There is little difference between a Brussels sprouts stalk and loose Brussels sprouts. The Brussels sprouts stalk is edible, but requires longer cooking to generate favourable flavour and texture. The best methods for cooking sprouts are braising, baking, grilling or pan-roasting.
The smallest and sweetest variety of tangerine with a sweet and tangy taste, they contain no seeds and are recognisable by loose, baggy bright orange skin. They are a hybrid between a mandarin orange and a sweet orange.

Eat, drink and be merry! We all know how important Christmas trade is to the foodservice sector. It is seen by many as the busiest time of year and is arguably the most challenging, it is therefore essential that you get it right for your customers. Few operators this year will be dreaming of a white Christmas, but plenty will be dreaming of making a profit. So how can you make sure that your Christmas does just that? Bringing customers through your doors is the absolute key in the first instance, however ensuring that they have a memorable experience is essential to not only keeping their custom and maintaining your reputation, but is an opportunity to build your long term customer base.
How to get customers through the door 1. Check your diary and see which days the key dates fall on. This will have a big impact on trade. 2. Consider your geographical location. Major cities often ’empty out’ over the holidays as people return home for Christmas and New Year. Make sure your festivities start early enough to catch them before they leave. 3. Start thinking about your rotas. Don’t miss out on revenue because you’re short staffed. 4. Christmas parties are great for boosting sales. Make sure you have all the key information ready for enquirers (cost per head, quantity of items, what they can choose from). Our buffet concepts on page 28 and 29 of the Christmas brochure are perfect for easy planning. 5. Create an offer that fits. Be realistic about your target market and create an offer that appeals to them. Christmas is about luxury and indulgence but many companies and people will be on a much tighter budget this year. 6. Atmosphere is free! Think of ways of creating a great atmosphere on a tight budget. Music and the odd free glass of mulled wine usually gets people in the mood. 7. Communicate your plan. Make sure your posters, menus, website and table talkers all communicate your plans effectively. Make it easy for your customers to find out more or make a booking.
Inviting them back If Christmas is tough, then January is tougher, but for different reasons. Get the service and the quality right and your customers will be happy. Quality is the main driver for customer return. If they experience quality, then they will remember it, talk about it and will come back; broadening your long term customer base. 6
