Celebrating the 74th Anniversary Independence Day Commemoration in Coronado
It is my honor to serve as president of Coronado Fourth of July this year, continuing an event made annual in 1948. My primary goals as president have been to build up the Fourth of July in Coronado to be the world class event that the Coronado community deserves and to honor the legacies of those who came before us in the organization, most notably the Szymanski and Laing families. While there is always work to do, I am confident that CFOJ is on the right track.
Fellow CFOJ board members Carrie Downey, Bridgette Jorgenson, Maggie Hannegan, Judy and Doug Clarke, Jennifer Stein, Jamie Hartnett, Andrew Gade, Kathy Summers, Dave Szymanski, Debbie Balsley and Lori Luhnow, along with many other contributors and volunteers, are thrilled to keep this beloved tradition alive and thriving. This year, I would like to especially recognize the efforts of past board members Todd Tanghe, Robb Huff and Kraig Nicolls — without them, CFOJ could not have revitalized the Fourth of July in Coronado.
I was born here, so my love for the Fourth of July in Coronado is almost innate. My family also has an extensive history of community service in Coronado, ranging from church to Little League to the Scouts to the 20/30 and Woman’s Clubs to the Optimist Club. It was only natural for me to start volunteering to help the prior
Fourth of July Committee, starting in 2005 with grandstands and military dignitaries. I still help with these aspects today, but I am most proud of being the driving force behind bringing the Leap Frogs back to the Fourth in 2020, when they hadn’t performed here since 9/11.
Because funding is limited, our Fourth of July events would not be possible without our community’s generous support. If you enjoy the largest, most exciting, free one-day event in Coronado — our signature parade with preparade entertainment, Navy Leap Frogs Aerial Demonstration, live multi-performer Concert and closing fireworks spectacular — please consider donating so we can keep this going and make it even better heading into our 75th Anniversary in 2024. Last year, through your support, we were able to add an announcer station (we now have one on every block), pre-parade entertainment and a concert.
So, come celebrate our community, our military and most of all, America! Coronado Fourth of July Parade Volunteers

We’re pretty sure the Sylvester family could coin a new phrase: “The family that volunteers together, stays together.” This big local family has been volunteering their time and talent as announcers for the Fourth of July Parade for decades now, and have earned local celebrity status because of it. Three households — Sylvester, Sylvester and Huff, who are all related as uncles, aunts and cousins — set an example for all of us as active community builders. We thought we’d switch up the roles and let us do the announcing to recognize their years of service that have helped make the Fourth of July so much more special for us all.

We got the chance to ask Maureen Sylvester and her daughter, Grace, all about their family’s experiences as announcers for the parade.

How long has your family lived in Coronado and/or been part of the community here?
Maureen: Because we are a Navy family, we have lived here off and on since 1993. I was initially stationed in San Diego with the Navy in 1992, met Todd here in 1993 and married several years later before moving together to Bahrain. In 1999 we returned, and our immediate family has been in Coronado since then, with a few diverts to Washington DC and Pensacola.
As for the rest of the family, Tyler Sylvester, Todd’s brother, arrived in 1997 after graduating college. He slept on Todd’s couch while I was deployed. The boys’ mother, Cheryl Sylvester, moved from New Hampshire shortly thereafter, making the entire Sylvester family official Coronado residents. Tyler met Chelsea Henry Zoll — daughter of Sally and Jim Zoll and a native Coronadoan — and they were married in 2005. Since then, they have had two children, Quentin (16) and Shane (13).
Robb Huff has lived here with his wife, Carmen, since the late 1970s. Their son, Tyler Huff, another announcer, grew up in Coronado and is now married with a little boy. Tineka, their daughter, is also married and has two little ones running around the streets of Coronado as well. How many people have volunteered as announcers within your family?
Maureen: All five of our family members have been announcers. It began with Todd and Grace, then Todd was assisted by

Did you grow up watching the parade and attending festivities on the Fourth of July? If so, explain what this tradition means to you.
Grace: I watched the parade every year growing up and could not have asked for a better experience for the Fourth of July. It’s truly Americans celebrating America.

This tradition to me means family; it's the gathering of those you love honoring their common history and values. The colors red, white and blue are celebrated, with citizens decked out from their heads to their shoelaces on the main street of Coronado. The Fourth of July celebration in Coronado is often thought to be about tourists and visitors, but in reality, it is more about the Coronado community than anything else. The Fourth of July parade is made for Coronadoans, by fellow Coronadoans to celebrate freedom.
Why did you decide to volunteer as an announcer for the Fourth of July Parade?
Grace: When you’re in the family of my uncle Robb Huff, a man who has been announcing in front of the Coronado Library for over 30 years and started with cassette tapes and his own sound system, you do not volunteer to be an announcer — you’re voluntold.
My father, Todd Sylvester, started our family booth in 2015 when he corralled my siblings and me into being the deejays, swag givers and question takers. My mother joined us in 2016 after her geo-bach tour as the Commanding Officer at Corry Station in Pensacola and she was quickly drafted into the team.
My uncle, Tyler Sylvester, secured his station in 2017 and has brought my cousins into filling the deejay and swag roles for him.
Tyler Huff also hosts his own station and has held the position since his dad, Robb, allowed him to move on from being Robb’s assistant in 2015.
What is your favorite part about being an official announcer?
Grace: The sense of community an announcer creates. An announcer is not there for themselves; they are there to contribute to the joy that is the Coronado Fourth of July. An announcer is there to make sure Coronado knows just how

amazing the Fourth of July is, and why we celebrate it.
Another thing is the excitement of all generations. From the children (and adults) drawing “poop circles” in the street to the young families eagerly awaiting the floats and clowns throwing candy, it feels as if the entire community is content with living in just that moment. (“Poop circles” are drawn in chalk before the parade, and if a horse poops in your circle, you win!)
For those of you who have been doing this for many years, what has changed for the better over the years, and is there anything you miss? Maybe something we used to do that you wish would make a comeback?
Grace: If you ask my Uncle Robb, he would tell you he is incredibly thankful they brought in music mixers which replaced cassette players, even though those hold the golden era tunes for his mixes.
Truthfully, for the better, the announcer stages have gotten taller and wider and provided more amplification for those down the block to hear what is in the parade. My dad has a rule that you must not announce what entry is in the parade until it is in front of the booth itself, which does make things easier when you are trying to queue up the song assigned to the entry, mark the entry number and see if that entry has won any of the same day awards.
Maureen: I love that people still flock to the curbs to set up their chairs and picnics, talking and laughing while they wait for the parade. It’s not just the parade itself but the whole experience of gathering together. We also love the people who go all out in their dress and glitter and makeup. It’s always fun to see people walk by who have really put an effort in.

Do you have any fun stories, memories or highlights of this job you'd like to share?
Grace: In the summer of 2018, there was a large lull in the parade, so long that you would have thought it was over. After seeing the prior entry, over 10 minutes had passed and the other announcers did not know what was going on or if the parade had just ended abruptly. People were starting to pack up, and that was distressing because there was still a good portion of the parade to come. So, I took to the street; with my sister as the deejay playing “The Cupid Shuffle,” I started dancing and slowly people joined me. At
first it was only one or two, then within a minute, the street was packed with all ages. Young and old were stepping and kicking to the beat. As the song came to an end, the parade began to flow down the street once again. It turns out one of the motor cars had broken down, but I like to think it was a serendipitous opportunity to bring the community closer together. Since then, we have done the Cupid Shuffle at least once every Fourth of July, as well as “Cotton Eyed Joe” and many other easy-to-learn dance songs. The point is not to know the dance, but to just get up and dance!

What is your favorite part about being an announcer and why is this job special to you?
Grace: I must sound like a broken record, but it really is about allowing people to feel a sense of community and love on the Fourth of July. When I stand up there surrounded by my family, dancing my way through each entry and waving as they pass, I feel as if the world has stopped in its day-to-day division and is instead focused on what unites us.
Do you have any advice or words of encouragement for anyone who is interested in volunteering as an announcer?
Grace: The position is not about you — but that’s the best part. As an announcer, you provide a sense of joyful community: music, laughter, guidance. My best advice is to have your music ready, practice all the names and organizations, understand the flag protocols and know you’ll never be perfect, but as long as you love where you are and what you are doing — you're going to do just fine.
Is there anything else you'd like to share?
Grace: A sense of community and love are obvious during the Fourth of July. During times like this, we should set down our differences and come together to remember that we are all Americans. Coronado’s Fourth of July celebration aims to embody that feeling and much more — so I hope to see you in your Red, White and Blue out on Orange Avenue, embracing our community.
To anyone interested in volunteering, consider following this family’s example. Not only do they volunteer their time during the parade, they also help support our town throughout the year in many ways. Maureen says, “All of us try hard to be involved in this community we call home.” The Sylvester and Huff families are active in various civic groups like Optimist and Rotary and embody Coronado by being a part of the everyday community in a positive, fun and inspiring way.

Coronado Named a Top Meeting Destination in North America

Business owners, residents and meeting planners alike are celebrating Coronado’s recent designation as one of North America’s Top Meeting Destinations.
Steadily increasing its ranking, Coronado was recently named the 34th Top Meeting Destination in North America by Cvent, an industry-leading meetings, events and hospitality technology provider. This is the seventh year Coronado has been recognized as a Top Meeting Destination since Discover Coronado — the city's official destination marketing organization — was established in 2010.
The globally recognized Cvent Top Meeting Destinations lists evaluate and recognize cities that are successfully attracting meetings and events to their locales. Rankings are determined based on sourcing activity through the Cvent Supplier Network, one of the world’s largest venue-sourcing platforms, with more than 300,000 hotels, resorts and special event venues.
As pandemic restrictions ease and business travel has returned, destination marketing organizations like Discover Coronado have worked diligently to promote their cities and revive the industry as quickly as possible, and those efforts are paying off — nationally and regionally.
According to Todd Little, executive director of Discover Coronado, the organization has steadily improved its rankings since 2013, when it was ranked 43rd. “Our Destination Sales Director, Danielle Rossetto, and the group sales teams at our four Coronado resorts truly deserve this honor from Cvent," Little said.
A veteran of the meeting industry, Jessica Cunningham is a Coronado resident and a senior meeting planner with HelmsBriscoe, a highly regarded firm that books meetings and conventions around the world. She was elated to read the Cvent news, and says she often uses the company’s global sourcing platform. "It’s really exciting to see my little hometown top the charts for the industry in which I have grown my professional career. When I read that Coronado had made Cvent’s Top Meeting Destination list, I truly felt warm and fuzzy, like a proud relative. I know it sounds silly, but as a Coronado native, this town has my heart, and I see the impact — both as a resident and professional planner — that Discover Coronado’s work has had in helping to grow the local group meetings business,” she said. “Meeting attendees who visit our city oftentimes stay longer, bring their families, enjoy our community and visit many local shops and restaurants during their stay. With every meeting that comes to Coronado, our city’s economy, local businesses and global reputation get an important and valuable boost!"

company with a portfolio of distinct dining concepts, including Little Frenchie, The Islander, Village Pizzeria and MooTime Creamery.
“We are so excited to hear Coronado was voted as a Top Meeting Destination, as this type of group activity has a dramatic impact on Coronado businesses,” Spatafore said. “These conventioneers seemingly appear out of nowhere with their badges roaming Orange Avenue on foot. The pre-arranged group meals are most beneficial to businesses; we're able to plan ahead for flawless execution.”
Data continues to confirm the important impact of meetings and conventions on Coronado’s economy. “They are a vital source of economic support for all stakeholders, especially during the off-season between September and May,” Little said. “Our city’s livelihood relies on a robust, but carefully managed travel sector. Group meetings support 11% of local jobs and generate $8.2 million in local tax revenues for the City of Coronado.” Little noted that Coronado has especially improved its economy during the last year, following the lean years of the COVID-19 pandemic. “2022 was a very good year for Coronado, with the total economic impact of group travel sustaining 950 jobs and generating $8.2 million in local tax revenues,” he said.
According to Bharet Malhotra, Cvent senior vice president meetings, events and conventions bring significant value. The cities featured this year have convention & visitors bureaus and destination management companies that — like Discover Coronado — have embraced their role as destination advocates and have made hotel and planner engagement a priority.

Spreckels Center Effervesces with Summer Educational Opportunities
What better way to while away a sunny summer afternoon than taking in a game of Lawn Bowling or visiting with neighbors?

There is literally something for everyone at the John D. Spreckels Center this summer, with so many classes, activities and educational options that limiting your selections is next to impossible. In fact, to accommodate their robust calendar of options, Spreckels Center has expanded its hours and is now open Monday through Thursday from 8:30 am to 7:00 pm, and Friday from 8:30 am to 4:00 pm.
Brand new this year is an Art History class entitled “Highlights in Western Art.” Taught by Raymond Menegus, a distinguished art history teacher from the San Diego Museum of Art in Balboa Park, this class surveys the history of Western Art in four separate sessions, running Tuesdays, July 11, 18, 25 and August 1 from 11:00 am to 12:00 pm. Beginning with the Renaissance and Baroque periods, expanding from the 14th through 17th centuries, then on to Romanticism and Realism, followed by Impressionism and Post-Impression movements that led to the Modern Art era, this will not only enlighten but undoubtedly astound because of the breadth, depth and quality of classic pieces examined. Students have the option to sign up in advance for all four sessions ($12 resident, $17 non-resident) or walk in for one or more classes at $5 per class.

For those with an inkling to learn to sketch, plan to attend the Drawing Class held Fridays from noon to 2:00 pm on July 7, 14 and 28 with local artist Ed Roeder training aspiring artists in the fundamental techniques of drawing. His carefully curated curriculum teaches the basics of shapes and forms, and how they are used to construct images using lines, shading and other foundational artistic methods.
Beloved by his students, Ed Roeder has taught art classes at Spreckels Center since this LEED certified building’s opening in April 2017. Boasting a Bachelor of Arts degree in Graphic Design from SDSU, Roeder is also a Watts Atelier of the Arts trained talent with decades of professional experience. He started his career at DC Comics in La Jolla, an American comic book publisher and the flagship unit of DC Entertainment, a subsidiary of Warner Bros. Discovery. DC Comics is one of the largest and oldest American comic book companies, with their first comic under the DC banner published in 1937. Among their exclusive comic book characters are Superman, Batman, Aquaman and Wonder Woman.
Starting as a graphic designer, Roeder worked his way up the ladder to the prestigious position of DC Comics art director, serving in that capacity for eight years. He then went to work as the creative director for the Society for Financial Awareness (SOFA), where he excelled for several years in branding, marketing and public outreach. He currently teaches art classes throughout San Diego County, and in addition to the Spreckels Center, instructs students at the Chula Vista Recreation Center as well as nearby Southwestern College.

running Fridays, July 7, 14 and 28 from 2:00 to 4:00 pm. In August, watercolor aspirants have the option to take either Beginning or Immediate Watercolor on Friday afternoons, August 4, 11, 18 and 25.
As an accomplished watercolor, oil and gouachemedium painter himself, he notes that "while drawing and painting seem to be very different, artists use the same thought processes to work in both mediums.” His focus is always on the structural composition and foundational shapes of an image. He explains, “Painting and drawing are 100% problem solving.” He teaches a process whereby the artist learns to break down an image into its basic forms, then rebuild and manipulate those forms to create art. “Art is a fantastic way to learn problem solving skills, if taught that way,” he emphasizes, noting that the creative process is truly how to visualize, break down, build and reconstruct.
For those more interested in textile art, two exciting options are available this summer. The first is an ongoing Knitting Group that meets every Monday from 1:30 pm – 3:00 pm for yarn enthusiasts to share an afternoon of knitting, visit with fellow crafts-persons and share tips and techniques to make their individual projects more creative and enticing. Participants enjoy sharing patterns as well as procedural tips and advice, while learning from some of the more experienced knitters.
Better yet for the relatively inexperienced or novice, Summer Knit Nights are planned on Monday July 10, 17, 24 and 31 from 5:30 pm – 7:00 pm at Spreckels Center. This is a rare opportunity for yarn-crafters to share their current projects and receive input, suggestions and directions from more experienced knitters. Open to anyone aged 11 or older, this provides an excellent opportunity to share cross-generational information, while honing and developing one’s skills and encouraging the completion of personal projects.
For those with an interest in quilting and fabric, the Coronado Quilter’s Group offers a presentation on Wednesday, August 2 from 5:30 pm – 7:00 pm to learn about the fine art of quilting from highly accomplished quilt artists. Comprised of more than two dozen local quilters and fabric artists, the Coronado Quilter’s Group has been meeting once a month on Wednesday evenings since early in 2023 to share their love of this medium and learn tips and tricks from fellow artists. In fact, these fabric artisans currently have a quilt exhibit on display in the Spreckels Gallery adjacent to the main office of the center. Entitled “Piece by Piece,” this exhibition features 22 unique entries handmade by eight local quilters, including April Atkinson, Lori Doyle, Sue Gillingham, Katy Green, Lois Maxam, Quita Darnell Nass, Chris Sloan and Melissa Sloan Strodtbeck.
While all of the quilts on display are spectacular, each in their own way, one that truly stands out is a quilt commissioned by Doris Day when she was alive, celebrating and commemorating some of her many pet dogs. A lifelong lover of her various furry

Coronado Real Estate Association Unveils New Logo, Aims to Better Represent Its Mission

Representing Coronado’s finest and most trusted REALTORS®, Coronado Real Estate Association (CREA) promote business relationships with real estate professionals through networking, education, marketing, community service and events, protecting the interests and rights of Coronado and Imperial Beach property owners.
CREA has rebranded with a fresh new logo. The association's previous logo did not immediately communicate that the company was related to real estate, which led to the need for a more representative logo.
Creating a logo that accurately reflects CREA's mission and is easily recognizable to the community were the objectives. By
adding a house to the design, the association now has a clear representation of its involvement in the Coronado real estate industry. As a result, people in the community can quickly identify CREA and its role in serving the housing needs of the area.
"Our logo is an important symbol of who we are and what we stand for," said Debbie Giometti, president of CREA.
The new CREA logo was carefully designed to reflect the association's connection to the Coronado and Imperial Beach communities. The vintage design of the house in the logo is a nod to the older homes in the area and represents the association's commitment to preserving the unique character of the community. The shape of the logo,

resembling a life preserver, symbolizes safety and represents the nautical nature of the communities that CREA serves.
To design the new CREA logo, a committee was formed with Debby Baptiste, Remi Pieratt and John Bell. John Bell's daughter, Kate, a junior at Coronado High School who is taking visual art classes at COSA, offered to assist the committee in bringing their ideas to life. With her background in art and proficiency in software, Kate helped facilitate the design process by submitting their ideas to the graphic designer. John remarked that Kate has had a passion for art since preschool, and her skills and enthusiasm were instrumental in creating the new CREA logo. The collaboration between Kate, the committee and the graphic designer resulted in a logo that accurately represents CREA.
"Kate's contributions to the design process were invaluable, and we are immensely grateful for her efforts," said Giometti. "It's inspiring to see a local high school student like Kate make such a significant contribution to a professional association in her community.”
As part of the rebranding effort, CREA is excited to announce the launch of its new website and Instagram page, in addition to maintaining a presence on Facebook. The new online platforms will provide members and the community with easier access to information about CREA's services, events and news. We are a small community steeped in history, much dating back to the early 1900s as the village grew. Recently, when I was listening to a gentleman speak of the San Diego Police Department and its Senior Volunteer Patrol (SVP) Unit, I thought perhaps it was time to bring forth the history of the SVP unit of the Coronado Police Department (CPD).
You may not even be aware that there is such a group assisting the CPD, but this story began in 1995 when CPD Officer Kevin Shank approached his chief, telling him about the volunteer patrol unit in San Diego. After that conversation, the chief told Shank that he was free to work on developing an SVP program for Coronado. And that’s just what Shank did. He developed the procedures, classroom training,
field training, driving tests and general patrol for the day. With this all in place, he put out the word that a class would soon be taking place at the Coronado Police Department. Much to his surprise, he had 18 members in his first class. Even some 20 years later, several of these initial members were still volunteering as SVP. With 20 plus years of service, more than 150 volunteers have enrolled in the program and gone on to serve the community.
Over most years, the unit has maintained 40 active members who donate between 8,000 and 10,000 SVP hours. Based on the police department’s wage for the lowest paid officer, that would equate to over $300,000 annual savings to both the department and the city of Coronado.

The program has traditionally been supervised by one of the police officers in conjunction with an SVP board of five volunteers. They maintain a “call out team” for emergencies that is composed of members from different areas of Coronado, from the Cays to the village. Once trained for general patrol, the team becomes more familiar with what to watch for while on patrol. As time went on, that first class became more confident with what they were to do so that duties were added to their program. In the past 10 or so years, SVP members have been able to help out at the South Bay District Attorney’s Office one morning a week, freeing up a CPD detective who would have had to give their morning to the job. Members of the team, until Covid-19, worked two shifts a day with two members on each patrol.
One of the important SVP duties is making house call visits for residents who are out of town. This service has been offered for years now, up to 30 days at a time. SVP members have routinely patrolled the alleys in the city’s residential areas in hopes of preventing crime there. Many days they have been
called to assist at accident scenes, controlling traffic or diverting vehicles. On rare occasions, members of the call out team have assisted at crime scenes, sometimes spending a full day on site.
For all that they have done, and continue to do, SVP are honored each year by the Crime Commission of San Diego County. One member from each of the units, from Oceanside to the U.S.-Mexico border, Coronado to Alpine, is honored as senior volunteer of the year.
If you didn’t know anything about the Coronado SVP before, I do hope you now have some understanding of the role they play, both individually and as a group, in helping to keep our community safe.
In speaking with the program’s director, he said they are still looking for volunteers and will have another class, perhaps toward fall. Three Summer Sides to Kick-Start Grilling Season

Welcome to summer. It's grilling season, so time to dust off your coolers, fire up the grill and spend some time outdoors. We all have our favorite things to cook in the backyard. My mind races when I think of everything I want to cook this season. I lean towards the big event: homemade pizzas, paella and primal cuts of meat cooked low and slow. While I love to go big, no summer passes without a large helping of good old-fashioned backyard grilling.
I am talking hotdogs, hamburgers, brats and BBQ. These items are tattooed on my soul. The smoke from the grill embraces me in a warm hug that feels like family. While much focus is placed on what will take center stage on the grill, no performance would be complete without a strong cast of supporting actors; by this I mean the sides and specifically salads.
If you are looking for a standing ovation, and I hope you are, don't skimp and buy these sides at the store. Put some love and attention into your salads — your guests will thank you. Here are three of my favorite side salads that go with all the grilling classics.
Coleslaw is near and dear to my heart, and I am opinionated about it. My Dad’s recipe is basic but good: green cabbage, Duke’s mayonnaise, a squeeze of lemon, kosher salt and freshly ground pepper. If Mom was making it, she added a pinch of sugar. The simplicity made it shine.
It wasn't until I tried Chef Kenzo Inai’s pineapple coleslaw that I realized the potential of a kicked-up version of this salad. As the once banquet chef of the Hotel Del, he is no stranger to elevating flavors. The colors of his slaw are the first thing you notice — the purple and green cabbage, yellow pineapple and orange carrot immediately draw you in.
The apple cider vinegar Kenzo uses gives the slaw a tart punch, and then he softens things up with the sweetness of the honey and pineapple. While Dad’s slaw is perfect on a pulled pork or brisket sandwich, this pineapple slaw stands on its own as a genuinely remarkable side.
When making potato salad, there are so many to choose from. The rest of these salads contain mayonnaise, so let us give that ingredient a break in favor of some bacon grease. I like a good German potato salad with a vinaigrette dressing and for that, my Mutti would be proud. I use mini potatoes and cut them in half or quarters depending on the size. I prefer the version that uses
something other than thick potato slices, as they always break and get mushy.
Remember, when cooking potatoes for a salad, always start with cold water, then bring to a boil and cook until fork tender. If you start with boiling water, the outer portion of the potato will be mush by the time the center is cooked. My secret weapon that makes this salad unforgettable is pickled mustard seeds. They are like mustard caviar and pop with briny mustard flavor when you bite into one.
Broccoli salad did not use to be on my list of backyard favorites. I never would have thought to put broccoli in a salad. A chef that worked for me, Andy Pyle, suggested it for our deli case, and I reluctantly allowed him to make it. I thought it would sell poorly. Boy was I wrong this salad flew off the shelves and is now one of my favorite summer sides. The bacon, thinly sliced red onion and cranberries are a winning trio that is hard to beat. Refrain from using pre-shredded parmesan cheese in this salad or anything else. These pre-shredded cheeses are coated in cellulose made from wood pulp to draw out moisture and keep them from clumping — yuck!
Traditional mac salad is a classic. I love the kind you find in a good New York Style deli or, better yet, as part of a plate lunch on Hawaii's North Shore. The mac salad at the Islander in Coronado is an excellent example of those plate lunch memories. The chefs at Blue Bridge were nice enough to share their version with us. This recipe is the result of many mac salads that were sampled while in Hawaii. They nailed it!
Anyone can grill a burger or a dog if you are using good ingredients. The real money is in the sides, and a good salad can make a regular meal memorable. Summer is coming, so stock up on mayonnaise! Try something new — Duke's mayonnaise is available at Specialty Produce and The Wise Ox, or it can be ordered online from Amazon. Kewpie mayonnaise is now available at Boney’s. Go the extra mile and make the pickled mustard seeds, which are also great on deviled eggs. Here, I have provided David Chang’s recipe.

Ingredients
• 1 pound dried macaroni
• 10 Tablespoons of apple cider vinegar
• 3 cups mayonnaise (Best Foods or Kewpie*)
• ¾ cup whole milk
• ¼ cup of sugar
• 1.5 teaspoons ground black pepper
• 1 1/2 carrots, shredded
• ¼ small white onion diced
Directions
• Cook dried pasta using the instructions on the box. Water should be salted and taste like the ocean.
• Once cooked, drain and drizzle with olive oil to keep the pasta from sticking together. Place in the refrigerator for 30 minutes to cool.
• To a bowl, add all the other ingredients and mix.
• Once the pasta is cooled, mix it all. Garnish with thinly sliced green onions.
*Kewpie mayonnaise can now be purchased at Boney’s.
Pineapple Coleslaw

Ingredients
• 4 cups of green cabbage, shredded
• 1 cup of red cabbage, shredded
• ¼ cup of shredded carrot
• 1 cup of pineapple, small dice
Dressing
• 1 cup of mayonnaise (I like Duke’s or Kewpie)
• ¼ cup of apple cider vinegar
• ⅛ cup of honey
• 1 tablespoon of poppy seeds
Directions
• Mix the cabbage, carrot and pineapple in a bowl.
• In a separate bowl, whisk all of the dressing ingredients together.
• Pour the dressing over the coleslaw and toss everything.
• Place in the refrigerator for up to 24 hours.
Mútti’s German Potato Salad

Ingredients
• 3 pounds of small red new potatoes
• ¼ cup of red wine vinegar
• 3 Tablespoons of whole-grain Dijon mustard
• ½ cup of olive oil
• 6 scallions chopped
• ½ cup of chopped parsley
• ¼ cup of chopped dill
• 2 Tablespoons of pickled mustard seeds (This is my addition, not in Mom’s recipe)
• Kosher salt and freshly ground pepper to taste.
Directions
• Cook potatoes until tender, about 20 minutes. Start with cold water, then bring to a boil. Drain and cool, then cut in half.
• Combine the vinegar, mustard and mustard seeds in a bowl and slowly whisk in the olive oil.
• Add potatoes to the bowl and mix thoroughly while trying not to break the potatoes. Toss the scallions, parsley and dill. Salt and pepper to taste.

Pickled Mustard Seeds

Makes 1 cup
Ingredients
• 1 cup of yellow mustard seeds
• 1 ½ cups of water
• 1 ½ cups of rice wine vinegar
• 1/2 cup of sugar
• 1 Tablespoon of kosher salt
Directions
Combine everything in a small saucepan and bring to a gentle simmer. Cook, stirring often, until mustard seeds are plump and tender, about 45 minutes. If the mustard seeds look like they are drying out, add a little water to keep them submerged. Cool and store them in a covered container in the refrigerator. These will keep for months.
Broccoli Salad

Salad ingredients
• 2 pounds of broccoli crowns cut into small bitesized pieces
• 1 medium red onion sliced thin (I use a mandoline)
• ½ cup of toasted pine nuts
• 10 slices of bacon cooked in a pan until crisp; reserve the fat
• 1 cup of dried cranberries chopped
• ¾ cup of freshly shredded parmesan cheese (Don't use pre-shredded cheese)
Dressing ingredients
• 1.5 cups of mayonnaise (Duke’s or Kewpie)
• 2 tablespoons sugar
• 4 tablespoons Champagne vinegar
• 1 tablespoon reserved bacon fat
• Kosher salt and freshly ground pepper to taste
Directions Combine dressing ingredients in a bowl and whisk to combine. Add the rest of the ingredients and toss until well-coated.

The freedoms our star-spangled banner represents — the history, heartache and joy — swell our hearts with emotion. If you’ve noticed, we’re not a fan of publishing stock photography taken outside of Coronado readily available from some random website, and we rarely ever use it. We go to great lengths to make sure every image published in Crown City Magazine is taken in Coronado by locals and Coronado aficionados. This is a community magazine, and the artwork featured on its pages consistently reflect that. We feature local artists and photographers instead of stock images to make each issue a personalized keepsake for the community and to help support local artists.
