In a large bowl, combine apples, sugar, flour, lemon juice, cinnamon, and nutmeg. Line the pie with one pastry round; trim even with the rim. Add filling; dot with butter. Roll remaining pastry to a 1/8-in.-thick (3-mm-) circle. Place overfilling. Trim, seal, and flute edge. Cut slits in the top.
Bake for 25 minutes. Reduce oven to 350 degrees F (175 degrees C); bake for 40-50 minutes longer or until the crust turns golden brown and the filling is bubbly. Cool on a wire rack for 2 hours before serving.
