Caring for our veterans Philanthropist gives back to support veterans care JENNIFER BLYTH This fall, it only takes a little to help those who gave so much. Country Grocer stores in Royal Oak and Esquimalt are joining forces with a local veteran and philanthropist to support vital veterans care in the community. Victoria’s Rudi Hoenson learned of the work of Broadmead Care through friend Jennifer Jasechko, a former staffer who shared with him the vital services at Vancouver Island’s leading complex

residential and daycare program service provider for Canada’s Second World War and Korean War veterans. His initial donation supported new beds for residents, while subsequent donations have paid for everything from new bathtubs to overhead lifts that make care more comfortable for both staff and residents. And today, Rudi has committed to matching donations to Broadmead Care up to $130,000 – a donation that would bring his total contribution to more than $1-million. “The way they work here, I think it’s one of the best places in town,” says Rudi, who visits just about every morning, shortly after stopping at Country Grocer Royal Oak for his daily shop and chat with staff. “The people here are all so friendly. Every nurse you talk to,

they’re just full of sympathy and kindness for the patients here.” The care of veterans is close to his heart. Raised in Holland and Netherlands East Indies, Hoenson joined the army when the Second World War broke out. He would spend 3 1/2 years in a Japanese prisoner-of-war camp and survive the atomic bombing of Nagasaki. He believes passionately in the health and wellbeing of veterans and understands the importance of supporting the men and women who fought so bravely to give Canadians many of the freedoms we enjoy today. “We love having Rudi at the lodge; it brings a lot of smiles to our faces,” says Jessica Bell, director of development at Broadmead Care. “He certainly has demonstrated philcontinued on page 6

anthropic leadership in the community and he gives us great feedback about how we can better serve the veterans and help the staff.” An initiative several years ago explored how staff felt about the people in their care and what emerged was the emphasis that “Every Moment Matters,” a “heartfelt statement that reflects not only a commitment to exceptional care but also a profound respect for each and every moment lived.” Rudi’s newest donation will contribute to programs that support both residents and staff in that belief, such as equipment purchases, training and education. Given that many of those in their care are over age 90, dementia care is a big part of what they do, Jessica notes. Funds will also support “special programming – things that help heal by going to the minds and souls of residents.” Country Grocer was thrilled to join the campaign of their long-standing customer. “Rudi has been a great friend of Country Grocer for many years. He is a regular customer who is on a first-name basis with many of our team members.

He brightens all of our days with his quick-witted humour and smiling face,” notes Country Grocer director Peter Cavin. “Rudi is the most generous person I have met and has led an amazing life. He supports many charitable causes and encourages others to do the same,” Peter adds. “Country Grocer wants to contribute to Rudi’s fundraising out of our admiration for him, his accomplishments and because he is our friend.” Rudi says he also appreciates the friendly Royal Oak staff. “I come in and joke with them and it makes my day,” he says. While shopping in the Royal Oak store this fall, watch in-store for “Rudi’s deals” and look to the Saanich News for two or three of Rudi’s favourite items. Shoppers can also contribute directly at the till where they can purchase $2 vouchers to help reach Rudi’s matching campaign. Greenhouses awash in red

JENNIFER BLYTH Tucked into rolling farmland on the outskirts of Victoria, Hilltop Greenhouses is an oasis of year-round colour. From spring’s bedding plants and fall’s brightly coloured mums to winter’s cheerful poinsettias, the family-run farm supplies many of Country Grocer’s greenhouse-grown flowers. And in the summer, as the chrysanthemums bud and the poinsettias set their first leaves, a new crop – mini cucumbers – keeps staff busy, growing and picking the tasty veg that also makes its way to Country Grocer’s produce department. Growing plants on Vancouver Island for more than 40 years, the eight-acre wholesale nursery is owned by Richard Murray, whose parents, Pauline and Gerald Murray, founded the operation in March 1971. Island for 45 years, notes operations manager Donna Houssin. “It’s nice to see this stay on the Island,” she says, adding that for consumers, that local focus means they can be confident that the spring plants they’re buying are well-suited to their gardens. “Richard is the head grower as well, so his knowledge is very important,” Donna says. “We are here to ensure the quality is top-notch and provide the customers with what they want. When you get product from the Island, you have growers who know the area. These are really key factors in being successful in this business.” Adding mini cucumbers to the mix was a way to keep staff busy through the usually quiet summer, and they’re considering tomatoes down the road – ironically, the first crop Hilltop grew, before turning to what at the time was a more lucrative flower-growing industry. “They’ve been very popular so it’s been a great transition for us,” Donna says. “As a farmer, you’re always having to change and stay on top of market conditions.” Other changes in recent years include moving to environmentally friendly biological pest control – essentially “using good bugs to help battle the bad bugs,” Donna explains.


While ladybugs to target aphids are the most commonly known example, many other species are used to combat common pest problems naturally. On the poinsettias, for example, small cards containing encarsia formosa provide biological control to white fly, the most common poinsettia pest. “For us it has been very interesting,” Donna says, noting customers have been receptive to the move. While “the spring crops are a big part of what we do,” such as the sixpacks of bedding plants and Mother’s Day baskets shoppers will find at their Country Grocer stores, the fall chrysanthemums and Christmas poinsettias are also key, with the latter soon filling shelves with red, white, pink and marble variations of the holiday staple, along with a few unique varieties, Donna says. While shoppers may assume winter blooms come from far afield, in fact, the Island grower has been raising poinsettias commercially for close to 40 years. A six-month process, the poinsettias begin as unrooted cuttings started in oasis and are grown to between a four-inch and 12-inch size, plus a variety of Christmas planters. The plants are grown in greenhouses kept at 20 to 23-degrees Celsius, which will drop to around 16 or 17 degrees before shipping to encourage a richer colour. Of the more than 53,000 poinsettias Hilltop will grow this year, red is still the most popular variety, followed by white, marble, pink and then a few novelty colours.

Red Curry Winter Squash Servings: Sauce for 4 Preparation Time: 15 minutes Cooking Time: 10 minutes Nothing beats oven-roasted winter squash on a cold day. You can use any kind of winter squash. Delicata, acorn, kabucha…take your pick. Then we make a simple and delicious curry sauce to go with it, making a fantastic accompaniment to dinner. Ingredients: 1 winter squash of your choice 1 Tbsp coconut oil 1 shallot, chopped 1 Tbsp ginger, minced 1 Tbsp Thai Kitchens red curry paste ½ cup homemade chicken broth ¼ tsp sea salt 2 Tbsp cilantro, thinly sliced Method: 1. Cut your squash in half and scoop the seeds and pulp from the centre. 2. Optionally, you can brush the squash with melted butter or oil and sprinkle with salt and pepper. 3. Bake in a preheated 375°F oven until the squash is cooked. The best way to tell if it is cooked is to poke the flesh with a fork. When it’s tender, it’s cooked. 4. Let the cooked squash cool a little and then scoop the flesh out of the skin. Place it in a serving dish so it’s ready for the sauce. 5. While the squash is cooking, preheat a medium sized pot on medium heat. Add the coconut oil and then the shallots. Sauté, stirring occasionally until the shallots are starting to brown. 6. Add the ginger and sauté for 1 minute longer, stirring regularly. 7. Now add the curry paste and sauté for about 45 seconds, stirring constantly. 8. Pour the chicken broth into the pot and whisk well to incorporate the paste into the broth. 9. Add the salt and cilantro to the sauce and give it a taste. Once you are happy with the flavours, pour the sauce over the cooked squash and your dish is ready to serve. Variations: • Instead of using ½ a cup of chicken broth, you can use a ¼ cup coconut milk and ¼ cup water or chicken broth for a richer, more satisfying sauce.

Easy Chicken and Squash Cacciatore

Millet Butternut Squash Salad

Servings: 6 Preparation Time: 20 minutes Cooking Time: 60 minutes

Cacciatore is a tasty and simple creation using onions, herbs, tomatoes and sometimes wine. This version is a great stand-alone dish with the addition of the squash and it packs a bit of punch thanks to the green peppercorns and piri-piri.

You can serve this salad warm, making it the perfect fall accompaniment to dinner. The soft butternut squash plays perfectly with the crunchy texture of the millet and the dressing is just awesome.

Ingredients: 6 chicken thighs Salt, pepper, coriander 2 Tbsp flour 2 Tbsp E.V. olive oil 1 large onion 6 cloves garlic 1 to 2 tsp green peppercorns 4 or 5 piri piri peppers 1 cup red wine (optional) 1 - 796 ml can of plum tomatoes ½ cup water 1 small butternut squash ¼ cup fresh basil, sliced Method: 1. Add the chicken to a mixing bowl and season liberally with salt, pepper and ground coriander then turn and flip until the spices are distributed. 2. Now sprinkle the flour into the bowl and turn again until distributed. 3. Preheat a fry pan on medium high heat; add the oil and then the chicken. Brown on both sides well and then remove and set your chicken aside. 4. Add the onions and garlic and sauté, stirring regularly until lightly browned. 5. Toss in the green peppercorns, piri piri peppers if you are using them and the red wine again if you choose. Let the wine reduce down by half. 6. Next up, add the tomatoes to the pan, add the water to the can and swish around to clean it and then add that to the pan. 7. Place the chicken back in the pan and settle each thigh into the sauce. 8. Add the squash and basil and bring to a simmer and then place the whole pan into a preheated 375° F oven and bake for 60 minutes. 9. Serve as is, or with a small portion of rice, potatoes or perhaps barley. Variations: • If you do not have an oven-safe pan, you will need to transfer everything to a casserole dish once it is hot.

Ingredients: For the dressing: 1 Tbsp ginger 2 Tbsp cilantro 3 Tbsp extra virgin olive oil 2 Tbsp rice vinegar ½ tsp sea salt ½ tsp fresh ground pepper 1/8 tsp cayenne pepper 2 cups cooked millet ¾ medium onion, sliced 2 cups butternut squash, cubed and steamed Method: 1. Combine all of the ingredients for the dressing together in a small mixing bowl and set aside. 2. To get 2 cups of cooked millet, you will need about ½ cup of dry. Optionally you can toast the millet in a dry pot for about 5 minutes, stirring regularly over medium heat before adding your liquid. Now add 2 parts liquid to 1 part millet…so 1 cup of broth or water for this recipe will do it. Bring to a boil and then cover and reduce heat to low. Simmer for 20 minutes. 3. Remove the cooked millet from the pot and transfer to a large mixing bowl once the 20 minutes is up. 4. While the millet is cooking you can sauté the onions in a large fry pan over medium heat, stirring frequently until nicely browned. 5. Transfer the onions to the mixing bowl with the millet and then add the cooked squash. The squash should be soft, but not mushy. 6. Add the dressing and toss well to combine. Serve warm or store in the fridge for the next couple days! Variations: • Double or triple the dressing portion of this recipe and save some for another day. Add in some extra veggies like boiled carrot, fresh red pepper or cucumber.

Master of the squash This fall like every fall I am going to master my squash. I am going to roast it, steam it, puree it, shred it, stuff it and any other process that may come to mind. Even though its namesake says winter, in my opinion winter squash is really the quintessential vegetable of the fall; a perfect transition from a long, hot summer into the beauty of autumn. Although you can cook with winter squashes through the winter, the local (BC) stocks are usually spent by the time we get to the coldest season.

First and foremost when squashing is making sure you know how to work with the squash of your choosing. Certain varieties have a very tough flesh and skin, but butternut is probably the easiest to work with. You can easily peel a butternut by using a good vegetable peeler since it has a smooth rather than

contoured skin. From there it is a simple matter of halving, scooping out the seeds, cutting to size (cubes work great) and either steaming or roasting with a little oil in the oven until tender. Afterwards all you have to do is season and serve. Be warned though, cutting certain winter squash can be a little dangerous. They are a very dense and hard vegetable and as such they require a good bit of force to get a knife through them. A large, heavy set chef knife is usually the best bet… something that is a thicker gauge i.e. German style over Japanese. Once you’re set with the right knife, cut in half with two motions instead of trying to do it with one. Resting the squash on its side, cut right through the middle with your knife and then cut down toward the bottom of the squash first. Remove the knife, turn the squash around and cut from the middle up to the top. It helps to remove the stem before trying to cut through the top half as well. This can be done by whacking it with the spine of your knife or a meat mallet. If you are feeling tentative about cutting through this tough veggie, consider a couple of tricks I have seen. Place the squash into a large pot and fill with water. Remove the squash, bring the water to a boil and then add the squash back to the pot. Simmer for 2 or 3 minutes then carefully remove from the water. Let it cool a little and then you can easily peel/cut the squash. Alternatively you can poke a few holes in the skin of any squash and microwave for 3 or 4 min-

utes, which again will soften the veggie, making it easier to work with. But more and more, people also want to know the salmon or shellfish on their dinner plate was caught sustainably. The Vancouver Aquarium’s Ocean Wise is a conservation program that works directly with restaurants, markets, food services, culinary schools and suppliers who have a common goal: a commitment to serve or provide sustainable, ocean-

friendly seafood. Ocean Wise ensures partners have the most current scientific information regarding sustainable seafood to help them – and the public – make ocean-friendly buying decisions. Options are highlighted on their menus and in display cases with the Ocean Wise symbol, making it easier for consumers to make oceanfriendly seafood choices. Launched in 2005, the program targets the No. 1 threat to oceans today: overfishing, says Teddie Geach, seafood specialist with Ocean Wise. Through those 17 years, “it’s grown signifi-

cantly.” From just 16 restaurant and chefs in the Lower Mainland, Ocean Wise expanded to Alberta in 2007 and went national in 2009. Today, it has some 650 partners from Victoria to St. John’s, N.L., representing more than 1,000 locations. “Especially here on the West Coast, it seems people are very aware of the program and the importance of choosing sustainable seafood,” Teddie says. “It seems people are becoming more in tune with the importance of making sustainable seafood choices.” Country Grocer has several dozen Ocean Wise products, including Island favourites like Hardy Buoys smoked salmon, but some are seasonal. “Like so many companies out there, Country Grocer wants to do their part in saving our oceans from over-fishing so that there’s enough seafood available for many years to come,” says Dave Hubscher, Country Grocer’s Meat Operations Manager.

“There’s a few different programs out there but we belong to Ocean Wise as it’s supported by the Vancouver Aquarium and close to home.” The stores work with Ocean Wise to help identify these items with stickers and signage, Dave notes. Ocean Wise recommendations cover a wide variety of species, not only those from here in Canada, but from around the world; it also includes some farmed and fresh-water species. For example, one of the most sustainable products is farmed shellfish, such as mussels, oysters and clams – “all really good choices,” Teddie notes. Dungeness crab, B.C. spot prawns, B.C. sablefish and ling cod are also fisheries where stocks and management are sustainable and harvesting results in minimal by-catch of other species. Some products, like tuna, can be complicated, but Teddie suggests looking for pole-and-line caught albacore as a more sustainable choice.

Ocean Wise Dungeness Crab Tacos with Radish Sprouts, from the Ocean Wise Cookbook 2 By Chef Ned Bell, Yew seafood + bar at the Four Seasons Vancouver Prep time: 20 minutes Cook time: 10 minutes Substitutions: Maple syrup is a great substitute for the honey. Ingredients: Juice and zest of 1 lemon, divided 2 Tbsp (30 mL) miso paste 2 Tbsp (30 mL) Dijon mustard 2 Tbsp (30 mL) honey 1 cup (250 mL) canola oil 1 ripe avocado Sea salt Freshly ground pepper 3/4 cup (180 mL) fresh cooked Ocean Wise Dungeness crab 6 crispy wonton shells Method: 1. Set aside 1 tsp (5 mL) of lemon juice for the avocado. Mix remaining lemon juice with lemon zest, miso paste, mustard, honey, and canola oil in a blender to make the dressing. 2. Mash avocado with a fork. Season with 1 tsp (5 mL) lemon juice, salt and pepper. 3. Mix about 1/4 cup (60 mL) dressing into the Ocean Wise crab   meat and taste, adjusting as needed. Refrigerate the remaining dressing for up to two weeks – it is great on salads.

To serve: 2 radishes, thinly shaved 1/2 cup (125 mL) radish sprouts Put crab-meat mixture into the wonton shells so they are bursting with crab meat. Spoon the avocado mixture onto a plate and place assembled tacos on top. Garnish with radish slices and sprouts.

Pet cuddles to combat homesickness

With fall taking many students away from home for the first time, the expression dog is man’s best friend might be worth paying attention to, according to a new study from the University of British Columbia. The study shows that animalassisted therapy can help students combat homesickness and could be a useful tool in lowering postsecondary drop-out rates. “Transitioning from high school to university can prove to be a challenge for many first-year students,” says assistant professor John Tyler Binfet of UBC’s Okanagan campus. With homesick students more likely to drop out of university, “universities have a vested interest in supporting students during their first-year transition.” In the study, 44 first-year university students who self-iden-

Half completed eight weeks of dog therapy – 45-minute weekly small group sessions with dogs and handlers, and engagement with other first-year students participating in the study. The other half of the students were told their sessions would begin in eight weeks. Following the initial eightweeks, participants who completed the eight-week program experienced significant reductions in homesickness and greater increase in life satisfaction. Participants reported that sessions “felt like they were at home chatting with friends who brought their puppies.” The non-treatment group reported an increase in their feelings of homesickness.

Beating the back-to-school germs Fall’s return to school, sports and other extracurricular activities typically brings with it coughs, colds, sniffles and other illnesses. But how do these germs get into your kids and your home? Kids are commonly exposed to a big list of contagious germs: colds, respiratory viruses, strep throat, influenza and much more. Consider how much work you and your family miss due to illness, either to take care of a sick child or getting sick yourself, and it’s easy to see the value in a little “preventive medicine.” Island Health Medical Health Officer Dr. Dee Hoyano is a mom of school-aged kids, and her best stay-healthy advice to her kids involves hand washing. “When you think about how much equipment is shared at school, it is no wonder that illness spreads quickly,” she says. “Kids should get in the habit of washing or disinfecting their hands not just around mealtimes and using the bathroom, but also at other transitions during the day.” Key hand washing times should include: • After gym class or playing outdoors • First thing after coming home from school/work/play outside • Before and after eating • After using the bathroom Recent studies have shown high levels of potentially harmful bacteria on items like reusable water bottles and lunch bags, backpacks, smartphones and other hand-held technology. Germs also lurk in many of the items that come home every day, but we don’t often think to give them a wash. “Lunchbags and water bottles should be cleaned regularly,” Hoyano says. “It is a good idea to have a couple of them so you can switch them out to allow for a good cleaning.” Backpacks are another culprit. Just think of where that backpack has been during the day – on the floor at school, stuffed in a rarely cleaned locker, or on the bus or bathroom floor. Backpacks also carry food, wet or sweaty gym clothes and lots of other things besides homework. Hoyano suggests helping your kids establish a new routine to deal with everything in their backpack as soon as they get home. “Lunch containers can go right in the dishwasher or get washed in the sink, dirty gym clothes in the laundry, homework out, then hang the backpack where it is supposed to go, and wash hands before doing anything else.”

Seasonal celebrations Giving season brings lots of opportunities to give back with Country Grocer While community giving is built in to the way Country Grocer does business, there’s no doubt that fall re-focuses attention on helping those in need in our neighbourhoods. Cycle of Life a success The Country Grocer team raised an amazing $15,669 for hospice care on Vancouver Island this summer as part of the annual Cycle of Life 200-kilometre, two-day cycling event. In addition to the individual fundraising efforts from Country Grocer’s participating riders, the H for Hospice fundraiser in the store – made possible with the support of suppliers and shoppers – raised $3,312, notes team co-ordinator Dave Hubscher, Country Grocer’s Meat Operations Manager. An additional $10,000 came from the Island-grown company’s annual golf tournament. In all, the event has raised more than $130,000 and all the money raised goes directly into the different hospice communities up and down the Island. Dave also offers special thanks to Farmhouse Poultry for donating the chicken for the ride’s Saturday night dinner. “On Saturday we end up on Salt Spring for the night and Country Grocer’s Chef Michael comes over and cooks up a feast for the riders and volunteers. After a long day’s ride, protein is a must!”
