Happy Summer! Even with the cool start we’ve had, we’re looking forward to an event-filled season – wonderful, PETER CAVIN, DIREC TOR considering the COUNTRY GROCER two-year hiatus we just had. In July we’re excited to announce that the Cycle of Life Tour is back in person to benefit hospices on Vancouver Island. We’re very proud of our CG riders who will embark on a two-day cycling journey to raise much-needed funds. If you’d like to support our team, you can visit cycleoflifetour.ca and click on donate. In August, we’ll be fundraising at our Chase River store (with donations at the till) and on our social media channels (to donate online) to benefit the second annual Toss the Boss event! Serving Smiles Every Da y
Broadmead Care campaign aims to refurbish six serveries supporting long-term care residences for veterans and other seniors BY JENNIFER BLYTH We all know the importance of good food – of a meal crafted with care and quality ingredients, and shared with a smile. It’s with that in mind that the non-profit organization Broadmead Care has launched its Serving Smiles campaign to replace six of its serveries, where meals are prepared several times every day for delivery to long-term care residents. The campaign aims to raise approximately $150,000 to replace kitchen serveries in six living areas at Veterans Memorial Lodge, including industrial refrigerators in two of those living areas. At 27 years old, the serveries have been repaired as many times as is possible, especially with new cleaning protocols emerging from the pandemic. Kitchenette spaces with cupboards, drawers, refrigerator, microwave and countertop running between the kitchenette and dining room, these are the spaces where all meals for all residents are prepared for serving. Fundraising is essential for the project. “Meals are a happy time for residents and help our staff create that homelike feeling,” says Shannon Donnelly, Broadmead Care Fund Development Coordinator. However, “we are not fully government funded, so beyond the basic amount, if we want to enhance that and provide top-quality care, that comes from fundraising.” One of five residences Broadmead Care operates in Greater Victoria, delivering long-term care and programs for veterans, seniors and adults with disabilities, the flagship Veterans Memorial Lodge in the Broadmead neighbourhood

It can with a values-based business model that values quality, sustainability and community impact. Those three core values are at the heart of Justo’s – “plantbased dips that leave a positive impact on people and the planet,” available at your Country Grocer. Born in Victoria in 2019, Justo’s is the brainchild of three friends who each brought unique talents to the table in the fields of cooking, production and marketing; they were soon joined by a fourth whose business experience added the final piece to the puzzle. The business name is a play on Justin Kopetzki – nickname Justo – the foodie of the group who kicked things off with a knock-out hummus recipe. When COVID arrived, the group hit local farmers’ markets with their products, receiving a warm reception from shoppers who were as pleased with their business philosophy as with the product itself! “Because of COVID, we couldn’t offer tastings, but as we talked with people, they’d get so interested in who we were and the sustainability model, they would buy the hummus
anyway. They loved it and we had so much great feedback that we’re now in 100 locations on Vancouver Island and Vancouver,” says Tyler Hosie. A few short years later, they’ve donated 5,100 pounds of fresh, nutritious, preservative-free hummus to organizations serving people in need. To continue their sustainability goals as they expand, they’ve also partnered with 1% for the Planet so that for every jar sold, 90 grams of plastics will be recovered from the environment. These initiatives have earned them the prestigious B Corporation certification, a global sustainability designation based on high standards of performance, accountability and transparency. Of course, Justo’s is all about good food, so in an effort to reduce the food waste, Justin started experimenting with the aquafaba, the typically discarded liquid from the chickpeas. He was soon able to turn that valuable resource into a base for new dips, including ranch, tzatziki and queso – all still dairy-free and oh-so delicious! Rounding out the current line-up are several varieties of flavoured hummus and a mango jalapeno salsa. The Country Grocer Spinners are back on the road, excited to be training for this year’s Cycle of Life Tour for Island hospice care, July 16 and 17! The first joint ride since 2019, the two-day, 200-kilometre cycling event raises vital funds for hospice care on Vancouver Island – in all, more than $1.25 million has been raised since the ride’s founding by Graham Robertson in 2011. In addition to contributing directly through team fundraising, Country Grocer is also a corporate sponsor, and Chef Heidi Fink will be grilling up a restorative feast on Salt Spring for riders recovering from the first day’s efforts. Starting in downtown Victoria, cyclists wend their way through the pastoral roads of the Saanich Peninsula, Cowichan Valley and Salt Spring Island. Leading Country Grocer’s eight-member team is longtime rider Dave Hubscher, the company’s Meat Operations Manager, joined by Serena, from Cobble Hill – the longest-serving Spinner, who’ll be marking year nine with the ride. While a brand new Spinner – Claire, from the Cowichan Valley – will be riding, the others all have five years or more under their belts. “Not being able to ride as a group for two years, it’s going to be a great year to remember,” Dave says. “It’s quite impressive seeing 125 cyclists hitting the road all at once!” All cyclists are encouraged to raise at least $1,000 to participate, but in reality, many go above and beyond for the important cause. Country Grocer also steps up – a combined effort over the last two virtual rides reached $40,395. While group training has been challenging this year due to the weather, after two years of individual training due to COVID, “most of the riders are putting some rubber down when they can,” Dave says. And that’s good advice for anyone planning to ride for the first time. “Try and get as much time in the saddle as possible, because your butt can get sore if you’re not used to it!

Self-care tips to help you thrive Is that daily low-energy feeling creeping in again – like you’re about to hit that afternoon wall so hard you feel like you could literally nap anywhere? Being on the go uses a lot of fuel, comparable to a vehicle. You have resources, and when those resources are low, so is your ability to thrive. Let’s take this moment to check in with ourselves to see how fully alive we feel. I’m not 100 per cent but I could be. Regardless of what’s happening outside of our body, we can always support our inner world by supporting our resources – needs that support your physical and emotional well-being. Food that is nutrient-dense, not packaged or processed. Hydration from water – not flavoured or carbonated. Rest and stillness – sitting in silence without thinking about all the things that can whirl around in our thoughts (try box breathing, as mentioned in previous articles here). Burnout can be heightened by the thoughts we’re having about something. Notice how you’re feeling in this moment and any thoughts you’re having. Are they helpful or hurtful contemplations? Do you feel good or not so good? Bringing attention to your thoughts and the emotions you’re feeling from them can help reduce burnout just by disengaging and refocusing. Physical movement – A body in motion stays in motion – try anything to your capability and expand on that. Physical movement can also help to clear your mind. When our minds are clear of whirlwinds and our bodies are in stillness we allow the opportunity to check in and ask ourselves how our resources are doing.
If you’re noticing levels of burnout, I offer you this moment to check in now and see what you need and do that for yourself. I like to walk outside in nature. Colour. Have a warm bath. Light a candle while doing dishes. Go for a massage. Read a book. Make a delicious meal. Sleep with the setting sun and rise with the new day. Walk outside in the morning sun, resetting the sleep cycle. Sip on herbal tea. Recipes From Country grocer
Simple Chicken Tacos Prep Time: 10 minutes Marinating Time: 1 hour Cook time: 8 min for breasts, 20 min for thighs Serves: 4 This is a quick, high-flavour taco filling that can be made with your choice of breast or thigh. The high acid and spice components of this marinade, coupled with thin pieces of chicken, mean that the flavour penetrates quickly. These pair perfectly with “Mexican Tzatziki” (AKA cilantro crema) and pickled jalapenos. INGREDIENTS 1-1/2 lbs (680 g) boneless skinless chicken (breast or thigh) Zest and juice of 1 lime 6 tbsp (90 ml) avocado oil or canola oil 1-1/2 tsp (7.5 ml) salt 1-1/2 tsp (7.5 ml) brown sugar 2 tsp (10 ml) ground cumin 2 tsp (10 ml) ancho chili powder ½ tsp (2.5 ml) ground coriander ½ tsp (2.5 ml) smoked paprika ¼ tsp (1.5 ml) cayenne FOR ASSEMBLY Approx. 12 soft corn tortillas Finely shredded green cabbage OR lettuce Fresh tomato salsa OR chopped tomatoes Cilantro Crema Pickled Jalapenos Lime wedges Optional: avocado, green onion, cilantro, cheese METHOD Flatten chicken. For breasts, I like to remove the tender and slice the breast in half like a bagel to make two flat cutlets. For the thigh, I like to open it up and flatten with a mallet. Thinner pieces of meat gives a better marinadeto-meat ratio and helps the chicken cook more quickly. In a medium bowl, mix the lime juice, zest, spices, salt, sugar and oil. Add prepared chicken pieces and mix well to coat evenly. Let marinate at room temp for about 1 hour, stirring occasionally.
Homemade Pickled Jalapenos Prep Time: 15 minutes Pickling Time: 20 minutes Yield: 2 cups (500 ml) Homemade pickled jalapenos are dead easy to make, and SO delicious. Spicy, tart and salty, these are the perfect toppers for nachos, tacos, chili, grilled cheese sandwiches – you name it. They last for weeks in the fridge without any special procedures. They do get a bit less spicy as time goes on, so don’t make too much at a time if you like them really spicy. I love having these on hand to add pizzazz to all kinds of meals. INGREDIENTS 2/3 cup (160 ml) white vinegar ¼ cup (60 ml) water 2 tbsp (30 ml) sugar 1 tsp (5 ml) salt 10 to 15 jalapenos, depending on size (about 2 cups sliced) METHOD Mix together the white vinegar, water, sugar and salt in a small pot and bring to a boil. Set aside. Meanwhile, rinse and slice the jalapenos. If you have a mandolin, the slicing will go very fast. TIP: I always wear disposable latex gloves when handling a lot of chilies to protect my hands from capsaicin, the compound that makes chilies spicy. Place the sliced jalapenos in a mason jar. Pour the warm vinegar mixture over. Let sit for at least 20 minutes before serving. Store in the refrigerator. Pickled jalapenos will last at least 6 weeks in the fridge.
To cook, have all your condiments prepared ahead of time, and foil-wrapped tortillas heating in the oven. Preheat grill to medium-high heat. Grill chicken until slightly charred on the outside and an instant read thermometer in the thickest part of the chicken reads 165° F (74 C). Move chicken to cooler part of the grill, if needed, to prevent the outside from burning while the inside finishes cooking. Remove cooked chicken to a plate and tent with foil. Let rest about 10 minutes. On a cutting board, slice thinly and place in a bowl, with any accumulated juices and toss to combine. Have everyone build their tacos with their choice of condiments. YUM!

Cilantro Crema Preparation time: 5 minutes Optional Fermentation time: 48 hours Yield: 1 cup (250 ml) Imagine heavy cream made into a luscious yogurt, and then you know exactly what crema (AKA crème fraiche) tastes like! It’s a fermented dairy product like sour cream, with a mildly tangy flavour and soft silky texture. You can ferment your own ahead of time, or you can make a “cheater” version in minutes. I like to flavor my crema with fresh cilantro and a bit of garlic - perfect for a taco topping, or as a dip for quesadillas. My kids call it “Mexican Tzatziki” FERMENTED VERSION ¼ cup (60 ml) plain yogurt or buttermilk ¾ cup (180 ml) whipping cream OR “CHEATER” VERSION 2/3 cup (160 ml) plain yogurt or sour cream 1/3 cup (80 ml) whipping cream FLAVOURING FOR EITHER VERSION 3 Tb (45 ml) finely minced cilantro 1 small clove garlic, minced or pressed Salt to taste METHOD To make your own fermented crema, mix together the yogurt or buttermilk with the whipping cream in a mason jar or container with a lid. Let sit at room temperature for 48 hours, until the mixture has thickened. You can speed this process up by using a yogurt maker. Transfer to the fridge until ready to use. Mixture will last at least a week. To make “cheater” crema, mix together the plain yogurt or sour cream with the whipping cream, stirring until smooth. Add a bit more whipping cream, if necessary, to achieve that luscious, slightly runny consistency. Transfer to fridge until ready to use. To flavour the crema, stir the minced cilantro, minced garlic, and salt into either version of the crema. Taste to adjust seasoning, adding a bit of lime juice if you like it really tangy.

A chef’s summer I have a rule in the summer – no cooking unless it’s with the best ingredients. I want flavour with minimal effort, so I can enjoy the slow, warm days with my family, or in the garden, or out in the woods. I love to cook, but doing it for a living makes me enjoy the break from cooking that much more! Which is why I love summers on Vancouver Island – not just for our beautiful outdoor opportunities and mild climate – but for the abundance of farms and food producers providing us with delicious fruits, vegetables, meats, fish, cheeses, breads, and so much more. Having these quality ingredients available means I don’t need to cook much. The barest preparation to help these seasonal foods shine is all we need to enjoy a satisfying meal. Summer dinners might be as simple as a fresh local tomato salad and grilled protein, with some fresh crusty bread to fill up my kids. For lunch, I often have ripe peaches, crackers, and good local cheese. Tap for kids: Country Grocer hosts summer fundraiser for BC Children’s Hospital BY JENNIFER BLYTH Here in British Columbia, more than 95,000 children and youth are affected by mental health issues. At the same time, only about 40 per cent of those young people are getting the help they need. The BC Children’s Hospital is working to change that and this summer, Country Grocer encourages you to help. All seven Country Grocer stores across the Island are working with the BC Children’s Hospital Foundation to raise vital funds for the hospital’s mental health programs. In particular, funds raised will support the Centre for Mindfulness at BC Children’s Hospital – which over and above on-site services, offers virtual programs available free to BCCH patients regardless of their home community,
and offers a virtual program exclusive to adolescents in BC through a referral by a medical practitioner. The virtual delivery lets them access help from the comfort of their own home, in their own community, notes Shaun Cerisano, Philanthropy Manager with the Foundation. Family members and hospital staff can also benefit from the program. Last year, 99,000 patients were treated at BC Children’s – with 5,100 coming from Vancouver Island, Shaun notes. Considered another way, 14 children every day were told by their doctor that they had a condition that required the specialized care only available in the province at BC Children’s Hospital, which in addition to providing specialized pediatric services, is the B.C.’s leading teaching and research facility for child health. Mental health is a significant part of
that mandate. Young people can experience mental health challenges for any number of reasons, both independently and in response to treatments for cancers, chronic pain or other issues. Regardless of the cause, we know that the earlier treatment begins and the more tools they have to cope, the better the chance of a positive outcome.

To say this will be a busy summer for Country Grocer’s Bhreagh Battand is definitely an understatement! Originally from Nova Scotia, as Human Resources Manager, Team Lead, Bhreagh supports operations across Country Grocer and the Island Independent Buyers Group warehouse. While working in human resources for close to nine years now, she joined the Country Grocer family in March 2020 – just as the pandemic was starting to unfold. Like most of us, Bhreagh’s life was turned a little upside down during that time, including the postponement – twice! – of her wedding to her fiancé, Colin, a Coast Guard member hailing from Port Alberni. Bhreagh Battand joined the Country Grocer team in March 2020. Based out of Nanaimo, Bhreagh supports human resources operations across the company.
With the world returning to some sense of “normal,” the two are finally able to welcome friends and family to Tofino this summer for their long-awaited nuptials. Oh, and they’re also building a house! When not guiding the Country Grocer team from her human resources desk or madly planning both a wedding and a house build, Bhreagh enjoys exploring the outdoors with their golden retriever-husky cross, Nova, including hiking and camping. Joining the Country Grocer family has been a rewarding experience. “I was looking for the next step in my career and everyone has been so positive and just happy to be here,” Bhreagh says. “When I interview people, I can genuinely say, people love working here,” she adds, pointing out how the owners stop in and know everyone’s name, and the team works together. “It really is like family.” As we continue to recover from the impacts of the pandemic, Bhreagh looks forward to taking her department in some exciting new directions, with continued emphasis on health and safety, and further developing the on-boarding process for new team members as the company continues to grow and evolve. “We have some cool things coming down the line!” Those interested in joining the Country Grocer team are invited to review the careers section at CountryGrocer.com/ Careers or to drop off a resume at the customer service desk at their location.

Meet Sasha: A good-natured pup who loves to play
Sasha is a standard poodle/collie cross living in Victoria who at almost a year old remains very playful. In fact, Sasha doesn’t really mind who she’s playing with – dog, cat or human – as long as they’re up for some fun! As a very food-motivated pup, Sasha jumps for joy when mom Charmaine and dad Dan stop for ice cream – yes, she knows exactly where they are (and may sneak a lick or two.) While she lives steps from the ocean, Sasha isn’t a fan of water,
however. Despite accompanying mom and dad to the beach for their daily morning dips, she refuses to join in – she’s scared of the water! Of course, she may also be focused on keeping those long locks seaweed-free – everyone comments how beautiful her fur is after she’s been brushed!

Prostate cancer is the most common type of cancer for men in B.C. – in fact, 1 in 8 Canadian men will be diagnosed with prostate cancer in their lifetime. Locally, it’s anticipated that 740 new cases of the disease will be diagnosed on Vancouver Island this year. To support those efforts, the Centre welcomes the 12th annual Westcoast Motorcycle Ride to Live, Sept. 11 at Enrico Winery in Mill Bay. The ride is a time to celebrate survivors, families, loved ones and remember those we’ve lost, and all funds raised stay on Vancouver Island to support men and their families dealing with prostate cancer. Chase River boss gets tossed ... for a good cause!
Tom Barrows, manager of the Chase River Country Grocer, will have the honour of being “tossed” from the bungee jumping platform at WildPlay in Nanaimo this September. But not to worry – it’s all for a good cause! Part of the annual “Toss the Boss” FUNdraiser at the Nanaimo outdoor recreation site, the event supports both the Victoria and Nanaimo Brain Injury Societies. With more than $87,000 raised in last year’s event (which saw Country Grocer’s Tyler Large take the plunge) the event hosts aim to raise $125,000 for 2022. The Brain Injury Society works to support, educate and advocate for adults with acquired brain injuries and their families, and to increase community awareness about acquired brain injuries. An estimated 452 people suffer a serious
