Best Smoked Salmon Spread

Blue Cheese Stuffed Mushrooms

1/3 cup light Miracle Whip 3-4 oz. light cream cheese (1/3 less fat) 4 Tbls. red onion, finely chopped 1/4 cup diced red, yellow or orange pepper 3 tsp. fresh lemon juice 3 tsp prepared horseradish sauce 4 Tbls. fresh chopped parsley 2 tsp. dill 2 Tbls. capers 4 oz. shredded smoked roasted salmon (Dawson Bay)

My neighbors love it when I serve this appetizer. Even if you don’t like blue cheese, you will love these!

Bloody Mary Salad

___________________________________________________________ This is a different salad, which many times was on our holiday table, when we had guests. I got the recipe from a friend many years ago. 2 (3 oz.) boxes lemon gelatin 4-1/2 cups V8 juice, separated 2 cups chopped celery (about 4 stalks) 1 cup chopped onion (about 1/2 onion) 2 cups chopped English cucumber (about 2/3 of a cucumber) 2 cups chopped yellow, for color contrast, or red or green pepper (about 1 pepper) 2 cups grated, for texture contrast, or chopped carrot (about 2 large carrots) Zest from a lemon, optional Chopped fresh chives or dill, optional 1 Tbls. horseradish 1-1/2 tsp. salt 1 tsp. Worcestershire sauce

1 lb. large whole mushrooms 2-3 cloves finely chopped garlic 1/2 cup finely chopped yellow onion 1/4 cup chopped red pepper 1/4 cup melted butter 1/2 cup grated Italian bread crumbs (or crushed garlic croutons) 2 Tbls. fresh chopped parsley 1 Tbls. fresh lemon juice 1/2 cup blue cheese, crumbled Remove stems from mushrooms and chop stems finely. Saute mushroom stems, garlic, onion and red pepper in butter for a few minutes. Remove from burner and add bread crumbs, blue cheese, parsley and lemon juice. Mix well. Fill each mushroom cap with mixture and place in lightly greased shallow baking pan. Bake at 400 degrees for about 10-12 minutes, just until slightly browned on top. Serve immediately. ___________________________________________________________ In the winter of 1975, my aunt and two cousins came to the Midwest from California to celebrate Christmas with my family. She was recently widowed and thought it would be nice to be around a house full of relatives. She was right. We had so much fun that season! Both of my cousins had never seen snow and Mother Nature dazzled them with a foot of beautiful white snow. My aunt brought with her a recipe we had never heard of, let alone tried. Following is an all-time family favorite recipe that reminds me of that snowy Christmas, warm with family love. FOR SERVING: tortilla chips shredded lettuce chopped onion grated cheese chopped tomatoes guacamole black olives sour cream

A 1/4 cup at a time, add a cup of hot V8 to gelatin. Stir in horseradish, salt and Worcestershire. Add remaining hot V8. Stir in other vegetables. Transfer to serving dish and refrigerate until set, 6 or more hours. Makes 6 cups.

3 lb. pork roast (loin or shoulder) 1 lb. pinto beans 1 small can chopped green chili peppers 2 cloves of garlic, minced 2 Tbls. chili powder 1 Tbls. cumin powder 1 tsp. oregano 1 Tbls. salt dash pepper

TIPS: Don’t be tempted to substitute lemon lime jello which yields an unappealing gravy-colored salad. Yellow peppers add color but red or green peppers are fine substitutes. Use real carrots rather than the tasteless, though convenient, carrot bites. Adults may prefer the bite of additional horseradish.

Soak beans overnight. Put all ingredients in a kettle or Dutch oven, cover with water and bring to a boil. Simmer 8 hours until meat is falling off the bone. Uncover for a short time to allow thickening.

Serve over tortilla chips with shredded lettuce, chopped onion, grated cheese, and chopped tomatoes. Optional toppings are guacamole, black olives and sour cream.

In a large bowl, stir together gelatin and 1/2 cup V8. Set aside to softly gel. In a large pan, heat 4 cups V8 until just boiling. Add celery and onion as chopped. Chop cucumber, pepper and carrot, add zest and herbs if using; set aside.

Chicken Tettrazini

Cranberry Chutney

___________________________________________________________ This is one of our favorite recipes. We make it every year to serve with our turkey or any other poultry we have. 12 oz. cranberries 1 cup sugar 1 cup water Boil, then simmer, cranberries, water and sugar until cranberries pop open. Stir frequently to mix in sugar and keep from burning. Then add all the following ingredients to the cranberries after they have popped open. 16 oz. can pears, drained and diced (could add the juice if desired) 1 unpeeled apple, diced 2 oranges, peeled and diced small 1/4 - 1/2 cup raisins 1-1/2 Tbls. apple cider vinegar 1/2 tsp. ground ginger (or more to taste) 1/2 tsp cinnamon (or more to taste) 1/4 tsp. ground cloves (or more to taste) 1/4 tsp. nutmeg (optional) 1/2 cup pecans Mix well and stir to keep from burning. Cook until desired consistency – shorter to keep chunkier or cook longer until well cooked down. Add 1/2 cup halved or chopped pecans at end or before serving (so they don’t become so mushy). Eat warm or store in jars in refrigerator and eat cool. Will last for a week or so.

Melt butter in pot, add garlic and sauté for one minute. Add flour and whisk to make a roux. Add chicken stock, mushrooms and half & half and continue to cook over medium heat until thickened (about 10-12 minutes) whisking every few minutes so sauce does not stick or burn. 7 oz. bottle of large stuffed olives 16 oz. cream cheese, softened 1 cup chopped pecans Drain and wipe olives dry. Roll a tablespoon of cream cheese around each olive and cover evenly. 1/2 shredded cabbage (3 cups) 6 oz. baby shellronies, cooked, drained and cooled 1 tsp. garlic salt 1/2 tsp. salt 1/2 cup chopped celery 2 Tbls. minced onion 1-1/2 cups cooked shrimp 1/3 cup oil 2 Tbls. apple cider vinegar 1/2 tsp. pepper Mix ingredients in large bowl and chill. The name Hussar Salad originated in the small garrison towns where the Hussars (mounted soldiers) were stationed. But because of the quality of the food in the barracks, the average Hussar was anxious to get one of the kitchen maids as a girlfriend – preferably one that served a rich family. After the family’s dinner, the Hussar went over to his girlfriend’s kitchen to charm her into making him a salad out of the left overs. That’s why we still make Huzaren Sla. 1-1/2 cups chopped cold meat (veal or pork) 2 green apples, peeled, cored and chopped 1 can diced beets (drained) 2 hard boiled eggs, one finely chopped, one sliced 3 pickles, 2 finely chopped, one sliced 1 small onion, finely chopped 8 small new potatoes, cooked, cooled and chopped 8 Holland cocktail onions, cut up 3 Tbls. oil 3 Tbls. vinegar 1/2 teaspoon salt some pepper (to taste) lettuce leaves 1/2 cup mayonnaise 1 tomato In a bowl,combine the meat, apples, beets, 1 egg finely chopped, 2 pickles finely chopped, onions and potatoes. Mix together the oil, vinegar, salt and pepper and pour over the salad. Toss to coat the meat and vegetables thoroughly. Place several lettuce leaves on a flat serving dish. Arrange the salad in a boat shape on the lettuce. Cover the “boat” with a very thin layer of mayonnaise. Decorate with thin slices of one egg, one pickle and tomato. Add peas to boiling water and boil 1 minute. Place peas in colander and rinse with cold water. Cook bacon until crisp, then crumble. Mix mayo and sour cream together. Combine all and finish with pepper. Makes 8 servings. Very tasty! Chris Snowden | Glendale

___________________________________________________________ Excellent recipe and very easy to make. I have been making Servettenknödel for a long time. 1/2 lb. of day old wheat bread 4 Tbls. butter 1 small onion, finely chopped 3 eggs, yolks and whites separated 1 cup milk 3 tsp. chopped parsley 1/2 tsp. salt 1/2 tsp. nutmeg Cut the bread into small cubes. Add to a bowl. In a saute pan melt butter. Cook onions in the butter until transparent. Add onions to the bread cubes. Combine egg yolks, milk, parsley, salt and nutmeg. Pour this over the bread cubes. Mix together and allow the mixture to sit for 20 minutes. Beat egg whites until soft peaks form. Fold this into the bread mixture. Spread butter over a clean dish towel (or a large piece of aluminum foil) and place bread mixture over butter. Roll the towel up so that the bread mixture forms a log. Roll up ends so that they won’t open. In a large cooking pot, bring salt water to a boil. Gently place the log into the water. Cook for 25-30 minutes. Remove the log from the water and briefly rinse with cold water. Very gently remove the towel (or foil). Slice the log into equal-sized portions. Serve dumplings immediately. Chocolate Covered Coconut Macaroons

This is a unique treat. Everyone loves this for any holiday. Change the colors of the candy coating to match the holiday.

My husband loves chocolate macaroon cookies. They are his favorite of all cookies. Needless to say, I always make a big batch of my Chocolate Covered Coconut Macaroons for the Christmas holidays. These cookies are by far my best homemade recipe.

16 oz. red candy coating, like Candy Kote wafers 16 oz. green candy coating, like Candy Kote wafers 16 oz. white candy coating, like Candy Kote wafers 6 Tbls. Paramount Crystals 6 cups Kix cereal 5-6 cups cornflakes 2 bags microwave popcorn, popped

10 cups sweetened flaked coconut 2 cups all-purpose flour 1/2 tsp. salt 2-2/3 cups sweetened condensed milk 4 tsp. vanilla extract 1-1/2 cups semi-sweet chocolate chips 1 Tbls. milk

Melt red candy with 2 tablespoons Paramount Crystals. Candy can be melted in microwave or 200 degree oven. Be sure to stir often. Be careful not to burn. Stir in Kix cereal. Pour on to wax paper and spread to dry. Break up any large clumps. Melt green candy with 2 tablespoons Paramount Crystals. Stir in cornflakes. Pour onto wax paper and spread to dry. Break up any large clumps. Melt white candy with 2 tablespoons Paramount Crystals. Stir in popcorn to coat. Pour onto wax paper and spread to dry. Break up any large clumps.

Preheat oven to 350 degrees. Grease cookie sheets. In a large bowl stir together the coconut, flour and salt. Stir in the sweetened condensed milk and vanilla until everything is well blended.

Chocolate Chocolate Chip Cookies ___________________________________________________________ I make these often and everyone loves them. They say they taste like a brownie! 1/2 cup unsalted butter 4 oz. unsweetened chocolate, chopped 3 cups semi-sweet chocolate chips, divided 1-1/2 cups all purpose flour 1/2 tsp. baking powder 1/2 tsp. salt 4 large eggs 1-1/2 cups sugar 2 tsp. vanilla extract 2 cups chopped toasted pecans

Drop by heaping spoonfuls onto the prepared pan. Bake for 17 minutes in the preheated oven until coconut is sufficiently toasted. Immediately remove from cookie sheets to cool on wire racks. In a metal bowl over a pan of simmering water, melt chocolate chips and milk, stirring frequently until smooth. Remove from heat and set aside to cool. Dip cooled cookies halfway into the chocolate and scrape off excess onto the side of the bowl. Place onto waxed paper until set. Store in a sealed, covered container. Makes 6 dozen. ___________________________________________________________ I have made this Heavenly Hash recipe for my nephew Matt for the last 10 years. As Matt says, “That is good stuff.”

Combine butter, unsweetened chocolate and 1-1/2 cups chocolate chips in a large heavy saucepan. Cook over low heat, stirring constantly, until butter and chocolate melt. Cool.

16 oz. package miniature colored marshmallows 11.5 oz. can mixed nuts 2 cups semi-sweet chocolate chips 1 cup peanut butter

Combine flour, baking powder and salt. Set aside. Beat eggs, sugar and vanilla at medium speed with electric mixer. Gradually add flour mixture to egg mixture, beating well. Add cooled chocolate mixture, beating well. Stir in remaining 1-1/2 cups chocolate chips and pecans. Drop dough by 2 Tbls. full 1-inch apart onto parchment paper-lined cookie sheet. Bake at 350 degrees for 10 minutes. Cool slightly on cookie sheets. Remove to wire racks and cool completely. Makes 4 dozen.

Sprinkle marshmallows and nuts in a greased 13 by 9 inch pan and set aside. In a sauce pan melt chocolate chips and peanut butter until smooth. Pour melted mixture over marshmallows and nuts. Festive Crockpot Snowflake Cocoa

___________________________________________________________ This is a favorite and delicious cocoa I sometimes make before we go out Christmas shopping or before putting up Christmas decorations outside. We also look forward to it after an evening spent at Kimmswick on the Christmas Cookie Walk around town. It’s always hot and ready when we are done enjoying these festive Christmas activities on a cold winter’s day or evening! Be festive and enjoy! 2 cups whipping cream 6 cups milk 1 tsp. vanilla 12 oz. package white chocolate chips Optional garnish: whipped cream, crushed candy canes, shaved milk chocolate, sugar decorations (edible snowflakes, edible trees, etc) Stir together the whipping cream, milk, vanilla and white chocolate chips in a crockpot. Cover and cook on low for 2-2.5 hours, stirring occasionally, until mixture is hot and chocolate chips are melted. Stir again before serving, then garnish with desired toppings and add a candy cane to stir it all. Makes 10 servings. Leftovers will separate when put in fridge, but come together nicely when reheated.

Nighty Night Cookies

___________________________________________________________ To me, like many daughters, my mother was beautiful and one of my best friends. She and I made these cookies while I was growing up, especially near Christmas time. You mix the ingredients, put them on a foil-lined cookie sheet, pop them in a preheated oven, turn the oven off and then you leave the oven closed until the day begins the next morning. It was so much fun to find the cookies ready to eat, after waking up the next day. But, be careful, these cookies disappear pretty quickly!! 2 egg whites 3/4 cup white sugar 1 cup semi-sweet chocolate chips 1/4 cup chopped pecans (optional)

Preheat the oven to 350 degrees.

Beat the egg whites until stiff. Add sugar to the egg whites and beat until really stiff; this takes a little time. Stir in the chocolate chips. Add the pecans, if desired. Drop the cookie mixture by the rounded teaspoon onto a foil-lined cookie sheet, spacing them about an inch or so apart.

Poppy Seed Thumbprints

Pumpkin Surprise

I got this recipe many years ago and they are my favorite. I love the orange flavor.

This holiday recipe is as good as it is simple! Once tasted, my family and friends want me to share it with them, which is hard because it is just a many time copied, handwritten, piece of paper. With just a few ingredients, I can prepare this delicious dessert in just a few minutes, get it in the oven, and move on to the next dinner item. Baking Pumpkin Surprise fills our home with the wonderful smell of the holidays!

1 cup butter, softened 1/2 cup sugar 2 egg yolks 2 Tbls. orange juice 2-2/3 cups flour 2 Tbls. poppy seeds 2-3 Tbls. finely shredded orange peel 1/2 tsp. salt 1/3 cup red currant jelly Preheat oven to 350 degrees. In a large bowl combine butter and sugar. Beat with an electric mixer until combined. Add egg yolks and orange juice. Beat until combined. In a small bowl combine flour, poppy seeds, orange peel and salt. Gradually add flour mixture to the butter mixture. Beat on low speed until combined. Shape into 1-inch balls. Place 1-inch apart on an ungreased cookie sheet. Lightly press your finger in center of each dough ball. Bake 10-12 minutes or until edges lightly brown. May need to repress centers after baking. Cool on wire rack. Fill center of each cookie with 1/2 teaspoon jelly. Makes 35 cookies.

1/2 tsp. of salt 4 eggs 2 cups of sugar 12 oz. can of Milnot evaporated milk 2 tsp. of pumpkin pie spice 2 16 oz. cans of pumpkin 1 dry yellow cake mix 1 cup melted butter 1 cup chopped pecans Preheat oven to 350 degrees. Mix the first 6 items with a blender in a large bowl. Pour into a 9 by 13 inch greased pan and sprinkle the yellow cake mix evenly on top. Dribble the cup of melted butter over top of the cake mix and then top off with 1 cup of chopped pecans. Bake for 1 hour until a knife comes out clean. Seasonal Fruit Tart with Lemon Curd

___________________________________________________________ This recipe takes a few steps, but it is so worth it. The homemade Lemon Curd is superior to the jarred ones at the grocery, and you won’t regret taking the extra time to prepare it. This recipe has been passed down from my mom’s mother. Mom would make this at all the holidays and just vary the fruits on top depending on what was in season. The siblings in my family feel so blessed that my mother taught us how to make this tart before she passed away. We do our best to carry on her loving tradition. Glaze 1/2 cup wine jelly or apricot preserves 2 Tbls. water 1 pre-baked sweet pastry shell (1/2 of the recipe that follows) Sweet Flaky Pastry (Makes two 9-inch tart shells, you can freeze one disk if you are only making one tart) 1-3/4 cup all-purpose flour pinch of salt 9 Tbls. unsalted butter, softened 1 heaping cup powdered sugar, sifted 1 large egg, lightly beaten Lemon Curd (makes 1-1/2 cups) 2 Tbls. finely minced lemon zest of about 2 medium lemons 2 large egg yolks, lightly beaten 3 large whole eggs, lightly beaten 1/2 cup unsalted butter 3/4 cup sugar 1/2 cup freshly squeezed lemon juice (the juice of about 2-3 medium lemons) 2 cups ripe seasonal fruit (bananas, strawberries, blueberries, raspberries, oranges, kiwis, grapes, mangoes, pears), washed and prepared as desired.

Make Glaze In a small saucepan, mix preserves and water over low heat until melted. Half of the glaze will be spread on the bottom of the tart shell during the baking process and half will be used to glaze the fruit. Make Sweet Flaky Pastry In a large mixing bowl, sift together the flour and salt and set aside until needed. In an electric mixer cream the butter with the sifted powdered sugar until smooth; add egg and mix until incorporated. Add the flour mixture and continue mixing just until the dough comes together. Turn dough out on floured surface and divide it into two discs; wrap them in plastic wrap and refrigerate for 2 hours or overnight. Before rolling out, remove the discs from the refrigerator and let stand at room temperature for 20 to 30 minutes to soften. Rolling Out and Blind Baking Tart Shells On a lightly floured surface, roll one dough disk into a 1/4-inch thick circle, about 12-inches in diameter. Fold the dough in quarters then place the point of the dough in the center of a buttered 9-inch tart or pie pan. Gently unfold the dough and press into the sides of the pan. Chill 30 minutes before pre-baking. Prick the bottom of the pastry with a fork and line it with parchment paper. Fill to the brim with pie weights or dried beans. Bake in a preheated 350 degree oven for 15-20 minutes. Remove the parchment paper and weights and return to the oven for an additional 15-20 minutes. Remove the crust from the oven when it has about 5 minutes left to bake. Brush the warm jelly glaze over the bottom of the crust and about an inch up the sides. Bake for 4-5 minutes more to set the glaze and brown the crust. Then, remove the tart pan from the oven and cool the crust thoroughly on a cooling rack. The pastry shell will remain crisp for up to one day if left uncovered on the rack. Make Lemon Curd Whisk all lemon curd ingredients together in a large metal bowl. Place bowl over a pan of simmering water and cook, stirring frequently, until very thick, about 20- 25 minutes. Use a double boiler if preferred. Strain, cover and chill completely. Leftover lemon curd is always good on muffins or toast. You won’t be unhappy if you have made extra. It keeps in the refrigerator for about a week. Assemble Tart Spread the lemon curd over the bottom of the prepared, pre-baked tart shell, then arrange the fruit in an attractive pattern on top. Lightly brush the remaining melted jelly over the fruit. You can make it ahead by baking the tart shell and make the lemon curd up to one day in advance. Assemble up to 3 hours in advance. Rosemary Honeycrisp Apple Infusion

Sugar Cream Pie

___________________________________________________________ Makes for a great, sharable holiday cocktail or handmade gift – once made, simply pour into mason jars and decorate with festive ribbon and labels. 10 oz. Everclear 1 6-inch rosemary sprig 2 honeycrisp apples, cored and chopped 10 oz. water 4 oz. simple syrup Combine Everclear, rosemary and apples in a 32-oz. jar. Let steep for 48 hours. A few years ago my husband, Bob and I took a motor trip up to Michigan to visit relatives. On the way up we went through Indiana and came across an Amish village where we stopped at this little store that was selling “home-made” Sugar Cream Pies made by a little woman whom they called “The Pie Lady.” It was the most delicious piece of pie ever. She was so sweet and shared the recipe for all of us eating at the tables. I am sharing it now with all the readers of the Times. Enjoy! 3/4 cup sugar 1/8 tsp. salt 3 cups half & half 1/2 cup whipping cream 1/4 cup brown sugar 1/4 cup cornstarch 1/2 cup butter 1 tsp. vanilla uncooked pie shell sprinkle of nutmeg and cinnamon In a saucepan combine sugar, salt, half & half and whipping cream. Bring to a boil. In another saucepan combine brown sugar and cornstarch. Gradually whisk the hot mixture into the brown sugar mixture. Add butter and cook over medium heat. Whisk constantly for 5 minutes or until thick. Simmer for 1 minute and stir in vanilla. Pour into an uncooked pie shell and sprinkle with a little cinnamon and nutmeg. Bake at 375 degrees for 25 minutes. Serves 6-8.

___________________________________________________________ This is a very old cookie recipe that dates way back. I have been making this particular recipe for Snickerdoodle cookies since 2005 for the Christmas holidays. I originally got this delicious version of the recipe from a lady that made batches of the homemade cookies for the Boars Head Christmas Festival Cookie Reception at Peace Lutheran Church. They have been a favorite ever since. 1 cup butter, softened 1-1/2 cups sugar 2 eggs 2-3/4 cups all-purpose flour 2 tsp. cream of tartar 1 tsp. baking soda 1/4 tsp. salt 2 Tbls. sugar 2 tsp. ground cinnamon

___________________________________________________________ You don’t have to spend a fortune at the mall for a perfect Christmas gift when you have these goodies to present in a pretty tin. If I don’t give these nutty treats away to friends each year, they would surely notice. I make this recipe several times over the holidays. 2-1/4 cups all-purpose flour 1 cup sugar 1 cup butter, softened 2 egg yolks

Preheat oven to 400 degrees. Cream together butter, sugar and eggs. Blend in the flour, cream of tartar, baking soda and salt. Shape dough by rounded spoonfuls into balls. Mix the sugar and the cinnamon. Roll balls of dough in mixture. Flatten a little and place 2 inches apart on ungreased baking sheets. Bake 7 minutes or until set, but not too hard. Remove immediately from baking sheets. Makes 8 dozen. Lisa Rapp | Oakville

FILLING: 4 eggs 2 cups finely ground walnuts 1-1/3 cups sugar 1 tsp. vanilla extract powdered sugar In a mixing bowl, combine flour and sugar. Beat in butter and egg yolks. Press into an ungreased 15 by 10 inch baking pan. For filling, in a bowl, beat eggs. Stir in the walnuts, sugar and vanilla. Pour over the crust. Bake at 300 degrees for 55-60 minutes or until lightly browned. Cool completely on a wire rack. Dust with powdered sugar. Cut into bars. Makes 6 dozen. Carol White | Sunset Hills
