As much as I love the fun and sun of summertime, as a Halloween-lover, I have my eyes on the season to come. I enjoy adding festive Halloween twists to the end of summer. For example, consider a Summer-Halloween (Summerween?) mashup that combines a delicious warm weather treat with a classic Halloween activity: a watermelon Jack-O’Lantern. Go Wild Ladies HOW to UNEARTH YOUR “WILD SIDE” for WILDLIFE

There is a very fine dividing line these days between what looks like a overgrown landscape and that natural, wildlife-friendly landscape. Rightly so, since most landscapes consist of three acres of lawn and rows of privacy evergreens. That’s a suburban landscape, and it’s a desert to wildlife. So, how do we enjoy the songbirds, hummingbirds, and butterflies in such a landscape? We find our wild side and change our choices of plants for the garden. With basic landscape design, you have trees, shrubs and perennials which provide, height, shade, texture, color, and the foundation to a home. If you go to your wild side, many of these plants also can produce berries, fruits, nectar, and seeds which are great for our feathered friends. It’s what you choose and how you maintain your landscape that makes it beneficial in supporting the way of life for bees, hummingbirds, songbirds, and wide varieties of butterflies. Shade trees and large conifers (evergreens) provide shelter. These are the most important plants for songbirds. A large evergreeen is like a thermal cover for wildlife. I know it will be tempting to prune; just go a little wild and leave a few hedges unclipped for shelter and better nesting. Perennials. The plants that produce a wonderful display of color and then multiply into many new plants that appear year after year. When using perennials — go wild ladies! Plant them in numbers, 3’s, 5’s, or more and group them behind short evergreens. This way when they have finished their colorful display, they will fade into the landscape until next year. Let me give you some guidance. Those Hydrangeas....go wild and leave those old flowers on there until late winter! The birds will use them for nesting material. Seed heads Everyone likes birds. The Fourth of July may be over, but that doesn’t mean you have to retire your red, white, and blue attire! Simply put together some clever outfits of your own by mixing different shades of red, white, and blue, plus neutrals and metallics. If you’re having trouble deciding on an ensemble, here are four ideas for cute outfits that are perfect for summer 2017, two day looks and two night looks, all incorporating red, white, and blue.

One of my favorite quotes is “the only people who don’t make mistakes are those who aren’t doing anything.” Like most people, my own mistakes loom larger-than-life, filling me with regret for a missed opportunity. But, as a mentor and employer to younger people, I have found that my personal slip-ups have taught me to be more tolerant of those made by others. While our mistakes can be painful, they have great value as lessons on how to succeed next time.

MY MOTHER ALWAYS SAID...

“You can get glad in the same clothes you got mad in.” In other words, get over it and move on! With six children under her feet, Mom was the arbitrator of daily squabbles. She taught us that winning an argument at the expense of hurt feelings wasn’t winning at all. It’s a lesson I still have a hard time with. But, thanks to Mom’s loving reminders that family matters more than anything, I’m making progress.

I AM MOST PROUD OF...

While I don’t take credit for their successes, I do count my children as my greatest blessing. It turns out that having grown-up kids is lots of fun. There’s much less worry, and they have given me grandbabies to love and spoil. The conservation and preservation of Lost River Cave is also a source of great personal satisfaction. I have been privileged to work side-by-side with volunteers, donors, board members, and staff who give their time, talent, and treasures to protect the cave and provide exciting learning experiences in the outdoors. Today, Lost River Cave is having a greater impact on the community than ever before as it becomes the first full-fledged nature center in South Central Kentucky. The trails and nature programs attract people of all ages and from all walks of life. They have discovered that the woodlands, wetlands, and prairie of the 70-acre park are a perfect place to enjoy the physical and mental benefits of time spent in the outdoors. Lost River Cave is serving to connect us to one another, to our history and to its own natural wonders.

MY GOAL FOR THE SUMMER IS TO...

This summer I checked-off an exciting bucket list item with a trip to Italy and Paris. Art, architecture, food, wine, and did I mention the fairy tale wedding in a romantic 700-year old castle? That’s right, the trip began with the celebration of the the wedding of Evan and Elisabetta Walker, son of my good friends Elaine and Dorian. It was the perfect start to a trip where everything went perfectly right. I can’t wait to go again!

LONG WAY!

It was only supposed to be “a couple of kids and a little something to do.” At least, that was what her husband thought at the time. That “little something” has grown into Bonnie Nicks’ The Learning Center, an educational resource that specializes in providing research-based tutoring to remediate the reading, writing, and spelling weaknesses experienced by students with dyslexia. Bonnie, a Southern Kentucky resident for the past 32 years, has always been passionate about working with children. For 10 years, she worked with the Kentucky School for the Deaf as a speech therapist and then continued to work in the Bowling Green City Schools for 20 years before her retirement. However, her true inspiration for The Learning Center came through her son, who struggles with an auditory processing difference and dyslexia. “Through self-education and my journey with my son, I began to recognize that many of my speech students struggled with the same issues and were falling through the cracks,” Bonnie says about the moment she realized what her next step may be. “I would periodically state that one day I would love to have a practice that worked specifically with students with auditory processing disorders,” she adds. A short time later, The Learning Center was born. In the past ten years, what was supposed to be a small project and something Bonnie did during her retirement has grown to serve 92 families and provide over 220 tutoring sessions per week. The sheer volume by which her center has grown is one of the difficulties for Bonnie, as logistics were never a part of her previous education; however, she manages with her love of learning and education to motivate herself. Additionally, it is the impact that Bonnie is able to have on her students that truly helps her stay motivated and reminds her of why she began this in the first place. “It is nothing unusual to have parents stopping in our office telling us we have changed their child’s life or have saved their family and that they can’t thank us enough; this is something that NEVER gets old,” says Bonnie, smiling and reminiscing about past students and successes. “It is as rewarding every time it happens as it was the very first time it happened,” she adds. Despite being viewed as the hero to the kids, Bonnie argues that it’s more that the children she teaches are her heroes and her legacy. “Even though I was a good speech therapist, I didn’t really believe I was leaving a legacy,” says Bonnie. “These children, however, are permitting me beyond any shadow of a doubt to leave one.” The work Bonnie has done with the children in Southern Kentucky definitely will continue, as her “little something to do” grows and grows.

Sweetly Smoked Grilled Chicken & Brie

Base Ingredients: • 3-4 Boneless Skinless Chicken Breasts • Small Wheel of Brie or Triple Créme • Red Cabbage Sprouts (any sprouts can be used or your choice of salad greens) • Brioche Buns (Challah works well too) • Mayonnaise • Stuarto’s Olive Wood Smoked EVOO* • Stuarto’s Chipotle EVOO* • Kentucky Honey Farm’s Wildflower Honey* • Stuarto’s Olive Oil’s Best Friend Herb Blend* • Stuarto’s Bonfire Sea Salt* • Stuarto’s Applewood Smoked Pepper* • Stuarto’s Blackberry-Ginger Balsamic* Chicken Marinade (3-4 Chicken Breasts) • 4 Tbsp. Combine all marinade ingredients and coat chicken well. Allow chicken to marinate for a minimum of one hour. While grilling chicken, mix all of the Chipotle Smoked Mayo ingredients (recipe below) and blend well; chill until ready to use. Now blend Chipotle EVOO and Blackberry-Ginger Balsamic (recipe below) to create a simple, yet, fantastic vinaigrette; toss sprouts or greens in vinaigrette and chill until use. Immediately after removing chicken breasts from grill, place sliced proportions of Brie on top of chicken and tent with aluminum foil and allow to rest while the cheese melts to perfection. While the chicken rests, toast your buns on the grill or in the oven. Spread Chipotle Smoked Mayo on your toasted buns and begin to build your sandwich, topping it off with your simple sprout salad. A most delicious sandwich! Chipotle Smoked Mayo • 2 Tbsp. Mayonnaise • 1 1/2 Tbsp. Stuarto’s Chipotle EVOO* • 1/4 tsp. Stuarto’s Applewood Smoked Pepper*

Simply drizzle corn with Stuarto’s Butter EVOO and sprinkle Colonel De’s Parmageddon Seasoning Blend on your corn and grill to your liking. While these are simple measurements, feel free to use more or less to suit your specific tastes. Oh, and keep that Butter EVOO handy while at the grill.

(Yields One Cocktail) • 1.5 oz. Vodka (2 oz. for rainy days) • 2 Tbsp. Stuarto’s Sicilian Lemon Balsamic* • 3-4 Fresh Basil Leaves • 1 Tbsp. Kentucky Honey Farm’s Honey* or local honey In a cocktail shaker or glass, muddle 3-4 torn basil leaves with Sicilian Lemon Balsamic; add ice. Top ice off with honey and vodka; shake well until frost forms on the shaker or glass. Fill a rocks or highball glass with crushed ice. Strain cocktail into ice-filled glass and serve with a spring/stem of basil for garnish. To make it extra special, rim your glass with honey and chipotle sea salt! Ever since I was a little girl, I’ve known that I wanted to be a singer. Other than owning a puppy, it was my very first dream. I grew up listening to country music with my grandmother and even learned to play guitar when I was 14 years old. At Moss Middle School, I decided I would join the choir to see if I liked it. That was where I auditioned and performed my very first solo. I discovered that not only did I love singing in the choir, but I was very good at it. I continued to sing in the choir all the way through high school. My senior year of high school is when things started to change for me. I was content in singing in the chorus without auditioning for anything special, but I had one of those teachers who wouldn’t let me settle for less than what she thought I was capable of. It was through her encouragement and support that I decided to pursue music in college. I ended up getting married not long after graduating from high school and decided to put off Jacqueline college for a few years; in her title however, my heart longed role in “Suor for music, and I was lost Angelica” without singing. In 2007, I decided to give it a try. I auditioned for the music department at WKU and was accepted. I had two very small children at the time, but I knew that with hard work and dedication, I could make it happen. The next few years were some of the most memorable years of my life. I made lifelong friends and accomplished more than I ever thought possible. My personal life was in turmoil, Photo Courtesy of Jeff Smith but I was able to direct that energy into something positive. In 2010, I won first place in the National Teachers of Singing competition and also the WKU Performer of the Semester. I couldn’t have done it without the support of all of my teachers there in the music department, including Jana Ballard, Nancy Cron, and Dr. Wayne Pope, to whom I send all my thanks and love. Unfortunately, my personal life took a turn for the worse, and I had to drop out of school during my senior year. It was heartbreaking, but I didn’t lose hope. Five years passed, and I returned in the fall of 2016. It was then that I auditioned for and got the title role in the opera “Suor Angelica” to be performed in the spring of 2017. It was a success, and I’m very proud of the growth that I had during that performance. After I finally graduate, I plan to go to graduate school and focus on performance. In my heart, that’s what I’ve always wanted. They say that dreams come true when you put your mind to it. I have proof that they can. 20 • Flair • 2017 • July/August/September
