FOREWORD I would like to extend a warm festive welcome to the first Special Edition of our Christmas Cotswold Luxury Magazine. My sincere thanks goes to all our advertisers who have supported this new yuletide edition. Our styling and photographic team travelled to the stunningly quintessential Whatley Manor Hotel for our winter photo shoot. What a delight! The theme was a ‘London family arrive for a Christmas break’. I hope you enjoy the story line, as we think the images really reflect the beauty of the hotel. Coupled to this beautiful location we included some fabulous merchandise, clothes, jewellery and the Mercedes ML which was used as the arrival and departure vehicle for our ‘family’. DISPLAYS OF AFFECTION Being warm and cosy in the comfort of your own home is essential over the festive period, so my top advice is to always keep this in mind whilst thinking about and setting up new Christmas displays around the house uxurious throws and cushions on the bed and sofas will help give the space that cosy, winter feel. The textures such as faux fur and deep velvets, cashmere and wools are great. Decorating your home at Christmas is a great way to allow your personality to shine and demonstrate what your own personal Christmas is going to be about – I once made a display from candy canes, chestnuts and holly – something really fun and quirky, yet it fitted in with my Christmas and decorations perfectly. Decorating the tree is the most important part. Personally, I tend to keep it light and simple, with my Christmas colours being silver and white and lots of fairy lights, to give it that extra special Christmas twinkle. Why not also add pussy willow to all the branches? This is a gorgeous way to make it fan out.

Remember, fairy lights aren't just for your Christmas tree. You can use this lighting to create different atmospheres in different rooms. Perhaps drape them across a mantelpiece, or wrap them around old urns or statues for a subtle but effective look. Great Christmas accessories and displays like these are a must for around the house! One of the main things I also associate with Christmas is scents and fragrance. For me, the addition of a scented Christmas candle to the home is vital. Placing them throughout the house constantly reminds us what time of year it is. Although I love all the traditional decorations around Christmas, I also like to add a modern spin on things. In the past, I have painted holly and berries white and added them to a bowl of coloured baubles. This is very eye-catching; as it is something unique, so don't be afraid to try something new! Another great arrangement is to fill large glass vases with baubles, I usually do this in colour coordination with my tree! Finally, the dining table! Lunch is an iconic part of Christmas day for us all so it's essential you get your table decorations exactly how you want them. A great table piece idea is to place a row of oversized witches balls, foliage, apples, oranges, waxed roses and holly placed

When you are sitting down to eat Christmas dinner, you want your guest to feel as though they are in an enchanted Christmas home. Use big bold accessories on the dining table to help create this atmosphere. I use big chunky napkin rings on simple linen napkins or a large centrepiece for the table. If you don't have space to put up all your Christmas cards, get a big bowl and throw them all in it! CURED SALMON & CRAB The perfect Christmas Day starter by Wayne Sullivan, Head Chef at the Kings Head, Cirencester 500g fresh salmon fillet (skin and fat removed, you can ask your fishmonger to do this for you) 250g hand picked white crab meat 2 spring onion 2 red chili 50g chives 25ml olive oil Curing mix for salmon 250g table salt 250g caster sugar 1 star anise Zest 1 lemon 1 red chili, deseeded 1. Using at least a 2� deep plastic container with a lid, mix all of the curing mix together and layer half of the mix at the bottom of the container. 2. Lay on the salmon and ensure it’s completely flat, now use the remaining curing mix to completely cover the salmon so that you can no longer see any flesh. Place the lid on the container and place this in the fridge for 15-18 hours. 3. To test the salmon to if it is cured enough, simply press the flesh, if it feels firm and a little dry, this is an indication it is cured fully. If it still feels soft and fleshy, cover the area you have uncovered and leave for longer.

4. When fully cured, remove the salmon from the cure and run under cold fresh water for 5 minutes to remove any cure that may have been left behind. Remove from the water and wrap in a tea towel to dry. 5. Pick through your crab meat to ensure there are no pieces of shell left in there, season with a touch of sea salt, 2 twists of black pepper and juice of half a lemon, set aside. 6. Finely slice the spring onion and chili on an angle. Take care with the chili not to include the seeds. 7. Unwrap the salmon and slice as thin or as thickly as you like. Arrange on the plate and cover with the crabmeat, again using as much or as little as you like. Sprinkle on the chopped chives, chili and spring onion, drizzle a little olive oil and enjoy with some freshly baked French stick. DREAM A Sims Hilditch project Transforming an 11th Century Grade II listed manor house into a contemporary family home was all about rethinking the space for award winning interior designer, Emma Sims Hilditch erched high above the local village and set amongst rolling lawns and 1 acre lake, this charming Dorset manor house enjoys an outlook almost as spectacular as its history. The property dates back to the time of William the Conqueror, who gifted the manor to one of his favourite noblemen. The building literally has its heritage etched into the very stone, with names and dates carved into window frames and other unlikely places. When the manor house was recently purchased, the new owners decided the time had come to transform it from its manorial past into

a light-filled, contemporary home. To assist them in striking the right balance between preserving the patina of the past while bringing the interior up to date, the owners turned to Cotswold based interior designer, Emma Sims Hilditch. Emma is known for her skill in breathing new life into listed buildings. Hers is an understated aesthetic that introduces contemporary lifestyle elements in a manner that is sympathetic to history and heritage. “Listed buildings should be more than just time capsules for period features,” says Emma.

“They should be lived in and enjoyed in a way that makes sense for contemporary needs but without jeopardising their rich character.” For Emma, the starting point is always to strip back as much as possible in order to get a sense of the bones of a property. “It’s important to peel away the layers of previous decoration to discover the building’s raw materiality,” she explains. In the case of this Dorset manor house, she discovered something of an historical jigsaw puzzle; Norman and Georgian architecture pieced together with beautiful wooden beams,

original stone walls, ancient flagstone floors, large fireplaces and detailed wooden panelling. “This is where I drew my inspiration before looking at how to design the interior in a way that made sense for my client’s lifestyle and the space,” says Emma. The key task was to re-evaluate the existing configuration of the rooms, especially on the ground floor. As the clients did not want a formal dining room but hankered after a large kitchen and open living area, Emma made some bold changes. “The goal was to redefine the space to be better for modern living,” says Emma. “By doing away with the formal dining room, we were able to relocate the drawing room into this stunning Georgian wing of the house. We then reconfigured the old drawing room into a large open-plan kitchen-dining room, which gave us further scope to create a beautifully functional laundry and bootroom in what had been the old kitchen.” The kitchen was an especially satisfying area to design as it initially presented a number of
challenges in terms of introducing fitted furniture to crooked walls and uneven floors. Emma’s solution was to design bespoke cabinets that perfectly fit the space. “Sometimes standard cabinets just don’t do the trick but our team has an ace up our sleeve when it comes to knowledge and skill in furniture design.” Emma also reconfigured the rooms on the first and second floors to create a beautiful master bedroom and en suite bathroom that make the most of the open beams. The ceiling height is accentuated by the clever use of wallpaper to create an airy yet intimate feeling. The overall result is seamlessly classic yet contemporary; an aesthetic that Emma cultivates in both her work and personal life. “I believe that good design is not merely a discipline but a way of life. Modern multi-living delight Many of us dream of having a kitchen that not only performs as an inspiring cooking environment, but that combines effortlessly with a workable living space too. A space that is beautifully crafted to achieve the delicate balance of functionality, comfort and luxury. This Bower Willis Designs kitchen delivers on all counts, and so much more. “Multi-function spaces have become the versatile hub of the modern family home,” says Jeremy Bower. “People increasingly ask us to design kitchens where families can cook, eat and work together.” And such was the case in this tiny Cotswold village when a client approached Bower Willis Designs to design a new kitchen and living spaces as part of their home renovation project. Building client confidence was fundamental to the success of this design since they had experienced problems with kitchen suppliers in the past at their previous home. “It was with some caution and nervousness that I approached Bower Willis because of previous experience,” says the client, “but I have nothing but praise for their professional and business like approach. Nothing has been too much trouble and they have been a pleasure to work with.” “It would, I think, be fair to say that I went to them with plenty of my own ideas. I’d had a long time to consider the type and style of my new kitchen and they responded quickly with a clear understanding of what I wanted. They share my passion for attention to detail and we worked together to create a design with which I am now so happy.”

The project involved a series of rooms in the sizeable extension to the back of the property, including kitchen, boot room, utility room, dining and sitting areas. Each space had its own set of requirements; the kitchen should of course be functional, elegant and inviting, where the owners could enjoy creating meals to share with friends and family. “I enjoy cooking,” says the client, “Sunday lunch is a tradition in our family and I do not use convenience meals. The layout of this big room works really well as all our everyday requirements are here in one place.” To enhance the owners’ enjoyment of cooking and entertaining, the kitchen features a wealth of cooking appliances, including a V-ZUG combi steam oven and induction hob, as well as an Aga, which the client had purchased previously. “I wanted the work tops and sink to co-ordinate as much as possible with the Aga so that it became a seamless run of colour,” the client explains. “I also did not want tall cupboards as I felt these would intrude too much on an area which is also a dining and sitting area. As a practical matter, I’m not very tall and didn’t want to have to stand on steps to reach things down, and they get more awkward as you get older too.” Inviting guests effortlessly away from the kitchen is the dining area with elegant mahogany table and chairs. “I am finding that entertaining is less formal than at our previous house, where we had a separate dining room, but this informality is very popular now. We have already had a number of friends for supper and it has worked extremely well.” Past the table you will find the comfort and relaxation of a stylishly furnished sitting area, lovingly referred to as ‘the snug’. An extra sink, u-shape layout of under counter cupboards and laundry appliances complete the room. “The boot room at the side entrance to the house posed an interesting brief,” explains Jeremy, “as we needed to accommodate the gas boiler and electrical tech wizardry housed in the command centre of a contemporary home.” Fireproofing panels between each unit ensured safety, neatly concealed behind a wall of full height burgundy units in high gloss finish to create a sleek and stylish appeal. And what plans to celebrate the coming festivities in their newly designed rooms? “We are hoping to have the family here with us for Christmas, and of course with two small grandchildren the magic of Father Christmas will make it so very special.”
