Shine a light on Waxy’s

WAXY O’CONNOR gained a reputation as a candlemaker in his native Dublin more than 200 years ago – and his light still shines brightly today in a unique concept at The Printworks. He was born in Dublin City and is remembered with fond affection for his great appetite and the capacity for downing pints of the falling down lotion. It seems he was not alone among men of his craft - their fondness and ability to consume copious quantities of beer and whiskey are legendary. Their excuse is as candlemakers had to work in such extreme heat it sapped a man of energy and fluids. And, as Waxy himself was heard to comment wistfully: “Such heat does parch a man - a parched man is a barren man and beer is the only cure. “Ah, us lads could put away gallons in a day.” Water, it seems, was an unknown elixir… And The ‘Waxy O’Connor’s tree’ was planted 250 years in Midlands Ireland and died naturally in 1994. But a local woodworker, who played around the Beech tree as a boy, hewed the

pieces that were then shipped to England and ‘planted’ in Waxy O’Connor’s in August 1995. So, now a tree, which has lived for a quarter of a millennium in Ireland, began a new lease of ‘life’ in the heart of London. And now it has spread to Manchester’s Printworks offering a fascinating labyrinth housing three elegant, timber-lined bars covering four levels and nine separate areas fused together by a maze of staircases and passages. With a choice of flexible areas to stage a wide variety of events from work or corporate functions, birthday parties and fundraisers – it can accommodate up 600 people to more intimate, private affairs. And to keep up the great tradition of their founder, they have a delightful range of Winter Warmers to tickle the taste buds – plus excellent mulled wine and spiced cider available throughout the festive season. The ODEON The main attraction in the ODEON, Print Works, is the IMAX screen which brings people from all over the country to Manchester. The floor to ceiling screen is 26 metres wide and 19 metres high, with a crystal clear digital image and mind blowing digital sound which will take you to a place you have only ever imagined. It is thought to be the second biggest IMAX screen in the country which seats 375 people, and whether you’re experiencing a film in 2D or IMAX 3D, the visual clarity is unsurpassed. Zombie They came … they walked … and they conquered the day Zombie fever came to The Printworks, Manchester. More than a thousand took part in the gruesome gathering which saw creative and innovative entrants send shivers down the spine of onlookers. In scenes reminiscent of 1970s horror film Dawn of the Dead, an astonishing zombie walk began at The Printworks and made its way through town finishing back at Henry J Beans. Entertainment was provided in the Pump Yard area by DJs from event’s media partner Key 103. The fund-raising event, run by Zombie Aid, focussed on raising money for two charities this year

the “Big Issue” and “Cash for Kids.” This event raised a total of £926.58. The walk, now it its fourth incarnation, has previously been a successful event with a Zombie marriage ceremony and a world record attempt in its history. This year like the others proved to be an electrifying and bloody success. Fred Booth, Centre Director, said: “Despite bad weather the turn out for the Zombie walk was excellent and everyone made a really good effort with their costumes. “Our sponsors - Key 103 - kept everyone entertained under the shelter of the Printworks Pump Yard area. The mood was brilliant and lots of fun.”

The Hard Rock Cafe THE ICONIC Hard Rock Cafe in Manchester’s Printworks, is not just a ‘must visit’ place to eat… It has a spectacular live music programme that has had guests really rocking in what has been an exceptional year. March saw New York City’s finest Fun Lovin’ Criminals perform to a packed crowd with all ticket sales donated to the Bombay Teen Challenge. Well known for not shying away from hard hitting topics such as poverty, drug abuse and violence in their lyrics, it was fitting all ticket proceeds of the gig went to the worthy cause. . The charity was established in 1990 and works tirelessly to rescue and rehabilitate the many destitute and desperate people living on the streets of Mumbai. Extra funds were raised through the auction of signed memorabilia on the night, which included a Fender guitar, posters, teddies and T-shirts. March saw the heats of Hard Rock Rising – The Global Battle of the Bands competition.

Judged and compered by Real XS Drive Time DJ ‘ Moose’, Louis James Davis and Mark Doyle from the Music Press and Manchester Rocks’ Dan Clifford, competition was fierce with all girl band LYXX winning the final. Lyxx went on to represent Manchester in the Global Final for their chance to play in London’s Hyde Park as part of Hard Rock Calling with Bruce Springsteen and the E Street Band. As part of the build up to Hard Rock Calling, Hard Rock’s 3 day festival in London’s Hyde Park, Guillemots performed to a crowd of Absolute Radio’s competition winners The Printworks Hard Rock Cafe in June. Later on that month, Hard Rock Cafe hosted a Real XS secret session with GUN. They played a selection of hits and some new material from their latest album – Break the Silence. Every Friday (excluding December) Hard Rock hosts a free live music evening from 10pm. Guests can enjoy a free concert as a variety of covers bands take to the stage to entertain with hits from across the ages.

The Hard Rock Cafe original Rita Gilligan, the London Hard Rock Cafe’s first waitress, who has served the world’s top music, sports and film stars, says candidly: “It’s not all about stars and guitars. “It’s about the people … always about the people.” And Irish-born Rita, whose customers have ranged from The Beatles and the Spice Girls to Paul Newman and Muhammad Ali, has been awarded the distinguished MBE for her services to tourism in Britain. And no wonder: because she is an original. She joined the Hard Rock Cafe as a waitress on its opening day, June 14 1971, and has remained there ever since. Her present job as cultural attaché involves training staff at the company’s new ventures at home and abroad, and she participates in all the Hard Rock Cafe grand openings across the world, including most recently Barcelona, Memphis and Philadelphia. Her amazing story began in early 1971 when she wandered into a building being converted to an American-themed diner in London’s Mayfair . She answered an advertisement seeking ‘matronly’ waitresses between the ages of 30 and 55. But at just 30 years old, she knew she barely qualified, so when the owner asked her age, Gilligan told a lie no woman ever tells: She claimed she was 32, two years older than she actually was. At first, owner Peter Morton, wasn’t

convinced that he should give Gilligan a job, telling her: “You’re great but you are too young.” Rita recalls: “I had a husband, two babies, a mortgage, and a hump on my back. I told him, ‘I’m the best you’re going to get, so you’d better take me.’ He did and, when the doors of the world’s first Hard Rock Cafe opened, Gilligan was there. Today, over 40 years later, she is the only member of the original staff - making her a living legend in the the Hard Rock community. Cocktails and menu items have been named after her, and four of the restaurant chain’s collectible pins have borne her resemblance. During a recent visit to the original Hard Rock Cafe in London, she is interrupted at least a half-dozen times for hugs and hellos from chefs, waiters, and other colleagues. Now she travels the world, educating new employees on the company’s history and philosophy, and spreading goodwill for the Hard Rock Cafe. The Hard Rock Cafe’s ‘Love All, Serve All’ motto anchored the company philosophy is thanks, in large part, to Gilligan, who has always maintained the Hard Rock Cafe spirit. She wears her MBE, along with

dozens of Hard Rock pins -- she owns more than 600 in all -- on the starched, white waitstaff uniform she still dons for work each day. What made her stay? Not the brushes with fame or the honours … it is people like the 17-year-old Hard Rock employee in Osaka, Japan, who stayed up for three days and three nights to finish a handpainted kimono for her. It was a gift, she says, that brought tears to her eyes … even more than the MBE.

Love and lace at Papa G’s THE DEDICATED family team who run Papa G’s stylish but homely establishment prepare food they are proud to say is prepared by love … Because Greek tradition says food prepared with love enhances the flavour. And they believe in continuing this proud tradition which goes back to 1930’s, when grandfathers Pappou Angelis and Pappou Anastsasis arrived in Manchester from Kato Drys, Cyprus, penniless and homeless. They were only armed with a suitcase full of Cypriot Lace - but by selling the lace to wealthy families nationwide gave them enough money to fund small restaurants in Bolton and Wilmslow where they stayed with their families until they retired in the 1980s. However, they never forgot their humble start and examples of fine lace can still be seen in Papa G’s today. And their upbringing helped them not only embraced age-old traditional Greek and Mediterranean cooking taught over generations but concentrate on the personal way food

is actually prepared and cooked. For example, all their delicious grilled food is cooked on real charcoal as it used to be, for maximum flavour. This, coupled with other favourites such as kleftiko, a hearty, flavoursome lamb signature dish, is traditionally made in a sealed earthenware dish. And robust portions of Mary’s ribs, coupled with their thoughtfully-created homemade pizzas and speciality crepes, make their menu pretty special. Rocking the boat Hard Rock Cafe in The Printworks have done something different this year for their annual Pinktober event. The event involved volunteers rowing 2,100 miles (the distance around the edge of Britain) all in the warmth of Hard Rock Cafe Manchester The event began at 10 a.m. on the 30th October. Everyone was given a timeslot to participate in the charity rowing. During a 12-hour heat, staff members, general public and local sporting celebrity Olympian Diane Modahl participated in the 2,100 mile challenge. The aim of this event was to raise as much money as possible for Pinktober campaign in association with the Breast Cancer Research Foundation and the Caron Keating Foundation. In order to compete one circuit they had to achieve the speed of

light, so all encouragement was needed! This year Pinktober embarks its 13th consecutive year of raising awareness and funds for breast cancer charities all around the globe. Stifado Method Sear and seal meat in a deep frying pan. Add the olive oil, onions and garlic and fry until onions soften. Add the red wine to the pan and simmer for 5 minutes. Transfer all ingredients in the pan to a ceramic pot. Add the beef stock, bayleaves, oregano, orange peel, salt and pepper to the pot. Stir all ingredients together then finally add the tomatoes. Add the lid to the ceramic pot and cook for 3-4 hours at approx 190 deg C in the oven. Remove the lid for the final ½ hour of cooking so the sauce reduces (if required). Do not let it dry out though. Remove bayleaves, orange peel and oregano and serve straight from the pot.

Ingredients 500g cubed lean beef 4 tbsp extra virgin Greek olive oil 2 large onions roughly sliced 2 ripe tomatoes, skinned deseeded and chopped (or 1/2 tin of chopped tomatoes) 2 cloves of garlic 1 bunch fresh oregano 175ml red wine 200ml beef stock Orange peel 4 bay leaves salt pepper

Balance – Keep your diet balanced include good quality sources of proteins, fats and carbohydrates. Doing

this will help maintain hormone balance and reduce the risk of un-wanted cravings. Manchester Sleep Out warms up with Organic Soup from Printworks own roof garden The Printworks have gone up in the culinary world by planting its very own unique vegetable garden -- on the roof. And the green-fingered concept provided a final harvest of delicious, organically-grown vegetables for a memorable soup to feed entrants in ‘The Manchester Sleep Out.’ Kindly Henry J Beans, based at The Printworks, produced the aroma-laced delicacy which was given a huge vote of approval by those entering the event, held in association with Manchester Cathedral and the Booth Centre. The Manchester Sleep Out is held annually an annually by the Booth Centre where people of Manchester have the chance to fully understand the life of the homeless and, in turn, help raise money for the Centre to continue its worthwhile work with homeless living on the city streets. The public participate in sleeping either outside or inside, depending on weather and their preference. And this years sleep out raised more than £15,000 to swell the fund. Over the year, the roof garden has produced mint for Mojitos - just one of the many initiatives The Printworks have for

sustainability. Fred Booth, Centre Director for The Printworks, said: “I’m happy The Printworks is involved in such a great cause. “There is no denying we need to help the homeless and it¹s great that vegetables actually grown here support such a worthwhile initiative.”

Hold the front page … FROM ITS imposing frontage, The Printworks looks almost timeless, set sedately in the strategic business and entertainment quarter of Manchester. But what many visitors do not know when they make their way through the noble arches on Withy Grove, is this was once the vibrant heart of one of the world’s largest newspaper offices. Under different guises as Kemsley House, Thomson House and latterly Maxwell House, it employed 3,000 people in newspaper production. Here it was possible to produce up to six million newspapers a night on the mighty presses which devoured 18,000 printing plates a week, weighing up to 350 tonnes. Add to this 400,000 miles of newsprint, 1,560 tons of ink and 150 tonnes of string – and you had a colossus of influential newspaper production. Distinguished titles, The Daily Telegraph, The Sunday Times, Empire News, Daily Graphic, Evening Chronicle, and latterly the The Daily Mirror and Sunday Pictorial (which became the Sunday Mirror), were rival stablemates in the heyday of hot metal printing.

And recently, a chance discovery in the basement of the Printworks complex opened up a treasure trove of newspaper memorabilia. Builders found one of the original signs to hang outside the Withy Grove building when it boasted the largest printing press in Europe. The find sparked a history trail leading to previously unseen documents and photographs of what used to be known as the Chronicle Buildings. Centre director Fred Booth says it is vital the building’s unique past is kept alive. “This is not just a leisure centre - it was Europe’s biggest press plant at one time,” he says with affection. The most recent artefact from the building’s newspaper zenith - a plaque from the Corporation Street entrance - was unearthed as builders cleared out a new unit in the basement. It led bosses to contact the last employee of the old printworks Barry Lord. They discovered not only had he maintained the building from its closure in 1986 through to the IRA bomb - he had also saved a treasure house of souvenirs from the scrap heap. Currently on loan to the entertainment complex, they include

original plans for the building as a printing press, letters, editors’ scrapbooks, and final editions of newspapers. And previously unseen photographs show the building with horse-drawn carriages outside. “When the old Withy Grove was demolished the developers took down all the remaining memorabilia and put it back on the walls of The Printworks afterwards,” said Fred. “We have always had strong ties with the people who used to work the printing presses - the Withy Grove Fellowship. They have inundated me with press and books that were produced on the site.” Hanging on the walls of The

Printworks offices are just a selection of the millions of national newspapers which were produced at Withy Grove. Among them are some of the front pages which rocked the world - including man on the moon, the assassination of JFK, and the outbreak of the Second World War. Meantime, the 300-strong Withy Grove Fellowship, drawn from the trades and crafts employed in the building, keeps the proud traditions alive. Chaired by Tom Dolan, they meet three times a year for dinner and secretary-treasurer Barry Pearson, says: “We have a great team of loyal members proud of the wonderful traditions associated with the building.”
