An adventure in Bangkok, the “City of Angels” will bring the sights, sounds and flavors of Thailand’s historic capital to guests’ fingertips including explorations into the city’s canals and river tributaries via motor launch. Visits to iconic monuments and sites include the Wat Traimit, also known as the “Temple of the Golden Buddha”, the Asiatique riverfront, Wat Arun – the “Temple of Dawn”, and the Grand Palace, adorned with murals, gilded spires and unique architectural design.
NORWEGIAN HAS THE EDGE An innovative program from Norwegian Cruise Line will invest $400 million over the next two years in what they are calling the Norwegian Edge and will include a full fleet refurbishment, a new culinary program and enhancements to two premier private island destinations. Enhancing the guest experience, the refurbishment includes complete restaurant makeovers, a fresh new look in public spaces, interactive digital signage and wayfinding technology, new teak flooring throughout outdoor spaces and upgrades to The Haven Courtyard and Sundeck on the cruise lines’ older vessels. The fleet will now offer upgraded complimentary restaurant menus and the addition of optional à la carte priced items in the main dining rooms. The Norwegian Dawn was the first ship to undergo this transformation and emerged earlier this year after receiving the Edge treatment. And there are further plans for the line’s privately-owned destinations including the development of the Caribbean’s premier resort-style experience at Harvest Caye launching this November in Belize, as well as on-going new features being added to the line’s private Bahamian island, Great Stirrup Cay.
PRINCESS OFFERS THE BEST OF ALASKA IN 2017 Next summer, six Princess Cruises’ ships will sail Alaska’s storied waters, offering multiple itinerary options, immersive onboard culinary and cultural experiences and more than 20 Land & Sea Vacation options for further exploring the 49th state’s vast wilderness. The Re-Imagination of the Disney Wonder

Guests of all ages will look forward to numerous enhancements when the Disney Wonder emerges from dry dock in November. New to the Oceaneer Club will be the Marvel Super Hero Academy, where kids will learn to channel their inner super powers in a series of interactions with their favorite Marvel super heroes through digital displays and live appearances. In Frozen Adventures, youngsters have fun with hands-on activities and in-person visits by Anna and Elsa. Other additions to the Oceaneer Club include Andy’s Room and It’s a Small World nursery. A new southern restaurant called Tiana’s Place – named after the titular character in The Princess and the Frog – will incorporate live jazz, swing and blues with the cuisine of the Louisiana bayou. Adult guests will be happy to find a new authentic British pub serving British and specialty beers and cocktails. Elsewhere on the ship, the spa, numerous lounges, restaurants and deck areas will also be refreshed and enhanced.
MSC Cruises has partnered with Cirque du Soleil to create the first-at-sea Cirque shows designed exclusively for the multimillion dollar entertainment and dining venues on the nextgeneration Meraviglia ships. It has also announced that the MSC Seaside, the first ship in the “Seaside” generation, is open for bookings. Set to debut in December 2017, the MSC Seaside will introduce a new “closer to the sea” concept – a unique 360 degree ocean-level promenade on Deck 8 with indoor/outdoor shops and restaurants, as well as a full buffet area and pool. The MSC Seaside will sail year-round from Miami on a wide range of eastern and western Caribbean itineraries. Just announced – the second of its Seaside-generation ships, set to come into service in June 2018 will be named MSC Seaview and will spend her inaugural season cruising the Western Mediterranean. Plus MSC Cruises’ latest announcement also involves their cooperative venture with the Bahamian government to create Ocean Cay MSC Marine Reserve, an exclusive marine reserve island experience in the Bahamas.

Many cruise lines are now considering cruises to and around Cuba and the new Carnival Corporation company, Fathom began offering seven-night trips between Miami and Cuba earlier this year, using the former P&O liner, the Adonia. These cultural exchange voyages feature visits to multiple locations in Cuba to enable more vacationers to experience Cuban society. Fathom travelers will be immersed in Cuban culture, visiting at least three ports on the island and all trips will include an orientation to the country’s history and customs and guided sessions with Fathom’s team will assist in sharing insights, ideas and opportunities about the future of cultural exchange travel to Cuba. On shore, guests will become involved in people-to-people artistic, educational and humanitarian experiences. Fathom is the first cruise line owned by an American mainstream cruise company to offer sailings to Cuba, with opportunities for guests to take part in humanitarian projects there. n our journey through life, many memorable times and moments are enhanced by our innate desire to taste, savor and enjoy and that’s a wonderful thing. Regent Seven Seas has just launched “the most luxurious ship in the world” with the arrival of the very glamorous and exquisite Seven Seas Explorer, which is truly magnificent. On board the Explorer you can dine in some stunning alternative restau rants such as their steakhouse, Prime 7, modeled after a gentleman’s private club in the heart of London. Not only is the décor enticing but the lengthy menu offers delicious cuisine. And a small cocktail bar at the entrance to the restaurant offers a pre-dinner aperitif in great style.

Innovation, imagination and delectable cuisine abound on an array of gorgeous cruise ships from some of the finest cruise lines in the industry. Also on Regent’s Explorer is a French restaurant named Chartreuse which is equally as fabulous as Prime 7 but which evokes a sense of Art Nouveau and a walk along a rainy cobblestone street in Paris. The food here is utterly fabulous and the sur roundings almost more so. Of course there are casual dining spots on this ship, a main restaurant called Compass Rose, a pan-Asian dining room named Pacific Rim and more. Just an example of the choices available to discerning guests who have a desire to en hance their dining experiences while at sea.

The newest Holland America ship, the ms Koningsdam, launched earlier this year to much acclaim has also increased its culinary offerings to exceptional reviews. A guest favorite is the very beautiful and à la carte gem of a restaurant named Sel de Mer. French cuisine with an emphasis on seafood, (their bouillabaisse is unbelievable) this is a dining experience of the highest degree and reservations are a must. Other spots on the ship are perennial
favorites such as the Pinnacle Grill and Tamarind. And of course the popular Culinary Arts Center by Food and Wine magazine, where guests are treated to a meal by the chefs who make it and serve it to you right there. They explain their menus, the way they cook and one can take photos and ask questions along the way. There is a choice of two menus on alternative nights and one also receives wine and some canapés as a part of the three course dinner – and for a very reasonable sum. Holland America has also launched a first on this ship with Blend by Château Ste Michelle, a tasting room experience where guests can blend their own wines from a variety of the winery’s grapes and then bottle it and take it back to your room or to dinner. A great idea and again at a reasonable cost considering one walks away with a bottle blended to one’s own palate.

Many cruise lines are now partnering with celebrity chefs and developing even more distinct cuisine options. Australian chef Curtis Stone has partnered with Princess Cruises and is offering his new way of dining at sea called SHARE. Keeping it simple and cooking with natural ingredients and a menu designed for people to sit together and share – in every way. Stories, laughter, conversation and of course, great food. Then there’s Michelin award-winning chef, America’s Thomas Keller of Per Se and French Laundry fame in Napa. Chef Keller is partnering with Seabourn and introducing restaurants on all of their ships with The Grill by Thomas Keller debuting on the brand new Seabourn Encore coming in December. Expanded dining and play options offer something for everyone on Carnival’s fabulous new Fun Ship. BY wallace immen
S
ure, there’s a hairy chest contest going on around Carnival Vista’s pool now, if you’re into that sort of thing. But I’m happier to be web surfing in a shady clam-shell chair on the quiet Serenity deck. This evening, I could join the beery crowd in a honky tonk piano lounge, or salsa with a mojito or two in a bar that makes me feel like I’m in Havana, or have an alchemist concoct a custom cocktail for me using fresh fruits and herbs. Discovering your own kind of bliss is the theme of Carnival’s newest ship. Vista is the longest and widest Fun Ship yet, with so many options for every taste that it’s remarkably easy to find a place on board that seems designed exclusively for you. It’s got a pub that brews its own beer, the only IMAX theater at sea, a bicycle race course suspended high above the ship and entire decks of restaurants, clubs and shops. The 4,000 guest ship’s extra width allowed the designers to create patios outside many of the restaurants for al fresco dining in the evening and relaxing in the shade during the day. New technology makes quick, reliable Wi-Fi available anywhere on the ship at reasonable prices. The experience starts in the atrium lobby as we board the ship, where a centerpiece three-story tall video display presents realistic scenes that slowly evolve hour by hour. By day, it may be a coral reef complete with stingrays and sharks or a tropical forest of flowers and butterflies.
By evening, the scene may transform into the starry sky or a huge martini with a skewer of olives on its edge. It’s a bit daunting to search for my suite in a corridor that’s so long you can’t quite see the end of it. Note to self: remember our suite is next to a mural of a palm tree that looks like all the other palm trees in the corridor. Our standard balcony suite has more character, with pine panelled walls and furniture upholstered in rich blues and golds that give it a den-like ambience. It’s ample in size and there’s plenty of closet and drawer space and the only flaw from my wife’s point of view is that you’d need to be six feet tall to use the magnifying mirror in the bath. By day, the ship is designed to lure guests out for sun and activity, so the upper decks sport innovative attractions. The standout is SkyRide, in which sleek pedal cars suspended on monorails loop high above the upper deck, giving guests roller coaster-like thrills along with stunning views. Other highlights are an exciting inner tube ride though a spiraling flume and a large WaterWorks splash park featuring a “dump bucket” that will pour 300 gallons of water onto those who willingly stand underneath.

The average age of Carnival’s cruise guests has always been among the youngest at sea and Vista is expected to see as many as 1,400 kids on a cruise during peak holiday and school break weeks from its home port of Miami. The ship has expanded programs for kids as young as 2 and teens up to 17 that continue until 1 a.m. Vista is catering to them with a deck of new Family Harbor Suites designed to accommodate up to five guests (with a curtained area to provide a little privacy for Mom and Dad). Another new category on Vista is a deck of Havana Suites (above left), decorated in lively tropical colors and featuring private patios (above right) whose furnishings include swing chairs for afternoon lounging.
Fahrenheit 555 steak house offers premium cuts of prime beef or lobster, enjoyed in a classic small restaurant ambiance. No one just turns in after dinner. There’s simply too much to do: from the Liquid Lounge with its LED video screens and special effects that add dimensions to the production numbers, to a late night adult-only comedy show to night clubs where its dancing room only. Vista’s also got a huge casino, and fortunately a good ventilation system, because smoking is still allowed anywhere on the gambling floor. Expect to see many of the innovations on Vista appear on other ships in Carnival’s fleet. “We see this ship as a new chapter for Carnival,” says Carnival’s President Christine Duffy. Vista demonstrates the increasing maturity of a line that grew from a party boat past to a cruise empire while providing ever wider options for an increasingly demanding audience. If you can’t find fun on this ship, you probably can’t find fun anywhere. n

It’s time to think about dinner. A hopping place for happy hour is Vista’s brew pub, the first on a North American cruise ship. The brew master is busily cooking up the next batch in copper kettles along the walls as you sample the three different styles, including a coffee-flavored Java stout. Vista demonstrates a trend where cruise guests want more flexibility in their dining times. The two-level Horizons supper club, for guests who want to choose when to dine, is twice as large as Reflections, the old school dining room which has fixed table assignments and dining at 6:00 or 8:15. The Details
More and more couples are choosing to leave the challenges and costs of a wedding at home behind, opting for sun, sea and sand for their nuptials. A few years ago, I attended my very first destination wedding and I was instantly converted. My step daughter Monica was marrying her fiancé, Andrew, and as soon as they became engaged over a Valentine’s Day weekend, it became clear they both had their hearts set on their dream wedding somewhere in the Caribbean. So, after browsing many websites and brochures, they chose a date and settled on Dreams Palm Beach, a lovely resort embracing the gorgeous white powder sand beach lined with towering royal palms in Punta Cana, the Dominican Republic. Family and friends were invited down for the week and our bride and groom planned to stay on for a second week’s honeymoon.

The Dream
The Dress I was delighted to have a chance to go on one of Monica’s many shopping expeditions for a wedding dress. We reminded ourselves that although the wedding was in late November, this dress would be worn on the beach in hot weather and clearly some of the more formal versions just would not look right. Monica tried on dozens of dresses (every bride’s prerogative!), with the process lasting weeks but finally, she found a lovely, simple strapless gown that was just perfect for nuptials in the tropics.
Through Monica, I observed the many benefits of a destination wedding. Once the wedding had been booked, the wedding package selected at the hotel and the travel arrangements set up so that guests could call in and make their arrangements with the travel agent, there was not a lot left to do until the week in Punta Cana itself. Many things went into their decision, including the availability of flights from different gateways for friends and family. Arrival dates and departures are also important. Of course, affordability for all was also a consideration. Most Caribbean and Mexican hotel companies and resorts now cater to weddings. They have wedding coordinators who help arrange everything; offering a variety of wedding packages to choose from, which incorporate everything from the actual venue within the resort, the location of the ceremony and the reception, the menu, the music, the photographer and the florist. So it’s really a breeze to find one that suits a couple’s preferences. And it has become a very big business. Although weddings take place year round in these resorts, November and May/June are especially busy. So it’s important to book the hotel and the ceremony itself well in advance as in many hotels it’s not unusual to see four or five weddings taking place in one day. But remember, many of these resorts are vast properties incorporating tropical gardens, several pools and miles of beach, with a variety of possibilities for both the ceremony and the reception. Monica and Andrew had chosen to have their wedding and the reception on the beach starting at 5 pm. Of course, there was a back-up plan in case of rain, and that judgement call would be made the evening before. I have to admit I did have my doubts about the beach in terms of everyone’s comfort but I could not have been more wrong.

The reception: Further back on the
Preparations: Monica’s day started early. She and her attendants were to spend hours in the hotel’s spa being pampered with a schedule for manicures, pedicures and hair appointments. She was given a special suite where she would then get dressed for the wedding, joined by her mother and bridesmaids. Andrew and his groomsmen, however, spent most of the day at the beach and pool along with the rest of the guests in our group – and best of all, there were no pre-wedding nerves or jitters on display in this truly relaxed atmosphere.
The consensus: We had all spent the better part of a week at the hotel, getting to know Monica and Andrew’s friends and catching up with friends and family who had come from all over. The happy couple made a point of having dinner with different family groups all week and we all agreed that a great time was had by all and I was most impressed with how idyllic it was. The guests had a wonderful holiday and witnessed a beautiful and romantic wedding ceremony in the tropics. The setting: As 5 pm approached, the hotel set up a beautiful little wedding canopy right near the water on an area of the beach often used for parties. The setting sun was behind us and gave the entire area a golden glow. There were white draped chairs arranged with a center aisle facing the canopy. This created a beautiful and romantic scene as the couple and their attendants walked down the aisle to stand on the white sand beach with the glow of the sunset providing the lighting. It could not have been a more magical setting for their vows, bathed in the golden glow of a setting sun against a backdrop of the blue Caribbean Sea. I don’t usually cry at weddings, but this scene brought a lump to my throat. It really was perfect and they looked so happy.

The Day
beach, a bar, DJ and tables had been set up, along with a dance floor. As darkness descended, we had a candlelight dinner followed by speeches, music and dancing. The warm tropical air and gentle off-shore breeze afforded us perfect comfort. Everyone was relaxed and happy. There were cocktails, a buffet dinner, speeches, and then the dancing began. By this time, nearly everyone had kicked off their shoes and sandals – so different from the more formal weddings I’ve so often attended.

Just about everything is included – all drinks, including premium cocktails, liquor, fine wines, coffees and bottled water, and of course the free-flowing champagne! Silver Spirit offers a wide variety of cuisine and special culinary offerings, most notably in the Relais & Châteaux inspired Le Champagne which is a superb dining experience, in every way. From the choice of dishes, the service and atmosphere – everything is delectable. Wine pairings are offered and recommended at an additional charge for each course or you may simply enjoy the house wines chosen for you. As the room is very small, it is often booked well before the cruise even sails, so reservations are a must and the small charge to dine here is more than worth it. What I love most about this spot is the chance for al-fresco dining at the aft of the ship – something we took advantage of frequently in the warm Mediterranean climate. The choices are extensive for lunch with a wide variety of hot and cold options, but the Italian-themed dinners are a treat – all the delicious favorites you could wish for.

I
am leaning on my balcony railing on the Disney Wonder soaking up the beauty as we sail north from Vancouver toward the Inside Passage of Alaska. The twilight lingers, casting a golden glow on the densely treed shore; the stony beaches are scattered with driftwood; the sea is calm. It is majestic. I call to my granddaughters Molly and Ella, aged eight and six to come and see the scenery. They step out to the balcony, give a quick look, and return to their video games. I should know better. Kids are not awed by majestic scenery. However… give them Minnie Mouse skipping through the atrium and ‘awe’ barely describes their reaction. This is precisely why a Disney cruise to Alaska is the perfect solution for extended family. It is just after the summer solstice at the end of June and four of us (my daughter Aimee and her two daughters) have embarked on a cruise that will take us north to Skagway and then back to both Juneau and Ketchikan. The goal of Disney is to make every guest of every age feel that the cruise experience is geared for his or her personal enjoyment. With a destination like Alaska that’s easy. Adults get to immerse themselves in the eye-popping natural beauty, with the added bonus of lively lectures from an onboard naturalist who enlightens us about melting glaciers and native wildlife. The shore excursions cater to all ages and focus on family-friendly local activities like rainforest hikes, gold panning, salmon bakes, and whale watching. On board, there is fun, fun, fun for everyone – including a grandmother like me whose fun involved escaping with my book and picking up a cappuccino in the Quiet Cove (adults only) part of the ship. Our first day was spent at sea which was ideal because it gave us time to get our bearings. The Disney Wonder holds 2400 guests, but, despite the size, she resembles a sleek ocean liner
with art nouveau décor and handsome wooden decks that make her feel elegant rather than grandiose. Clever planning includes separate environments for various age groups and plenty of kidfriendly areas like Goofy’s sports deck with basketball, table tennis and foosball. The Oceaneer Club for three to ten year-olds was such a hit with my granddaughters we had to drag them away on several occasions. Our verandah stateroom was spacious enough that four of us were able to easily cohabit. Tailored especially for families, it featured a king-size bed and separate sitting area. The divided washrooms had a sink and toilet in one room and shower and sink in the other, which eased our morning routines, and at night, the sitting area transformed into bunk beds for the girls. The crisp nautical motif, and wood details made us feel that we were sailing aboard a personal yacht. My image of Alaska as snowbound and foggy was soon dispelled as we sailed into Skagway under blue skies on a summerhot morning. Our ship moored right in the historic town, once the starting point of the famous Chilkoot Pass where many lost their lives in the search for gold. Wondering why I had packed so much fleece we headed off in t-shirts for our port adventure. We had chosen “The Klondike Family Challenge” which gave us a little taste of everything that happens, or did happen, here. We panned ‘successfully’ for gold and nailed our prospector’s stake to the wall; we descended into a cold chamber to experience what 40 below zero feels like and we met Matt, the resident musher, and learned about the Iditarod, the 1000 mile Anchorage to Nome dog sled race. Molly and Ella were able to hold some of his new puppies as he told us he had completed four of these grueling races that involve teams of 16 dogs and last for up to 15 days in sub-zero weather. “That,” he laughed, “is a lot of time looking at dog’s bums.”

When we reached Juneau, our summer weather turned to fog and drizzle for the 13-mile coach journey to the famous Mendenhall Glacier. Most of our group chose to remain in the visitors center and look at the glacier through the windows but the four of us hiked along the lakeside path, through misty sprucescented air, until we reached the stunning waterfall and mystical blue glacier. Later, our appetites keen, we ended the port adventure with a traditional Alaska bake where we feasted on wild sockeye salmon cooked on an open grill and watched bald eagles making lazy sweeps overhead. This chance to see bald eagles and other wildlife (sea lions, moose, porpoises, bears) in a natural environment is a highlight of any Alaska cruise. Perhaps, our most dramatic encounter took place in Ketchikan where, again, we had unusually warm weather. We had signed up for a Rainforest Island Adventure which involved boarding a Seahawk Zodiac for the trip out to Bretton Island and a guided walk through a rainforest. On the way back our boat captain made a sudden u-turn and shouted, “Whales! A pod of Orcas!” He cut the motors and we watched immense black dorsal fins rise from the sea. For fifteen minutes we sat spellbound as nine whales performed … leaping, spouting and playing in the waves close enough that we could almost touch them. Many of the wonderful experiences on this Disney cruise had to do with the ship itself; the stunningly friendly staff, the professional level of entertainment in the theaters, and most surprising to me, the sophisticated, upscale food served in the dining rooms. Many of the wonderful experiences on this Disney cruise had to do with the ship itself, the friendly staff, professional entertainment and the upscale food in the dining rooms.
and gourmet delicacies like juniper-spiced elk tenderloin, filet of beef and Arctic char. Every meal was a treat for the adults and even if the children ordered chicken fingers they were served fresh vegetables and fruit, a fact that pleased my daughter. We also appreciated the unique Disney feature of rotational dining, which meant that as we moved from one restaurant to another, our wonderful serving team moved and bonded with us. My fondest memory of this Disney experience is the day we sailed up Tracy Arm Fjord, a long, narrow inlet in the Tongass National Forest. Somehow, our large ship was able to weave through channels of glassy turquoise seawater dotted with icebergs. We passed harbor seals and their pups basking on icebergs seemingly undaunted by our massive presence. All was silent on board; all sound systems turned off, except for the whispered narration of Doug, the resident naturalist. Up on the top deck, the crew handed out hot chocolate and warm blankets and the four of us snuggled on deck chairs and looked out on the majestic scenery. Nobody saying a word. Thanks to the innovation in tech nology, guests who do not have the budget for a balcony stateroom can now enjoy an oceanview in an inside stateroom. Royal Caribbean intro duced the “virtual balcony” onboard Quantum of the Seas in 2014. Consist ing of a full-length, high resolution screen against the stateroom wall, what’s happening outside is streamed live from the ship’s cameras, creating a moving image while the ship is at sea. But Disney Cruise Line was actu ally the first to pioneer this concept in 2011. Called Magical Portholes, they also include surprise visits by Disney characters appearing in the window.
Cruise lines continue to strive for oneupmanship on their onboard activities. For those looking for an adrenaline rush, there certainly is no shortage of fun. Guests sailing on Norwegian Cruise Line can test their endurance on a challenging ropes course, complete with an 8-foot plank walk. Onboard the new Carnival Vista, guests can pedal the SkyRide along a track suspended 150 feet above sea level. The newest attraction on the high seas though, is the Ultimate Abyss slide, onboard Royal Caribbean’s Harmony of the Seas. The 100-foot drop, over 10 decks is definitely not for the faint of heart.

It’s easy being green Hotels around the world are looking to reduce carbon footprint without compromising the guest’s experience. Along with recycling, water conservation and energy-saving practices, some hotels are awarding spending credits or loyalty points for guests who volunteer to bypass daily housekeeping. Innovations include over-sized windows for natural lighting, living walls and green roofs, natural building materials, vegetable and herb gardens and even in-house beehives that are producing sustainable ingredients for the hotel kitchens, along with efforts to use locally grown food. Environmentally green bath amenities and cleaning products are also ways hotels are becoming more sustainable.

As travelers seek new experiences and cross off bucket lists, a number of cruise lines are steering them towards luxury yachting. Their message: expedition cruising can be a six-star experience. Witness the aggressive growth in this area: Crystal Cruises and Scenic Cruises have both ordered polar class mega yachts, outfitted with luxury suites, helicopters and submersibles. French expedition line Ponant is adding four new vessels, almost doubling its existing fleet. And Celebrity Cruises has expanded its Galápagos program with two additional yachts. The world is your oyster, and on a luxury expedition yacht, it also comes with champagne.
With the rise of popularity in river cruising, ship design has come a long way in the last five years. The biggest focus has been on the accommodations. Beds that face the window provide everchanging views, brought to you by Avalon Waterways. Open-air balconies, as well as full-size balconies are now the norm. There are even innovative loft sitting areas that make windowed staterooms feel suite-like. Innovations continue up on deck. Specialty restaurants and swimming pools are now common on new vessels, the latter of which can be covered and converted to usable deck space for entertainment or even movies at night.
Voluntourism, or impact travel, has existed for several decades, but lately has been rising to the forefront, as the new generation of travelers are now wanting to give back to the communities they visit while on holiday. A number of non-profit organizations offer short and long-term programs abroad, with projects including manual labor, teaching, social work, environmental conservation and more, while immersing in local culture. Participants return home with life-changing experiences and meaningful personal growth. A new cruise line; Fathom, sails from Miami and is now also offering voluntourism cruises to Cuba and the Dominican Republic.
