Magazine VEGAN CHOCOLATE CUPCAKES 1 cup Almond Milk 1 teaspoon Apple Cider Vinegar 3/4 cup Sugar 1/3 cup Canola Oil 1 1/2 teaspoon Vanilla Extract 1 cup Flour 1/3 cup Cocoa Powder 3/4 teaspoon Baking Soda 1/2 teaspoon Baking Powder 1/2 teaspoon Salt

Oven 350F. Mix apple cider vinegar with almond milk. Add sugar, oil, and vanilla into soy milk mixture and beat until foamy. In a separate bowl mix together flour, cocoa powder, baking soda, baking powder and salt. Add flour mixture slowly to the wet ingredients and beat until there are no large lumps. Pour into liners 3/4 of the way. Bake 20 minutes. VEGAN CHOCOLATE FROSTING 2 cups Powdered Sugar 1/3 cup Coconut Butter 1/4 cup Almond Milk 1/2 cup Cocoa Powder 1/2 teaspoon Vanilla Cream powdered sugar with coconut butter with an electric hand mixer, until thick and well combined. Add almond milk, cocoa powder and vanilla. Mix until smooth.

How often do you bake? I bake once a week at most. I make lots of Vegan goodies. I love chocolate chip cookies that I make in addition to these chocolate cupcakes. I don't want to bake more often than that because I don't want to eat too much sweet stuff! I do cook lunch and dinner a lot, pretty much daily, if I am at home in Los Angeles. I like to know exactly what I eat and I know it, if I cook it myself. The more I cook, the pickier I become about eating at restaurants.
What inspires your flavors? I love unique flavors. I love the taste of dark chocolate. As a vegan, I won't eat milk chocolate. So, I am very happy to say that I like dark chocolate better anyway. With my dinner cooking, recently I have been super into Indian spices, like curry leaves, cumin seeds and turmeric. But often I just like the flavor of vegetables by themselves (just a little bit of salt). They taste so good! It might be interesting to try to infuse some of those flavors into cupcakes - maybe I'll try that!
Do you plan on opening your own shop someday? I doubt it. I have lots on my plate all the time - so not sure if I could handle opening a store as well! But I will be happy to make cupcakes to friends and family!
What about a Vegan cook book? Have you thought about that? Yes! That I have thought about! I have tons of great recipes that I have perfected. Not only cupcakes and other desserts, but main courses and appetizers as well.
