Madeira, while it is technically a fortified Portuguese wine, is actually a very American drink.
It was a favorite of Thomas Jefferson, and was used to toast the signing of the Declaration of Independence – a big factor being it was the only wine that could come to the colonies without passing through Great Britain first.

So in the spirit of Thanksgiving and in homage to our ancestors, we felt Madeira should be the next after-dinner drink we highlight in our fortified wine series. If you missed our October issue, we highlighted port and its rise to fame as well as its staying power today. Named for the volcanic island off the coast of Morocco from which it comes, Madeira is unlike any other fortified wine. It stands out for being incredibly shelf stable, even after a bottle has been opened for some time, a result of being heated or baked during the manufacturing process. www.GR8FOOD.net
Back in the 18th century, the heating of the wine was a happy accident. As the ships traveled through the tropics, the hold of the ships would become intensely hot, baking the liquid-filled casks which really transformed the wine. Shipping companies realized heating Madeira significantly improved the wine, bringing out fascinating flavors of roasted nuts, stewed fruit, caramel, and toffee – and ever since, heating Madeira has been an essential part of the winemaking process. Because it has a naturally high level of acidity and high alcohol content, Madeira can also age longer than any other wine in the world without the risk of damage.

Like sherry, there can be dry and sweet styles of Madeira. Sercial Madeira is dry, Verdelho is medium dry, Bual is medium sweet and Mamsey is sweet, each named after the corresponding white grape used in Madeira production. Madeira that’s on the sweet side is commonly consumed as a digestif to help aid digestion after a meal.
Kind of like port, distilled grape spirits are added to Madeira at different stages in the fermenting process to create different flavor profiles. The point in the timeline of the winemaking process at which those grape spirits are added, determines whether it’s a sweeter or drier style of wine.

4 FUN FACTS ABOUT DIGESTIFS If you want it drier, the skins are removed from the grape, and distilled grape spirits are added closer to the end of fermentation. If you are making sweeter Madeira, the skins of the grapes are left on, and the wine is fortified earlier in the process so that a residual sweetness from the natural sugar of the grapes lingers. Fashions are fickle, and over time society shifted from ready acceptance of overindulgence in strong spirits toward one of temperance.

Digestifs were an herbal remedy first to aid in digestion and then became popular as an after-dinner drink. Some say herb-based digestives offer the best results, such as Jaegermeister, Chartreuse and Fernet Branca, which feature caraway, fennel and savory among other herbs. Alcohol consumption triggers your body to produce more stomach acid than normal to help you digest your food more quickly.

In the late 19th century, it became unpopular to drink in excess in fashionable society, which led to a gradual decline in demand for strong fortified wines. Now they are definitely coming back into style in in the U.S., particularly mixed in cocktails, and are widespread in Europe. Never tried it? WHY CELEBRATE END OF PROHIBITION? It took roughly 26 years for the temperance movement to gain ground and push for the nationwide ban of alcohol, and about half as much time for that ban to be done away with completely. IIn the U.S., Americans like their drink. A lot. For those who don’t know much about Prohibition, the Cliff Notes version is that drinking was pretty widespread and, for some, out of control, so social progressives and religious reformists felt alcohol needed to be eradicated completely. Preachers gave sermons on the evils of alcohol, women’s temperance groups would protest and sing hymns at saloons and drugstores (drugs were bad too and many had an alcoholic base), and in 1900 in Kiowa, Kansas, there was even a crusade to smash up saloons that lasted for 10 years. Slowly, states began individually banning the

manufacture and sale of alcohol until the federal government ratified the 18th amendment – a nationwide constitutional ban on the production, importation, transportation and sale of alcoholic beverages. Depending on which state you lived in, you might still be able to drink at home, but forget about doing it at a bar… at least legally. American’s didn’t take the loss of strong drink sitting down, and were quite industrious and flagrant in their disregard for Prohibition.

You all know about speakeasies and the secret passcodes to delve into underground bars to sip on moonshine, gin or whiskey, so we won’t elaborate there. Even in its short lifespan, Prohibition and its end was a huge milestone for this nation, and what really led to its repeal had a lot more to do with crime and taxes rather than convictions. The Prohibition movement wasn’t entirely unsuccessful, though. Turns out during the 1920s it did cut overall drinking in the states by half, and consumption remained below pre-Prohibition levels until the 1940s.

In December 1933, the 21st Amendment was ratified repealing Prohibition. A lot of people recognized that trying to do away with alcohol entirely backfired, and created more problems instead of solutions. Ending Prohibition did also open up taxation for the sale and importation of spirits anywhere in U.S. borders – and that tax revenue was something the government really needed, especially after the Great Depression hit in 1929. The End of Prohibition still resonates with a lot of Americans today. It captures a moment that shows the success of the balance of powers in the U.S. in representing the rights and freedoms of American citizens, and it also shows the rich culture and tradition of brewing and distilling alcohol and how passionate Americans have been about their drink from the first. We celebrate it for the diversity of styles and flavors available in alcoholic drinks today and the freedom to drink responsibly and raise our glasses to toast the good times! MY LIFE Meet our media coordinator, Yvonne McClellan and learn a few things about her.
MY HERITAGE IS: I’m Cubadorean, basically a mix of Cuban and Salvadorean. My culture has completely shaped who I am as a person.
FAVORITE COOKBOOK: “Trattoria Cooking” by Biba Caggiano. I love Italian food, especially when I find recipes that are tied to small towns throughout Italy’s different regions. That’s exactly what Biba Caggiano did and this has been a recipe book I turn to again and again.
I CAN’T GO A DAY WITHOUT: My smart phone, music, a smooch from my husband and puppy snuggles.
MY FAMILY IS: Big and very close knit. My husband, Jordan, and I are really close to our families. He has roughly 25 relatives here in Naples – aunts, uncles, cousins, siblings, nieces and grandparents you name it.
MY GO TO HAPPY HOUR DRINK: A glass of rosé. It was a pretty warm summer and dry rosé still has that great flavor of a red, but it’s lighter and more refreshing. Once winter comes I’ll switch it up with GSM blends, Malbec and Tempranillos. 2016. November

NATURE
Your Way! PAVED WAYS You wouldn’t know it, but in the heart of Naples, many make good use of the GORDON RIVER GREENWAY for walking, running, roller skating, cycling and even kayaking, furry friends welcome. You can enjoy a small loop just over half a mile, or walk the entire trail at about 2½ miles. The best part: it’s open from 7 a.m. - 10 p.m. every day. The scenic, paved nature trail has water access along the Gordon River and a beautiful boardwalk bridge. The park is located near the intersection of Goodlette-Frank Road and Golden Gate Parkway with one entrance just south of the Naples Zoo and a north entrance just east off Golden Gate Parkway. From the road, NORTH COLLIER REGIONAL PARK looks like a large water park near C’MON Children’s Museum, but its walking trails are a wonderful network of elevated boardwalks and paved pathways that mimic walking through a cypress wetlands preserve. You can take a shorter walk, but the 2½-mile loop meanders through the park and winds around a large lake. Pets on a lease are welcome. Located at 1500 Livingston Rd., Naples, (239)252-4000.

INTO THE WILD CORKSCREW SWAMP SANCTUARY is off the beaten path, but well worth the trek. The 2¼-mile boardwalk and trail is one of a few trails on CREW Land & Water Trust sites which take you through an old-growth cypress forest, prairie wetlands and marshlands, where alligators, white-tailed deer, heron and other birds along with turtles and even otters make their home. The trail leads to the largest old growth Bald Cypress forest in North America. (By the way, CREW stands for Corkscrew Regional Ecosystem Watershed) Located at 375 Sanctuary Rd., Naples, Florida near Orange Tree off Immokalee Road; Open 7 a.m. - 5:30 p.m. every day. Admission is good for two consecutive days: $14 for adults, $4 for children 6-18 years old, children under 6 are free. Visit corkscrew.audubon.org or call (239) 348-9151.
BIRD ROOKERY SWAMP is another CREW site that is a little closer into town than Corkscrew, but much more extensive. You can walk about a ½ mile on a lovely elevated boardwalk but this total 12-mile loop trail is an immersive experience for hikers, cyclists and photographers who want to go the distance and see some impressive wildlife as you explore a cypress and maple swamp. The trails are actually old tram roads used when the area was logged many years ago. Biking can be a challenge on the grassy/sandy trails, but quite rewarding. The maple-cypress swamp is home to otters, Florida panthers, bobcats, white-tailed deer and alligators too, so leave your dogs at home. Located at 1295 Shady Hollow Boulevard, Naples, www.crewtrust. org, open 1 hour before sunrise to one hour after sunset; free entry, donations accepted.
COLLIER-SEMINOLE STATE PARK has trails for adventurous hikers, and isn’t too far out of city limits – just under 30 minutes from downtown Naples. THE OFF ROAD BIKE & HIKING TRAIL is a nice 3½-mile trail that’s a mix of paved pathway making use of the historic “Old Marco Road” as well as “off road” trail that’s wet through the summer. You’ll spot deer, gopher tortoise, woodpeckers and sometimes endangered species like Florida panthers. Black bears are common too. Check in at the ranger station before starting the trail. WOW! GREAT MEAL! We hadn’t been able to get into Chops our past few visits to Naples. Friends sang its praises... Service was exceptional; Waiter and Captain knew their menu and made suggestions, taking into account the food allergies and preferences we have. My gold standard of service is my water glass. The glass was never half full or was it half empty? The waiter seemed to know just when to refill it before being asked. We sat inside by the window and had the added pleasure of people watching. Sweeten Up Thanksgiving Dinner!
We tapped our executive pastry chef for an awesome and easy dessert to spice up your Thanksgiving dinner. We like our traditions so we leave the turkey, stuffing and sweet potato casserole to you, but this Chocolate Bourbon Pecan Pie recipe from Chef Lymarie will give your Thanksgiving get together a sweet finish! CHOCOLATE BOURBON PECAN PIE 1 cup ¾ cup ¼ cup 3 3 tbsp ¼ tsp ½ cup 1 ½ cups ½ cup 1
light corn syrup light brown sugar melted butter beaten eggs your favorite bourbon salt mini semisweet chocolate chips chopped pecans halved pecans store bought frozen pie shell (we said it was easy)
DIRECTIONS Mix first 6 ingredients in a bowl Mix in chocolate chips and chopped pecans Pour into thawed raw pie shell Arrange halved pecan on top Bake at 350 degrees for 30 minutes or until light brown and firm Allow to cool and set Serve with whipped cream
