The Graduate
I
t’s that time of year again. Flowers are blooming. Traffic is abating. Newly minted graduates are emerging from various institutions across our fair state. Whether it is pre-school, kindergarten, elementary, junior high, high school, college or technical school; it seems that everyone gets a graduation celebration. I, too, am no exception. In the back-to-school issue’s letter, I related the story of my son’s first day of school. So now it only seems fair that I end the story with his high school graduation. A momentous occasion that deserves to be memorialized. Graduation has certainly changed from when I graduated from high school. I graduated in 1979 and somehow, we seniors decided that we were going to be known as the class with class. In addition to our stylish T-shirts, we decided to purchase white top hats to further make known that we truly had class. Nobody wore top hats in those days and certainly none of us were alive back when they were popular; but apparently someone had seen an old Fred Astaire movie and had made the assumption that top hats imparted upon one a measure of
class. Imagine 356 teenagers jostling through the crowded halls wearing Class of ‘79 T-shirts and cheap white felt top hats. Now that’s class. While we certainly had a very high opinion of ourselves as masters of the high school universe, the school’s administration had a slightly different opinion, and frequently referred to our class both privately and publicly as morally bankrupt. Now the Class of 2011, my son’s high school class, they do things differently. Take prom for instance, a time-honored high school tradition. They don’t take dates to prom; there are just groups of three, four, six, eight, and any other mathematical permutations that don’t require just one boy and one girl. After prom, there is the after party. My son’s class rented a nightclub. I wonder where they got the rent money. It is unclear to me what they do at the after party that is different from what they did at the prom. From what I was able to gather, the club was very strict about searching the Class of 2011 for alcohol, drugs, weapons, and various other paraphernalia.
Post after party, it appears there were a number of hotel rooms involved. I have no idea of who slept where. I only know that I was one in a long line of cars the next morning waiting to pick up kids. The next thing on the agenda is more celebration of the wonderful achievement of graduating high school. A party is definitely in order. The fashionable location of these parties is at the home of the graduate. You may think, oh how nice and intimate for the family... that is until you see the guest list of 250 teenagers, who have been at a non-stop party ever since prom. The actual graduation ceremony promises to be a not to be missed event. There is nothing as moving or fraught with significance as sitting in an overcrowded auditorium, taking pictures or video and knowing that your child is indistinguishable from the 170 others all wearing the exact same cap and gown. That being said the Class of 2011 deserves heartfelt congratulationsfor-their-tremendous accomplishments. We should all sleep well tonight knowing that they are the of our great nation. ichard Finkel, the pharmacist at Healthmark: Prescription Drug Foundation and Truco Drugs in North Miami Beach knows that many of his clients do not understand that prescription drugs are powerful medicines and that there is no such thing as minor interactions. It is important to know about the medications you are taking, and to find out if there are any interactions with food that should be avoided. n today’s world of automation, voice mail, and computers we have become accustomed to not receiving good service – or for that matter any personal service.

fore the love of the game T he secret weapon to improve your golf game is far from the green. It is located in a Pilates studio in Aventura.
Renee Ricca owner of her eponymous Pilates studio knows that Gyrotonic can do more for a golfer’s swing than hours at the driving range. Gyrotonic is a system of rotational exercises that help to lengthen muscles and loosen joints, thus adding both finesse and oomph to one’s golf swing. “Players who want a real advantage have to train their bodies,” said Conrad Lawrence, a golf instructor who has over 20 years experience. The Gyrotonic exercises are performed on a peculiarlooking piece of equipment -- a combination pulley tower/exercise bench. The movements promote flexibility, coordination and endurance – not strength alone. This is exactly the mix of attributes conducive to a better golf game. According to Gyrotonic trainer Matt Aversa, bigger muscles actually impede performance in sports requiring fluidity of form. “Why practice bench-pressing 300 pounds when what you really want to do is loosen up to hit the ball 300 yards,” he said. Ricca decided that with so many duffers in the area, who are looking to improve their game, she would get certified in the Gyrotonic and Golf Program that is designed to specifically address golfers’ athletic needs -- increasing spinal rotation, joint mobilization, strength and flexibility to those specifically designed for golfers. “Many golfers can’t move their hips,” said Ricca. “It is important to make the spine is supple which opens the

hips which allows flexibility which allows the ability to hit the ball faster and longer.” By enhancing the mobility of the spine injury to the hips and back may also be avoided. Ricca offers a series of Gyrotonic exercises at various levels to help golfers improve their swing. After a complete series of exercise sessions in the studio, Ricca takes clients out to the green to work on the spiraling of the spine and create further swing follow through. “Few golfers ever achieve a level of success equal to the amount of work they put into their game. Often, their lack of success is the result of physical limitations, preventing them from performing at a level required to excel,” said David Rasmussen, a golf instructor working with many PGA players. “In my experience, conventional weight training, core condition and other fitness disciplines did not result in students achieving their golf goals. These traditional methods tend to be one-dimensional and do not address the combination of movement abilities needed for a good golf swing. This search led me to the Gyrotonic Methodology. Gyrotonic training gives golfers the best combination of strength, flexibility and speed, all essential to developing the golf swing to its full potential.” Ricca is confident that through participation in the Gyrotonic and Golf Program participants will be able to improve their ability to swing the club faster, increase drive distance, improve ball-striking abilities, have better contact and directional control of the ball and most importantly limit potential injury.

But if you are one of the people I have come in contact with over the past six months, you will be glad that I am finally writing about my experience at the Cenegenics Medical Institute of Boca Raton because it will finally get me to stop talking about my incredible experience at the institute. Cenegenics Medical Institute is a preventive age management practice run by Dr. Robert Willix Jr. At your appointment, Dr. Willix will implement new age management preventive medical technologies and therapies to see how you are aging.
Pre-appointment you will already have had several vials of blood taken, provided a urine sample and filled out a 30-page Health & Lifestyle Assessment form. Your on-site day-long medical evaluation will include highly personalized diagnostic tests including: full body scan, bone density, EKG, cognitive function, strength level, cardiovascular, body fat and body alignment. The goal is to provide you with a true statement of where you are in the aging process and how to be proactive to maximize your health, vitality and peak performance to your benefit. Granted this intensive medical evaluation is expensive, close to $4,000. (Cenegenics does not accept insurance.) Cenegenics
The entire Cenegenics team will work with you on your anti-aging regimen is part of the growing trend for concierge medical care. But you will receive a very realistic baseline of where you are in the aging process and how you can be proactive in preventing the typical diseases of old age. After the tests Dr. Willix will review the results and will have a rather lengthy and frank conversation about his preliminary findings and what is your course of action. “I don’t promise longevity. I promise vitality,” he said. Due to the time and cost factor, I was unable to experience the complete medical evaluation, but I was able to do the computerized mental acuity test and the evaluation of my oxygen consumption. And the outcomes were amazing My first test was the cycle test. It is designed to evaluate use of oxygen. The idea is to see if the body is working efficiently. I was hooked up to an EKG machine, my nose and mouth were completely covered by a tube to capture my oxygen/carbon dioxide activity. I was placed on a stationary bicycle and every 30 seconds the pedaling resistance increased. The two exercise physiologists were
intensely watching the computer screen taking my EKG and at some point based on what they saw, I wasn’t exactly sure what was the determining factor, I was told to stop. The test was complete. I absolutely loved the 30-minute mental acuity test. It is used to determine if there is any slowing of neuro-cognitive function. (To me this meant testing my brain power.) The mental evaluation does not look for disease but rather looks at your reaction time, attention span, memory and ability to learn. The purpose is to give you a baseline of your cognitive function and to be able to measure it against your age group. The computerized test asks you to complete various tasks. (I am only going to share a few test descriptions because I don’t want you to have any pre-test prep before going for your evaluation.) The visual memory test shows you a series of words. Then it begins to show you another series and asks you to tap the computer’s space bar every time you see a word that you were originally shown. At the end of the 30 minutes of testing, you will again be asked to recognize the words you were originally shown.

Brown Spots Be Gone Part II
The continuous performance test asks you every time you see the letter B appear on the screen to tap the space bar. You are then shown a continuous slide show of letters. It seems as if this exercise goes on forever. In total there are 9 different tests to measure if you have lost any ability in your brain function.
Knowledge is a blessing and a curse.
Since the idea of this column is to share with you my personal experience, I am going to tell you the results of Dr. Willix’s evaluation.
It is a blessing because I knew what to expect when I went for my second Fraxel Re:Store Dual Laser treatment. It is a curse because I knew what to expect when I went for my treatment.
The VO2 test, Dr. Willix explained, measures where I am physically. Not just how physically fit I am, but the strength of my legs and lungs as well as my overall fuel efficiency and cardiac blood output.
I knew that the Fraxel Laser was going to feel like someone was taking a sugar blowtorch to my face. And instead of carmelizing the crème brulee’s brown sugar, it was creating a nice fire red sunburn on my cheeks.
Dr. Willix said I need to increase my leg resistance training and suggested I do squats. The truth is I hate weighted leg squats. He pointed out that I don’t do much weight training (also true) and I need to increase my strength by doing more weightbearing exercise. I primarily spin (indoor cycle classes) and do Pilates as my forms of exercise. He explained the reason I want to increase my muscle mass is to make my body much more efficient.
But I also knew how to prepare to treat my posttreatment face. At home I had my Ziploc bags of ice at the ready and my fan plugged in. As with any bad sunburn, you are exuding excessive heat and just want to cool and soothe your face.
Dr. Willix commented, I need to be harder on myself. He said when doing my cardio workouts, I am working about 10 heartbeats lower than I should be. (Again absolutely true.) When I spin I wear a heart rate monitor and I don’t consistently push myself to my true max. I do hold back and keep my heart rate about 10 beats below that total push level. The reason I want to increase my heart rate is because I want to make my heart stronger and increase its efficiency of how hard it has to work to pump the blood through my body. He said that my heart is taking about 16 extra beats per minute then it should. He also said that my consumption of oxygen is too low and I am not fuel efficient, meaning I am not a
Dr. Robert Willix lean mean machine. He suggested I drop my body fat percentage because the lower your body fat the more efficient you make your heart and use of oxygen. Dr. Willix’s evaluation is not for the thin-skinned; he is upfront, honest and will blatantly tell you where you are difficient. There is no sugar coating or niceties. “I work to re-educate people. I teach you what it is that you can do to make a better version of you,” he said. In summary, Dr. Willix suggested I lose about 15 lbs, increase my muscle mass and push myself harder while doing cardio. And, once again, true to her word, Whitney Krohn, the certified physician assistant (a.k.a Dr. Horwitz’s right hand woman) said that in about four hours I would no longer need to pamper my face with ice and cold air; and in exactly four hours, it stopped hurting. My skin was still red, dry and tight, but there was no discomfort. Slowly over the week the redness started to fade, the old skin sloughed off and beautiful skin started to appear. All the brown spots are gone. I have had and continue to have people (and I mean lots of people) ask what I have done to my skin as my face has this soft glow and shiny dewlike appearance. And, once again, Whitney was right. She said that it would take two Fraxel Laser treatments and the spots would be gone; true to her word there are no brown spots or blemishes to speak of. After four months of trials & tribulations, the 2011 Miami Dolphins Cheerleaders squad was selected at an all-day competition at the Aventura Mall. The 42 women include 22 veterans and 20 rookies selected from a field of over 400 applicants. The Cheerleaders perform at every Dolphins home game and perform at community and charity events.

Jungle Island was a bit tame with all the well-coiffed four-legged friends enjoying themselves at the third annual Pawpurrazzi, the one-of-a-kind fundraiser to benefit the Humane Society of Greater Miami. The more than 500 partygoers watched their furry friends enjoy doggie ice-cream, makeovers, a doggy bar and caricatures. The highlight of the evening was the Great Pets Who Walk In Front of Great People fashion show featuring 25 exclusive guests and their furry friends – most of the dogs hitting the runway were from shelters. rand Cayman is a 22-mile-long whale-shaped Caribbean island and the largest of the Caymans. When Christopher Columbus was blown off course in 1503, he found a tiny archipelago of three islands surrounded by azure blue waters filled with sea turtles. He called them the Tortugas (Spanish for turtles) but they were later named after the caiman, a marine crocodile. Today the former pirate hideout is a British Overseas Territory attracting companies seeking offshore tax havens. Legend has it that King George III of England granted freedom from taxation as a reward for the islander’s bravery in saving the lives of British seamen who wrecked off the coast.

Stingray City offers the oncein-a-lifetime chance to swim with gentle stingrays. There are two sites both located in the North Sound reached by boats with guides. The Sandbar is best for wading and snorkeling where the ray’s wings nudge swimmers legs like aquatic cats. Divers can visit the deep reef site where stingrays swoop in tandem with thousands of colorful fish in coral gardens.
As one of the highest ranked places on the planet for scuba diving, nightlife plays second fiddle, but there are plenty of places to party.
Boatswain’s Beach is a marine park attached to the famous Cayman Turtle Farm. The 23-acre spread has a snorkeling lagoon, swimming pool, nature trails, an aviary and a row of island houses where local artisans showcase crafts and fishermen tell stories of yesteryear. The turtle farm breeds and raises green turtles to release back into the wild and to supply legal turtle meat to the local market. There are touch tanks where visitors can hold turtle yearlings and gently rub under their necks (they love this). The oldest standing structure on the island is Pedro St. James, a former Great House now a historic site. Enter a small theatre to view a film that tells of the meeting in 1832 that gave birth to democracy here and led to the outlaw of slavery three years later. Then tour the three-story house and separate cooking quarters to get a glimpse of the past. Plant enthusiasts can wander Queen Elizabeth II Botanical Park with a heritage garden, natural wetlands, woodland trails, and exotic foliage. Fauna includes rare blue iguanas that can be fed caterpillars off the trees they gather under. The Saturday Farmers Market kicks off early morning in a pavilion where local farmers sell their produce and vendors offer pepper jelly, curry wurst, jams, tarts, cakes and candies. Islanders and visitors mingle in a lively atmosphere where Governor Duncan Taylor often shows up looking for organic micro peaches and heirloom tomatoes.
Bed Restaurant & Lounge is a popular watering hole with global food served tapas-style in an intimate setting. O Bar is a cutting edge dance club with an urban vibe that attracts a young trendy crowd. Cohiba Lounge & Cigar Emporium has a martini bar with spirits and cigars from all over the world plus live jazz. Cracked Conch by the Sea is the place for sipping a cocktail on the patio bar and watching the sunset. Harquail Theatre stages musicals, dramas and comedies featuring local performers and is also the venue for classical concerts, operas, and dance performances. eave it to mothers to find the solution to their own problems. Many women want to be able to spend more time with their children without giving up being in the work world. Using their children as inspiration, many South Florida moms have added mompreneur to their calling cards. Jael Toledo made the decision to stay home and raise her children after a successful career working with autistic children. In 2010, her sister-in-law gave birth and Toledo brought her a batch of butter cookies made from her great grandmother’s recipe. Everyone loved the cookies and started asking for some. Then the requests came in for 1,000, 2,000, 5,000. Toledo suddenly realized she needed to seize the moment and a new

Perseverance is what made Janette Beraha invent the Oshi Mat. She attended a baby class with her fourmonth-old son and was frustrated by the lack of clean baby mats. After watching the other moms struggle with baby blankets to cover the floor, she made up her mind to find something that would solve the problem. Thus, she started to design a mat-like surface that would be safe and comfortable. She knew it was important to have a product that was environmentally friendly and non-toxic. She is proud to say her mat is 100% PVC and Latex free. At first it was very difficult to get manufacturers to understand her vision, “It feels like you’re never going to get it done,” she said. There is New York City’s Flatiron building, Paris’ Moulin Rouge nightclub and Miami Beach’s art deco designed hotels. What happens when you put an artist’s point-of-view and iconic landmarks together? You get the Architecture Collection a series of whimsical oil on canvas interpretations of these urban icons by artist Alain Godon. Godon has been working on this series of iconic architecture paintings for the past five years.

Clearly, Godon is a visual narrator and master of color. He is able to capture the essence of a city and his playful imagination infuses his work with expressive lines and rich vivid colors. And it is a bit serendipitous of how South Beach hotels came into his purview. Bernard Markowicz, owner of the eponymous fine art gallery was traveling with his son in northern France where he came upon one of Godon’s paintings. Markowicz was immediately drawn to the paintings’ whimsical spirit, details and happiness they projected. He purchased one of Godon’s works, a Bildoreliefo of New York’s Chrysler building, for his personal pop art collection. It turned out that Godon lived in the same small town and they had the opportunity to meet. continues p.54

ALAIN Godon’s MarsEIlles Holiday Bildoreliefo Series Bildoreliefo Esperanto for an image in relief definition and the creation of Alain Gordon, is an innovative art technique introduced to the public in 2009. The Bildoreliefo is a completely unique work of art in itself. Unlike a photograph often used as the model for the subject of a painting the Bildoreliefo begins with the painting and is transformed into an original digital work of art. Why reliefo? For the reason that the artist has deconstructed piece by piece each constituent element of his painting, in order to preserve the originality of his art, and has the reconstructed those elements over a shadow creating a three-dimensional effect and the impression of an image in relief. Hence, each artwork is unique and its own specific color gradation distinguishes it as an original. As of today, there are only ten versions (everyone with a unique background color) for one original oil on canvas. These single editions give Godon the ability to offer his collectors alternative versions of his paintings. In late April, Godon had a debut of his collection that was inspired by the premier architectural landmarks of Miami. In addition to having an exhibit at Markowicz’ gallery which ended in mid-May, Godon had an exclusive preview of the Miami collection at the New World Center. Godon’s Star Wall painting of the New World Center designed by Frank Gehry served as the architectural landmark to introduce the collection. The guest bathroom of this Coral Gables townhouse used great design tricks to cover some not so great details. The pedestal sink was ugly; so, it was dressed up with an Oriental-motif fabric. The faucets were changed to a bamboo pattern and the little table with accessories were selected to keep with the Oriental theme. The wainscoting was done up to the ceiling. The ceiling was painted to give the bathroom more depth and to appear larger than its actual size. The window is dressed with wooden shutters as are all of the home's windows.

If you have so much light, it makes it easy to use dark colors. Q: What personal aesthetic to you like to bring to your Miami projects? A: I love to mix the old and the new. I think that every home should have its own unique language. Using something old brings character and achieves something that is impossible to create by using something new. It is okay to use the new, but I strive to find and blend some old and odd pieces to
bring interest into the space. I love the play of the old more traditional with a more contemporary feel. I like the idea of old style but stylized in a modern fashion. Q: How do you incorporate the casual South Florida beach and coastal lifestyle into your designs? A: People are more relaxed here. You can use linens and canvas. It is even appropriate to incorporate typically outdoor materials indoors. I love the fact that you can mix the in and the out. Water is so soothing and relaxing. The Northeast couple who use this townhouse as a second home wanted it to have a classic tropical feel. Interior designer Ana Luria felt that Palm Beach prints and Oriental patterns could be mixed to create a rich tropical environ filled with texture and color.

Because the kitchen opens to the living and dining rooms, the goal was to make it very minimalist and contemporary. The focal point for the master bedroom is the custom-made floral curtains. Ana Luria, the interior designer, used the shades of blues and beige as the theme to mix in additional patterns and textures. The headboard is a herringbone with tiny stripes and the coverlet has tiny baby blue dots. In all, five different fabrics are used in the bedroom; but because they are all the same color scheme it blends. In March, more than 64% of closed sales were cash transactions. International sales, which are mostly cash transactions, represent approximately 60% of closed resales and 90% of new construction sales. The median sales price of singlefamily homes in March decreased 19% to $159,800 from a year earlier. The median sales price of condominiums dropped 30% to $97,400 but increased 3.6% from February 2011.

If you couldn’t get tickets to the 10th annual Food Network South Beach Wine & Food Festival or didn’t want to stand in long lines and battle hundreds of other foodies, it is good to know many of the Festival’s participating chefs call South Florida home. You don’t just have one weekend to take advantage of the local cooking talent; you have all year. This way, you will be able to savor the chefs’ creations without having to juggle a wine glass and plate. The SoBe Wine & Food Festival may be local chefs fling with fame and a chance to hang with the likes of Anthony Bourdain, Bobby Flay and Rachael Ray; but when the party is over, many of the most talented chefs can be found back in their South Florida restaurant kitchens. Nobuyuki Matsuhisa, known to the world as “Nobu” is the acclaimed and highly influential chef of Nobu restaurants. He draws on classical training from Tokyo’s sushi bars and his life abroad in Peru to create a new trend in Japanese cuisine. He is the author of 5 cookbooks, including his most recent, Nobu Miami The Party Cookbook.
Claude Troisgros was born with cooking in his blood as the son of a restaurateur in Roanne, France. After working in the best kitchens in Europe he accepted a position in Rio de Janeiro and began using Brazilian ingredients to personalize his signature French dishes. Troigras is the consulting chef at Blue Door Fish in the Delano hotel, one of Miami’s most sought-after luxury spots with a seafood menu. Norman Van Aken of Norman’s in Orlando and 180 in Coral Gables is known internationally as the founding father of New World Cuisine, a celebration of Latin, Caribbean, Asian, African and American flavors that first came into prominence in the ’80s when Van Aken led a group of top South Florida chefs, referred to as the Mango Gang.

Michelle Bernstein of Michy’s and Sra. Martinez has made a huge splash on the national culinary scene but has stayed true to her South Florida roots. A Miami native of Jewish and Latin descent. She is a passionate cook who has dazzled diners and critics alike with her sublime cuisine. Bernstein is the host of the local WPBT's Check Please!, and the author of Cuisine a Latina: Fresh Tastes and a World of Flavors From Michy’s Miami Kitchen.
Cindy Huston who started cooking when she was nine is a self-taught chef. She learned about Italian and Portuguese cuisine. She then headed to Miami to be a sports fishing captain on a yacht and honed her skills with seafood on visits to the Bahamas, Barbados, Jamaica, and the Virgin Islands and quickly embraced island flavors. Executive Chef Frank Jeanetti of Essensia Restaurant at the Palms Hotel & Spa oversees the culinary operations. Jeanetti’s cuisine emphasizes the simplicity of fresh food using local, seasonal and organic ingredients to create what he calls “the pure essence of taste.” Kris Wessel of Red Light Little River grew up in New Orleans and received his start working in a string of tourist restaurants and then came to Miami to attend F.I.U. After graduating he worked at Mark’s Place, becoming Chef de Cuisine. Next he went to Europe to do cooking stages at Michelin-starred restaurants. When he returned he opened a sandwich shop on Lincoln Road. Two years ago he built Red Light on the side of the Blue Motel on the river with his vibrant down to earth food. Michael Schwartz of Michael’s Genuine Food & Drink was one of the first restaurants to define the Design District as Miami’s hot new dining destination raising his profile to a nationally renowned chef and culinary innovator. The Philly native recently opened a second Michael’s in the Cayman Islands and his first cookbook Michael’s Genuine Food: Down to Earth Cooking for People Who Love to Eat was just published. Douglas Rodriguez of D. Rodriguez Cuba on Ocean Drive is the globally acclaimed Godfather of Nuevo Latino cuisine and has been at the helm of several award-winning restaurants. The Miami native grew up on Cuban-American fare and by the age of thirteen was collecting cookbooks. He was a pioneer of Lincoln Road opening Wet Paint
Café. In 2009, Rodriguez was one of the distinguished chefs to be on the first season of Top Chef Masters on Bravo. He is the author of Nuevo Latino, Latin Ladle and Latin Flavors on the Grill and recently revised his Great Ceviche Book. Howie Kleinberg is known for his star turn on Bravo’s Top Chef and is behind Bulldog BBQ and Bulldog Burger. He says, “Bulldog BBQ is about simple food done right.” In 2009 Bon Appetit magazine named Bulldog BBQ one of the top 10 new barbecue restaurants in the country. Dewey LoSasso has a culinary ethos that respects the past yet challenges the future. His progressive American cuisine was a natural choice to help spearhead the Forge’s rebirth. A graduate of the Culinary Institute of America, LoSasso honed his skills at several acclaimed New York restaurants before heading to Miami. Rainer Becker of Zuma Japanese Restaurant, in a sleek downtown riverfront space, is German and learned his craft in some of the most prestigious kitchens in Germany including the Hyatt Regency in Cologne. He was at the Park Hyatt Tokyo where he discovered Japanese food and culture, which changed the direction of his cooking. He identified the demand respectful discipline that defines Japanese cuisine. Following on the success of Zuma in London, he opened in Miami last year.

Thomas Connell is the executive chef at the iconic Miami Beach Fontainebleau. The Los Angeles native was influenced at an early age by his grandfather who loved to cook. Prior to his current position he opened properties for the Ritz-Carlton in farflung places like Bali, Shanghai, Tenerife and Singapore. Chef Scott Conant, a graduate of the Culinary Institute of America was named one of America’s Best New Chefs by Food & Wine magazine. His Scarpetta in New York was named one of the best new restaurants in America by Esquire magazine and got a glowing 3-star review in The New York Times. In 2008, Conant opened a branch of Scarpetta at the Fontainebleau Miami Beach. He is the author of two cookbooks, New Italian Cooking and Bold Italian. Michael Pirolo is the Chef de Cuisine at Scarpetta. He remembers watching his grandmother make gnocchi and can tomatoes. He met Scott Conant, who was consulting on a project, and the two hit it off. When Conant opened Scarpetta at the Fontainebleau he asked Pirolo to join him. It was 23 years ago when Alfred Portale started his culinary career at Greenwich Village’s Gotham Bar & Grill, where he brought fine dining downtown (both in cuisine and style). Cat Cora Richard Hales of Sakaya Kitchen in Midtown began his culinary career at the French Culinary Institute in New York. He worked with Jean-Georges Vongerichten at both Le Grenouille and the Four Seasons. Hales has introduced the chef-driven, fun, pan-Asian concept to Miami. He also runs the mobile food truck Dim Ssam a Go Go. Keyvan Behnam of China Grill was born in Tehran and began his culinary adventure working his way up from a dishwasher in a familyowned restaurant, while studying to be a lawyer. Instead he became a sous chef and began experimenting with French and Asian flavors. China Grill offered him a chance to expand his culinary repertoire, first at Tuscan Steak and then at the company’s flagship on Miami Beach. Meat Market’s Sean Brasel dreamed of becoming a chef. He received his start in Denver where he won a scholarship to Madeline Kamman’s School for American Chefs in Napa Valley. After graduation, he returned to Denver where he teamed up with his current business partner David Tornek. Through Meat Market, the two are creating a steakhouse for the 21st century. Cat Cora to date is the only female on the TV sensation Iron Chef to make it all the way to the top. This Greek-American was born in Jacksonville, Mississippi where her grandfather and father had restaurants. Although it is a bit north of our targeted area, it is
worth noting Cora’s partnership with Walt Disney World to open a Mediterranean-style eatery Kouzzina at the Boardwalk Resort. The 1,350-square-foot smokehouse maybe tiny but it goes through more than 15,000 lbs of beef a week. The Winter Park-based 4 Rivers Smokehouse is the brainchild of Pit Master John Rivers. Talk about a dowry, his wife came with the recipe for her uncle’s brisket; and it put Rivers was on his way. Can’t make it up to Orlando, go online and purchase 4 Rivers sauce or its signature 4 Rivers all purpose rub... the brisket rub will be made available in the fall. Elena Warens of A Piece of Cake discovered her passion for sugar art at fourteen. Ten years later, she opened one of the first specialty cake shops in the area. Her flair for decorating makes her edible goodies little pieces of art. Her latest venture Cupcake Freak. Mark Zetouni leads the kitchen at Lido Restaurant in The Standard Hotel. His culinary approach is inspired by the bathing cultures of the Mediterranean. Lido’s offering is healthy, sun-kissed and wholesome with an emphasis on organic and fresh herbs. The former Canadian real estate agent Lori Karmel moved to South Florida ten years ago. As a result of not being able to find a decorated and delicious cake she ended up owning We Take the Cake. Her place

Get double the delight when identical twins Nicola and Fabrizio Carro bring the taste of Northern Italy to Lincoln Road at Quattro Gastronomia Italiana. The menu is inspired by Italy’s Piemonte region and is perfectly executed with its sophisticated but earthy dishes. This year, Quattro won a Five Star Diamond Award, reserved for only the world’s finest establishments. Watching and working with his grandfather, a well-known baker, in Southwest France was what sparked Frederic Delaire’s interest in food. After culinary school at La Palm, Delaire worked in several Michelinstarred restaurants before taking the lead in all culinary aspects of the Lowes Miami. Ken Lyon is not only a master chef but also a visionary who is able to capture the zeitgeist and create the right restaurant in the right place at the right time. Finding his way to Miami in 1992, Lyon and his brother opened a European-style café and market, Lyon Freres, on the then-blighted Lincoln Road. Lyon’s belief in seeing an area’s potential was instrumental in kick-starting the Road’s renaissance. In 2009, he opened Fratelli Lyon in the burgeoning Design District.

espite its tropical locale, Miami has become the cheese capital of the South. Restaurant menus and specialty markets stock formage selections from around the globe. It is easy to say cheese and see it appear at every turn from sandwiches to sushi. One local chef serves a risotto-like dish made with quinoa and Manchego cheese, while an Italian-born local restaurateur makes fresh mozzarella fiore di latte. Cheese lovers may enjoy everything from a griddled arepa (corn cake) oozing with melted cheese ordered from a street stand to a cheese course inside a palace of high cuisine. South Florida is living proof that cheese is extremely versatile; it can satisfy the palettes of the most sophisticated foodies to those who just desire a great grill cheese sandwich. Vito Volpe, who grew up on a farm near Bari, a city in Puglia, the southern “boot” of Italy, brought fresh mozzarella to South Florida after hiring his friend and master cheese maker Mimmo Marchittla. Using cow’s milk from Dixie Fresh Dairy near Tampa, they produce fiore di latte (cow’s milk mozzarella), ricotta, burrata, and nodini, best eaten within a day or two. exican food has gotten a makeover.
Although Mexican has been one of the more popular ethnic cuisines, it didn’t necessarily have the best reputation. There was a time when Mexican was associated with canned tomatoes, pickled jalapenos and everything deep-fried in lard or it was greasy Tex-Mex, which really has nothing to do with authentic Mexican cuisine. But several restaurateurs are on a course to change this perception and make Mexican food fresh and healthful. “The idea for fresh ingredients really started in the 1990s with the wrap concept. The wrap sandwiches evolved into the burrito which pushed toward highquality and fresh ingredients to be used in Mexican food,” said John Kunkel, CEO/Founder of Lime Fresh Mexican Grill. “When I wrote the menu for Lime it centered around health.” Kunkel recognizes that there are competitors (but not really) to the fresh Mex movement. He knows the burger is popular and burger joints are opening on every other block. “But how many times a week can you eat a 1500 calorie burger,” said Kunkel. To ensure the quality and freshness today's mexican restaurants have open kitchens and the ability to customize their offerings. Nothing is pre-made or pre-assembled. Everything from the chips to the guac is made on the premises.
