Time to sit back and unwind." A solid piece of advice from Messrs Jeff and Smith back in 1991. August will be gone in a flash, so we need to make the most of it. Staying in or going out, this is certainly the month to enjoy the outdoors and all it has to offer; just make sure you enjoy it safely. Hydrate, wear a hat and smother yourself in enough factor-50 to fill a hot-tub. In this issue we have all of your summer party essentials; from top events to fabulous summer recipes to impress your friends, we've got you covered. On the subject of recipes we really do have a bumper haul; my particular favourite this month is the coffee and caramel baked cheesecake, you might not want to share this. The Feast Released: 19 August This horror filmed entirely in Welsh debuted at last year’s South by Southwest film festival to critical acclaim. The story follows a wealthy family hosting a dinner party at their home in the Welsh mountains. They’re entertaining a local businessman and farmer who are hoping to secure a business deal. A young woman arrives to be their waitress for the evening and unbeknownst to the family and their guests, she is planning on serving them their last meal ever. This film is not for the fainthearted and will push you to your limits but if you’re looking for something different and filled with tension, then this is for you. Just maybe avoid eating your dinner while you watch it.

Bullet Train Released: 3 August Ladybug (Brad Pitt) is a trained killer that feels like he’s got the worst luck possible. He’s had enough of the assassin life, but his handler Maria Beetle (Sandra Bullock) has one more job for him. All he needs to do is collect a briefcase from a bullet train that’s heading from Tokyo to Kyoto. Ladybug soon finds that there’s other competing assassins on the train and their objectives are all somehow connected. Directed by Deadpool 2’s David Leitch, this promises to be a hilarious action comedy with co-stars Joey King, Aaron Taylor-Johnson, Brian Tyree Henry and Michael Shannon.

Beast Released: 26 August

Day Shift Released: 12 August, Netﬂix Jamie Foxx is just trying to be a good dad and provide a better life for his 8 year old daughter and so he spends his days cleaning pools in San Fernando, California. Or at least, that’s what he wants people to believe. He actually earns his money by hunting and killing vampires. Put together by a team of people behind some of the John Wick films, Day Shift also stars Dave Franco and the legendary Snoop Dogg. It’s going to be some serious silly fun – what could be more entertaining than watching Jamie Foxx shoot some vampires in California? There’s a sentence I bet you didn’t think you’d read today.

Have you ever wanted to see Idris Elba punch a lion in the face? Well, you’re in luck because in Beast, he punches a lion in the face. Elba plays a recently widowed husband who’s on a trip to South Africa with his two teenage daughters to show them where he first met their mother. During holiday, they head to a game-reserve with a family friend who’s a wildlife biologist. Sounds like all the makings of a lovely day. Until a ferocious man-hunting lion starts attacking them and killing anyone in its way. Can Idris Elba protect his children and get them home safely and stop them from becoming a lion’s lunch? Maybe punching the lion in the face will help.

Fisherman’s Friends: One and all Released: 19 August Sea-shanties. Made popular again by TikTok and by the Fisherman’s Friends. I personally don’t understand the appeal. Anytime I hear a sea-shanty all I think of is that old advert for frozen battered cod. Despite that, the Fisherman’s Friends return for a second helping of shanty singing. They’ve made it big, signed up to the same record label as Lady Gaga and they’re on the road to serious success. But with success comes drama and soon the group is falling out and losing focus. Can they shove their spats to the side and shift into shantying gear and maybe make it to Glastonbury? Probably. If, like me, you’re not a shanty zealot then you might just enjoy the beautiful Cornish back-drop instead. 07

Since lockdown, my fiancé has really got me into MasterChef and all its spin-offs. We love Greg Wallace but have you ever noticed how John Torode describes in detail what a contestant is making and then finishes off by saying something like “If they pull it off, it could be nice.” That’s the case with all food, John! If it goes well, it’ll be nice, if it goes badly, it won’t be! Anyway, there’s a new line of celebrities stepping into the kitchen to give the culinary competition a go. We’ve got the likes of Chris Eubank, Danny Jones, Jimmy Bullard, Katya Jones, Kirsty Gallacher, Lesley Joseph and Paul Chuckle donning the aprons and cooking up a storm.

This anticipated series based on Neil Gaiman’s popular comic is almost here. The Sandman is the story of Morpheus, the Dream King and how following an escape after decades of imprisonment by a wizard, he tries to fix the mistakes he’s made during his long existence. The cast is phenomenal and includes Jenna Coleman, Charles Dance, Gwendoline Christie, Sanjeev Bhaskar, David Thewlis, Patton Oswalt and Stephen Fry. Netﬂix, 5 August

Game of Thrones was all anyone talked about for years but after a disappointing final season and a less than satisfactory ending, people have forgotten about it and moved on. Well, the people at HBO are hoping there’s still a spark of excitement as they bring us House of the Dragon, a spin-off prequel sent 200 years before the original series. This new story focuses on the House of Targaryen, the ancestors of Daenerys as the family starts to fall apart, signalling the beginning of the end of their reign. The cast is looking fantastic and includes Paddy Considine, Emma D’Arcy, Matt Smith, Olivia Cooke and Rhys Ifans. Luckily, you don’t have to wait five seasons for some big dragons to show up, it looks like there’s plenty of dragons to be found in the House of the Dragon!

Locke & Key Netﬂix, Final Season, 10 August The Locke family is back to discover more magical keys within Keyhouse for one final season. Following the events of the second season, the family is feeling a little fractured. But they’ll need to come together to deal with a new threat. Something dangerous is lurking in Matheson and it has plans of its own for the keys. Expect more drama, teen angst and magical mayhem as this exciting series comes to a close.

Joy Ellis' Jazz Trio 2 September, Anteros, Norwich Joy Ellis is a pianist, singer and composer based in London. Since graduating from the Guildhall School of Music and Drama she has toured all over the world playing jazz. Past gig highlights include Ronnie Scott’s, the Jazz Café and the Barbican Pit Theatre in London. She will perform in Norwich as part of her jazz trio, with Adam Osmianski and Henrik Jensen. Joy's music is compelling and delicate, yet intimate, making you feel that no notes are wasted. In March this year Joy released her third album with long-time collaborators Jensen on double bass and drummer Osmianski. Recorded at the end of May 2021 her new material has a relaxed and minimalist vibe in keeping with the album’s title, ‘Peaceful Place’. Certainly worth seeking out this gig before you miss out.

I could

say “If there’s one thing you do this summer”, but I would be doing everyone an injustice. And I don’t want to do that. What I will say is, “There’s so much going on this month around Norwich and Norfolk that if you don’t take a few days off to enjoy our lush, pretty and easily navigable county, there’s a good chance you’ll miss out.” And who wants to be that person, at a party or Sunday BBQ, not being able to join the conversation?

The pandemic taught us a thing or two about enjoying the outdoors and nature. In all seasons. It also showed us that combating loneliness can be a real battle for many. In Norwich we have many beautiful green spaces to enjoy, we are lucky for a city.

things from scratch. We were trying new things and welcoming new experiences with open minds. Over at Fielding Cottage located in Honningham there’s a farm making award-winning goat's cheese. In fact, Sam Steggles and his team have been making their goat's cheese for over 10 years to great acclaim, I’m happy to say. These days though, you don’t have to settle for buying cheese from their farm shop or supermarket. You can now learn from the experts and make your own. Prices are £95 per person and groups are welcome too. So, you can now make cheese. How about then mastering the art of gin distilling so you can enjoy your cheese with a tipple? Sounds good to me. Gyre & Gimble business partners Craig Allison and Rory Smith, kept themselves busy during lockdown experimenting with distilling. With their Norwich bar closed because of restrictions they had the time to dream up some great recipe gins. And they did just that. So out of lockdown was born a coastal gin infused with samphire and lavender - Callooh Callay, a cherry gin – Queen of Hearts and a classic London dry with a double dose of juniper. Now they’ve invested even more in their business and moved to The Royal Arcade in Norwich where they have a well-stocked shop and Gin Academy.

So, let’s get started. Except that before I do, remember that travelling, exploring and experiencing can be so beneficial for our health. Particularly if we are run down, or feeling that the drudge of the weekly routine is getting too much. A change is a good as a rest, so they say. And I couldn’t agree more. So, lift yourself out of the deckchair, or ignore that pile of ironing and make some plans. During the first lockdown in 2020, people very quickly began taking up new hobbies or resurrecting old ones. We had time to think about what was important to us. We also realised that doing nothing isn’t all that it’s cracked up to be. And food and drink became a really important focus in our lives. Taking time to make more adventurous meals or making

And, said Gin Academy is extremely good fun, because I’ve tried it. And even though I say it myself my ‘Marchie’- distilled in March 2022- is very good. A warm and spicy yet gentle gin, using botanicals including chilli, orange, ginger and lemongrass, plus seven more. Of course, I cannot reveal them because it’s my own secret recipe. Yes, secret. But I don’t need to reveal my secrets because you have a host of incredible botanicals to choose from on one of their 2.5 hour workshops. For £75 per person, you will learn the history of gin, sip gin and tonics as you go and distil your own bespoke tipple, which

you get to take home. 70cl of delicious handmade gin to impress your friends with or keep entirely for yourself. And if you want more? Norwich is the only city in the country situated in a national park. Again, lucky us. And with Whitlingham Country Park just outside the city centre we have over 280-acres of circular walks, surrounded by nature, wildlife and water. And there’s more at the Sculpture Park at the Sainsbury Centre for Visual Arts with stunning artworks to admire including Henry Moore, Antony Gormley, Elisabeth Frink, Lynn Chadwick and Liliane Lijn. This is a special place of natural beauty and architecture too – 350 acres of parkland by the water, open during daylight hours for free. And there’s more because on The Marriott’s Way-which begins where Barn Road meets Barker Street-there’s 26 miles to walk along a disused railway track. In summer enjoy canopies of overhanging ancient trees and wild strawberries. Duncan is a local tour guide who knows his onions. Well, actually his beer. Duncan now takes History and Hostelries tours across Norwich (£25, including a pint at each authorised stop!) where tour-goers will experience over four hours or more some of CAMRA’s ‘City of Ale’ iconic pubs. Along the way Duncan regales stories about plague pits, Tudor streets, ghosts, Norwich innovations and celebrated local characters. Wonderful! Now here’s a strange one; A medieval street beneath The Shoebox on Castle Meadow. Yes, honestly. Tickets are £15 for a tour. And there’s more because you can also book a Secrets of the Tunnels escape game (£16.25 per person), which I know will test your wits because the people behind this are very clever. But you have to be cleverer to get out in 60-minutes. Finally, become a dinosaur hunter. Yes, your heard me right. Enjoy Norwich and Norfolk all through August and up to 10 September, locating giant T.rex and Steppe Mammoth sculptures. Just when you thought you’d seen it all. In Norwich the GoGoDiscover trail takes in 55 T.rex dinos, plus 24 Steppe Mammoths each decorated by artists around the county. Download the GoGoDiscover app (£1.99) from the Apple App Store or Google Play Store. I don’t want to give the game away but find some at Chantry Place, Norwich Cathedral, The Forum, Castle Quarter and Jarrold. Also: King’s Lynn, Holt, Cromer Pier, Holkham, Carrow Road, The Broads, Hemsby and Pensthorpe. A little Archaeopteryx has told me that at John Lewis in Norwich you can find a Steppe Mammoth constructed from denim!

This game is almost 50 years old, and it’s still going strong today. The aim of UNO is simple… Try to get rid of all your cards, the quickest! It takes 30 seconds to explain the rules, and even less than that to set up the game.

It’s Norfolk’s

largest food festival and attracts more than 11,000 visitors each year. Held, by kind permission of the Earl and Countess of Leicester, in the beautiful Walled Garden at Holkham on 3 and 4 September, the North Norfolk Food and Drink Festival is very much about supporting and promoting small, local artisan producers. It sees around 60-65 stalls, selling a wide variety of goodies from gin to chutney, from chocolate to beer, and fresh sourdough bread to cheese. It’s the perfect opportunity to discover new producers, which this year includes Norfolk Doggy Deli, try out different products and, dare we say it, do a little early Christmas shopping. Saunders from Fakenham’s Black Shuck spirit company, Candi Robertson from Candi’s Chutney, based near Reepham, and Walsingham Farms Shop which sell great deli produce, especially tasty pies. The festival’s headline sponsor is Kettle Foods who always have a very busy stall selling their gourmet snacks, while Essence Foods, based near Fakenham and run by Sarah Savage and her family, is another sponsor and has a stand selling their delicious jams, mustards and more. Apart from these producers, another key part of the festival, which is in its 14th year, is the Arthur Howell Cookery Theatre which sees a jam-packed programme of both chefs and producers cooking up a series of dishes using fresh, seasonal and local produce. This year the line up includes Michael Chamberlain of the Victoria Inn at Holkham, David Holliday from Moon Gazer Ales, Na Hansell, the well known North Norfolk cookery school owner, Rajan Verma of Currylicious, and Fran Hartshorne from

the White Horse at Brancaster Staithe. The star attraction, and appearing on both days, is the very funny duo act of Wells butcher Arthur Howell and chef patron of the Crown Hotel in Wells, Chris Coubrough, who always cook up something surprising, using whatever Arthur has fresh in his shop! The demo stage is hosted by local foodie Andy Newman, who keeps good order and teases out a few more tips and information from all those taking part. Add in several pop-up concessions including pizza, homemade lemonade, Thai dishes, sweet treats, freshly brewed coffee and more and you can really make a day of it. There is also a fully stocked bar, looked after by Malt Coast Brewery, where many local wines, craft beers and spirits are on offer, plus a selection of fabulous festival special cocktails!

There are lots of activities for children, including story telling sessions and live music, and the festival is very much a dog friendly event - with treats available for them, too. Entry is free and car parking is available at £5 per vehicle. The festival opens from 10am to 4pm on both days. The festival is run by local foodies who all volunteer their services to support this family-friendly event which is a firm favourite in the culinary calendar. Facilities and attractions at the hall, an 18th century Palladian style house, are also available, including shops, cycle hire, a high ropes course and a cafe. There are many lovely Estate walks, and Holkham beach is regularly voted one of the best in the country.

METHOD: In a mixing bowl, add the miso, soy, ginger, cider vinegar and sesame oil and mix well. Slice the aubergine lengthways into six long wedges. Add them to the bowl and massage them with the marinade. Line a baking tray with baking paper and lay out the wedges, drizzling any leftover marinade on top of the aubergines. Roast in the oven for 30 minutes at 180 °C until golden brown and slightly charred. Take out and let cool. Finely slice the red onion. Add it to a jar with the lemon juice, vinegar, sugar salt and

ginger. Seal with lid and shake. Leave for at least 30 minutes. Add the yoghurt to a bowl. Mix in rosemary, lime, garlic and seasoning. Taste and add more lime if you think it needs it.

TO ASSEMBLE: Lay the cooled aubergine wedges across two plates. Dollop over the lime yoghurt and scatter over the pickled red onion. Sprinkle herbs such as mint, coriander and parsley. Add some toasted sesame seeds if you have them. Serve with wedges of lime. 29

Yet trailing in the pandemic’s wake, like a petulant younger sibling that just realised it’s not their birthday party, comes a cost of living crisis. So, it seems we are not entirely out of the woods yet. But fear not, if your finances are waging a war more biblical than that of David and

First of all, because let’s be honest it always starts with food, is the Pot Luck Provision. Of course, barbequing is the classic British summer party staple and for good reason. There is nothing more glorious than mildly charcoaling some

up and artfully arranged in a pitcher. For those designated drivers, why not whip up a cold brew coffee jug. Take some ice, room temperature coffee and whiz it up with milk or ice cream. sausages whilst trying to make sure the paper plates don’t blow into next door’s garden. But being responsible for this holy grail of British tradition does not need to fall entirely on your shoulders and this is where you can employ the Pot Luck Provision. The principle of which is simple: ask your guests to bring a dish. Never forget that fairy lights aren’t just for Christmas. A well-placed string of twinklers can add a touch of magic to any average looking perennial border. There’s no need to worry about matching either. Pull out those odd souvenir cups from your travels, random blankets and mismatched plates. It’s not chaotic - it’s eclectic. Create your own little corner of Bohemia and drape some old tablecloths over a few pallets for a unique al fresco dining experience. Dot some candles along your new makeshift table, add a vase or two of flowers and throw scatter cushions on the grass. Then you won’t need to fret about whether there’s enough garden chairs rammed in the back of the shed. Et voila! Beatnik chic in your own back garden. So, if your budget has less wiggle room than a Kardashian’s dress, there’s plenty to keep you having fun, even if it’s only Daylight savings time working in your favour. The truth is, it’s important to remember you’re only as rich as the company you keep. Take some deep breaths, enjoy the sun and have a few laughs. Just don’t forget your citronella candle. 31

• 200ml whole milk

• 100g sultanas

• 50g butter

• 4 Tbsp light brown soft sugar (55g)

• 450g strong white bread flour

• 1 Tbsp Camp Chicory & Coffee Essence + 1 tsp

• 7g sachet dried yeast

• 3 Tbsp icing sugar (45g)

• 50g light brown soft sugar • 1 medium egg yolk • 3 Tbsp Camp Chicory & Coffee Essence • 1 Tbsp maple syrup

METHOD: Warm the milk and butter in a small saucepan until butter has melted, set aside. Place the flour, yeast, sugar and pinch of salt in the bowl of a free-standing mixer fitted with a dough hook. Stir in the milk mixture, egg yolk and Camp essence to give a rough dough the knead for 10 minutes. Set aside in a greased bowl, cover and leave for 1 hour or until doubled in size. For the filling, mix together the walnuts, sultanas, sugar, 1 Tbsp Camp essence and 2 Tbsp boiling water, set aside. Knead the dough to knock out any air bubbles then roll out on a lightly floured surface to a 40x30cm rectangle. Spread over the filling and roll up from the long edge. Cut into 12 and place in a lined 28x23cm tin, cut side down leaving space between each one. Cover with clingflim and set aside for 1 hour or until doubled in size. Preheat the oven to 180°C, gas mark 4. Bake for 20-25 minutes until browned, remove from the oven and brush with maple syrup and allow to cool. Mix the remaining 1 tsp Camp essence with the icing sugar and 1 tsp water to give a paste just thick enough to drizzle, then drizzle this over the buns to serve.

• 75g digestive biscuits

• 900g cream cheese

• 75g Biscoff biscuits

• 250g caster sugar

• 3 Tbsp Camp Chicory & Coffee Essence

• 75g butter, melted

• 3 Tbsp plain flour (40g)

• 150g tub soured cream

• 1 tsp vanilla bean paste

• 100g salted caramel sauce

• Zest 1 lemon

• Cocoa powder, crushed Biscoff biscuits and raspberries to decorate

• 3 large eggs, beaten

METHOD: Preheat the oven to 180°C, gas mark 4. Place a sheet of baking parchment over the base of a 23cm springform tin and place the ring of the tin on top and close the catch, trim off any excess paper. Place the biscuits in a food processor and blitz to resemble fine breadcrumbs, mix in the butter. Press into the prepared tin and bake for 10 minutes, cool. Reduce the oven to 140°C, gas mark 1. Meanwhile, whisk together the cream cheese and sugar until just

combined, then mix in the flour, vanilla, lemon zest and Camp essence. Whisk in the eggs along with the soured cream and caramel. Pour into the tin and place on a baking tray. Bake for 2 hours until just set with a slight wobble in the centre, turn off the oven leaving the cheesecake in until cooled, then chill before serving. Serve sprinkled with a little cocoa and Biscoff crumbs and top with fresh raspberries. 35

Mixed Tomato Salad With Smoked Sardines The humble tomato salad with a twist! Adding sardines will give a smoky depth to the dish – the perfect accompaniment to a summer dinner party.

INGREDIENTS: serves 2 • 500g of tomatoes, different varieties including: yellow, orange and cherry tomatoes • 4 Fillets of smoked sardines • 1 pinch of Maldon® Salt • 4 Tbsp of Extra virgin olive oil • 1 Tbsp of Sherry vinegar • 1 Shallot

METHOD: After washing and drying the tomatoes, chop each variety in a different way so they look more appealing (thicker cuts/ thinner cuts), then simply season them with Maldon Salt and a dash of oil. Slice the shallot onion in to rings and sprinkle over the tomatoes. For this dish, the salad will be accompanied by smoked sardines, but it could also be seasoned with fresh herbs and served with a range of different ingredients. We are especially fond of combining tomatoes with tinned fish, whether oily, salted or smoked to give a underlying depth in flavour.

paella The classic paella, a cult favourite within the Spanish cuisine. Paired with saffron flavoured rice, this dish carries an abundance of flavours, including chicken; Norwegian Lobster, squid, mussels and monkfish.

METHOD: For the mussels, heat two inches of water in a saucepan over a high heat. When it reaches the boil, add the mussels for a minute, remove from the heat and set aside without opening the lid. Whilst the mussels are boiling, begin prepping the remainder of the vegetables, chopping them finely. Heat the paella pan, keeping the pan on a medium-high heat in the centre, whilst keeping the sides at a low hear. Pour 2 Tbsp of oil in the centre of the paella pan. Add the head of garlic to the pan. Brown the Norwegian Lobsters and prawns for 1 minute on either side and remove them. For the sauté base, move the garlic to the side of the paella pan, add another 1 Tbsp of oil and sauté the onion until it starts to turn transparent. Add the green pepper and stir the mixture as it cooks for 5 minutes at a low heat. Add the tomato and stir the mixture together. Add a pinch of sugar and Maldon Salt. Move the sauté mix to the sides of the paella pan where the heat is lower. Add another tablespoon of oil and fry

the chicken for 5-10 minutes and the squid 5 for minutes more (until they are golden). Bring the sauté mix back to the centre of the paella pan, mix everything together and push it back to the sides. Sauté the green beans and peas for 2 minutes. Bring the sauté mixture back from the sides to the centre and stir everything together. Add the remaining oil and the rice, stirring with the ingredients for 2 minutes over a high heat. Spread the whole mixture evenly over the paella pan, with the garlic head in the middle. Add the fish stock. When the water boils, lower the heat to the minimum and leave to simmer for 20 minutes. After 10 minutes, add the diced monkfish to the rice. Open the mussels, keeping only the shell with the mussel meat. Finally, place the prawns, Norwegian Lobsters and mussels on top of the rice. After 20 minutes, turn off the heat, cover with a clean tea towel and leave to rest for 5 minutes. Serve with eighths of lemon. Finish with a pinch of Maldon Salt.

Orange & carrot salad grilled halloumi with

This orange and carrot salad, paired with barbecue grilled halloumi creates the perfect salad for any summer dinner party!

• 2 Navel oranges • 2 Blood oranges • 2 Carrots • 200 g Halloumi cheese • 2 Tbsp Black olives • 2 Sprigs of fresh mint • 4 Tbsp Extra virgin olive oil • Maldon® salt • 1 Pinch of cumin • Freshly ground black pepper

METHOD: Wash, dry and de-leaf the fresh mint. Set aside a few whole leaves and chop up the rest finely. Juice ½ a blood orange, filter out the excess bits/pips with a sieve, then season the juice with Maldon Salt and pepper. Add the olive oil, cumin and chopped mint and mix together well. Put this salad dressing in the fridge for later. Cut the peel and pith away from the rest of the oranges with a very sharp knife until the pulp is completely clean. Cut each orange into segments and toss into a salad bowl. Using a vegetable peeler, finely shred the peeled carrots into the bowl, and add the olives and salad dressing together. Chop the halloumi into thin slices, lightly brush with olive oil and then grill on the barbecue until golden on both sides. Serve together with the salad. Add a pinch of Maldon Salt for seasoning.

• 5 Anchovy fillets

• 1 Small, green pepper

• 1 gem lettuce

• 1 Medium cucumber

• ½ Clove of garlic

• 2 Hard-boiled eggs

• 4 Sprigs of basil

• 12 Black olives

• 4 Tbsp Virgin olive oil

• 2 Tbsp Red wine vinegar (preferably sherry vinegar)

• Maldon® Salt • Black Pepper

METHOD: Wash and slice the tomatoes, toss them into a salad bowl and season with a pinch of Maldon Salt. Wash and dry the pepper and cucumber. Then, slice the pepper into thin strips, removing the stalk and pips as you go, and chop the cucumber into fine slices. Mix both in with the tomatoes. Peel and chop the garlic clove and spring onion, add them to the salad bowl and throw in 2 pinches of Maldon Salt, 3-4 pinches of freshly ground pepper and the vinegar; then mix together well. Wash and dry the basil, remove the leaves from the stalk, chop them and add them to the salad dressing, along with the olive oil, then pour into the salad bowl. Before serving, peel the eggs, cut each one into quarters and add to the salad with the anchovies.

• 1 x 226g jar of ART’s Indian Summer chutney

• 235g spring onion

• 8 - 10 sheets of filo pastry

• 235g carrot

Pre-heat the oven to Gas mark 6/180C. Thinly slice the vegetables into roughly 5cm long strips and put then them into a bowl, add the Indian Summer chutney, combine well. Lay out the square sheet of filo pastry on a clean surface, place the roll filling down the middle of the side that is nearest to you about a 1 cm in from the edge. Egg-wash the edges of the pastry, fold the sides into the middle before you start rolling so that filling stays encased in the pastry. Once you have made your spring rolls, place them onto a lined oven tray, wash with remaining egg and cook them for 20 - 25 minutes or until golden. With garden lighting we have two clear categories – wired or solar, each bringing their own challenges and benefits... but which one to choose? All exterior lights need to be protected from the elements, especially if they are of the wired variety – you can never take any risks with electricity. So if in doubt it is always best to talk to an expert. All garden lights need to rated at least IP43, ensuring that they’re safe and will endure outside. You will generally find that solar variations will have a lower IP rating than the wired kind. Installation Solar lights are pretty easy to install. Something like a rock light to light up pathways or add a little blast of light to a flower bed just need to placed, what could possibly be easier than that? Just remember to make sure the solar panels get enough light throughout the day to charge up. Other solar lights normally just need a few holes drilling to secure them in place.

On the other hand, wired lights take a little more effort as cabling will have to be run. If you are laying cables in the ground this ideally needs to be done pre-build and using the appropriate products to ensure that the wiring doesn't degrade in the ground and that it is safe if it is accidentally dug up. Outdoor sockets can be added to plug appliances like water features. It is best to get a qualified electrician to do this. Let it shine The level of brightness and the quality of light mainly depends on how much you spend, however generally speaking the wired variety will generate a brighter and better quality of light than its solar powered cousin. Things to look at are lumen and lighting distance. Also do you want to switch the lights on and off manually or with a smart device like your Alexa or do you want them activated with a PIR when motion is detected? Continued on page 47 41

Now you have a beautifully landscaped garden with an amazing deck, you need somewhere to sit to fully enjoy your outdoor space – get this right and you are ready to kick back and relax. The full luxury look will come when you start to add in your personal touches like cushions. Big splashes of colour will help to tie in with the colours of your garden. If you really want to look like the queen of co-ordination think about the colours of the flowers and plants you planted earlier in the year.

As parks fill with chequered blankets, patio furniture plays host to al fresco meals and barbeques fill the air with that smoky summer scent, it’s easy to forget how unsustainable the summer party season can be. Here, we share our top tips for keeping your summer picnic or gathering as green as can be. FOOD, GLORIOUS FOOD Let’s face it: everyone’s coming for the food! British produce is a highlight in the summer and buying locally is a great way to ensure your food hasn’t travelled much further than any of your guests. Norfolk and Suffolk are full of farmers’ markets and delis offering the best of our counties’ produce: BBQ sausages, deliciously full sandwiches, fresh and easy salads … and of course, no summer party is complete without strawberries and meringues. With food costs rising, think carefully about how many people you’re hosting and how much they can actually eat, which will reduce food waste too. Do six people really need 24 bread rolls? THINK ABOUT DRINKS On feel-good summer nights, the drinks are usually flowing! Choose drinks in larger containers (yes, magnums will work!), and use glasses you already own rather than plastic cups. If individual vessels are needed, aluminium cans are

far more eco-friendly than glass and plastic bottles, thanks to the speed and ease of recycling them. CHOOSE TO REUSE An obvious way to limit the waste created at a party or picnic is by opting for reusable items over disposable ones. If you would prefer not to use breakable crockery outdoors, you can find lightweight, eco-conscious options to suit any summer banquet table or blanket. Bamboo plates are a great option for picnics or barbeques, while reusable glass or disposable paper straws are far more sustainable than their plastic counterparts. It might mean more washing up, but choosing these reusable options is far kinder to the planet, and they’ll look better in your photos than the disposable versions too! DRESSING TO IMPRESS Dressing your outdoor area for a party needn’t be unsustainable: the garden is the ideal place for natural decorations! Scour charity shops or second-hand stalls for vintage tablecloths or invest in good-quality cloth napkins and fabrics to dress your table. last month of summer is upon us and we will hopefully be enjoying holiday mode. With the children off school, our gardens will have their busiest month of the year. We can hopefully spend much needed time with our family, sitting back into our garden chairs surrounded by floral colour. August is like no other gardening month, before or after it and we must cherish this month as early Autumn is just around the corner and colours will change as the days start to shorten. August is often the hottest time of the year so our plants will need to be sufficiently watered to ensure they thrive beyond this month. It would be nice to have as much colour for as long as possible. To be sure that plants get moisture into the roots we should water directly into the base of the plants and ideally in the evening when the risk of evaporation is reduced and they can sit in the moisture overnight. If you go away on holiday, then it is very important that someone waters your garden whilst you are absent. The late summer days can be very hot and can still bring the occasional strong winds; this is refreshing for us but not for our plants. We need to ensure our taller flowers are protected from wind damage by using plant supports. The ideal plant support will be as tall as the plant stem and allow you to tie it in almost to the tallest flower. The dahlia and lilies will certainly need support to keep their top heavy flowers up straight. We don’t want any of our tall flowering plants to be knocked over and damaged as that will bring our floral colour to a sad and premature end. The lawn grass can start to turn brown in hotter weather, this isn’t something to worry about as the grass will go dormant until the rain returns. However, if we want to keep the

lawn healthy, green and lush, then watering it a couple of evenings per week will help it maintain a healthier look and feel. The growth of grass slows in late summer so use a higher cutting setting on your lawnmower to encourage healthier grass. If you spot any ant nest mounds in your lawn, then remember to thoroughly brush them into your grass before mowing. The hot weather will make it easier for weeds, pests and diseases to thrive, meaning our gardening jobs are never quite finished. We should still be looking out for aphids, lily beetles, vine weevils and slugs amongst our leaves and flowers. In the first instance gently remove the pest by hand and then seek the relevant treatment to reduce the risk of them damaging your plant further; try using an organic spray. By keeping your

We should take a moment to reflect on the gardening year so far and think about what we want to see in our next August gardens. If like me, you thought the main issues of menopause were hot flushes and no more periods, you might be wondering what all the fuss is about. You also might be wondering why on earth I'm mentioning it in a fitness column?! Let me explain. Studies have shown that the hormonal changes that occur affect almost all of the organs and processes in our bodies, some of which can potentially lead to some serious health problems.

The good news is that we can positively impact all of these issues by making healthier lifestyle choices and keeping our bodies fit and healthy. We are classed as officially reaching menopause when we have not had a period for 12 consecutive months. Although the average age of menopause is 51, perimenopause symptoms can start months or even several years before this. It’s during this time that our hormone levels start to naturally decline and this is what causes most of the symptoms and potential health issues. The main culprit is oestrogen decline which we now know can put us at increased risk of the following:

Heart disease This is the number 1 cause of death in women under 75, killing more than twice as many women as breast cancer. Our risk of heart disease increases significantly around the time of menopause. Oestrogen has a protective effect on the heart and blood vessels. When the levels decline, the blood vessels become stiffer and less elastic and our cholesterol levels can increase. Osteoporosis Bone density starts to naturally decrease from around the age of 30, but falling oestrogen levels affect it even more. This leaves us open to breaks and fractures, which could potentially lead to further health issues. Loss of muscle mass and strength Declining oestrogen also leads to muscle loss. Muscles help to protect our bones and joints, help us balance and to move and function on a day to day basis in general! 61

which is the hormone that tells us we are hungry. Hydration Our brains depend on proper hydration to function optimally. So if you are already struggling with the dreaded brain fog, check your hydration levels! Water can also help to control our appetite, and is needed for your body to produce the synovial fluid that allows your joints to move freely! Loss of elasticity in our tissues This is everything from skin and hair, to blood vessels, and ligaments. We already know that this can affect the heart, but it can also affect our joints making movement difficult and painful. Increased body fat Low oestrogen levels are associated with insulin resistance, which leads to increased fat storage, and potentially Type 2 diabetes and obesity. Cognitive impairment The brain fog! Oestrogen helps the brain utilise glucose for energy. Lower Oestrogen means that the brain has less energy, with some studies suggesting a 25% drop! This explains the day to day forgetfulness and confusion! You can see that most of these issues are closely linked and have a knock on effect on each other. But it’s not all doom and gloom! There are lots of things we can do to help offset these negative effects. SO HOW CAN WE HELP OURSELVES? Exercise Aim for at least 150 mins of moderate exercise across the week. This doesn’t necessarily mean going to the gym, anything that elevated your heart rate slightly counts. This will help with heart health, blood pressure, balance, joint health, weight management and supporting bone density. For added bone health, make sure you add in some resistance exercises using either 62

your own body weight, or actual weights Diet Many doctors specialising in menopause, such as Dr Loiuse Newson, recommend following Mediterranean diet principles. This is high in veg, nuts, beans, cereals, fish and unsaturated fats. It is low in highly processed foods and dairy, and low in salt and sugar. Choosing wholegrain carbs over white, refined carbs such as in white bread, pasta, rice and pizza can help to stabilise blood sugar levels, which can in turn also affect mood. Sleep Good quality sleep, and enough of it is super-important. Aim for a minimum of 7 hours sleep per night and try to avoid using screens immediately before you settle down to sleep as studies have shown this affects your ability to drift off. When we sleep the glymphatic system in our brains removes toxins, sort of like a deep clean. If we don’t get enough good quality sleep this function is impaired. Long term impairment has been linked to an increased risk of neurodegenerative disease such as dementia. Sleep (or lack of) also has an impact on the hormones which control our appetite. Even a single night of poor sleep causes a rise in ghrelin levels,

but what is stress? Stress is a reaction to an overload of difficulties and a reaction to a particular situation. Pandemic! Rising prices! Working too hard! Stress can be external and connected to the experience or setting but may also be triggered by internal perceptions. These often irrational, thought processes and learnt behaviours can, cause an individual to feel exaggerated negative feelings relating to the challenging situation. A recent study has found that over the past few years almost three quarters (74%) of people have at some point felt so stressed that they felt overwhelmed or unable to cope. “If you remain passive, thinking; 'I can't do anything about my problem', your stress will get worse," says Professor Gary Cooper from the University of Lancaster. So, what to do? There are lots of positive things that stressed people can do. I suggest that people who are stressed - and I used to be perpetually stressed - should try to think mindfully. I always say to myself; “Right, I can feel that I’m starting to move towards being stressed, so let’s contemplate mindfully, rather than deny, distort or over-think mindlessly.” A deep self-awareness helps and trying to be flexible and kind to yourself is helpful, but mindfulness really does it for me. Try asking yourself; “What’s

happening here?” ... or “What’s about to happen here?” …and then stop and consider the situation evenly. Firstly, taking the ‘situation’ to your thoughts; “What does this make me think?” And after deliberation of the cerebral, move to the sentient; “What does this make me feel?” When you’ve got the answers and can see your thoughts and feelings clearly, steadily say; “OK, what am I going to do about this? You can do less, you can do more, you can stop, you can change slightly, or you can plan an alternative way altogether. Finally, ask yourself; “Is this whole thing, and my decision, good for my wellbeing?” I say to myself; “Slow is calm and calm is effective.” Many of our clients come to us with work related stress; I believe you can have a rich and productive work / life balance. Working smarter, rather than harder, means arranging your work, concentrating on the tasks that will make a real difference rather than just blasting away in a disorganised fashion. Professor John Kabat-Zinn provides a good summary; “Whatever you are engaged in takes on a greater richness if you drop out of automatic-pilot mode and into awareness and acceptance…. Make the effort to be fully present. Own those moments… The essence of mindfulness in everyday life is to make every moment you have your own…

Even if you are hurrying, which is sometimes necessary, then at least hurry mindfully.” (Kabat-Zinn, J. 1990: 358) Emotional intelligence has been my way of being for 15 years now and my life is usually simultaneously restful and productive. Denise Hone joined offshore wind developer Vattenfall, she soon realised that diversity and inclusion is a way of thinking and company culture, rather than a goal. “If you are right for the role, your gender should never be a topic of discussion. Within Vattenfall there is a clear demonstration of empowerment and that women are in very senior positions.” Denise is Vattenfall’s senior manager in Norfolk, working with communities, schools, colleges, businesses and organisations, as it develops its Norfolk Vanguard and Norfolk Boreas wind farms 45 miles off the Norfolk coast-to generate green electricity for nearly four million homes. After 15 years in engineering, construction and manufacturing for the energy industry, Denise is especially proud to work for a company that supports women from less advantaged backgrounds to thrive in its Catalyse Continued on page 66 65

Not only are we excellent at being multiskilled and organised, we show great empathy and compassion, which I believe is important in business,” Denise said. Denise, mother to nine-monthold Horace and toddler Edith, said this is just one of the many projects Swedish-based Vattenfall offers to women. When she visited Vattenfall’s London office she was so impressed that there was a room specially dedicated to women for things like expressing breast milk, “empowering mothers to return to work.” “That is where I am lucky with Vattenfall because I have female leadership and a number of them are mums themselves, so they understand that balance,” Denise said. In her time working in renewable energy, the 38-year-old has arrived at events and been the only female in the room. “I was saddened to see women hadn’t had the opportunity to join, or they felt threatened so did not want to be part of the industry. Since I joined the sector I have seen it change, but not as quickly as I would like,” Denise said. After 15 years working for technical supply chain companies, Denise feels she has come “home” by joining Vattenfall’s Norfolk Zone projects.

Denise, who lives in Lowestoft, says her “strong mother” was a

major influence on her determination to succeed. “She inspired me to work hard for what you want in life and not to be reliant on anyone.” Denise said. "When we were older and all of school age, my mum pushed herself further retraining to enhance her own career. At a young age this was so inspiring to me and I believe where I get my own work ethic from.” Denise, also vice-chair of the East of England Offshore Wind Cluster, hopes Vattenfall’s commitment to appoint more women in managerial positions, and her work in Norfolk, will inspire young women to see career paths in the energy sector. “Hopefully I can inspire my children, especially my daughter, that you can have a happy family and work life,” Denise said. “It’s all about balance.” In the next ten years, Denise believes women will be working across the offshore wind industry in all disciplines, roles and environments. “I hope to continue the work I have only just started with Vattenfall, whilst supporting and inspiring other women to come and work in this wonderful industry that keeps providing me with an amazing career.” On International Women’s Day, Denise’s advice to young women starting out in their careers is: “Take every opportunity you have, stay true to yourself and believe in your own abilities.”
