Australia has emerged as the hottest extra virgin olive oil (EVOO) producer on the planet, picking up a swag of trophies at the prestigious New York International Olive Oil Competition (NYIOOC) and outshining traditional producers – Italy, Spain and Greece. Considered the ‘Academy Awards’ of the world olive oil industry, Australian extra virgin olive oils starred at the competition picking up almost a quarter (4 out of 17) of the best in class trophies on offer. The quality of Australian extra virgin olive oil was so good that organisers credited Australia with sending ‘shockwaves’ through the global industry and ‘reinventing’ the olive oil trade. Chief Executive Officer of the Australian Olive Association, Lisa Rowntree, said savvy Australian consumers had long recognised Australian Extra Virgin Olive Oils as the best in the world, but global consumers were now discovering the unrivalled quality and freshness of our oil. “What we have in Australia is a perfect climate for olive oil production, combined with a commitment from our producers to taking the highest quality of fruit from the tree to the table with as little disruption as possible. KitKat to be Australia’s first food wrapped in soft plastic made with recycled content More than 40 million 45g KitKat bars will be packed in the 30% recycled content wrapper in the next year, cutting virgin plastic use by around 250,000m2, enough to cover more than 200 50m swimming pools. Nestlé Oceania General Manager Chris O’Donnell said the company was on a mission to cut its virgin plastics use by a third by 2025. The wrapper is also Nestlé’s first soft plastic food wrapper globally to use recycled content.

Starlight Children's Foundation Tour de Kids (TdK) challenge
Red Nose Day August 12 2022 is one of the longest-running and most recognisable fundraising campaigns in Australia. For the last 34 years, businesses, schools, childcare centers, individuals and workplaces have taken part to fund research, education and bereavement services to support Australian families. What began as a way for people to get silly for a serious cause has resulted in an incredible 85% reduction in sudden infant death – which equates to over 11,000 babies saved since 1988 Its easy to be involved as an individual or business. Starlight Children's Foundation is encouraging Australians around the country to ride for sick kids this September for its annual Tour de Kids (TdK) challenge. Funds raised from the 30-day challenge will go towards delivering happiness to over 60,000 sick kids across Australia. Whether you clock up kilometres in the gym, or enjoy a weekend cycle, Tour de Kids encourages riders of all ages and abilities to beat their personal cycling goals and help raise funds for Starlight's vital hospital services including Captain Starlight and Starlight Express Rooms. For 10-year-old Tommy, diagnosed with T-Cell Lymphoma, Starlight's programs allowed him to be a kid again and forget about his illness. Tommy's Mum Le-Anne said: "Even the small things Starlight does make a huge difference to sick kids like Tommy and makes them feel special." Starlight CEO Louise Baxter said: "Every minute of every day a child is admitted to hospital. When a diagnosis of serious illness occurs, this can change the course of a child's life and their family's forever." Registrations are now open at tourdekids.org.au. In the below description you will see the term smoke point, this is the point where oil may excessively smoke, once this happens your oil may degrade and loose flavor, and may even affect the flavors of the food you are cooking. It’s not a bad idea to know your oils smoke point, if you notice your pan excevily smokes you may need to change your oil for that dish.
Canola Oil Made from the rapeseed plant. Perfect for cooking, baking or frying, high smoke point of around 205 degrees, mild flavor, and omega-3s, low in saturated fats.
Extra Virgin Olive Oil Known to have more antioxidants and is high in monounsaturated fats. This is the highest quality Olive Oil, has a stronger flavor than Olive Oil and a smoke point of around 200 degrees. THE SAFEST WAY TO WHITEN YOUR TEETH
FOR DENTAL HEALTH WEEK (1-7 AUGUST) THE AUSTRALIAN DENTAL ASSOCIATION PROVIDES CONSUMERS WITH THE SAFEST PATH TO WHITER TEETH

There can be little doubt that white teeth shout youth, beauty and health. Indeed one in five Australian adults must agree because that’s how many have whitened their teeth in the last 12 months. But other recent statistics from the Australian Dental Association’s (ADA) 2021 Consumer Survey of 25,000 Aussies show that some people are not taking the safest route to whiter teeth: SURVEY RESULTS • Only 1 in 3 adults whitening their teeth are doing so under the supervision of a dental professional, 19% opting for a take home kit supplied by a dentist and 14% opting for in-clinic whitening, • 39% bought a kit online, 19% got over-the-counter products like strips or gel from a pharmacy or supermarket, and 9% used whitening services provided by someone other than a dental professional. While teeth whitening undoubtedly turns back the hands of time, the means to get there are often pursued in the wrong way by a percentage of the population. That means using products that are above the allowed legal limit of 6% hydrogen peroxide which can result in damage to the gums – or excessive sensitivity of the teeth from failing to see a dentist to check your teeth first. “ If you don’t see a dentist beforehand, you won’t know if you have untreated tooth decay, exposed roots, broken or compromised fillings, cracks or other mouth issues that may well cause pain or discomfort when bleach meets them,” explained Emeritus Professor Laurie Walsh, the ADA’s expert on teeth whitening. “ Then there is the issue of trays - an ill-fitting tray which has not been made from a customised mould designed to fit the exact shape of your teeth, can lead to bleach leaking from the tray, burning gums and soft tissue - and even being swallowed - which may cause ulceration to the throat.” » PAG E 3 5

While nearly one in five is whitening using a kit from a supermarket or pharmacy, these carry a multitude of risks: the concentration of whitening agent (hydrogen peroxide) may be unknown. It may be too weak to be effective, making it a waste of time and money, or too strong causing much greater risk of sensitivity, gum ulceration or burning of the gums. Also, some over the counter products use flavours such as citric acid. Recent research has shown that some of these products can erode tooth enamel. Not all mouths are suitable for the whitening process. Prof. Walsh added: “A trip to the dentist rather than opting for an over the counter product or treatment by a non-dental professional will also leave consumers more informed. Your dentist will explain the side effects with tooth whitening that everyone considering this treatment needs to be aware of.”
THE MAIN SIDE EFFECTS INCLUDE: 1. TOOTH SENSITIVITY Teeth are porous and the peroxide bleaching agent/gel can penetrate the tooth, making them more sensitive to cold stimuli. Most sensitivity is transient however, and settles down a short time after the whitening is completed. 2. GUM IRRITATION The gums can be irritated or slightly ulcerated from the peroxide in the bleaching agent or even be irritated by the trays used to hold the gel in place. These irritations usually heal quite quickly. 3. MULTICOLOURED TEETH This is a huge problem if people attempt DIY whitening procedures without consideration of whether they have any fillings, veneers, or crowns on their teeth. These dental filling materials do not change colour and the result can be multi-coloured teeth. The only way to rectify this is to replace the fillings, veneers and crowns. This ends up being more time consuming, invasive, and more expensive than expected. Rather than risk irreversible damage to teeth, it’s safer to consult with the person who knows your teeth the best – your dentist. They can discuss the options, advise whether you or your family member is a suitable candidate for teeth whitening, and supervise the process so that you get the best possible results. Warm comfort food made easy with this classic shepherd’s pie recipe.
INGREDIENTS Easy Slow Cooker Pulled Pork 1 tablespoon olive oil 1 brown onion, chopped 2 garlic cloves, crushed 1 large carrot, diced 2 stalks celery, diced 2 tablespoons tomato paste 6 cups (900g) pulled pork – (see the description section above for the recipe) 1 cup frozen peas Cheesy mash topping 800g brushed potatoes, peeled and cut into 5cm pieces 40g butter 3/4 cup milk 1 1/2cups shredded tasty cheese
METHOD 1. Heat oil in a large frying pan over medium heat. Add
onion, garlic, carrot and celery. 2. Cook, stirring occasionally, for 7-8 minutes until tender. 3. Stir in tomato paste and cook, stirring, for 1 minute. 4. Stir through pulled pork and frozen peas. Season with salt and pepper. 5. Transfer pork mixture to a greased 12-cup (about 5cm deep) baking dish. 6. Preheat oven to 200°C/180°C fan-forced. 7. To make the cheesy mash topping, place potatoes into a medium saucepan and cover with cold water. 8. Bring to the boil over high heat. Reduce heat and simmer for 15 minutes or until very tender. 9. Drain potatoes and return to the saucepan. Toss potatoes over high heat for 1 minute to dry. 10. Roughly mash potatoes. Add butter and milk. Mash until smooth. Stir through 1 cup cheese. 11. Spoon mash evenly over pork mixture. Sprinkle with remaining ½ cup cheese. 12. Bake for 20-25 minutes or until cheese is melted and mash is golden. 13. Serve with a green salad if liked.

Turn off heat and stand for 20 minutes. Transfer pork to a baking dish. Shred pork with 2 forks. Stir 2 cups cooking juices through the pork. Use shredded pork immediately or chill in an airtight container in the fridge for up to 4 days or freeze for up to 3 months.

INGREDIENTS Pastry 125ml sour cream 250g plain flour 200g unsalted butter, chilled Egg Wash 1 egg 1/4 cup milk Filling 6 free range chicken Marylands, skin on To taste, salt flakes To taste, freshly ground black pepper
3 tbspn Extra Virgin Olive Oil 2 cups Chicken Stock 50g unsalted butter, softened 7 large mushrooms, chopped 1/4 cup unbleached plain flour 200ml cream 2 tbspn flat leaf parsley, chopped 2 tbspn oregano, chopped 2 tbspn thyme, chopped
METHOD 1. Preheat the oven to 200C. 2. Season the chicken Marylands with sea salt and pepper. 3. Butter a 24cm x 18cm baking dish. Place the seasoned chicken Marylands into
the baking dish, drizzle with Extra Virgin Olive Oil, and put into the oven to roast for 20 minutes. 4. Remove from the oven and allow to rest for 15 minutes, loosely covered with foil. 5. Meanwhile, heat the Chicken Stock over a medium high heat in a small pot. 6. Place a large saucepan over a high heat, add the butter and once this has turned nut brown, add a dash of Extra Virgin Olive Oil to inhibit burning. Add the mushrooms and fry for 4 to 5 minutes. 7. Sprinkle the flour over the mushrooms and cook for a further couple of minutes. 8. Gradually stir in the hot stock, then the cream. Simmer gently until the mixture has thickened. 9. Remove the meat from the Marylands and chop in to 1cm pieces, then fold through with the herbs into the mushroom mixture. Season to taste. 10. Refrigerate until chilled. 11. To make the pastry, dice the butter, then pulse with the flour in a food processor until the mixture resembles fine breadcrumbs. Add the sour cream and continue to pulse until the dough starts to incorporate into a ball. Wrap the dough in plastic film and refrigerate for 20 minutes. Once chilled, roll to 3mm thick and cut to line greased pie dishes, leaving a ‘lip’ over the edge. 12. Cut out six smaller rounds – these are the pie lids. 13. Fill the cases with the chilled chicken mixture. Egg wash the pastry lip and seal the lids in place. Trim the pastry and score the top of each pie. Egg wash the tops of the pies and refrigerate for 20 minutes. 14. Increase the oven temperature to 220C. 15. Place the pies onto a flat baking tray then place the pies into the oven and bake for 20 minutes. Reduce oven to 180C and bake for a further 5 - 10 minutes until golden brown. 16. MUSHROOM AND LAMB SHANK POT PIE Prep Time: 35 mins

INGREDIENTS 1/4 cup plain flour 4 large lamb shanks frenched 2 tablespoons olive oil 1 brown onion finely chopped 3 garlic cloves crushed 2 sticks celery finely chopped 2 medium carrots diced 300 g small button or Swiss Brown Mushrooms quartered 1 tablespoon fresh rosemary leaves finely chopped 2 tablespoons tomato paste 2 cups beef stock 400 g can diced tomatoes 2 sheets frozen butter puff pastry 1 egg lightly beaten, for brushing

METHOD Preheat oven to 160 C ̊ /140 C ̊ fan-forced. Place flour into a 1.
large snap-lock bag. Season. 2. Add lamb shanks and toss to coat in flour. Shake off excess. Heat 1 tbs oil in a large ovenproof pan over medium-high heat. Brown lamb shanks until golden. Set aside. 3. Add remaining 1 tbs oil to the pan. Add onion, garlic, celery, carrots, mushrooms and rosemary. Cook, stirring often, for 3-4 minutes until onion softens. 4. Stir in tomato paste. Cook for 1 minute. Stir in stock and tomatoes. Cover and bring to the boil. Return lamb shanks to pan. Cover. 5. Bake for 2-2 1/2 hours until lamb is very tender and sauce has thickened. 6. Set aside to cool slightly. 7. Remove lamb shanks to a plate. Remove meat from bones, chop and add to mushroom mixture. Spoon in to 4 x 1½ cup capacity greased oven-proof dishes (top 10cm wide). 8. Increase oven to 190°C fan-forced. Place pastry onto a board to defrost. 9. Cut 4 x 1 1cm rounds from pastry. Top pies with pastry. Press edges with a fork to seal. Brush with egg and cut a small cross into the centre of each. Place pies onto a baking tray 10. lined with baking paper. Bake for 25-30 minutes or until pastry is puffed and golden. Serve.

METHOD Pastry 1. Combine flours and Fairy in a food processor. Process until mixture resembles fine breadcrumbs. Add egg yolk, vanilla essence and sufficient water until pastry comes together. 2. Knead dough lightly, pat two thirds into a flat round shape. Wrap in baking paper. Repeat with the remaining one third. Place into the refrigerator for 30 minutes to chill. 3. Pre-heat oven to 200°C 4. Roll out the larger piece of pastry on a floured bench and line a 20 cm pie dish. 5. Line with baking paper and fill with baking beans or rice. Rest in refrigerator for another 20 minutes. 6. Blind bake pastry for 10 minutes; remove the paper and beans or rice, turn the temperature down to 180°C. Leave to cool. Filling 1. Melt Fairy in a heavy based pan over a low heatadd the remaining filling ingredients. Cover with a lid and cook for 8-10 minutes until the apple has softened. Stir occasionally. 2. Remove from heat and leave to cool. Assembly 1. Fill the pie with the cooled apple mixture. 2. Roll out the remaining pastry, place on top of the pie, seal the edges and crimp together. 3. Brush with the egg and sprinkle over sugar. Make 3 vents in the pie top to allow steam to escape. 4. Place in oven and cook for 15 minutes, reduce heat to 150°C for a further 20 minutes or until golden brown. Serve warm with ice cream.

MEXICAN PORK CHILLI
Serves: 6-8
INGREDIENTS 1.8-2kg Pork Loin or Tenderloin, cubed (small) 2-3 Habanero chillies, seeded and finely sliced 3 Chipotle chillies, kept whole, no need to reconstitute them 2 bay leaves 2 medium onions, chopped 6 clove of garlic minced
1 can diced tomatoes 1 standard bottle of beer 1 standard bottle of apple or pear cider 1 tbsp chilli powder 3 tbsp salt 1 tbsp dried Oregano 1 tbsp sweet Paprika 1 tbsp sugar 1 tbsp cocoa powder
3 tbsp flour 6 tbsp Mexican cornmeal 4 tbsp vegetable oil 2 tbsp vinegar 1/4 tbsp ground black pepper 1/2 tbsp Cayenne Pepper 1/2 cup spring onions finely chopped 1/2 cup strong black coffee Cilantro leaves for garnish Can of red kidney beans (optional)
METHOD 1. Combine the flour, cornmeal, chilli powder, salt & pepper. Place this mixture in a large plastic bag with the pork pieces. Close the bag and toss the meat around until well coated with the flour mixture.
2. Meanwhile heat the oil in a heavy based saucepan or frying pan and flash fry the seasoned Pork pieces in batches until slightly browned, set aside to rest.
4. A dd to the same pan the onions, fresh chilli, spring onions and garlic. Saute gently until tender. 5. Transfer the Pork to a large pot, add the onion mixture and all remaining dry ingredients (except
Cilantro). Give it a good stir with a wooden spoon. Lastly add the tomatoes and liquids, bring to the simmer, partially cover and allow it to simmer away (on low heat) for 2 hours - add additional water if the Pork Chilli threatens to become too dry. 7. After the first two hours of simmering, check the seasonings and allow the chilli to cook further (uncovered) to reduce it to the required consistency. 8. Once the desired consistency is reach you can choose to serve it, but I prefer to place it in the fridge overnight. This allows the flavors to really develop and settle down. Any solidified fat is then removed. The beans are then added to the chilli, heat through again and serve with the Cilantro garnish and corn chips on the side. PAG E 6 9

METHOD ANZAC biscuit base and crumble 1. Preheat oven 180°C/160°C (fan-forced) and line a 28cm x 18cm rectangular slice pan with baking paper, making sure to leave a 3cm overhang on each of the longest edges. Line a second baking tray with baking paper. 2. Melt Fairy margarine and golden syrup together in a saucepan over low heat. 3. Combine oats, flour, brown sugar and coconut in a large bowl and mix well. 4. Add bi-carb soda to golden syrup mixture and mix well. Pour immediately into dry ingredients and mix well. 5. Remove ½ cup of the Anzac base mixture and crumble onto a prepared baking tray. Press remaining mixture evenly into the base of the slice pan. 6. Transfer both slice pan and baking tray to oven and bake for 12-15 minutes. Check crumb after 10 minutes and remove if browning too fast. Set aside to cool. Caramel filling 1. Reduce oven 160°C/140°C (fan-forced) 2. Place Fairy margarine, sugar and vanilla into a saucepan and stir over medium-low heat until melted and well combined. Simmer for 1-2 minutes or until bubbles just appear on the surface. 3. Add condensed milk and stir constantly until mixture thickens and begins to boil. Pour immediately over biscuit base. Tilt pan to spread evenly. 4. Bake for 10-12 minutes. Stand for 20 minutes to cool. Chocolate topping 1. Place chocolate and Copha into a medium heatproof bowl. Sit bowl over a saucepan of simmering water. Stir over low heat until melted. Pour over slice and spread with a spatula. 2. Break up Anzac crumb and scatter over chocolate. Refrigerate for 1 hour or until set.
TIPS • Substitute Copha with vegetable oil. • Make sure chocolate does not come in
contact with steam or water while melting.

METHOD 1. Preheat oven to 160C (fan forced). Grease and line a
30cm x 20 cm slice tin with baking paper, leaving a 2cm overhang. Melt the Fairy Cooking Margarine in microwave on high or in a saucepan until fully melted. 2. In a large bowl combine the sugar, oats, flour, seeds and cinnamon. Add the vanilla, egg and melted Fairy Cooking Margarine and combine well. Press the mixture into the tin. 3. Bake for 25 minutes, or until golden brown and firm. Cool completely in the tin. Remove from the tin and drizzle with the melted chocolate and set for 10 minutes in the fridge. CONSUMER INTEREST IN VEGAN WINES IS GROWING, WITH VEGANFRIENDLY WINES SHOWING UP IN MANY SUPERMARKETS AND GOOGLE SEARCHES FOR “VEGAN WINE” SOARING IN RECENT YEARS. It may seem surprising at first that not all wines are ‘vegan friendly’, given that wine is made by fermentation of grapes and finishing up in a bottle, cask or can.

CONVENTIONAL WINEMAKING In conventional winemaking, additions and manipulations can be extensive. There are about 40 processing aids and 19 additives approved for use in Australia. The intention is to create a wine that meets specific target markets. The critical step from a vegan perspective is the final step of finishing the wine prior to bottling. Wines are routinely tasted prior to bottling. It’s often at this stage that a decision to add a protein to manipulate the taste profile of the wine or to clarify or stabilise the wine. NOW HERE’S THE PROBLEM FOR VEGANS In current winemaking practice, the proteins in use include gelatine, sourced from either bovine or porcine collagen, or isinglass, sourced from fish swim bladder, egg white and milk, either fresh or powdered casein. Simply put, the use of these animal products makes the wines unacceptable to vegans. ALTERNATIVES TO ANIMAL PROTEINS? Proteins derived from plants would appear to be an obvious alternative and while some are available commercially, most work is still in the research stage. Obtaining regulatory approval across international markets is a significant barrier to the commercialisation of new products for use in wine. The desire to satisfy the expanding vegan-friendly market will undoubtedly drive the development of suitable products. THE LABELLING QUESTION Australia has comprehensive rules regarding wine labelling, including the need to specify allergens. This includes milk and eggs, but not the other animal-derived fining proteins. This can cause considerable uncertainty when selecting wines that are vegan-friendly. Some wine labels now have a statement such as “this wine has been treated with fish product and traces may remain”. Increasingly, wines are now labelled as “vegan-friendly” or “no animal products were used in the preparation of this wine”. THE TASTE TEST At a recent tasting of organic and biodynamic wines, some I presented were made by the conventional method, while others met the vegan-friendly criteria. The general comment after the tasting was: I couldn’t tell the difference. A work of caution. ‘Organic wine’ commonly refers to the grape growing practice while the winemaking may follow the conventional practice. My advice is to explore with an open mind, read the label carefully and enjoy the many options now available.

Cleaning Outside Windows Wipe the window with a dry cloth first, this will get rid of loose dust and hard to see webs. For outside Windows you could go through a lot of spray cleaners so save that for the inside windows. Use cold water with a dash of detergent, some say warm water evaporates quickly on glass and can create fog or condensation. Make sure your water is clean, you may need to change the water for each house sized window. Wipe in the same direction. And if you want to halve the time it takes invest in a window squeegee with a rubber blade. You may as well do the screens as well, warm soapy water and a gentle wipe, no good having clean windows with a dirty screen. Basic maintainance. Fix the leaky tap. Check Cupboards All cupboards have corners where dust and grime can gather, so make sure you check out those corners and remove any build up. TRY THIS BEFORE BRUSHING • Massage your dogs’ gums for 30 secs – practice evert day or so until they seem comfortable with the feeling. • Put a tiny bit of pet toothpaste on your finger and let them lick it off, so it gets used to the taste. • After a few weeks of the above training try brushing. If the toothbrush is not working, try a finger brush. WATCH OUT FOR DENTAL PROBLEMS Pets may not show signs of pain as their animal instinct ensures they do not show weakness but if you do notice any of these symptom’s chances are your pet has a serious dental problem. FORECAST RECORD AUSTRALIAN WINTER CROP PLANTING SEES POTENTIAL FOR THIRD CONSECUTIVE BUMPER HARVEST Australia is laying the groundwork for a third consecutive bumper harvest, with this year’s total planted crop area forecast to reach a record 23.83 million hectares, Rabobank says in its just-released 2022/23 Winter Crop Outlook. This would be nearly one per cent up on last year’s record planting and 11 per cent above the five-year average. It includes a 1.4 per cent lift in wheat and a record canola planting, up 20.9 per cent on last year, albeit at the expense of barley, oats and pulses. PAG E 9 2

A unique all-female species of grasshopper that can reproduce without sex provides fascinating insights into evolution, new research led by the University of Melbourne has found. Published today in Science, the research shows the Australian grasshopper Warramaba virgo (W. virgo) – a parthenogenetic species, meaning it can reproduce asexually by cloning itself – was just as ecologically successful as its counterparts that breed by sex. Lead author Professor Michael Kearney said “Parthenogenetic species in theory should be suffering from parasites and a high load of bad mutations. Our study finds no disadvantage to W. virgo.” PAG E 94
Co-author Professor Ary Hoffmann said sexual reproduction could be costly. “Finding a mate takes time and energy and comes with an increased risk of predation. If we can do away with males and still have viable offspring and the species thrives, then why do we bother with sex at all?” Professor Hoffmann said. The W. virgo is estimated to have evolved from a hybrid mating between two other grasshopper species (W. whitei and W. flavolineata) more than 250 thousand years ago.
