orange blossom perfume. A third was vinified in large 350 litre barrels and the rest in standard 228 litre pièces. 15% new oak.

François has 0.74 hectares of Perrières, in two plots, one over 50 years old and the other planted in 1973. A deeper hue than Combettes, yet with a subtler, perhaps more refined aromatic expression – white flowers and a promise of stony-mineral tension. The palate is chalky and textured, a fine-tooth comb of gentle grip adding nuance to the rich stone-fruit, all currently compressed by taut, lemony acidity. 10% new oak.

CHASSAGNE CHASSAGNE-MONTRACHET The domaine’s village Chassagne-Montrachet comes from a 0.7 hectare parcel in Les Voillenots, on the Puligny side of the village. This is both generously fleshy and reassuringly pure, the wet-stone minerality lending a backbone of precision to the joyful fruit. It will drink well upon arrival. 10% new oak. CHASSAGNE-MONTRACHET 1ER CRU As in 2019, François has chosen to blend his 1ers Crus Les Chenevottes and Clos Saint-Jean. The domaine’s holding in Les Chenevottes is a tiny 0.2 hectare parcel, planted in 2008, beside Macherelles, whilst its Clos Saint-Jean is high on the slope, on thin, stony soils. Much more powerful than the Chassagne village, this has a strong sense of salty minerality, coming to a driving finish and a finely defined point. No new oak. CHASSAGNE-MONTRACHET 1ER CRU LES MACHERELLES Les Macherelles is on the northern (Puligny) side of the village; a similar terroir to his Puligny Perrières, according to François, with little soil above the bedrock. This tends to be the most expressive of the Chassagnes and does not disappoint in 2020 – lots of matter here, making for a grippy and substantial wine. Rich peach and apricot fruit and a powerful density to the mid-palate, lifted by fresh acidity. Fantastic. RED WINES BOURGOGNE PINOT NOIR

SAINT-AUBIN 1ER CRU PITANGERET

Aromas of winter berries and bitter cherries, leading into a palate of succulent raspberry fruit and dark chocolate. The plump, sweet fruit provides a plush coating to the supple tannins. Upbeat and so drinkable.

Pitangeret is opposite En Remilly, on the other side of the side valley which descends from the hills above Saint-Aubin. These vines were planted in 1976. Dark and chocolatey, this is a rich and rather lovely wine. 2020 is the penultimate vintage, the vines having been replanted after the 2021 harvest. Just three barrels have been made.

MONTHELIE

This comes from a lieu-dit called Les Planchots de la Champagne, whose rich soil makes for fruit-forward, ripe wines. Delicate, happy aromas of summer roses. The palate is cool-fruited and crunchy on the entry, transitioning through bitter cherry and dark chocolate into a reassuringly fleshy mid-palate.

A very pretty nose of roses and wild strawberries, with darker bitter cherries behind. Beautiful aromatics. The palate is cool and focused, with a sprightly herbaceous lift and fresh acidity.
