I haven’t done gift guides in years, but I polled you on Stories and they were the number one thing you requested. I know many of you want to make the holidays extra special this year just with everything that has gone on in 2020, and I have to say, I’m here for it! THE BEST VEGAN APPLE CRISP. Adapted from Minimalist Baker Ingredients
Filling
8 medium-large apples (4 tart, 4 sweet) 1 lemon, juiced 2/3 cup cane sugar 1 1/2 tsp ground cinnamon 3 Tbsp cornstarch 1/4 cup apple juice
Instructions
Topping
1. Preheat oven to 350 degrees 2. Peel apples, quarter, remove cores, and use a paring knife to thinly slice lengthwise. 3. Add to a large mixing bowl and top with remaining filling ingredients. Toss to combine. Add to a 9x13 baking dish. 4. Rinse and wipe out your mixing bowl and add all topping ingredients. Stir to combine, then use fingers to break down any clumps of muscovado sugar. Pour over apples in an even layer. 5. Bake for 50 minutes to 1 hour (uncovered) or until the filling is bubbly, the apples are very fork tender (especially in the center of the dish), and the topping is deep golden brown. 6. Let rest at least 30 minutes before serving. We eat ours with non-dairy vanilla ice cream and it’s EVERYTHING! 7. Best when fresh, though leftovers keep covered in the refrigerator up to 3 days, or in the freezer up to 1 month. Reheat in the microwave or in a 350-degree F oven until warmed through.

Staying in pajamas all day on Christmas day and just lounging at home with family. A new tradition we’ve done with Harper that I love is going to dinner and then going to see Zoo lights with family.

My favorite holiday tradition (though it might be basic!) is baking homemade Christmas cookies with my grandma. She might as well be an expert baker. We make sugar cookies shaped like candy canes, Christmas trees, and Santa all from scratch. They’re perfectly frosted to look just as good as they taste. Every year, I get excited to spend time with her doing something we both enjoy.

One of my favorite holiday traditions is going to church in Oregon on Christmas Eve. The service is held outside at night so you have to bundle up really, really well! They deck out the trees with thousands and thousands of white lights and set up bonfires. The other tradition I absolutely love is venturing out to my local Christmas tree farm to search for the perfect tree. Oh and I also love a great smelling Christmas candle accompanied by some good ole holiday tunes!

Out of all holiday traditions I love to get dressed in matching pajamas on Christmas morning and have a peppermint latte. This year will be extra special as we have a new addition to our growing family.
