Our experts share popular cake trends for 2022 weddings

Calling all cake lovers! The year 2022 is shaping up to become an exciting and busy time for weddings. Here at Your North East Wedding, we’ve asked some of the top bakers from around the region to share hot and upcoming trends. Get ready to see some showstopping cakes with fun flavours and designs that are sure to wow your guests!

Here are a few upcoming trends for 2022 that are becoming more popular… ❤ Marble-finished tiers can add a colourful or subtle pop to a plain tier without unsettling the delicate balance of beautiful colours. ❤ Cut out tiers with bespoke floating inserts can add a wow factor to any cake, and an extra dummy tier gives height and elegance to the design. ❤ We love our invisible tiers of Perspex, which can be filled with flowers or left empty to give the cake a floating appearance. This looks stunning and classic while adding a modern twist and is often accentuated by having square tiers – another trend we will see more of. ❤ Let’s not forget about the elegant sugar flower sprays, which always make cakes look timeless.

HELEN EDWARDS | VANILLA TEAS

We’ve seen a lot of beautiful-naked cakes over the past year and although that trend is going nowhere fast, we can expect to see cakes that are a little more dramatic this year.

Marbled-effect cakes are stunning and can vary from a subtle palecoloured marble tier that transforms into a white cake, to a full-on bold design with rich dark colours and lashings of edible gold leaf. The gold pieces are another massive trend at the moment that adds a fabulous effect, which I can’t get enough of it!

Dessert tables will also be trending next year and couples can style them to suit any theme. Large or small feature cakes will look amazing while offering guests a delicious choice of tasty goodies such as miniraspberry trifles, which was very popular last year.

Whatever you decide on, it’s not always about following trends and fashions. Just make sure you pick something you both love.

Less is more for 2022 couples, and there’s a significant sway toward buttercream or semi-naked cakes at the moment, with each tier being a different flavour. Most cakes ordered are now sponges, and couples are replacing the old faithful vanilla and chocolate flavours with carrot, raspberry and white chocolate, lemon meringue and salted caramel ones.

Next year’s popular colours are a mix of blush and dusky pinks, and weddings will feature plenty of foliage. Many different fruits will be added to cakes in the summer months, mostly strawberries, raspberries, and blueberries.

The sweet treat is perfect to use as desserts on your wedding day to save some money, and it means you won’t have to take a lot of time distributing the cake to friends, family and neighbours. The bake is a real centrepiece on the big day, and as our motto says, ‘a special occasion deserves a special cake’.

LORRAINE WILEY-KAUNISPAIK CAKES BY LOTTIE MCPHEES

Sage and blush shades have been popular in 2021 and this will continue this year, as well as gorgeous burgundy and copper hues. We will also be seeing a lot of beautiful dusty blue shades inspired by the TV show Bridgerton, and I can’t wait!

Buttercream bakes are popular for boho and chic-themed weddings with white and gold accents. The addition of cakesicles, sugar cookies, brownies and Mars Bar Krispies will indulge guests. Another trend will be the use of wafer paper ruffles and Perspex tiers in many designs with lots of beautiful neutral shades.

I love using fresh flowers in my designs, and we have some fantastic local florists in the North East. Beautiful pampas, bunny tails and palm leaves are a major feature for this year and adds a gorgeous texture to cakes.

One of the most important aspects of a bake is the flavour. Many couples remember Cakes by Lottie McPhees from the Quayside Market, the little shop on Park View or Fenwicks department store. Each pair has a favourite flavour they want to share with their friends and family. Pistachio and rosewater were among the most requested flavours as well as pink gin in 2020. Last year was about raspberry and white chocolate chip cakes, followed by spiced orange and cranberry carrot. This year, I’m going to be adding some new additions to my selection, including chocolate millionaire, tropical Malibu and passion fruit with Prosecco buttercream and a lime twist. Keep things fun for 2022 and 2023 weddings!
