Island family’s experience becomes beacon of hope for others coping with childhood cancer BY JOANNE HILL Imagine having your child diagnosed with cancer. How would you begin to explain to your five-year-old boy that his life is going to change? What about his three-year-old sister? How would you keep moving forward and maintain hope? Sue Kerr has walked this path and her story is one of hope even in her darkest hour. Hope means different things at different times. Sometimes it’s a fiercely burning beacon and sometimes a tiny point of light barely discernible in a raging storm. Sue has an uncanny ability to see the tiny point of light in the worst tempest. During her darkest time, she took that glimmer and made it a beacon of hope for families facing their own childhood-cancer story. Sue’s story is not just hers. When her

son Jacob was five, Sue noticed something wasn’t right. Her parental instinct and insistence on further tests revealed a large mass in Jacob’s body – neuroblastoma, a cancer requiring aggressive treatment. Sue sounds objective, the medical terms rolling off her tongue, but it’s a language learned out of necessity. The next year brought some expected challenges, such as rounds of chemo and stem-cell therapy that left Jacob sick and balding. There were feelings of isolation and bouts of despair. There were unexpected challenges – money became tight, the family was strained. Friends didn’t know how to react. One night, exhausted, in the grocery store with $8.48 to her name, Jacob, now six and visibly ill, reminded Sue about living in the moment in the way

only a child can. “He kept banging the cart into the back of my legs,” Sue remembers, tears in her eyes and a broad smile on her face describing the motion with her hands, “I told him to stop, it hurt! But he just kept doing it!” She’s animated, telling a familiar story, saying what most parents would in that situation. “I told him to stop or we were leaving, and you know what?” she pauses, her eyes sparkling, “He did it again!” As promised, Sue scooped up a now-loudly protesting Jacob. In that moment, Jacob was like every other sixyear-old – just a kid pushing the boundaries, and Sue was just a mom dealing with an everyday-childhood moment. It was life. It’s a good memory, a normal memory. While at Ronald McDonald House


in Vancouver, Sue met a community of people with shared experiences binding them together, coping with a situation that only someone who has lived through it can truly understand. As Sue soberly points out, “no matter how bad it is for your child, the horrible part is that there’s always a story worse than yours.” Sue remembers a five-year-old boy, a leukemia patient staying in Ronald McDonald House with his “Nan” because his single mom couldn’t be there: she had to keep working to pay their mortgage. person and we are so glad to have him as part of our lives.” Country Grocer’s Andrew Cavin feels very fortunate to have been able to work with Brad. “His depth of knowledge in the grocery industry is impressive and his attention to detail is something that will always stick with me,” Andrew says. “He has built great relationships with both customers and community groups which makes for long walks around the store. Thank you for all the laughs and lessons over the years!” Craig Cavin, Director, South Island stores, notes that Brad has played a huge part in the growth of Country Grocer and his own education and experience. “I learned a lot from him over the years, working in different departments in the store, and working alongside him now. He has meant a great deal to the Esquimalt store, to everyone who has worked with him and to the whole community. It’s hard to sum up 20 great years, but we know he will be missed in that role and it will be impossible to replace what he brings to the table every day,” Craig says. “We can’t thank him enough for all he has done. Congrats and all the best, Brad.” While Brad prepares to pass the keys to incoming store manager Dave Kajak later this fall, we won’t fully miss him just yet as he plans to continue to be involved part-time, he says. After all, he says, “Country Grocer’s motto, ‘You’ll feel like family,’ is 100 per cent accurate in my opinion.”

Bringing wellness home Like many who come to nutrition and wellness as a profession, Carla Williams was drawn to the field after her own personal health concern. While she’d always believed she had a healthy diet, kidney stones prompted her to begin learning more about nutrition, and wellness more generally. In addition to her own research and learning, the long-time Country Grocer team member took a full-year program at the Canadian School of Nutrition. When the position of Nutrition Manager became available at Cobble Hill Country Grocer, Carla brought her five years of experience managing the south Nanaimo Country Grocer nutrition department, and there was no question she was the right person for the job – and that Country Grocer continues to be the right fit for her! “It comes down to the connection I have with my customers,” Carla says. “We have engaging conversations, sharing personal histories, and that comes from being open, without judgement, and having a genuine care and concern for who they are. And really, what a perfect place to have a nutrition department – in a grocery store!” The local Country Grocer store is a familiar, welcoming location for people to add to their new or long-standing interesting in nutrition and wellness, allowing Carla the opportunity to pursue her passion of sharing health and wellness knowledge.

Crown Roast of Pork Servings: 10 Preparation Time: 10 minutes Cooking Time: 90 minutes This is a fantastic way to create a special dinner. A crown roast of pork sitting at the centre of the table has a commanding presence and is sure to get your guests’ mouths watering. Season the roast and cook it as per the instructions below or for an added element of delish, stuff the roast with my Roasted Yam and Pretzel Stuffing, also featured here.

Roasted Yam and Pretzel Stuffing Servings: 8 Preparation Time: 25 minutes Cooking Time: 50 minutes This is one of my favourite stuffing recipes, no doubt. Portofino Pretzel buns make for a perfect stuffing bread, but this recipe has just as much volume in veggies and a heck of a lot more weight. That’s how I roll, as you know. The yams make up the bulk and they’re truly delicious as a stuffing.

INGREDIENTS:

1 crown roast of pork Grape seed oil Sea salt Chinese 5-spice Fresh ground pepper

2 Tbsp butter 1 celery stick, sliced ½ of a red onion, diced 5 cloves garlic, sliced 1 yam, diced A few Tbsp rosemary leaves, chopped 2 Portofino pretzel buns, cut into cubes 2 eggs ¼ cup whipping cream ½ tsp salt ½ tsp fresh ground pepper ½ tsp cinnamon

METHOD: 1. You may need to order a crown roast of pork from the meat department ahead of time so you don’t need to wait around. Just give them a call! 2. If you want to make your presentation extra special, take the time to scrape the exposed bones and remove all of the connective tissue. You can do this with a sharp boning knife or paring knife running up the bone with pressure on the blade on a 45 degree angle. Take good care as this is risky business. 3. Once the bones are scraped, wrap each one individually with tin foil. 4. Now it’s time to oil and season. Liberally drizzle some high smoke point oil (grape seed, avocado, or coconut) all over the roast and then liberally season with salt, 5-spice and pepper. 5. If you’re going to use the stuffing, now is the time. Fill the space between the bones and mound it up nice and high. Have any excess spill down the back of the roast. 6. Bake in a 375°F oven for about 90 minutes, or until the roast reaches an internal temp of 145 – 160°F. Personally, I prefer 145°F. 7. Let the roast rest in a warm place for about 15 minutes before cutting and serving. I’m pretty sure you’ll enjoy! VARIATIONS: If you want to change up the spice profile, go with salt, pepper, brown sugar, paprika and granulated garlic.

METHOD: 1. Preheat a large fry pan on medium heat. Add the butter and then the celery, onion and garlic. Sauté, stirring regularly until everything starts browning. 2. Now you can add the yams, cover the pan and sauté for a further 5 minutes or until the yams are softened, stirring occasionally to prevent any burning. 3. Add the rosemary to the pan and sauté for 1 minute longer and then transfer everything to a large mixing bowl. 4. Add the cubed bread and then whisk the cream and eggs together in a separate bowl, then add that as well. 5. Season with the salt, pepper and cinnamon and mix very well. I find your clean hands are the best tool for this job. 6. Now you can stuff a bird or a crown roast of pork and cook until the desired temperature is reached. Alternatively, just pack the mixture into a casserole dish or even a muffin tin and bake until browned and set. VARIATIONS: As an added step you can toast the pretzel bread cubes in a 200°F oven for 30 minutes or until they’re lightly browned. Then add ¼ cup of chicken broth when mixing everything together.

Thrilled Grilled Cheese Servings: 2 Preparation Time: 30 minutes Cooking Time: 15 minutes There’s nothing light about this sandwich, so go ahead…indulge! I love making my own bread for this recipe – just type “no knead bread” into the search bar at countrygrocer.com – otherwise use your favourite loaf. INGREDIENTS: 4 slices of your favourite bread or my no-knead recipe 2 Tbsp butter ½ a red onion, sliced 1 Granny Smith apple, julienned 3 cloves garlic, sliced ¼ cup balsamic vinegar Natural Pastures Brie, sliced fairly thick ¼ cup Parmesan cheese Your favourite salad blend DRESSING: ¼ cup extra virgin olive oil 2 Tbsp balsamic vinegar ½ tsp sea salt ¼ tsp fresh pepper Some left-over balsamic onions and apples METHOD: 1. Start about 24 hours ahead if using my noknead bread recipe from countrygrocer.com 2. Once you have your bread sorted, liberally spread each slice with room temperature butter. 3. Preheat a large fry pan on medium heat. Add butter and once melted, add onion, apple and garlic. Season to taste with salt and pepper. Sauté until nicely caramelized, stirring regularly, then add the balsamic. While stirring, let the balsamic reduce and cook into the mix. 4. Preheat a clean large fry pan on medium heat. Now, assemble your sandwiches: place cheese down first on the non-buttered side of the bread, then add a good dose of the balsamic apple/ onion. Place bread into the fry pan, buttered side down, then top with the other piece of buttered bread, completing the sandwich. Repeat with the other sandwich. Grill until nicely toasted, flip, then spread grated parm onto the freshly grilled side. Once the second side is nicely grilled, flip one more time to lock in the Parmesan. 5. Serve up your amazing sandwich with side salad adding remaining caramelized apple/ onion into salad if desired. Enjoy! VARIATIONS: The creaminess of the Brie in this would pair nicely with some spice. You could add a little bit of cayenne pepper to the balsamic mix to jazz things up a touch.

Let’s get Cookin’ on the Coast I’m so excited about what’s about to happen! It’s season 9 for Cookin’ on the Coast and my third go as host of the show, which kicked off Saturday, Sept. 25 at 6 p.m. on Chek TV. As I went through the process of filming for this season, it certainly felt as though I was producing my best content thus far. My first season was a little intense. I was launching Urban Forage in its first incarnation as a corporate luncheon catering specialist and things were getting busy. That was demanding enough without adding in trying to perform on ‘stage’ and relaying great recipes to you, the viewer. Filming of my second season was much more comfortable as I knew what to expect and had a better idea of how to work with the amazing team at Chek TV. This third season was so smooth and so fun, and I’m really excited to share it with you! We have a fantastic line-up of culinary creations and featured suppliers for this 2021 season. We kick off episode 1 with an epic Panini Sandwich with Bacon-Infused Aoili and a side of Squash Hash Browns! You’ll also see such delicious recipes as a Mexican-inspired Twice-Baked Yam. On another episode, I’ll teach you how to make a super-easy and delicious veggie-loaded Red Thai Coconut Curry with Local Rockfish. We’ll also make a super Tangy and Delicious Chicken Soup with a side of Polenta Fries! How about an epic Chipotle Lime Chicken Pizza with a simple dough from scratch? Is your mouth watering yet?! As always, we feature some healthy and practical but ever-delicious meal ideas. We’ll make a veggie-loaded, easy take-away Mason Jar Salad and for those folks looking for gluten-free ideas, we make a Chickpea and Turmeric Bread and turn it into a fantastic vegetarian entrée. If you keep tuning in each week, I’ll teach you how to make Chorizo Sausage Rolls with Local Puff Pastry and a great go-to Indian-spiced Ground Beef Curry that freezes really well. We do another award-winning mac & cheese…

this season featuring my Ancho Chili Mac & Cheese with Bacon Crumble. And if you join us on the Saturday leading up to Thanksgiving, I can guide you to a very tasty and delicious dry-brined Turkey dinner. In what has become a tradition, we also do a great brunch episode featuring one of the best Caesars I’ve ever had. My favourite episode features what I think of as my signature dish. This is a Molasses and Cumin Slow-Roasted Pork Shoulder. It’s crispy on the outside and so tender in the middle. We serve it up with a delicious baked bean recipe and refreshing salad. Overall, we try to offer up something for everyone and cover all the bases. In the end, this season was such a pleasure to create. The filming schedule was just right for me personally and was the perfect bridge to opening up our first brick and mortar location in the Atrium where Urban Forage has been born again. My fiancé and I found a beautiful space where we’ve opened our brand new concept Specialty Market/Café. We got the keys just in time to use this great space as the test/production kitchen for Season 9 and now that it’s up running you’ll find many of the recipes featured on ‘Cookin on the Coast’ through the years, so come down and say hi! The Future Cures Coalition: Local Grocers Team up to Break Down Cancer Independent grocers on Vancouver Island are partnering with the BC Cancer Foundation to raise $500,000 to advance life-saving diagnostic technology that will change cancer outcomes for prostate cancer patients. Running from Sept. 8 to Nov. 8, the Future Cures Campaign will harness the power of community with grocers including Country Grocer, Tru Value, Thrifty Foods and Quality Foods. PSMA/PET is state-of-the-art imaging technology used to optimize and inform treatment for prostate cancer patients. The imaging scans help pinpoint the precise location of prostate cancer and reveal if it has spread. “For patients with advanced disease, tomorrow is too late. PSMA

scans can find smaller metastases and increase survival,” says Dr. Kim Chi, from BC Cancer. “Philanthropic funding will help us bring these solutions to patients across BC.” Funding PSMA/PET will help move this breakthrough technology into a future standard of care in BC.
