CONCEPT This year we’re exceptionally proud of our Turkey Paupiettes prepared in-house by our butchery team. These offer festive diners a break from sliced Turkey and are fantastic from a presentation point of view.
Use as a single main course portion for a great festive main course solution. At £2.69 it gives you the opportunity to return a substantial profit. Use the Paupiettes in a set menu over the Christmas period, especially taking into consideration the benefits of portion control and labour saving costs.
For a smaller portion sliced turkey will deliver three 70g portions giving a £0.90 portion and excellent plate coverage. Why not try slicing the paupiette on the diagonal and serving vertically for added visual impact while increasing gross profit.
Cooked and thinly sliced the turkey offers an innovative Sandwich filling for the perfect festive product, pair it with a red cabbage slaw or cranberry mayo. One paupiette will deliver 5 portions at 40g per portion with a cost of 0.54p.

INGREDIENTS Serves 12
• 400g (14oz) Mixed Fruit 142101 • 75g (2.5oz) Dried Cranberries 143231 • A mug of Strong Black Tea or a mug of Kombucha (Fermented Tea)
FESTIVE BARA BRITH SERVED WITH VANILLA ICE-CREAM This densely rich and fruity tea bread can be made in advance then sliced, toasted or warmed on a tray in the oven before serving with luxury vanilla ice-cream. This is an indulgent alternative to Christmas pudding that can be served with a festive afternoon tea, with a glass of sherry or mulled wine. 1) Mix together the dried fruit, and cranberries 7) Drain any excess tea from the fruit, mix in a large bowl and then pour the hot tea over. in the flour, sugar, spices and tangerine pith together then stir in the fruit, butter mix, milk 2) Cover with cling film and leave to soak and tot of brandy until evenly combined. overnight. 3) Heat oven to 180 degrees centigrade or gas 4.
8) The mix should softly drop from the spoon - add more milk if needed.
5) Melt butter, marmalade and mincemeat together in a pan. Leave to cool for 5 minutes.
9) Spoon into the tin and level the top. Sprinkle with the crushed sugar cubes or granulated sugar and bake for 1 -1.25 hours until dark golden brown and an inserted skewer comes out clean.
6) Beat in the eggs and tot of brandy.
10) Leave to cool in the tin and serve sliced.
4) Butter and line the bottom of a 900g (2lb) loaf tin with baking parchment.
