Tapas The widespread popularity of “tapeo” {the art of eating tapas} is due to its ability to bring people together. Simple yet enjoyable, engaging yet informal, tapas celebrates conversation, gathering people to socialize and celebrate over flavorful food and delightful drink. The idea of “tapa” originated in Spain nearly 200 years ago when a complimentary slice of smoked meat or cheese was served to guests atop a glass of wine as a salty bite to soak up their libations. Today, tapa refers to a petite portion of edible delicacies. From nuts, olives, and assorted cheeses to roasted meats, stews and appetizers, tapas are now enjoyed in every language, on every table, for every celebration. Since its beginnings in 1995, Coton Colors Founding Artist Laura Johnson has redefined “celebrations” by creating high-style pieces that elevate everyday moments with ease.

Eggplant Caponata Sicily’s cuisine is a fascinating mélange of Italian, Arab and Spanish culinary traditions that draws on local crops for its distinct flavors. The story goes that caponata was originally served in the taverns of old Sicily and this sweet and sour caponata recipe is a delectable nod to exotic aroma and flavors of old. {Enjoy this recipe from The Happy Everything Cookbook by Coton Colors} ↘ Directions: Heat oil in large skillet over medium heat. Add onion and celery, and cook for 5 minutes until soft. Stir in eggplant, and cook for 8 minutes or until it starts to shine and not look dry. Add red pepper, tomatoes, and garlic. Stir, and gently cook for 15 minutes until the vegetables start to breakdown. Add vinegar, lemon zest and juice, honey, raisins, salt and pepper. Reduce heat to medium-low, and gently cook for 10-15 minutes until all vegetables are soft and the caponata is stew-like and thick. Remove from heat and stir in 2 tablespoons of basil. Season to taste with salt and pepper. Drizzle with a touch of olive oil and sprinkle with remaining basil. Serve hot, warm, or room temperature.

Serving Size: 8–12 Ingredients: ₁⁄₄ cup olive oil ₃⁄₄ cup onion (approx. 1 medium), chopped 2 stalks celery, thinly sliced 4-5 c ups eggplant (approx. 1 large round), skin on, ½-inch diced 1 red pepper, ½-inch diced 1 (14.5 ounce) can diced tomatoes no salt added, drained 2 garlic cloves, minced 2 tablespoons balsamic vinegar 1 lemon, zested & juiced 1 teaspoon honey ₁⁄₄ cup golden raisins ₁⁄₄ teaspoon kosher salt ₁⁄₄ teaspoon coarsely ground black pepper 3 tablespoons fresh basil, chopped & divided Toasted pine nuts, capers or kalamata olives (optional)

Onion, Thyme & Goat Cheese Tart Easy to make and stunning to present, this tasty conversation-stopping tart is the perfect complement to soup or salad. The sweet, carmelized onions and creamy goat cheese combine to create a savory, yet sophisticated tapa. {Enjoy this recipe from The Happy Everything Cookbook by Coton Colors} ↘ Directions: In a large fry pan, melt butter over medium heat. Add onions, garlic, and thyme, and sautĂŠ for about 20 minutes or until golden. Season to taste with salt and pepper. Remove from pan and let cool. Preheat oven to 425 degrees and adjust oven rack to middle position. Unfold the dough on a lightly floured counter, and roll out to 8 x 16 inches. Trim the edges and cut into eight 4-inch squares. Divide the onion mixture between the squares and spread on top leaving a thin border around the edges. Cut the cheese into 8 slices and place on top of the onions. Place squares on a large baking sheet. Bake for 12-15 minutes until dough has risen and tart is golden brown. Remove from oven and let cool. Serve with a big glass of wine.

Serving Size: 8 Ingredients: 1 (16 ounce) box puff pastry dough, defrosted 3 tablespoons butter 5 cups onion (approx. 2 large onions), halved & thinly sliced 2 garlic cloves, minced 1 tablespoon fresh thyme, chopped Sea salt & pepper 1 (4 ounce) log of goat cheese
