THE GIFT OF LIFE Saving lives, one child at a time JENNIFER BLYTH Thirty years ago, Canadian entertainment icon David Foster received a call from his mother in Victoria that would change not only his life, but the lives of hundreds of families across Canada. She asked if he would visit a little girl from Victoria, B.C. who was in UCLA Medical Centre in Los Angeles awaiting a life-saving organ transplant. Seeing how difficult the experience was for the girl and her mother, being away from family, friends and home, he asked what she wanted more than anything else. The girl replied: “I just want to see my sister.” Realizing that for the price of an airline ticket he could make her wish come true, the David Foster Foundation was born.
The David Foster Foundation is a national non-profit dedicated to providing financial support for non-medical expenses to Canadian families with children in need of life-saving pediatric organ transplants. Working with pediatric hospitals across Canada – including BC Children’s Hospital – the foundation helps provide “the gift of life.” Over the past 30 years, it has helped more than 1,000 families with children in need of life-saving organ transplants and provided much-needed family support. Support includes transportation costs, accommodation, long distance phone calls, meals and groceries for the family while they’re in another city for their child’s transplant or related care, and rent or

mortgage assistance if necessary while the family is in another city or province for surgery or medical treatment. Before David Foster founded the foundation, the enormous emotional and financial toll on families left many without the resources they needed. Through the David Foster Foundation, Canadian families receive financial support so they can be with their child during the entire life-saving organ transplant process, from the initial transplant through to the
post-operative care and annual check-ups, which often lead to multiple years of support. Before she was even born, Evanne Rae Fisher was diagnosed with multiple heart defects, three of which were extremely rare. When Evanne’s mother received the message that she’d need to travel to Toronto’s Hospital for Sick Children to deliver her baby, the emotional and financial implications were overwhelming ... until the foundation stepped in. “Without it and its amazing help, I would not have been able to live in Toronto and subsequently await the birth of my child, a heart and then stay for recovery,” she writes. “Every minute I had and continue to have with Evanne, I owe to the David Foster Foundation. Plain and simple.” Today, Evanne is a beautiful girl with a ready smile – which she shared freely for the cover of this issue of Friends & Family.
Help raise awareness of organ donation This April, Country Grocer and the David Foster Foundation will work together to raise awareness of organ donation and the foundation’s invaluable work. Look for the foundation’s booth coming to your Country Grocer during National Organ Donor Awareness Week, April 17 to 23, and a fundraising raffle with a prize of two round-trip flights any where WestJet flies. Why the need for awareness? While a whopping 85 per cent of Canadians say they support
The vital stats of organ donation According to the David Foster Foundation: • One organ donor can save up to eight lives and improve the quality of life for up to 75 people. • Although about 85 per cent of Canadians say they support organ donation, only 14 per cent are registered. • Currently, more than 4,500 Canadians are on the organ donor transplant wait-list. • The most commonly donated solid organs include kidneys, heart, lungs, liver, pancreas, small bowel and stomach. • Anyone can become an organ and tissue donor. According to Health Canada, the oldest organ donor on record was 90 years old! • Survival rates of transplant patients continue to improve and a majority of recipients live healthy, productive and fulfilling lives post-transplant. • Once registered, talk to your family and loves ones about your wishes to become an organ and tissue donor.

The foundation’s message is simple: “Be a donor, save a life.” With thousands of Canadians waiting for organ transplants – too many of them children – Canada has a chronic shortage of most organs needed for transplant. Conversely, organ transplantation is one of the most remarkable success stories in the history of medicine. After one year, liver and kidney transplant recipients enjoy a survival rate that exceeds 85 per cent. Transplants are also cost-effective, the foundation notes. For each person with kidney disease, the average medical cost of dialysis treatment is $50,000 per year. The cost of a kidney transplant is approximately $20,000, with an additional $6,000 per year for anti-rejection medicines. Delicious treats come in small packages at your local Country Grocer bakery. Bakery Operations Manager Bill Peppy and his team have been working on brand new mini cakes and cream pies. “We took the same approach we’ve had for a few items, including that Signature Sourdough we re-invented last year. The success of that particular item has surpassed our expectations,” Bill says. With the positive reception they received from those products launched last year, Bill and his bakery team turned their attention to what other items they were doing well but could make amazing. For those whose tastebuds lean to cream pies, all three have received a refresh. “All three varieties of our cream pies have gone from a regular pastry pie crust to a graham wafer crust. This upgrade would have probably been a sufficient change, but no, we added more whip cream, more filling and topped them off with bananas, coconut or chocolate,” Bill says. Taking full advantage of the in-house bakery and talented team members has allowed Country Grocer to really expand the dessert offerings. “The ‘treat of the week’ portion of our ads have really drawn attention to a category where we really do lead the way,” Bill says. While others opt for pre-made des-

serts and treats brought in from suppliers, “we have just said ‘no,’ we aren’t doing that. “We are proud to say a major part of what we sell in our cases is made fresh in all locations,” Bill emphasizes, noting the desserts are prepared by the Country Grocer bakers fresh in-store and beautifully finished by the talented decorators. But what could the bakery team do better? “Keeping to the same sourdough philosophy, I thought, let’s pour some thought into the five-inch cake and crank up the look and taste profile, and have it unique to the smaller size. That means you can only get the ‘Brownie Mountain’ in the smaller cake, not our everyday eight-inch version,” Bill says. “Now we’ve created a mini cake following!” The cakes are available in six varieties, with a flavour profile for just about every taste, and for those who would like to personalize their cake, stop by the bakery counter. “We can personalize anything.” The pies are available in three varieties, with a few new flavours in the works, including the amazing caramel pecan sea salt brownie explosion. “It’s probably the best cream pie you’ve ever seen or tasted, and you’ll definitely want more,” Bill says with a laugh. Phillips Root Beer and Apple BBQ Sauce
Phillips Orange Soda Stir-fry
Servings: N/A Preparation Time: 10 minutes Cooking Time: 25 minutes

Root beer apple BBQ sauce…so good. Make your own BBQ sauce and you’ll not regret it. Using the Phillips root beer ensures that there will be lots of flavours to coat your steak, ribs or chicken. Give it a go!
A fantastic take on stir-fry, this dish gets creative with a local craft soda from Phillips Soda as a finishing touch. This great dish is nice as a light stand-alone entrée or serve it with rice for a more satisfying meal.
Ingredients: 1 bottle Phillips Root Beer ½ cup canned or fresh tomato 2 Tbsp molasses ½ an onion, diced small 1 Gala apple, peeled, diced small 4 cloves garlic, sliced 1 teaspoon sea salt ½ teaspoon cinnamon 2 Tbsp rice wine vinegar
Ingredients: 2 Tbsp coconut oil 1 sweet onion, diced 3 cloves garlic, sliced 1 jalepeno, sliced 2 chicken breasts, diced 1 teaspoon coriander ½ teaspoon sea salt ½ bulb fennel, sliced 1 red pepper, diced 1 cup Phillips Orange Cream Soda ¼ cup chopped cilantro
Method: 1. Start by concentrating the root beer in a small pot along with the tomato and molasses. 2. Meanwhile, sauté the onions with the apple and garlic, stirring regularly in a small pan until nicely caramelized. 3. Add the salt and cinnamon and sauté for another minute or so, stirring constantly. 4. Immediately add the vinegar and release any stuck-on goodness from the pan and transfer everything to the root beer pot. 5. Continue to simmer the root beer until you create a nice consistency. 6. Now, using an immersion blender or counter-top blender, puree until nice and smooth. Adjust the consistency if necessary with a little more root beer if it’s too thick. 7. You’re now ready to use your barbecue sauce as you would any other.
Method: 1. Preheat a large fry pan on medium heat. Add the coconut oil and then the onions, garlic and jalapeño. Sauté until lightly browned. 2. Add the chicken breast to the pan and sauté, stirring occasionally until the chicken is lightly browned on all sides. 3. Once the chicken is browned, add the coriander and salt and sauté for one minute longer. 4. Now, add the fennel and red pepper, sauté for a minute or two. 5. Next add the cream soda and simmer, stirring occasionally until the soda concentrates down by about 75 per cent. 6. Serve as is or compliment with a serving of rice and enjoy.
Gambas al ajillo Servings: 1 meal or 2 to 3 appy portions Preparation Time: 10 minutes Cooking Time: 2 minutes This is probably my favourite way to prepare shimp/prawns. It’s quite simple … garlic, spice and white wine work together to flavour the beautiful texture of good-quality shrimp. Ingredients: 200g Selva Black Tiger shrimp, raw Sea salt, fresh ground pepper and chili flakes 2 Tbsp olive oil 2 cloves garlic, minced 1/4 cup white wine 1 Tbsp chopped parsley Method: 1. Defrost the shrimp overnight in the fridge. Once defrosted, peel, leaving the tip of the tail on for an enhanced presentation if you desire. You can reserve and freeze the peeled shells to flavour a broth another day. 2. Pat the shrimp dry with paper towel and then season to taste with salt, pepper and chili flakes, keeping in mind the chili flakes pack a bit of a spicy punch. 3. Preheat a stainless steel pan or tapa dish on high heat. Once hot, add the oil and then the garlic. Stir the garlic and then immediately add your shrimp. Give a good stir to distribute the garlic and then make sure each shrimp is on its side. 4. Cook about 30 seconds and then flip the shrimp to the other side. 5. After another 30 seconds, carefully add the white wine and stir again, making sure nothing is stuck on the bottom of the pan/dish and remove from the heat. 6. Add the parsley and serve immediately with a bit of baguette to dip in the left over garlic and wine oil. Variations: Adding a little chopped shallot in with the garlic is a great way to increase the flavour.

A kit to save YOUR LIFE There’s a boat I’m pretty sure you don’t want to be in…the boat with no food or supplies after disaster strikes. We live in a place where a major earthquake is a matter of when, not if. Really though, it may not happen in our lifetimes, but if it does, a well-stocked emergency kit has the power to save you and your family’s lives or at the very least keep you relatively comfortable while you wait for help to arrive or order to be restored. They say that you’ll need at least a threeday supply of food for each of your family members, including any critters that may be dear to your heart. Realistically though, more than that is ideal as it may be longer before that knight in shining armor arrives. As you all know, I am an advocate of eating fresh produce and unprocessed foods in your day-to-day life; however that’s simply not feasible after a major disaster when the city may be at a stand-still. The power is likely to be out, which means anything in the fridge or freezer will spoil quickly and foods that must be cooked need to be prepared with ease. Think camping. In fact, your camping gear may just be a fantastic selection of items to keep with your kit. At our house we have all of our camping gear (tent, sleeping bags, camp stove, pots, pans, utensils, manual can opener, flash light with extra batteries, first aid kit, lighter and
propane) in our shed along with our emergency kit and a few other crucial items… an extra set of house keys and car keys, a battery-operated radio, sanitizer– since getting sick would just compound a tough situation – and last but most important, water! You’ll want 4L per person/per day for drinking, cooking and hygiene. Now, back to the food … If you still have access to your fridge/freezer and the power is still on, then great. If you have no power, you can eat your fridge food first and then work on your freezer items. Once your perishables are eaten or they have perished, it’s time to start digging into your kit. So what kinds of foods are good options for the kit? With likes, dislikes and allergies, everyone’s food supply will look a little different but here’s a list to get you on the right track. Dried fruit, nuts, seeds, crackers, protein/ granola bars, nut butters, jam, ready-to-eat cereals/granola and uncooked instant cereals. Some non-perishable milk options will come in handy with those cereals. Boxed potatoes, pasta, quinoa and rice are good high-carb foods to have on hand, but require additional water and cooking. Because of that, canned foods are your best bet. Canned soups, fruits, vegetables and beans, as well as tuna, salmon or even ham … yes, I just recommended canned ham! Add some flavour to your food with bouillon
products or seasoning mixes, salt, pepper, oil and vinegar. Additionally, handy freeze-dried meals can be found at your local outdoor supply store. The transition to life after “the big one” can be made better with comforting foods as well.
Instant coffee, tea and cocoa as well as honey or sugar will go a long way in raising spirits. A bag of chips, box of cookies or some candies might be a nice touch to make some smiling kiddos. Once you have your kit sorted, make sure to go through it every six months and check best before dates. Rotate any food that has a fast-approaching date and swap with fresh replacements. A locked shed or garage is a great place to keep your kit as your house may be structurally compromised. A camper or trailer, if you have one, is the perfect place for storing your emergency kit. Like an insurance policy, you hope you never need to use it, but you’ll be thanking the Cosmos that you did have it, the day you do.

Inspired innovation STRIKING NEW IDEAS FOR YOUR COUNTRY GROCER STORE JENNIFER BLYTH If you’ve noticed a new and tasty idea in your Country Grocer store, there’s a good chance Loretta Hopkins has had something to do with it. “I do projects, so new items and new programs, such as the cut fruit and veggie program and sushi,” Loretta says. Loretta will take a concept from the idea stage, through testing and implementation, ensuring each of the stores has everything they need to make it a success. “You’re trying to figure out what the customer wants, and make it easy and comfortable for the staff. It’s such a team effort.” Often that means starting in one of the Nanaimo stores where they can test drive an idea and work out any wrinkles before taking the initiative to other locations. Most recently, she launched a hot and cold buffet table, in Nanaimo’s Bowen Road store, where all manner of items are sold by weight – perfect for lunch on the go or dinner to take home and feed the family. “The customer response has been amazing,” says Loretta, based in Nanaimo and a Country Grocer team member for close to 30 years. “Home meal replacement and value-added programs enhance the customers’ shopping experience. It allows them to buy more of their needs in our stores. I believe these programs are essential in this day and age for seniors, students and working families,” says Loretta. Bringing different departments together for the new initiatives brings added benefits to both the store and the customer. “Cross merchandising requires teams working together and managers see the benefits of shared space. I think we are getting better at this every day. An item such as a veggie skewer or cut fruit with the vibrant colours makes customers stop and take notice. They may not buy that particular item but they often will look at the whole display and find
Loretta Hopkins something that they want.” In addition to the veggie kebabs – ideal for the coming grilling season – other new ideas coming to stores recently include house-made guacamole and salsa. “When we’ve run out on the shelves, we’ve actually had customers know we’re making it and wait for it to be ready,” she says. Key to that is the time and research that goes into getting not only the process, but the recipe, right. “This is a unique recipe to us. It’s all fresh product with no additives or preservatives, and it’s all ingredients you know the name of,” says Loretta, who’s often not satisfied with the first recipe, so will tweak, test and research until it’s just right. “It is a fabulous job,” she concedes with a laugh. “I feel truly blessed.” Some items are more seasonal in nature. The fresh, in-store-made cranberry sauce may only be in some stores and only for holidays such as Thanksgiving, Christmas and Easter, while the veggie skewers and meat skewers sell best during barbecue season, Loretta notes. When not in the store, you’ll often find Loretta at home with her husband in Lake Cowichan or spending time with their grandchildren, Tyson, Kyle and Owen, “by far my favourite pastime!”

COAST GUARD TO THE RESCUE As the Country Grocer team prepared to roll out for the Ladysmith Light-Up amid blustery winds and a torrential downpour, Boris the Reincow’s float went dark. With parade-goers braving the elements to see the brightly lit floats, we were horrified – what to do? Luckily, Kelly Lynn Kurta from the Greater Victoria Festival Society walked by at just the right time and pointed out Jeff Cox, an electrician from the Canadian Coast Guard. “Jeff worked on our float for 20 to 40 minutes – time kind of freezes when you’re in a panic,” says Country Grocer marketing manager Tammy Averill – “then poof! all the lights came back on. Thank you so much, Kelly and Jeff!”
