Yorkshire Crust is a new addition to Tinshill Road in Cookridge. Craig McDonnell and his wife Laura took over from the previous owners, Urban Deli, just 7 weeks ago and have already made an impact and some considerable changes. More than just a deli, by daytime Yorkshire Crust offers good quality, reputable local and Yorkshire products as well as home-made cakes and savouries. But in addition, they also provide cookery and baking classes, restaurant evenings and outside catering, as well as freshly made-to-order take home meals.

Yorkshire Crust This may all seem like a lot to take on board, especially when you include a young baby into the mix, but Craig is familiar with hard work. With 14 years’ experience as a chef, Craig has previously worked in award winning gastro pubs and fine restaurants and his last role was as chef at well respected pub ‘The Fleece’ in Addingham. This is the couple’s first venture on their own though, with chef Craig at work in the deli whilst wife Laura runs marketing and promotion from home in between looking after their first child.

At the deli, Craig has an early start stocking up the range of cheeses and meats, preserves and snacks and baking the fresh bread daily. This includes a sun dried tomato bloomer and gluten free bread and can be pre-ordered to avoid disappointment. Other popular signature recipes include Craig’s chicken liver pate, pork and chorizo sausage rolls and Sue’s gluten free chocolate orange cake. Yorkshire Crust are looking at offering new gluten free products and running a gluten free evening in the near future, following the success of their first restaurant

which celebrated Burn’s Night. They currently run 1 – 2 restaurant evenings per month but are looking to increase this to 1 every week. Places are limited, however, and booking is recommended. Cookery lessons with Yorkshire Crust can be tailored to suit individual needs, or follow set lesson plans and are generally held at the client’s home. The concept is a fairly flexible one and can include an evening’s cookery with friends or wine nights, offering guidance on the correct wines with various foods. They will also be running regular cupcake making classes at the deli, running from 6 pm – 8 pm and starting in March. Included in the lesson is afternoon tea and the opportunity to make and take home your own cupcake creations. With so much going on and such dedication, it’s hard not to envisage a rosy future for the Yorkshire Crust. Plans include local farmers’ markets and eventually extending the dining area towards the back of the property so that customers can enjoy the view over to nearby Leeds and Bradford Airport. Further parking is already available to the rear of the premises. Ingredients

French bread for croutons Prawns, include several king prawns 2 Spring onions, thinly sliced Red chilli, thinly sliced 1 tbsp olive oil 4 tbsp white wine 2oz Butter

Main

1lb Lishman’s sausages 10 fl oz Red wine 8 oz Chorizo, chopped 2 sprigs of fresh rosemary, chopped finely 1 carrot, cut into small chunks 2 tbsp olive oil 1 white onion, finely chopped 1 tbsp plain flour 1 red pepper, finely chopped 1 tbsp red onion and port preserve

Pan Fried Prawns with a White Wine & Butter Sauce In a large frying pan melt the butter and oil over a medium heat. Add the prawns and stir well. Stir fry until the prawns start to turn pink (about 3-4 minutes) Add the spring onion and chilli and stir fry for another minute, add the white wine and cook until the sauce is simmered down. Meanwhile, slice the French bread to around 1 inch before toasting lightly. Arrange the toasted croutons on your serving plate before scattering the prawns and sauce over the top. Season with salt and pepper, to taste, and serve immediately.

450g waxy potatoes, such as Nadine or Desiree 75g smoky bacon, cut into fine strips 2 tbsp olive oil

Lishman’s Sausage & Chroizo Casserole with Sauté Potatoes Heat the oil in a large, deep pan. Cut the sausages into chunky slices and brown evenly over a medium heat. Using a slotted spoon, transfer them to a plate whilst you brown your chopped chorizo along with finely chopped onion. Add the carrot, red pepper and rosemary sprigs and cook gently for a minute. Return the sausages to the casserole, add the wine and season lightly. Bring it to a gentle simmer before putting a lid on the casserole, turn down the heat to low and simmer gently for 30 minutes. To finish, mix the flour with the softened butter to form a smooth paste. Stir into the casserole and let everything thicken for a few minutes, whilst stirring. Stir in the preserve before serving in a dish with a side of sauté potatoes.

6 oz plain flour 3 oz butter 4 oz caster sugar 1 egg yolk 1 tbsp almond extract 6 oz strawberry conserve 2 large eggs 5 oz mascarpone cheese 2 oz ground almonds Icing sugar to dust

Strawberry Jam Frangipane Tart Preheat oven to 200 degrees Celsius. Make pastry by blending flour, butter, 1 oz sugar and egg yolk until breadcrumb consistency. Mix 3 tbsp water with almond extract and gradually add until you have a dough. Roll out on a lightly floured surface and line 5 inch buttered flan dishes. Prick the pastry cases before baking blind for 12-15 minutes, until golden. To complete the tarts, spread the conserve over the base of the pastry cases. Separate the eggs and mix the egg yolks, mascarpone 3 oz sugar and ground almonds. Whisk the egg whites to stiff peaks and fold into mascarpone mixture. Pour over strawberry base and bake at 180 degrees Celsius for around 15 minutes. Dust with icing sugar.

Otley Farmers’ Market Otley Farmers’ Market is by far the largest monthly market of its type in the three areas now with their very own editions of Covered magazine (the three distributed in and around Horsforth, Pudsey and Otley/ Ilkley). With Otley’s market chartered in 1222, it has long had food and general goods markets on Tuesdays, Thursdays and Saturdays. It has had a dedicated new-style farmers’ market for around eight years. It is usually on the last Sunday of the month, though sometimes a week earlier or later – eg December’s was pulled forward a week to serve Christmas demand. It is managed by Yorkshire Farmers Markets, a long established organisation supporting local producers and with similar markets in Wetherby (second Sunday), Harrogate (second Thursday) and Knaresborough (third Sunday). With forty stands, Otley Farmers’ market offers a wide selection of meat, poultry, fish vegetables and delicatessen goods such as specialist honeys, pickles, cheeses and bread. Advertised 9am to 1pm, there is always some earlier action. It pays to be early. When Covered visited the pre Christmas market several stands had sold out their most festive lines. Ilkley Beer Festival Ilkley and District Round Table’s Beer Festival got off to a promising start on the sponsor’s special evening on 8 February and again on opening on the morning of Saturday 9. Tabler Simon Hellawell told Covered that they were confident they could match the £35,000 raised for charity at last year’s event – indeed their target this year is £40,000. Perhaps the highest accolade for the event was a six strong delegation from Timisora Rotary Club, Romania. The primary reason for their week-long visit was to attend the beer festival and use ideas from it to start a similar charitable event at home. They had come over at their own expense and are pictured with friend Howard Scaife of Ilkley and Mures, Romania (rear right of pic, yellow scarf). The 2014 festival will be on 7 and 8 February. Fans of charitable fundraising festivals should note that Horsforth Beer Festival is at St Margaret’s Hall on 1 and 2 March.

Spring is on the way!

The days are starting to lengthen, and with the occasional burst of sunshine, spring bulbs are appearing everywhere – starting with snowdrops, crocus, dwarf iris and early daffodils. On warm moist days it will be worth starting your protection against slugs and snails, who will love to munch on your early flowers. If the ground is not frozen or water logged, continue to purchase and plant bare root roses, fruit bushes and any other perennial plants and shrubs for a colourful summer display. The dahlia, chrysanthemum and begonia plants which you have kept frost free over the winter, may now be potted up and brought into the warmth. It is important to keep them in a frost free and light environment, to stimulate new shoots – which can then be taken as cuttings or left on the plant to flower this year. Sweet peas may be sown now, pinching out the tops after 6 leaves to make them bush out, and then hardening them off before planting out after the last frosts. Hardy annuals which provide colour in the summer may be started now, followed by half hardy annuals as the month progresses.

Broad beans are very hardy and may be started indoors for planting out later. Apply a dressing of lime to the area where brassica are to be planted, as this will reduce the risk of club root. Crop rotation is important when growing vegetables, use a three year system to reduce the incidence of soil dwelling pests and diseases. Many vegetables may be grown in reasonable containers, florist buckets etc, which means everyone can enjoy fresh produce even without a patch of ground in a garden. Ilkley Business Forum Ilkley Business Forum is known for providing highly effective networking opportunities for its 87 members at a variety of venues in the town. Most, like December’s “speed-networking” event at Ilkley RUFC’s splendid new Clubhouse, are quite structured. The latest departure, in January, was a meeting at the premises of an IBF member, Cook, in the Moors Shopping Centre. IBF Chair, Vera Woodhead, told Covered she had been concerned that members and guests might not circulate. In the event, she needn’t have worried; there was plenty of movement as ideas were exchanged over a glass of wine. In a spot presentation, Suzanne Johns of Approach PR (The Grove) gave a graphic run down of what they offer. Then David Coombs of the Wellness Chiropractic Clinic in Hawksworth Street, explained his holistic approach. Alan Strachan put forward the plans for the Business Showcase on the Grove for June 2013 – aiming to put Ilkley businesses very much in the public eye.

Last – but by no means least – came a feast of samples of what Cook do handsomely. Manager Jonathan Foggitt selected dishes from the Indian range, which went down very well indeed. This is clearly a great idea: members experience at firsthand what their colleagues have to offer. Expect more of the same in the months to come. The next regular meeting is on 13 March at Ilkley Moor Vaults, 5.45-7.45pm.

Year of the Snake Just when you thought New Year was over. Well, it needn’t be. The Chinese New Year offers a further opportunity for celebration and a second chance for lapsed resolutions. Most people unfamiliar with Chinese culture associate their New Year with a single day celebration involving fireworks and dragon and lion dances. But there’s a lot more ceremony and protocol than that. For example, the reunion dinner on Chinese New Year’s Eve is comparable to Christmas dinner. All elders are revered on the day itself and, on the second, married daughters visit both sets of parents. The date of the Chinese New Year is fixed by cycles of the moon and can therefore vary by up to one month on the Western calendar. This year it was 10 February – a transition from the year of the dog to that of the snake, according to the twelve year cycle. People born in the year of the snake are regarded as stylish, thoughtful, wise and clever on the one hand, but stingy and conceited on the other. This year of the snake is reputedly a good one for planning and research – wise precautions in a year also prone to instability and unexpected change.

Ilkley Concert Club Now in its 67th season, Ilkley Concert Club is one of the most prestigious in the country, with musicians only too happy to travel long distances to play here. Performances are monthly from October to May, featuring established performers and showcasing new talent. January’s concert saw the well-respected Gould Piano Trio giving sensitive interpretations of Hummel and Fauré. In the second half, they played Tchaikovsky’s A minor piano trio – long and very demanding of performers and audience alike – to rapturous applause. It was hard to believe it was “only” a trio; Lucy Gould (violin), Alice Neary (cello) and Benjamin Frith (piano) produced a sound more resembling a concerto with orchestra. Next up, on 13 March, is the Schubert Ensemble of London, featuring Simon Blendis (violin), Marije Ploemacher (second violin), Douglas Paterson (viola), Jane Salmon (cello) pianist William Howard, who is the founder of the Ensemble. They are celebrating their 30th anniversary with dates all over the UK and abroad. For details and tickets, see the website. Local Malaya and Borneo Veterans Meet in Headingley Covered magazine was honoured when Malaya and BAOR veteran George Smith of Ilkley invited us along to the January (monthly) meeting of The Yorkshire Malaya and Borneo Veterans Association at New Headingley Club (previously The Royal British Legion). When were they in the Far East, and why? And why here in Headingley now? Well, the conflicts in Malaya and Borneo were among several less-publicised ones shortly after the end of WWII. Palestine, Kenya, Korea and Egypt (Suez) were others. At the time, the last thing the general public wanted to hear was any suggestion that it wasn’t all over and the politicians of the day certainly weren’t going to tell them. But, between 1948 and 1960, some 1800 British and Commonwealth servicemen and police died fighting communist terrorism in Malaya. Then, late in 1962, nearby, the country of Indonesia decided that it wanted total control of the island of Borneo rather than only the southern part which they already held. But that meant dislodging Malaysian and British interests in the north. Again,

– suggesting that it may well have been Yorkshire’s ability to make detailed proposals that tilted the scales in England’s favour. Talk has already started about the possibilities of an étape (stage) for the public and maybe an annual pro-am-charity event afterwards. Though widely supported, Welcome to Yorkshire has received no firm proposals as yet, nor has any to put to the Tour or county authorities. Watch this space.

The majority of British servicemen involved in either were doing two years’ national service, so few served in both. But the geography, terrain and politics were so close at the time that it is no surprise that they meet as one today. Though why did Yorkshire veterans go it alone, you might be asking. Well, not that long ago, Yorkshire members of the (then) national association queried some procedural matters, only to be told it was none of their concern. Wrong answer … Apart from the camaraderie, the group’s purpose is to help educate today’s society about the extent of British participation in the two conflicts. News and publicity weren’t exactly forthcoming at the time. Group sessions where each member has a few minutes to raise an issue demonstrate a truly remarkable quality of listening and response – and an abundance of positive thinking. social networks. Yes, we are all on Linked-In, so how do we make it work for us? AWN now has its own closed Linked-In network, to allow members to communicate freely between meetings. The next meeting is on 7 March (the day before International Women’s Day) and the guest will be Jennifer Holloway. Yorkshire-based Jennifer runs Spark, a business specialising in personal branding and has a book out soon – Personal Branding for Brits. Expect inspiration in spades. Courthouse ‘punches above its weight’ Otley Courthouse is set to build on a last year’s record-breaking events programme. Chloe Perry, the Courthouse’s new Centre Manager, told Covered “Otley Courthouse has developed a hard-earned reputation for quality events of all kinds, and last year we enjoyed more sell-outs than ever before. New talent is also represented with a visit from the fantastically inventive ‘Old Dance School’ – a Birmingham based septet who will bring their duelling fiddles, soaring brass crescendos, wind and vocal harmonies and earth shattering grooves to Otley on Saturday 16 March. Walkin’ Back To Happiness Everything costs money these days - except Covered! Walk round any West Yorkshire town and I’ll bet you any money that there are shops boarded up; business’s closed down. It’s quite a depressing sight to see. What’s even more depressing is the thought that living in a community is going the same way. After all, if you know all your neighbours these days, you must be one of the rare few. Not like when you were a kid and you knew the whole street. But can that special sense of community be recaptured? Local theatre is one place where a sense of unity still exists. Take Carpetbaggers’ new production Walkin’ Back to Happiness – it seems like it addresses some of the problems described above. It features Helen who is 18 and facing the decisions and dilemmas that come with

young adulthood; clearly a time of confusion and uncertainty regarding identity. Her boyfriend is called up for duty in Afghanistan – so there is something missing in her life. What’s more, her mother has a secret, her auntie is acting out of character, and a strange man is following her – secrets and strangers, sounds like she doesn’t know the people around her anymore. There is also a mixture of characters trying to save Dougie's Diner from being taken over by the clutches of a modern day food chain with golden arches. So the little guy on the street is trying to save something important from closing down, eh? I’m just saying that Steven Clark’s new script contains issues similar to problems in society at the moment. When you think that the actors are local people, Carpetbagger’s is non-profit, and the show features tunes such as ‘I Will Survive’, then in getting together and sharing this, perhaps community is most definitely alive and well.
