THERE ARE APPROXIMATELY 35 MILLION PINEAPPLES PRODUCED IN AUSTRALIA EACH YEAR, MOSTLY GROWN ACROSS QUEENSLAND’S SOUTH COAST, NOW THAT’S A LOT OF PINEAPPLE. Pineapples are a pretty versatile fruit, it can go with just about anything, it can be cooked, so it is perfect for burgers, curries and pizzas, also the perfect partner for fish and pork. Pineapple is also great raw for salads, desserts or just on its own. Having a gin and tonic, why not throw in some Pineapple for that kick of flavour or make your own Pineapple punch or juice. Its hard to beat that burst of juicy flavour when you bite into a piece of pineapple, it’s busting with Vitamin C, pineapple not only tastes great, it also looks great when served and can add that WOW factor to any dish.

PINEAPPLE TIPS External colour is not the best indicator of a pineapple’s ripeness. The colour can vary from season to season. Pineapples are harvested when they are ripe, so when it hits the store its ready to be eaten. Check the fruit is free from soft spots or bruises. If it has the crown, make sure the leaves are fresh and green. – Choose pineapples that feel nice and heavy for their size. – Pineapples can be left at room temperature for a couple of days but are best eaten within a few days of purchase. »

When you get your pineapple home don’t throw it in the fruit bowl, or bang it on the bench when get ready to slice, place it gently and don’t over handle it. They don’t recommend refrigerating a fresh pineapple, it’s okay for the tinned pineapple but not fresh. Also keep out of direct sunlight. Did you know Pineapples are available in Australia year round - even in Winter. It’s noted the name pineapple was given because it looked like a pinecone with a sweet apple taste. Did you know if you plant your pineapple leaves and grow a pineapple tree? Pineapples are fruits, related to the berries. The largest pineapple ever grown was grown in Australia, recorded in 2011- the pineapple was 8.28 kg. Pina is Spanish for Pineapple, so when you hear someone ordering a Pina Colada you know they are ordering a rum and Pineapple.

In addition, over 16,000 new Australians become citizens on Australia Day and are presented with their native Australian plant to symbolise the start of a new life. Australia Day is about acknowledging and celebrating the contribution that every Australian makes to our contemporary and dynamic nation. The marking of 26 January is an important date in Australia's history and has changed over time: starting as a celebration for emancipated convicts and evolving into what is now a celebration of Australia that reflects the nation's diverse people. It is more inclusive than many would have you believe with 3 in 4 Australians believing it has a bigger meaning beyond being just a day off. More than half of all Australians participate in Australia Day attending events organised by State Governments, local councils, community groups or getting together with family and friends. AUSTRALIA DAY, 26 JANUARY, IS THE DAY TO REFLECT ON WHAT IT MEANS TO BE AUSTRALIAN, TO CELEBRATE CONTEMPORARY AUSTRALIA AND TO ACKNOWLEDGE OUR HISTORY. It is a celebration of our cultural heritage and everything that it means to be an Australian in this cultural melting pot where 30% of our population was born overseas. There are calls to change the date of Australia Day to make it a celebration that is inclusive of the people who lived here before those ships arrived. One of the more humours proposal is May 8 - Maaate!!!! which would provide a lighter side to the drama that is increasingly surrounding the arrival of the First Fleet. For Indigenous Australians, the historic date of January 26 was the day when their land was no longer only theirs and in the years since there have been several calls to stop marking the day with celebration but with "mourning and protest". Firstly, Captain James Cook did not discover Australia. Indigenous Australians were and the first European honour goes to the Dutch. Secondly, January 26, 1788, did not see the foundation of modern Australia. The First Fleet arrived in Botany Bay between January 18 and January 20 and moved to Port Jackson on January 26 because there was not enough fresh water in Botany Bay. And let's face it the 1000 people who landed here were mainly convicts who didn't want to be here and certainly were forced to create a new nation! HERE ARE SOME OF THE ALTERNATIVE DATES BEING DISCUSSED AND SOME REASONS. JANUARY 1 Because it's the day the Commonwealth of Australia came into being in 1901. But it's already a public holiday so that creates problems. FEBRUARY 13 The date where our national parliament duly acknowledged the past and laid claim to a future that embraces all Australians. MARCH 12 On this date in 1913, Canberra was officially named and Australia's capital city was born. MAY 9 When the Parliament shifted to Canberra (from Melbourne); and finally, in the bicentennial year of 1988, when the current Parliament House was opened. It's also Mother's Day. MAY 27 On May 27, 1967, Australia held a referendum to include Indigenous Australians in the census count and to give Federal Parliament the power to specifically legislate for them. PAG E 1 8

The world’s largest consumerbased awards program is now in its 12th year in Australia, recognising product innovation, and serving as a shortcut for shoppers, saving them time and money. During the height of the COVID-19 pandemic, consumers “became more risk averse and have been seeking products and services that deliver value, quality and peace of mind.” With the COVID-19 pandemic also causing major disruptions to usual shopping habits, there was a surge of consumers trying new products and brands, with nearly two-thirds (64%) purchasing something they were previously unfamiliar with. Shoppers can be confident when buying Product of the Year category winners as they undergo a rigorous testing process. A panel of judges, comprising of various industry experts, first tested the products for quality, credibility, and innovation. HOW TO BOOST THE AUSTRALIA ECONOMY BY $1 BILLION

AUSTRALIANS COULD DELIVER AN ESTIMATED $1.12 BILLION TO THE SMALL-BUSINESS SECTOR FOR THE HOLIDAY SEASON BY BUYING JUST ONE EXTRA PRODUCT FROM THEIR LOCAL SMALL BUSINESS RESEARCH HAS FOUND. This could take the form of an extra bottle of wine as a gift to assist the winemakers or some extra seafood - both sectors that have been badly affected by the China bans. Add in a range of other Australian owned and made products and the investment in the economy could be massive for the shopkeepers that have had a tough 2020 due to the corona virus pandemic. The report found that just by buying one extra gift from a small business this Christmas, you could make a huge difference to the people that give so much to the community, be it a neighbour, a friend or a family member. "Small businesses really are the lifeblood of the community and without our support we could be looking at a very different small business landscape in the new year,” the report found. According to the research, 51 per cent of those who shop with small businesses say they do so because they are able to give back to the community, 43 per cent say they find more niche products, and 40 per cent see it as a more intimate experience. In addition, 28 per cent of Aussies say supporting small business is like “eating a family home-cooked meal,” while a quarter (24 per cent) say it gives them the same feeling as “wrapping their hands around the perfect hot drink.”

SOUPS THE WORD The Arnott’s Group has announced it will be manufacturing an extra 16.5 million kilograms of Campbell’s soup and stocks at its Shepparton plant in Victoria each year, due to a $8 million upgrade of the site. While domestic demand for canned soup products has been largely flat in Australia, the Shepparton plant has been under-utilised. But demand from Asian countries is strong and The Arnott’s Group will make the most of export opportunities in key markets.

Australia’s seafood industry has called for consumers to support their local lobster industry as it reels from the impacts of the Australia-China trade riff, and to support the entire industry by committing to switch one meal for Aussie seafood. “It’s been a hard year for Australia’s seafood industry and now our lobster producers have been dealt another blow,” Seafood Industry Australia (SIA) CEO Veronica Papacosta said. “As an industry, we’re calling on Aussies to switch one meal a week to Australian seafood in a bid to support our industry. “If one per cent of the population committed to changing just one meal a week to locally sourced Australian seafood like prawns, salmon or snapper that would be more than 250,000 meals of Australian seafood on the table. ” To help people find Australian lobsters near them we’ve created a lobster function on our Great Australian Seafood Fish Finder that allows consumers to search by postcode for retailers stocking Australian lobsters near them. You can also find these stockists at www.greataustralianseafood.com.au/fish-finder SO WHAT DO CONSUMERS THINK ABOUT THE SUSTAINABILITY OF AUSTRALIAN SEAFOOD? Australians consumed an average of 25 kilograms of seafood per person in 2010 – an

amount that has increased significantly over the last 30 years. Worldwide, fish consumption now exceeds beef. Positive community perceptions about the sustainability of the seafood industry have been trending upwards since 2015, when the combined total of those who believed the industry was, or could be sustainable was 58%. Community perception questions included in the 2019 consumer survey found that 65% of respondents had a positive outlook on the sustainability of the sector – 46% believe it already is sustainable and 19% are hopeful and confident that it can be. An extensive assessment of the status of Australia’s commercial fisheries assessed 150 stocks of 49 species, which make up the bulk of the commercially significant fisheries (approximately 70% of the commercial wild catch by volume and 80% by value). The report tells a positive picture: 98 stocks were classified as “sustainable”, 11 as “transitional”, 39 were “undefined” due to insufficient data, and just two – Southern Bluefin Tuna and School Shark – were assessed as overfished. This is good news for consumers of wild caught Australian seafood.

3 PRAWN DIPPING SAUCES Aussie Prawns with Green and Gold Dipping Sauces. (and a great chilli mayo too) Mango, a classic Aussie ingredient along with garlic and Jalapeño makes up our first golden sauce and for the green, a straight Jalapeño dip. Then if things aren’t quite spicy enough, a sriracha chilli mayo recipe brings home the trifecta.

Middle Eastern flavours come to life in this succulent butterflied leg of lamb recipe. This dish will be sure to become a family favourite.

INGREDIENTS 1.2kg butterflied lamb leg 2 tbsp olive oil Âź cup Middle Eastern Harissa spice blend 1/3 cup burghul (cracked wheat) 1 small bunch parsley, finely chopped 4 truss tomatoes, deseeded, finely diced 1 red capsicum, finely diced 2 Lebanese cucumbers, deseeded, finely diced 4 green onions, thinly sliced Juice of 1 lemon + wedges, to serve Baby spinach leaves, hummus, tzatziki, pickles of choice, radishes, pita bread, coriander leaves, to serve

METHOD 1. Place lamb, half the oil and spice blend in a large snap lock bag or glass bowl, turn to coat and set aside for at least 10 minutes.

2. Heat a char-grill pan or barbecue over medium-high heat and cook lamb

for 4-5 minutes each side or until charred. Reduce heat to medium-low and cook for a further 12-15 minutes, turning regularly or until cooked to your liking. Remove from heat, set aside on a plate covered loosely with foil and rest for 10 minutes. 3. Meanwhile, to make tabouli prepare burghul according to packet instructions. Drain, rinse and place in a large bowl. Add parsley, tomatoes, capsicum, cucumber, onions, lemon juice and remaining oil. Season and toss well to combine. 4. Slice lamb and arrange on a platter with tabouli, baby spinach, hummus, tzatziki, pickles, radishes, pita bread, coriander and lemon wedges.

TIPS 1. Lamb shoulder or lamb leg (bone-in) would also work well in this recipe. 2. Any leftover lamb can be used in a flatbread or wrap with salad for a

delicious lunch. Or mix it up, dice any leftover lamb and make a salad bowl to go with any leftover tabouli, dips, pickles and flatbreads. 3. Get creative with your choice of Middle Eastern spice blend - you can also buy Baharat or Ras El Hanout spice blend at greengrocers and delis or make your own blend. 4. Try using quinoa or cous cous instead of burghul in the tabouli.

NUT WITH A RASPBERRY CHILLI JAM AND SOUR CREAM. How this for classic Aussie? The iconic Iced Vovo inspired crumbed Australian Prawns with rasberry chilli jam. Sounds like an unusual combo, but it works. Tastes amazing. Tastes like Australia.

INGREDIENTS 125g plain flour, plus extra for dusting 1½ tsp baking powder Sea salt and freshly cracked black pepper 1 medium egg, beaten 150ml ice-cold water 1 cup panko breadcrumbs 1 cup unsweetened desiccated coconut 28 large green Australian prawns, peeled and deveined with tails intact Vegetable oil for deep frying Sour cream to serve Raspberry chilli jam 250g raspberries 3 long red chillies, stem and seeds removed, roughly chopped 1 garlic clove 3 tablespoons red wine vinegar 2 cm piece ginger, skin removed and chopped The zest and juice of two limes 2 tablespoons soft brown sugar A pinch of ground allspice ½ teaspoon sea salt

METHOD 1. Sift the flour, baking powder and salt into a bowl. Make a well in centre and add the egg. Gradually whisk in the cold water to make a smooth batter. 2. Place the breadcrumbs and coconut in a bowl, season with salt and pepper and toss to combine. 3. Dust each prawn in extra flour, shaking off any excess. Dip the prawns into the batter allowing any excess batter to drip back into the bowl. Roll the prawn in the coconut crumbs, pressing down so the mixture sticks. repeat with remaining prawns. 4. Heat oil in a large saucepan to 180 0C. Fry prawns in batches for 1-2 minutes or until golden and allow to drain on paper towel. Serve with raspberry chilli jam and sour cream. To make the raspberry chilli jam: 1. Place the raspberries, chillies, garlic, red wine vinegar, ginger, lime juice and zest, brown sugar, allspice and salt into a food processor and process until smooth. 2. Pour into a saucepan and bring to the boil. Reduce to a simmer and cook gently over a low heat for 5 minutes or until thick and glossy. Set aside to cool.

METHOD 1. The good news is this dish leans on your fishmonger to do most of the

heavy lifting, meaning all you need to do it pick up, plate up and prepare.

2. We reckon it’s best to kick off with the dipping sauces. To make the green chilli and lime mayo: add all the ingredients into a small food processor, blitz until combined, and pop it in the fridge until you’re ready to serve. Or, pick up a jar of flavoured mayo and cut out the middleman. 3. To make the mango and lime salsa: place the mango, mint, lime zest and juice into a bowl, toss to combine, and bung it in the fridge with the mayo until it’s party time. 4. To prepare the scallops: mix the butter and garlic together in a bowl with salt and pepper. Preheat the grill in your oven to high. Top the scallops with the garlic butter, grill for 2-3 minutes and sprinkle with fresh parsley to serve. 5. Now comes the fun part. First, line your platter with rock salt, this will help ensure your seafood stays put, then we recommend putting on the lobster as it will take up the most space. Next up, arrange the prawns, oysters and scallops, ensuring you don’t leave any gaps. Next, place the smoked salmon on a board with some warm sourdough, crème fraiche and lime wedge, grab your sauces from the fridge and serve. Seriously easy, and incredibly tasty!

INGREDIENTS 1 1/2 cups self-raising flour (205 g) 
 1/4 cup almond meal (25 g) 
 1/4 tsp salt 
 1/2 cup granulated sugar (100 g) 
 1/2 cup milk (125 ml) 
 1/4 cup butter, melted and cooled (60 g) 
 1 egg, lightly whisked For sauce 1/2 cup passionfruit pulp (7 – 8 fresh passionfruit) 
 1/2 cup orange juice (125 ml) 
 1 cup boiling water (250 ml) 
 1/4 cup brown sugar, lightly packed (60 g) 
 To serve Extra passionfruit

METHOD 1. Preheat oven to 180°C. Lightly coat a 2 ltr baking dish

with cooking oil spray and place on a rimmed oven tray.

2. Stir flour, almond meal, salt and sugar in a medium

bowl. Make a well in the centre, add milk, butter, and egg, and stir to combine. Spoon batter into prepared dish and spread into a thin layer. 
 3. Stir passionfruit pulp, orange juice, boiling water and brown sugar in a jug. Pour liquid over a large spoon so the liquid floats on top of the batter. Do not stir. 
 2. Bake 30 – 35 minutes until pudding is golden on top and firm to the touch in the centre. Serve warm with extra passionfruit, and cream, custard or ice cream if desired.

CHOCOLATE CRACKLE POPCORN– KIDS PARTY You can’t go wrong with these popcorn sized colourful chocolate crackle balls – the kids will love helping to make and eat them too!

Difficulty: Easy Prep Time: 30 mins

INGREDIENTS 250g (1 block) Copha 200g white chocolate, chopped (not compound) 125g (1 cup) Icing sugar – sifted 60g (½ cup) Milk Powder 4 cups Rice bubbles 100g (1 cup) Desiccated coconut Natural food coloring (multi-colours) – e.g. Red, Green, Yellow, Blue

Setting Time: 1 Serves: 10 to 15 small popcorn bags or tubs

METHOD 1. Line 2 flat baking trays with baking paper. 2. Combine white chocolate and Copha in a large bowl. Place over a pot of

lightly simmering water. Stir occasionally until melted. Remove from heat.

3. Add the icing sugar, milk powder, rice bubbles and coconut. Stir to combine.

4. Divide mixture evenly into 4 bowls and put a few drops of food colouring

in each to get the desired colour you want. Rest the crackle mix for 20 minutes. 5. Pinch off walnut sized pieces and shape into popcorn balls. Place popcorn crackle balls in fridge to set for 1 hour.

ASSEMBLY • Mix up the different colour popcorn crackles and divide evenly into popcorn bags or tubs before serving. • Store popcorn crackles in an airtight container in the fridge for up to 4 days.

M&M CHOCOLATE CRACKLES Prep Time: 20 mins

INGREDIENTS 250g (1 block) block Copha 180g packet Milk Chocolate M&M’s 160g (4 cups) Rice Bubbles 100g (1 cup) desiccated coconut 80g (2/3 cup) icing sugar mixture 35g (1/3 cup) cocoa powder

Serves: 12

METHOD 1. Line a 12-hole muffin pan (1/3-cup capacity) with paper cases. 2. Place Copha in a small saucepan and stir over a low heat until melted. Remove from heat. Stand 10 minutes to cool slightly.

3. Reserve 2 tbsp of the M&M’s and set aside. Combine Rice

Bubbles, coconut and combined sifted sugar and cocoa in a large bowl. Add in the melted Copha and M&M’s and stir to combine. 4. Spoon crackle mixture evenly among prepared paper cases. Press reserved M&M’s on top of each crackle. Refrigerate for at least 1 hour or until set.

TIP • Store crackles in an airtight container the fridge for up to three to four days.

What a great spring or summer dish with all the flavours and colours of Australia, green prawns, green salsa and a golden pineapple rum marinade.

INGREDIENTS 24 large green Australian prawns, peeled with heads intact 1 small pineapple, halved and sliced Baby coriander and fresh lime to serve Pineapple and Rum marinade 460g chopped fresh ripe yellow pineapple 100ml dark rum 2 tablespoons lime juice 4 garlic cloves, crushed 2 tsp coriander seeds 2 tsp sea salt flakes 55g caster sugar green chilli salsa 4 green chillies, deseeded and finely chopped ½ cup coriander leaves, finely chopped ½ cup mint leaves, finely chopped 2 tablespoons chopped chives 1 clove garlic chopped ½ cup olive oil 2 tablespoons lime juice

METHOD To make the pineapple and rum marinade 1. Place the chopped pineapple, rum, lime juice, crushed garlic, coriander seeds, salt and sugar in a food processor and process until finely chopped. Set aside. To make the green chilli salsa 1. Place the chilli, coriander, mint, chives, garlic, olive oil and lime juice in a bowl and mix to combine. Set aside 2. Thread the prawns onto metal skewers and place on a baking tray lined with baking paper. 3. Brush generously with the marinade. Refrigerate for 30 minutes. 4. Place the remaining marinade in a small saucepan over a medium heat and cook, stirring, for 10 minutes or until reduced and sticky. Set aside. 5. Preheat a barbecue or chargrill pan over a high heat. Cook the prawns, for 4-5 minutes each side or until charred and cooked through. Set aside and keep warm. 6. Cook the pineapple slices for 1- 2 minutes each side or until charred and caramelised. 7. Serve with the prawns, pineapple sauce, jalapeño salsa, baby coriander and fresh lime.

Australia Day Pavlova Ingredients: The Country Chef Bakery Co. 500gm pavlova 400ml fresh cream, whipped 2 large mangoes 3 green kiwi fruit 3 passionfruit 1 cup shaved coconut, toasted

Method: 1.

Whisk cream until it forms a stiff peak.

While cream is being whisked, cut the cheeks from the mangoes and scoop out the flesh. Slice each cheek thinly. Peel each kiwi fruit and slice thinly.

Spread cream over the pavlova and arrange sliced mango and kiwi on top. Cut passionfruit in half and scoop out pulp over the sliced fruit.

Sprinkle toasted shaved coconut on top.

Foster’s remains one of Australia’s most recognisable brands thanks to memorable advertising fronted by Paul Hogan in the 1980s. While international sales have remained strong in recent years, local sales declined, replaced by the much-loved CUB brands like Victoria Bitter and Carlton Draught.

PASSIONFRUIT GIN SPRITZ Serves: 2

INGREDIENTS

Pulp from 2 fresh passionfruit – choose plump and smooth fruit that’s heavy for its size in store – it will have more pulp inside! 60 ml gin 200 ml Prosecco Sparkling water Ice lemon peel twist, to garnish

METHOD 1. Fill two large glasses with ice. Combine

passionfruit pulp and gin in a small jug and stir well. 2. Divide gin mixture between glasses. Pour over Prosecco, top up with sparking water, and garnish with a lemon twist.

TIPS • For a lighter cocktail, substitute a portion of

the Prosecco with extra sparkling water. For a sweeter cocktail, add a teaspoon of honey or sugar syrup to the passionfruit and gin. • If gin is not on hand, you can use another clear spirit of your choice, such as vodka or pisco. • Passionfruit is best kept in a bag in the fridge. They will last up to a month!

PASSIONFRUIT & WATERMELON MARGARITA Prep Time: 5 mins Serves: 4

INGREDIENTS

1/2 cup fresh passionfruit pulp (7 – 8 fresh passionfruit) 
 500g watermelon flesh 
 1/4 cup lime juice (60 ml) 
 120 ml silver tequila 
 60 ml triple sec (orange liquor) 
 To serve 
 Ice, Watermelon, Lime wedges, Coarse salt

METHOD 1. Blend watermelon flesh until very smooth. Pass

juice through a sieve, discarding any solids. 
 2. Add watermelon juice, passionfruit pulp, lime juice, tequila and triple sec to a jug with a handful of ice. Stir well. 
 3. Pour salt onto a small plate. Run a lime wedge around rim of the glass and dip into the salt.
 4. Divide margarita mixture across the glasses, garnish with watermelon and lime to serve.

TIP • For a mocktail alternative: omit the tequila and

triple sec, add 1/4 cup (60 ml) fresh orange juice and 1 cup (250 ml) sparkling water. Skip step 3.

Simply add avocado, dates, peanut butter and spinach to a tupperware container and freezer. To serve, add the frozen ingredients to a blender with milk and enjoy. • You can easily add 1/2 cup of rolled oats to this recipe for more carbohydrates.

Place chopped ginger in a cocktail shaker and muddle. Add quartered strawberries, mint sprigs and lime juice and muddle again. Add ice, brown sugar and rum. Shake vigorously to combine. FROZEN BLACKBERRY SANGRIA Serves: 1 INGREDIENTS Margarita base ¼ cup silver tequila 2 tablespoons fresh lime juice 1 tablespoon agave nectar 1 tablespoon blackberry liqueur 1 tablespoon plus 1 ½ teaspoons water Sangria base 6 tablespoons Burgundy wine

1 tablespoon blackberry brandy 1 ½ Teaspoons simple syrup 1 tablespoon plus 1 ½ teaspoons water Fruit base 1 punnet Driscoll's Blackberries, plus more for garnish 1 ½ Teaspoons simple syrup

METHOD 1. Combine margarita base ingredients in freezer resealable plastic bag. Place bag in freezer in upright position. Freeze at least 4 to 6 hours. May stay frozen for longer if desired. 2. Combine sanngria base ingredients in freezer resealable plastic bag. Place bag in freezer in upright position. Freeze for at least 4 to 6 hours. May stay frozen for longer if desired. 3. Lightly mash blackberries with simple syrup do not puree. Remove frozen margarita and frozen sangria from freezer. Allow to thaw until mixture is just pliable in the bag. Pour half margarita mixture in a goblet, add spoonful blackberry-simple syrup. Top with half sangria mixture add another spoonful blackberry-simple syrup. METHOD 1. Add all ingredients to cocktail shaker, shake over ice.

STRAWBERRY LEMONADE WITH BERRY ICE CUBES Serves: 8

INGREDIENTS

1 punnet Driscoll's Strawberries, divided 2 cups Driscoll's Berries (blackberries, blueberries and/or raspberries) 1 cup sugar 7 cups cold water, divided 2 cups fresh lemon juice

METHOD 1. Trim and core strawberries. Cut 3 strawberries

into 1cm cubes. 2. Puree remaining strawberries in a food processor or blender. Strain puree through a fine-mesh sieve to remove seeds. 3. Place 1 to 3 berries in each cube in ice cube tray. Pour water over and freeze until solid. 4. Meanwhile, bring sugar and 1 cup water to a boil in a medium saucepan. Reduce to a simmer and cook until sugar is dissolved. Let cool. Combine sugar syrup, remaining cold water, lemon juice, and strawberry puree in a large pitcher. Stir to combine. Add ice cubes and serve immediately.

LYCHEE ORANGE BLUSH Prep Time: 8 mins Serves: 1 INGREDIENTS 15ml lychee liqueur 30ml gin 15ml lemon 30ml orange 3 shakes of bitters 2 fresh lychees (peeled, halved & seeded) 1 egg white ice METHOD Place all the ingredients except the ice into a cocktail shaker and shake vigorously for about 90 seconds. Fill the shaker with ice and shake vigorously for another 90 seconds. Strain the cocktail into a coupe cocktail glass, shaking out the last bit of foam, and garnish with a fresh lychee. Serve immediately. NOTES • When shaking with egg white, the more you shake, the more of a creamy foam you will create. Shaking creates air within the proteins, giving it a smooth, professional finish. • VEGAN/EGG ALLERGY VERSION – use approx. 35ml of chickpea juice instead of the egg white to create an equally foamy vegan version! If you’re a dog, then this is doubly true (is doubly a word?). Dogs explore with their eyes, nose and ears, every smell provides an exciting opportunity just waiting to be explored. Just through sniffing your dog can tell who’s been around, just as we identify people walking across the road, we may not know them but we have seen them before, you dog has a similar experience as it picks up all those exciting doggy scents. Now, we have all seen this before, a dog being pulled along by the owner, it is frantically trying to get a sniff of this and that, but the owner won’t stop, they are on a mission, probably a health kick or similar. While this is great for the owner the poor old dog is missing out on half the benefits of talking a walk, the mental excitement side. Imagine being at the shop and you get a glance at something fantastic, you go to stop for a further look, but you are pulled away, time and time again, imagine the frustration. That’s how a dog may feel after a walk with no stops for them. If you do plan to run or walk briskly with your dog then plan some slow time at the start or at end of your walk so your dog can get some time to soak up smells and let them enjoy their outdoor time. If your dog also often tears up the backyard, chews plants or household objects or barks alot PAG E 6 6

then a good walk could be the solution to your problem. The first signs of boredom or lack of stimulation is chewing, barking and digging. Playing fetch or other games while your out will also help teach your dog that you are their play outlet when outdoors, some pets get outside and are all over the place with excitements and they want to play. A dog that knows he is going to the park for playtime with you is more inclined to be calmer on the walk there, they are not looking for other play options because they know their time is coming. Walking and vigorous exercise like running and playing also helps your dog with sleep, digestion, and general health. If you have a dog that just wants to go slow and is dragging on the lead be patient, allowing a few sniffs, a moment or two on each, but keep moving and practice makes perfect. Walking is supposed to be a good time for both of you so find that happy medium and enjoy. COLES HAS PARTNERED WITH VICTORIAN RECYCLING ORGANISATIONS RED GROUP AND REPLAS TO PIONEER AND INSTALL A CONCRETE SLAB CARPARK MADE PARTLY OUT OF RECYCLED SOFT PLASTICS. Under installation at Coles Horsham, the carpark is the first commercial construction project in Australia to make use of Polyrok – a sustainable alternative to aggregate minerals used in concrete, such as stone. Made from recycled plastic bags and soft plastic packaging Polyrok has the potential to divert 105,000 tonnes of soft plastics from landfill each year, if used in commercial concrete projects across Australia. HAPPY BIRTHDAY QANTAS

NOVEMBER 16 2020 MARKED THE BEGINNING OF 12 MONTHS OF CELEBRATIONS AS QANTAS GEARS UP FOR ITS 100TH BIRTHDAY. Qantas celebrated its official 100th birthday on 16 November 2020 - a landmark event for one of the few Australian global icons. But November 16 was just the start of 12 months of festivities that will take the company to people in all corners of Australia. A commemorative $1 coin will be released by the Royal Australian Mint in February 2020. Around five million of these limited-edition gold coins will enter circulation to be used on everyday cash transactions. An exhibition of fascinating Qantas artefacts and memorabilia will also tour the country in the coming year, with cities and dates to be announced soon. When a Qantas 787 aircraft flew over the Sydney Harbour Bridge on 16 November 2020, it was more than just an aerial stunt. It was a celebration of the 100th anniversary of the iconic Australian airline founded in the outback on 16 November 1920. The Australian carrier was launched on November 16, 1920 by Australian Flying Corps veterans Hudson Fysh and Paul McGinness, together with local grazier Fergus McMaster. PAG E 7 2

It was initially known as Queensland and Northern Territory Aerial Services, from which the abbreviation Qantas was formed. “We started in outback Queensland carrying mail and a few passengers in the 1920s,” said Qantas Chairman Richard Goyder. “We grew as Australia grew, and we’ve had important support roles during wars, national disasters and celebrations. Our founders talked about overcoming the tyranny of distance and through the years we’ve moved from bi-planes to single wing, to jets to help bring things closer.” Qantas is considered to be the third oldest airline after KLM and Avianca. The carrier was initially formed to carry mail between outback towns but by the 1930s was flying passengers to Singapore. Qantas also claims to have “invented business class in the 1970s”, and more recently completed a series of ‘Project Sunrise’ nonstop flights to the US and Europe. Qantas CEO Alan Joyce said: “Now, as Australia opens up, we’re ready to fly again. And when people see the familiar kangaroo on the tail, it has another bit of history behind it.”

WASTE-WATER FROM NON-TOILET PLUMBING SYSTEMS SUCH AS HAND BASINS, WASHING MACHINES, SHOWERS AND BATHS) TO HELP KEEP THEIR LAWNS AND GARDENS ALIVE OVER THE HOT SUMMER MONTHS. n order for this to succeed, you need to ensure that the washing detergents and household cleaners you choose to buy are ‘grey water friendly’ and don’t contain harsh chemicals, bleaches, disinfectants, or phosphates which will potentially kill the very plants you’re trying to care for. YOUR GUIDE TO USING GREY WATER SAFELY Below are some general suggestions, but before setting up any grey water irrigation system, it is important to consult with your local council and a licensed plumber. • Use mulch on garden beds to reduce evaporation and minimise the health risk of exposed, pooled water lying on the ground – this water may contain bacteria. • Don’t use grey water on edible plants that lie near the ground. • To avoid build-up of salt, use fresh tap water every fourth watering to dilute. • Rather than frequent light surface watering, irrigate deeply in one go. • Check soil pH levels every 2-3 months. • Use a filter on grey water to remove contaminants like grease and slime that can block pipes. • Don’t store grey water for any longer than 24 hours as bacteria and microbes will quickly thrive.
