Hello and welcome to this month’s Covered – the magazine for the Leeds suburbs. I seem to welcome new readers every month at the moment, such is the rate of our growth. Last month we announced the launch of our pick up points, which have been highly successful, copies have been flying off the shelves! Many first time readers have been in touch to let me know how impressed they are with Covered. Thank you all – it’s very humbling to hear how much you like our little magazine! You will continue to see new pick up points appearing but don’t worry if you’re used to getting one through the letterbox, we are still firmly committed to being the city’s most widely distributed magazine and you’ll still have a copy per month straight to your door. Crafthouse Crafthouse is billed as "a unique dining atmosphere in the heart of Leeds," which seems a fitting introduction to this elegant and serene restaurant perched high in the rooftops of the new Trinity shopping centre. Access is by lift, directly from Boar Lane, or via Trinity Leeds and you are soon transported away from the hustle and bustle of the shoppers below. This classy restaurant has obviously been designed with quality in mind and the attention to detail is superb. At first glance, it may just look like a tasteful fusion of varying materials in
shades of grey, black and brown but as you settle in, and allow your eye to wander, it becomes apparent that it's all a very subtle representation of the area's rich, industrial heritage; woven seats, stainless steel knives from Sheffield and threaded room dividers, reminiscent of the great weaving looms once operating in mills throughout
Leeds. And that's not the only Yorkshire connection... all of the produce here has been sourced from within a 60 mile radius and suppliers are hand picked by Head Chef, Lee Bennett. Lee, himself, was born in Yorkshire and has worked in restaurants throughout the world, from London to Singapore. After training under such well respected names as Gordon Ramsey and Pierre Gagniare, Lee has returned to Yorkshire to lead the team of some 20 chefs who work at Crafthouse and its sister venue, Angelica, and he describes the food on offer here as "good, honest food cooked properly." The menus are seasonal and include an a la carte selection, fixed price or tasting menu. Starters include smoked salmon served on a warm potato pancake, asparagus with breaded duck egg or Bridlington Bay bisque. Main courses are equally varied and range from Denby

Covered Smoked Salmon with Potato Pancake Serves 4 The perfect steak
cookbook
200g long sliced quality smoked salmon, 200g mashed potato, 1 egg, Salt 2 tbsp milk (warm), 2 tbsp double cream (warm), 1tbs plain flour, 4 egg whites, Crème fraiche
With the mashed potato still hot, fold in the flour, then the milk and cream, then the eggs one by one and season. Whisk up the egg whites in a separate bowl until they form soft peaks and fold into stage one using a spatula. Take small frying pan and heat up with a little oil, before pouring in the mix and cooking in the oven at 180oc for 8 minutes. Whilst still hot, take ¼ of the smoked salmon and place onto each pancake and finish with a teaspoon of crème fraiche. • Try to buy ‘aged-beef’- it is firmer than non-aged and has less moisture content. The reduced moisture helps tenderise the meat and concentrate flavour. • You don’t always need to get the most expensive cut. Opt for a good rump from a reputable butcher for plenty of flavour. If you buy well you don’t always need the finest cut. • Let the meat reach room temperature before cooking. It will cook more evenly throughout if the same temperature throughout. • Simple seasoning is best – before cooking season thoroughly with coarse salt. • Heat is key to cooking your steak – a hot grill will char the meat and seal in the flavour. • Forget the oil – oil can cause fire flare up and can change the flavour. If the cooking surface is hot enough the steak shouldn’t stick. • Most grills have different hot spots. If you rotate the meat you’ll ensure it cooks evenly. • Allow it to rest for a minimum of 2/3 minutes. This will allow the juices to settle and the meat to reach it’s final tenderness as the temperature evens. • Clean your grill. Don’t think that by leaving it you’re leaving a layer of juices for next time – it’ll just burn on and affect the flavour. If you can, clean it whilst it’s warm as any fat will clean more easily.
Chocolate Fondant
Serves 8
280g Dark chocolate (64%), 150g Butter, 170g Sugar, 4 Eggs, 60g Plain flour
Melt the chocolate and butter in a bain-marie (a bowl resting over a pan with water in – avoids burning) Whisk together the sugar and the eggs. Add this mixture to the chocolate and butter mixture. Whisk in the flour. Butter and flour your moulds or ramequin (to stop the mix from sticking) Pipe 80 to 100g of mixture into each mould. Bake for around 9-10 minutes at 180˚C. To Finish, Coat the fondant with warm chocolate sauce. Make a quenelle of caramel or serve with vanilla ice cream.

The Thankful Village Badapple Theatre is touring with an innovative new production that finds humour within the tragedy of The Great War. The play is set in the fictitious village of Bottledale – designated a “thankful village” because it suffered no casualties in WWI. That designation is a genuine one and was coined in the 1930s. Recent extensive research has extended the classification to 53 such civil parishes in England and Wales – and none in Ireland or Scotland. After several years of her own research, including visits to battle sites and military cemeteries in Flanders, Badapple’s director and published playwright Kate Bramley created Bottledale as another. The original musical score is by Jezz Lowe. Covered visited the company’s final rehearsal at Kirk Hammerton Village Hall in April and spoke with Kate and actors Kaitlin Howard, Zoe Land and Emma Bright. The play explores the relationship between three men from Bottledale, enlisted in the army and posted to Flanders. Captain Arthur Proud had been landlord of The White Horse Inn. The two privates are Sydney (a blacksmith) and Tommy (a thresher). Then there are the wives at home – Mrs Proud (now the landlady) and Nellie and Edie (her employees). Clever parallels are drawn from their surreally parallel lives. The three actors are also in parallel. Each plays both the husband and wife. In costume but not make up for their

male characters, the audience is constantly reminded of the mirror imagery between Bottledale and the trenches. Badapple Theatre is a fully professional theatre company and registered charity. The Thankful Village has a very busy touring schedule, almost daily, at small venues throughout north Yorkshire and some beyond. The Leeds Photographic Society recently held the first of this year's summer outings with an evening trip to Otley. The picturesque market town has a wealth of photographic attractions' from architecture and street photography to views of the park gardens and River Wharfe, and the members enjoyed a sociable evening of photography before retiring to the pub for some light refreshment. Meanwhile some of the society's other projects have come to fruition and in May the members presented 12 large format photographs to the Sue Ryder Wheatfields Hospice, in Headingley Leeds. The images which will be used to decorate the new 'In Patient Unit' at the hospice were created on Acrylic Panels and feature a variety of local landscape and floral images.

Yorkshire Does Even More Vintage The reason that March saw the last Leeds Vintage Fashion Fair at Queen’s Hotel was the organiser’s increased family commitments and not any reduction in demand. In fact, demand remains so great that a new organiser has recently emerged – creating fresh events in addition to the existing vintage fashion fairs in Halifax, Harrogate, Huddersfield, Leeds, Saltaire, Scarborough and York. Now and Then Events was founded in York in 2011 by Samantha Agnew and Alex Claydon (pictured). Already professional corporate and civic events managers and organisers, they decided to combine their shared passion for all things vintage and Britain Does Vintage was the result. Choosing prestigious and historic venues, they now run vintage fashion, accessory and homeware events in Yorkshire (Huddersfield, Sheffield and York) and as far afield as Newcastle and Leicester. They are always titled “[Town] Does Vintage”, so their events aren’t difficult to spot. Covered visited Sheffield Does Vintage on 10 May, in Sheffield’s Cutler’s Hall. There were two messages from the vintage scene. First, the proliferation of events and ever growing media interest, including new magazines and websites, shows that interest isn’t going to fade in the foreseeable future. The second message, possibly more telling, is that demand is beginning to outstrip supply – at least the supply of original clothing in good condition. Two of the exhibitors are now making or modifying dresses and outfits using reclaimed fabric or making them

Pudsey St Lawrence CC Recruiting Juniors The continued success of any club’s junior sports teams is more a reflection of the breadth, depth and commitment of the club itself than of the skills of the individual players. Yes, it takes still an exceptional team to win league titles or county honours in, say, the under 11 age group. But who’s going to win them next year? The picture shows a panel listing all the league and cup titles won by Pudsey St Lawrence CC Junior Section between 1954 and 2004. Another honours board nearby takes over from there and is filling up just as quickly. PSL CC currently has seven junior teams for all ages between (under) 9 and 17. There is also a practice and training regime for boys and girls aged between 5 and 8. Exploring Leeds A WALK AROUND OTLEY PART 1 Having visited the centre of Leeds for the last two walks, this month's walk is located in Otley, an historic town with an entry in the Domesday Book. The markets are an important aspect of the town, and if visiting on a Friday or Saturday, stalls will be found on the main street Kirkgate, and also in the Market Place itself. The 750 year old cattle market can still be visited on a Monday. The walk starts by the Jubilee Clock (erected to celebrate the Golden Jubilee of Queen Victoria in 1887) in the centre of town. From the clock, head in a southerly direction along Kirkgate, named so because it was “The Way to the Church [Kirk]”. Opposite is the Old Hall, a fashionable 18th century town house with five bay windows. Just after on the left, look up to the stone dated 1744. This is where the Queens Head Inn used to be located. Cross over the road. The present Anglican Church built in the 12th Century is on the site of a Saxon place of worship. The Church registers commence in 1562 and include many interesting entries, including the signature of John Wesley in 1788 when he was the officiant at a wedding in the town. Opposite the churchyard is a

memorial to the men who lost their lives in the construction of the Bramhope Tunnel on the railway line built between Leeds and Harrogate during 1845 and 1849. Now walk up the passageway by the side of the railway monument to arrive at Westgate. On the right, pass the former vicarage (built in 1673), and then drop down to exit by The Cross Pipes Inn. Cross over the road, turn right and then turn left through the car park and down a footpath eventually exiting by the bridge.
Turn right up Bridge Street passing the Bridge Church on the left and the Catholic Church on the right. At the top of the street turn right by the solicitors’ offices in what was formerly the Royal Oak Inn (the name is visible in the doorway). To the right is a building that was the Old Grammar School. Just before he died in 1603, prominent businessman Thomas Cave left £250 for the founding of a school on the proviso that the town residents raise a similar amount and the school be founded within 4 years of his death. James I granted the Charter for the school in April 1607 within 3 days of the 4 year deadline. The school opened in 1611 and was named Prince Henry’s Grammar School after James’ eldest son, the Prince of Wales, who died before he could succeed his father. The school was able to use the Prince of Wales feathers in its crest and it still has the Royal Charter in the present buildings over the river on Farnley Lane.

Next to the Old Grammar School is a statue of Thomas Chippendale, the 18th Century Cabinet Maker. Whilst it cannot be proved that Thomas Chippendale was actually born in Otley, it is known that he was christened in the Parish Church on the 5th June 1781 from the Parish Records. His father was a local joiner and the family is reputed to have lived at that time in a house on Boroughgate where the present Skipton Building Society is located. Go through Manor Square and back to the Market Place. So ends the tour of the western part of Otley. The remainder to the east will continue in the next issue. Jubilee Clock

Spring is a time of frenzied activity for the wildlife in your garden. Nesting, defending territories and feeding young use up a lot of energy, and the food you provide can be a lifeline for the adult birds (the chicks need to take in water with their food, so need juicy caterpillars rather than seeds). Every garden is different, and the birds you see will depend very much on where you are and on the natural resources in and around your garden. Some birds will feed at feeders (tits, finches and sparrows), whilst others find it difficult to perch, and prefer to feed on the ground (blackbirds, dunnocks, thrushes). Ideal foods are sunflower hearts, seed mixes,

June is bursting out all over, as the old song goes, and colour is really starting to show all over the garden. Two essential tasks, keep the hoe going to take out all your weeds on a regular basis. Then if your soil is heavy, lift your tulip and hyacinths after they have died down and store them in a cool dry area. Large clumps of daffodils will not flower well when congested, so lift, divide, and replant every few years to rejuvenate these lovely flowers. In order to maintain a good show of summer bulbs, it is essential to feed them with a high potash feed (tomato food) after dead heading to build the bulbs up for the following year. If frost has really gone, finish planting out summer bedding together with any tender exotic plants. Give your indoor plants a summer holiday by placing them outside and remembering to water and feed them as necessary. As your perennial flowers, like lupins, poppies etc. finish flowering, cut off all the dead flowers to encourage a second flush. Pinch out the tops of chrysanthemums to make them bush out, which will encourage them to produce more flowering stems for a really impressive show.
During late June, apple and pear trees experience the June Drop, which means the trees naturally shed excess fruit when there are too many fruits to ripen. If you still see clusters of tiny fruit after this event you can thin the fruits further to make sure all the remaining fruits will grow to a decent size. Remove any raspberry suckers which are growing at a distance from the main row and tie in new growth on blackberry canes as these will produce fruit next year. Buying Yorkshire Buy Yorkshire 2014 was a full house on 13 and 14 May. Two full houses, in fact, if you count both of the exhibition halls at Leeds Royal Armouries – the Armouries Hall itself and New Dock, opposite. Around 170 exhibitors indoors and another half dozen taking advantage of the fine weather in the courtyard between the two buildings. In the event programme’s foreword, founder Geoff Shepherd used three of five paragraphs reporting the breakdown of trust in politics, banking and big business. He also observed a disengaged youth culture, an unaffordable housing market and, with an ageing population, a pensions time bomb. But, for those who managed to fight through the tears of woe and despair, and make it to paragraphs four and five, there was still hope. That hope was to build on the trust shared and earned among conference attendees; we are moving into a relationship economy, where business communities come together and show mutual support, prospering in tandem.
Few exhibitors were from the manufacturing sector. Ginetta’s outdoor display received a lot of attention and was complemented by their indoor display of own brand inspired leisure wear. Racing driver Max Coates is behind the wheel.
It will of course be months, maybe years, before this Buy Yorkshire Conference can be assessed as a catalyst for Mr Shepherd’s clear optimism. Still, with 180 well-appointed and information-packed stands, and twenty-five guest speakers from the peaks of numerous industries and professions, the conference gave exhibitors and delegates a pretty good chance.

THE WONDER OF WAX The sun has arrived but alas, so has the need for maintenance and the discomfort of endless shaving and plucking. By the time the hair is sorted the sun will have gone! It’s time to down razors and tweezers and head to your local salon to try a wax. Seeking to bring readers the best advice, this month Covered popped in to Horsforth Beauty Suite to meet Charlotte, an expert in waxing. Charlotte has a keen eye for detail and nothing is out of place in this wonderful setting. The colours and ambience all create a gorgeous, relaxing atmosphere. Charlotte discussed the waxing process. With 6 years experience she has mastered the art! “Before you go for your waxing be sure you know what you want. It could be really simple, such as legs, eyebrows or under arms. However, when it comes to bikini waxing, you have options”. “The most popular is the ‘Bikini Wax’. This removes hair from the bikini line, just where your bikini or swimsuit would
sit. Next is a ‘Brazilian’, which removes the majority of hair from the bikini area, but leaves a little bit that isn’t visible if you were wearing a bikini. The ‘Hollywood’ involves removal of all hair from the area”. Charlotte explained the best way to achieve the ultimate wax. “It all starts at home before the client comes for their waxing. I recommend exfoliating the area really well and having a hot bath if they can before they come. This will open up the hair follicles. If you are worried about the pain then take a Paracetamol an hour before coming. It doesn’t hurt as much as people make out though so don’t be worried! Once you arrive you will be made comfortable in a private beauty room where the procedure is explained. Then warm wax is applied to the hair and covered with small strips of cloth, which is then pulled off quickly to remove hair from the roots”.
Charlotte’s favourite is a warm cream wax because it nourishes and moisturises the skin. It is also great for sensitive areas. The benefits of waxing are that the hair doesn’t grow back as quickly and re-growth is soft, not prickly like after shaving. Waxing gives a smoother finish too, as the process exfoliates the skin leaving a silky smooth result. With regular waxing hair follicles begin to die preventing future re-growth. Waxing lifts hair straight from the root, which is why the results last at least twice as long as shaving. Shaving only removes the tip of the hair. Once the waxing is finished, expect some pampering. Charlotte explains she would then apply aloe vera jelly or lavender oil to soothe and calm the skin. This will also help prevent in-growing hairs and reduce redness sometimes associated with waxing. Aftercare is simple. For at least 24 hours do not apply perfume

or deodorant to the waxed area or take a hot bath or sauna as the hair follicles are open and this will irritate the skin. After 24 hours, exfoliate the area again. This will prevent in-growing hairs. There they are - the key steps to a wonderful wax by an expert! Belgrave Music Hall Belgrave Music Hall and Canteen is an independent venue offering music, art, film and food over three floors. This unique and vibrant addition to Leeds' Northern Quarter is easily noticeable on Cross Belgrave Street with it's bright, neon lights. The building first opened in 1934 as Leeds Children's Palace, a nursery built to provide childcare for the working families of the area. Throughout the years it has had many incarnations... Ike's Bistro in the early 90's through to Riley's Snooker Hall recently. Nowadays, this red brick building is home to the brainchild of Simon Stevens and Ash Kollakowski, who opened it as Belgrave Music Hall and Canteen in October 2013. The two also organise the increasingly popular Beacons Festival, which is held annually in Skipton. And that's the kind of vibe you get at Belgrave.... it's like a music and arts festival, all cleverly packaged up into one rather quirky indoor space.
The ground floor is the main bar and canteen, with wooden tables and benches alongside comfortable sofas. The furniture is reclaimed and fits in with the simplistic, retro vibe of the place. Exposed brickwork and chipboard sit by enormous windows flooding in natural light. The bar offers a good range of local ales and the 'canteen style' food is on offer from 12pm until late, seven days a week. There are several resident food companies operating at Belgrave. Dough Boys are the inhouse pizza outlet, baking freshly and selling them by the slice or whole. The menu changes daily but there will always be six with gluten free and vegan options available. Upstairs was largely dedicated to the Art Market with stalls selling original work alongside vinyl in what would usually be the live event room. This 200 capacity venue was part of the recent 'Live at Leeds' and regularly
plays host to enviable names such as James Taylor Quartet, Minneapolis synthpop band Polica and Brooklyn songwriter Joan As Policewoman, as well as promoting new talent and regularly hosting comedy and film events. Sitting on top is the roof terrace. Leeds desperately needs more outdoor spaces and this one fits the bill in any weather. Complete

THE MUSIC THAT CHANGED EVERYTHING Red Eagle Events are bringing some of music’s bestknown names to Millennium Square in August for the Leeds Ska and Mod Festival. For those of you not in the know, Ska originated in Jamaica in the late 1950s, and was the precursor to rocksteady and reggae - combining elements of Caribbean Mento and Calypso with American Jazz and Rhythm and Blues. It is characterised by a walking bass line accented with rhythms on the upbeat. In the early 1960s, Ska was the dominant music genre of Jamaica and was popular with British Mods. Mods, initially a small group of clothes-focused 1950s working class young men insisted on clothes and shoes tailored to their style. Early Mods watched French and Italian art films and read Italian magazines to look for style ideas. By the summer of 1966, the Mod scene was in sharp decline but a revival started in the late 1970s when thousands of Mod revivalists attended scooter rallies in locations such as Scarborough and the Isle of Wight. This revival was partly inspired by the 1979 film Quadrophenia and by Mod-influenced bands such as The Jam. More recently, the 1990s Britpop scene featured bands with noticeable Mod influences such as Oasis, Blur, Ocean Colour Scene and The Verve.

Fairport Convention in Ilkley Most of the big names in folk music have played with Fairport Convention at one time or another in the band’s 47-year history; Richard Thompson, Ashley Hutchings, Dave Swarbrick, Dave Mattacks, the late Sandy Denny – to name but a few. The current line-up is led by founder member Simon Nicol on guitar with Dave Pegg (34 years in the band) on bass, Ric Sanders on fiddle, Gerry Conway as a one-man rhythm section and Chris Leslie on guitar, mandolin, fiddle and whistle. They played in Kings Hall, Ilkley – for the first time – on 21 May to an enthusiastic reception. Two hourlong sets saw them ranging over a wide repertoire, from traditional folk staples like Matty Groves (from the iconic album Liege and Lief) to up-to-date numbers like Myths and Heroes. The latter is typical of Fairport’s approach to music, as entertainment and as a vehicle for bringing serious issues to mind. One such was Genesis Hall, a Richard Thompson composition from 1968 inspired by the housing crisis and evictions of tenants in London. Sadly, not much has changed on that front.

Fairport is credited with being the original “folk rock” band and is remarkable for the way it has evolved over the decades. Simon Nicol looks every inch the lead singer and guitarist, but it was a long time before he felt confident in the role, as he confesses on the band’s website. Dave Pegg never intended to play bass, now it is hard to imagine anyone else there. That they are all multi-talented was clear from this performance. Ric Sanders is a virtuoso violinist, amply demonstrated in the instrumental numbers. Chris Leslie, allegedly, can Morris dance while fiddling and singing – not hard to believe given the ease with which he picked up a succession of instruments. He is also a gifted songwriter and vocalist. Part of the pleasure of an evening like this is the chat between numbers
and Fairport judged it brilliantly. Mostly Nicol, but Pegg and Leslie made useful contributions and there was plenty of interaction with the audience, who clearly knew their back story. Fairport’s current tour lasts until 7 June, after which they will be getting ready for their August festival at Cropredy in Oxfordshire. Fairport’s Cropredy Convention is a great festival, smaller and more intimate than monsters like Glastonbury, and usually a lot less muddy. Running 7-9 August, it features Fairport in acoustic and electric mode as well as the likes of the Waterboys and Capercaillie. Travelling Through Leeds
Last year’s game of cat and mouse between LCC and the travelling community – this settlement on the ring road, in Chapel Allerton, had been preceded by evictions from West Park and Adel. Leeds GATE praises LCC’s new policies as being a beacon to the rest of the country – but will they work for both communities?
Last September Covered reported unwelcome temporary traveller communities along the ring road – at the time in West Park, Adel and Chapel Allerton. Among other observations, we criticised Leeds CC for the apparent lack of a clearly stated and workable policy that could manage such events - then and in the future. Since then Helen Jones of Leeds GATE (representing the interests of travelling and Gypsy communities) has helpfully got back to us. While accepting that some of the settlements had been unwelcome, she outlined the city’s legal responsibilities towards communities with a nomadic lifestyle. She was hopeful, even confident, that new measures (including a negotiated stopping policy) would help ease past anxieties and disruptions – among the travelling community as well as local residents. While GATE’s response was remarkably comprehensive, informative, helpful and positive, Cllr Barry Anderson remained unconvinced when we spoke with him. Last year he had been the intermediary between anxious constituents in Adel and the authorities responsible for evicting two traveller communities on Bedquilts playing fields. Not easy at the time – LCC hadn’t been keeping him fully in the picture while he was on a short break following his beloved Hibernian Football Club. At the time of going to press, traveller communities had recently appeared in Otley (on the road out to Ilkley) and in West Park (near McDonalds). Too early on the season, and without sufficient volumes, to indicate whether LCC has got the balance right between the needs and rights of both resident and itinerant communities. We shall see.

You must have installed a few windows in the last 45 years, do you know how many?
Nearing a milestone 45 years trading is some feat, particularly in a competitive environment like windows, doors and conservatories. Covered talk to Elmhurst’s Richard Abrahams about his impending anniversary and if they’ll be marking the year with sapphires.
When did the Elmhurst story begin? My Father Jack set the business up in 1970 at premises on Whitkirk roundabout. We’re still in the same spot to this day, though the showroom has undergone extensive refurbishment recently. I’ve been running the business, under the keen eye of Jack, for about 22 years now. My
Mother Norma still looks after the finances today – checking I’m not overspending! We’re all proud to have remained a true family company all these years.
Sounds like everyone has been in it for the long haul…. Definitely, Adele our office manager has been with us for nearly 30 years, installations
At the last count we have over 10,000 satisfied customers! It’s difficult to say how many windows we’ve fitted but our customers range from one-off windows, to full houses and conservatories – I’d say we’ve handled over 100,000 panes of glass at least! About 70% of customers have used us more than once, I’m assuming the other 30% will once it’s time to replace our last installation for them.
