BUYING BULK Foley’s Candies presents delicious – and local – options for both baking and indulging

T

here’s an anonymous quality to bulk foods that seems to contradict the idea of “buying local,” where we know the farmer or producer who raises the chicken or grows the spinach gracing your plate. The reality is a little different, however. If bulk chocolate treats are on your shopping list, whether as a snack or an ingredient to craft your own chocolate goodies, the good news for locavores is that Country Grocer’s bulk chocolate comes from Foley’s Candies, right across the pond in Richmond. Manufacturing quality chocolate for more than 40

years in Vancouver since its founding by Ed Foley, Foley’s has grown to become the largest chocolate manufacturer in Western Canada. While Ed Foley is no longer at the helm, the same family feel remains, notes Foley’s Diane Argent. With that comes a commitment to quality ingredients. Products are certified kosher, the main ingredients are non-GMO and they use 100-per-cent-pure flavours, nothing artificial. “We make everything from raw ingredients," Diane says. Among Foley’s unique products is Richmond melting wafers, a compound wafer that uses palm kernel oil rather than cocoa butter, so it can be easily melted in a microwave rather than tempered, a much trickier process. In terms of flavour, however, there’s no difference, Diane notes. In addition to melting wafers, home candy cooks can use to craft their own creations, Foley’s also makes its own confectioneries, some timeless classics, others newer innovations that respond to current trends, explains Diane, who travels to food shows around the world for a look at what’s coming up and what people want. “It helps you see what people are looking for,” she says. With consumers more health conscious today, for example, Foley’s is creating products like the Tuxedo Cranberry Medley, a mix of dark and milk chocolate and Greek yogurt-coated cranberries. “They don’t want to give up their chocolate but they want a good-for-you snack, so we’re doing more with fruit.” Nuts remain a mainstay, but Foley’s experts will also experiment with seasonal variations, such as candy-cane or pumpkin pie almonds. And while milk chocolate used to be people’s “go-to” choice, “we’re seeing a real trend in dark chocolate. The dark is definitely overtaking the milk.”

1. Bring the cream cheese to room temperature or soften in the microwave. 2. Fold in the sugar. 3. Melt chocolate chips in the microwave (one minute on defrost, stir, repeat) or over a double boiler. See above for melting tips. 4. Blend the melted chocolate into the cheese mixture then stir in the remaining ingredients. 5. Press the mixture into greased 8” square pan. 6. Cool, then cut into 64 squares and enjoy!

Spring into good health While fall and winter often take center stage in discussions about boosting our health and wellness, it really has become a year-round passion for many people. And that’s a good thing. It’s just one of the trends Country Grocer nutrition buyer Ahrina Kay Nielsen has seen in nearly two decades in the health and nutrition industry. In addition to monitoring the latest research, talking to industry leaders, customers and team members on the floor helps her stay abreast of what people are looking for. “I am finding our customers are Ahrina Kay Nielsen becoming more and more educated, which is fantastic,” she says. More often than not, customers have already done some research on their own and are looking for additional information to fine-tune their choices. “We have highly trained and educated staff running these departments in each of the stores, people who have a passion for what they’re doing,” she says, noting that passion is key. “It’s really all about building relationships.” Marking 18 years in the wellness industry, Ahrina Kay is also seeing certain trends emerge. “The interesting thing I have discovered, is that it used to be weight loss was on people’s radar for January 1 and just before summer, and now it’s every day of the year,” Ahrina Kay says. Often people will start that quest with a cleanse, to prepare their body, and now they’re able to speak with someone knowledgeable in-store about what’s best for their body and particular needs. Digestive concerns are also top of mind for many, Ahrina Kay says, recommending options like aloe vera – formulated to take internally, as opposed to the topical variety – glutamine CENTRAL PARK

Seasonal allergies tend to be top of mind this time of year, and if you’re anticipating challenges, support your system sooner rather than later. Options in the supplement and nutrition aisle include both homeopathic and herbal-based products. “It would just depend on what your system prefers,” Ahrina Kay says. Other products, like Pollinosan, available in a tablet, tincture or nasal spray, can help head problems off before they start, as well as St. Francis’s new Deep Immune Allergy tincture. “It will work better if you begin before the symptoms start. You can definitely manage it if you are proactive.” Looking ahead to summer, Ahrina Kay recommends avoiding the chemicals in regular sunscreen by opting for a "cleaner" version instead, “with the least amount of chemicals possible. “Your skin is the largest organ of your body and is going to absorb what you put on it. Therefore it’s important to read labels and make informed decisions.” Here in Canada, Ahrina also recommends supplementing with Vitamin D to between 5,000 and 10,000IU a day. “Anywhere north of Seattle, we don’t get enough Vitamin D (from the sun) so it really should be a year-round thing.” In addition to seasonal themes, the “shop local” movement is also making in-roads in the wellness industry. Ahrina Kay recently introduced two Vancouver Island lines to the Country Grocer shelves, Folki Herbs, out of Duncan, featuring tea, tinctures and salves, all crafted from ingredients from the company’s organic herb farm. Also new is the Harmonic Arts line, featuring herbs and elixers from Cumberland, in the Comox Valley. “We are big on supporting local wherever possible,” Ahrina Kay says.

Yam and Chickpea Vindaloo

Honey Soy Pork with Smashed Potatoes

Pre-made curry pastes can give you a big head start in adding flavour to your cooking. As you can see below, this is a minimalingredient recipe yet this dish is bursting with flavour. Serve this like a stew all by itself, or over top of rice or another grain. Ingredients: 2 Tbsp coconut oil 1 medium red onion, diced large ¼ cup Patak’s Vindaloo paste 1 – 798 ml can of tomatoes (no salt added) 1 medium yam or 2 to 3 cups, ¾-inch dice 1 – 398 ml can of chickpeas, drained 1 cup coconut milk (not light) 1 bunch of spinach, chopped Salt to taste Method: 1. Preheat a large pot on medium heat. Once hot, add the oil and then the onions. Sauté, stirring regularly until onions begin to brown. 2. Add the Vindaloo paste and sauté for another two minutes, stirring constantly. 3. Now toss in the tomatoes, give a good stir and bring to a simmer. 4. Add the yams and chickpeas and simmer until tender. 5. Stir in the coconut milk, then remove the pot from the heat and stir in the spinach until it wilts. 6. Have a taste and add a little salt until just right, then serve by itself or over top of rice. Variations: Additional veggies are welcome. Try peppers, zucchini and eggplant.

Method: 1. Start by mixing the honey, sesame oil, soy sauce, ginger, red pepper flakes and salt in a mixing bowl and stir to incorporate. 2. Add the pork steaks to the mixing bowl and toss well to coat both sides of the steaks. 3. Now add your diced potatoes and garlic to a small roasting pan or a shallow casserole dish. I like to cook this recipe in my toaster oven, but if you don’t have one the regular oven will do. 4. Drizzle some olive oil over your potatoes and season with salt and pepper. 5. Add the water to the pan and then place the sauced pork steaks right over top of the potatoes. 6. Roast in a preheated 375° F for 50 minutes. 7. Place the steaks on a plate and then in a rustic fashion, crush the potatoes with a large fork or a potato masher. 8. Check the seasoning; add some fresh chopped oregano if desired and serve, preferably with a nice side salad to bump up your veggie intake.

Add the chicken to a mixing bowl, season liberally with salt, pepper and ground coriander then turn and flip until spices are distributed. 2. Now sprinkle the flour into the bowl and turn again until distributed. 3. Preheat a fry pan on medium high heat; add the oil and chicken. Brown on both sides well and then remove and set your chicken aside. 4. Add the onions and garlic and sauté, stirring regularly until lightly browned. 5. Toss in the green peppercorns, piri piri peppers if you are using them and the red wine again if you choose. Let the wine reduce down by half. 6. Next up, add the tomatoes to the pan, add the water to the can and swish around to clean it and then add that to the pan. 7. Place the chicken back in the pan and settle each thigh into the sauce. 8. Add the squash and basil and bring to a simmer and then place the whole pan into a preheated 375° F oven and bake for 60 minutes. 9. Serve as is, or with a small portion of rice, potatoes or perhaps barley.

Fresh in season So the long, wet winter is over and the shock of the $9 cauliflower fiasco is probably a distant memory. The weather is warming and we have moved into our next wet season: spring. Almost all of our produce has been taking the long trek from down south for the last while, but spring is when you’ll see produce’s point of origin start creeping farther and farther north. Although it’s hard to predict exactly when each crop will be available, rhubarb and asparagus are generally the first markers of spring. They also happen to be two of my favourite veggies with which to create delicious recipes. Rhubarb goes way beyond pie, by the way and yes, it is in fact a vegetable. One of my favourite things to do with rhubarb is make a big batch of Rhubarb Compote (find the recipe on countrygrocer. com). With it in the fridge at the ready, it’s easy to add to plain yogurt, granola, oatmeal and more. Try using the compote in place of jam in a PB and J sandwich. By the way, the compote freezes beautifully! As for the asparagus, it’s available year-round but is so much better in the spring when harvested from Washington or even better, right here in B.C. In-season asparagus is pretty easy to make delicious. Melt butter in fry pan, add chopped garlic, sauté one minute, add one bunch of asparagus (woody bottoms removed), salt, pepper and a quarter cup of water, cook until water evaporates and the asparagus is tender. Eat! I also have a few asparagus recipes featured on the website, from soup to quiche to a delicious spicy sauté. Check ’em out when the local asparagus hits the shelves. Fiddleheads are also a delicious spring treat. They’re actually the curled shoot from an ostrich fern (not to be substituted with other ferns as they may be toxic). I find them quite similar to asparagus, in fact, and they can be subbed in with many asparagus recipes. The only caveat is they need to be simmered or steamed for about 12 to 15 minutes beforehand to prevent possible food-borne illness. B.C. kale should be available in spring and Swiss chard and spinach start coming in toward the end of season. The trio of these dark green leafy vegetables can be used interchangeably for many recipes. If you look up kale, chard and spinach individually using the search function on the website, each selection will yield a handful of delicious recipes for you to work with.

Spinach Cashew Pesto, Chard Chickpea Fritters and a soup called Creamy Kale Potato are tops on my list. B.C. beets may also be available in the late spring and this vegetable is one of the best in terms of nutrition, flavour and versatility. Freshly harvested beets will yield delicious greens that you can use in place of the aforementioned kale, chard and spinach, so make sure to use them first before they wilt. Keep in mind B.C. apples start to go downhill as we head into spring and that will probably happen a little early this year since all the crops were harvested early last year. So when you notice those B.C. apples starting to soften, it may be time to start the switch to summer fruits with strawberries and stone fruits the first to come. Honourable mentions go out to fennel which starts to fade out as the weather warms, radishes, which like the warming temps, and keep your eyes out for the BC Hothouse products to start filling the shelves as we creep through the spring. Keep it fresh, in season and you’ll have some happy cooking ahead.

W

hen you have a great recipe and a sought-after name in Island-grown boutique food, why change? So it was for the husband-and-wife team of Sharon Ryper and Dan Chaisson, owners of the delicious Aunt Penny’s Antipasto, a delight for local foodies for 30 years. Sharon’s previous work in the food industry had forged a relationship with Penny Gordon, who founded Aunt Penny’s Antipasto back in 1985 with a single classic recipe. Growing the line to three shortly after and later adding a peach chutney, Penny’s soon enjoyed a following for those looking for a tasty, locally crafted product perfect for entertaining, a gift, or to enjoy with your favourite foods. “It started out

that Penny was making the antipasto for friends and they said it was such good antipasto that she had to try selling it,” Sharon says. Soon after its launch, the vegetarian version was recognized by the Canadian Association of Specialty Foods. After close to 30 years, it was time for Penny to retire, but not before sharing the time-tested recipes with a new generation of “Penny’s,” Sharon and Dan. “She always knew I was in that kind of business and I was there to help if she needed it,” Sharon says. Today, Sharon and Dan continue to source all the ingredients themselves – locally wherever possible – and oversee production from start to finish. Processed by another well-known Island name, Nanaimo's St. Jean’s Can-

nery, the antipasto is available in stores throughout Vancouver Island, as well as the Lower Mainland and the Okanagan, where it’s a hit a local wine shops, Sharon says. It was important to maintain the quality of the product fans had come to know and love, recognizing the love Penny had put into her product all those years. “It’s a small business and we have a direct interest in the quality control. We select the ingredients and deliver them to St. Jean’s, another local business who knows what they’re doing,” Sharon says. “She never had a single customer complaint in all the years she was making her antipasto, "Sharon says. “Penny was very serious about how the product was made and I will be doing my best to carry on her legacy.”

oes washing food promote food safety? According to Health Canada, the answer is that some things should be washed and others should not. As a society, we associate washing with cleanliness. We wash clothes, dishes and ourselves. So it might seem to make sense to wash meat and poultry to make it cleaner and safer. Not so, say the experts. Yes, fruits and vegetables should be washed; but you should not wash meat, poultry, fish, seafood or eggs. The following tips will help to make sure you keep your food both clean and safe.

Do not wash raw meat, poultry, fish or seafood before cooking because the water used in washing could splash and spread the bacteria from the meat to other foods, hands, clothes, work surfaces and cooking equipment. Some bacteria could not be removed from meat or poultry even if it were washed many times. The only way to ensure meat and poultry is safe to eat is to cook it to an appropriate internal temperature. It’s also important to properly clean all surfaces and utensils that have been used to prepare the meat.

Soaking poultry: Some people soak poultry in salt water to brine it. This is a personal preference and does not have an impact on food safety. However, keep poultry in the refrigerator while soaking it and be sure to prevent cross contamination when soaking and removing the poultry from the water.

Eggs: Do not wash eggs. Washing can remove the protective coating that is applied during commercial processing. Farm-fresh eggs are no different. Eggs are laid with a natural coating on the shell


called “bloom,” which helps to prevent bacteria from permeating the shell.

Fruits and vegetables: Do wash fruits and vegetables thoroughly under fresh, cool, running water, even if you plan to peel them. This helps remove any surface pesticide residues and prevent the spread of any bacteria that may be present. Use a clean produce brush to scrub items that have firm surfaces (e.g., oranges, melons, potatoes, carrots, etc.). It is not necessary to use produce cleansers or soap to wash fresh fruits and vegetables.

Avoid cross-contamination: Use one cutting board for produce and a separate one for raw meat, poultry, fish and seafood. Place peeled or cut fruits and vegetables on/into a separate clean plate or container to prevent them from becoming cross-contaminated. Use paper towels to wipe kitchen surfaces, or change dishcloths daily to avoid the risk of cross-contamination and the spread of bacteria. Sponges should be avoided as they’re harder to keep bacteria-free. Wash cutting boards, dishes and countertops with warm, soapy water before and after use as well as between preparing different foods. Sanitize countertops, cutting boards and utensils before and after preparing food. Use a kitchen sanitizer (as directed) or a bleach solution (5 mL of unscented chlorine bleach to 750 mL of water). Walk & Roll for MS JENNIFER BLYTH

All across Vancouver Island, people will be walking May 15 in support of those living with multiple sclerosis. From Victoria and Duncan to Nanaimo and beyond, the 2016 Scotiabank MS Walk welcomes everyone to come out on a single day in support of both MS research and programs for those living with the disease. “It’s a tremendous fundraiser for us and a long-running one we really rely on,” says Todd Abercrombie, Regional Director, Vancouver Island. “We’re looking to (support) quality of life for people living with MS and invest in leading-edge research.” In addition to innovative programs, the society is also supporting leading research – and researchers, letting them know that if they stick with MS, the society will be able to provide funding for their work, he explains. Events like the MS Walk recognize that multiple sclerosis not only affects those diagnosed but also their family, friends and co-workers. It is a lifelong disease and there is no cure.

Fundraising dollars from the Scotiabank MS Walk will be split evenly between research and local programs and services assisting people who are living with MS. elebrating 25 years with Country Grocer, Royal Oak Store manager Mike Parr was drawn to Victoria – and Country Grocer – by a co-worker in Prince George, and he hasn’t looked back. “They’ve always treated me well and it’s a family business – it’s always felt like family,” says Mike, at the helm of the Royal Oak store for five years now. With the help of two assistant store managers, Garth Green and Jeff Zala, “it’s a real team environment.” After opening in 1988 as one of the early stores in the Country Grocer family, the anchor tenant at the Royal Oak Shopping Centre enjoyed a complete renovation and expansion in 2000 to better serve a growing community on the foot of the Saanich Peninsula, just north of Victoria. Offering wide aisles and an expansive selection through its 29,000 square feet, customers appreciate having the space for all the grocery items they’re looking for, Parr says. The full-service location – complete with a postal outlet and lottery counter – features a full floral centre, chock-full of blooms from the Island, a full-service meat counter and a deli and bakery where you can pick up everything you need for a quick lunch or hearty dinner – including the newest additions of daily soups and fresh-cut fruit, plus fresh sushi made right instore. “People love that you’re making it in front of them and it’s so fresh,” Mike says. The Royal Oak team, which also includes Country Grocer’s South Island administration offices, actively supports many local health initiatives, including Men’s Health Day, the Help

Community support is a passion for the Country Grocer staff generally, and the Royal Oak team is no different, notes Mike, who after spending time at Esquimalt, Cobble Hill and the company’s former store in the Cook Street Village, says there’s differences between the stores, but many similarities as well. “One of our main mandates is the schools and supporting them,” Mike says. Additional relationships have been built with groups like Prospect Lake Soccer, local hockey teams and everything in between. “We support lots of community groups throughout the year.” The store has also built a strong connection with the Mustard Seed Food Bank in Victoria, forwarding all their unsalable produce and bakery products to the food bank. Get ready to ride for Hospice Registration is underway for the fourth annual Cycle of Life Tour July 23 and 24. The two-day South Island group bike ride will feature 50 riders covering nearly 200 kilometres in two days, passing through scenic areas such as West Saanich, the Saanich Inlet, the Cowichan Valley and Salt Spring Island, where riders will enjoy an overnight stay. Participants are responsible for raising pledges, with proceeds supporting Hospice in the community. Day 1 leaves from Victoria’s Inner Harbour, embarking on a 100km trip along the Saanich Inlet and through the Cowichan Valley, before finishing on picturesque Salt Spring. Hot showers and cold drinks await the riders who then relax with a delicious meal and live entertainment. After a nourishing breakfast, the 70km Day 2 covers the rest of Salt Spring Island and the stunning Saanich Peninsula. The ride aims to support the vital work of Hospice care in the community. For example, approximately half of Victoria Hospice’s annual operating costs are not covered by our health care system and must be funded through community donations and events like the Cycle of Life Tour.
