WHAT IS IRON DEFIENCY? Iron helps the production of red blood cells, iron deficiency occurs when your red blood count becomes too low as your body struggles to produce enough red cells. The mineral iron is also needed to make hemoglobin, a protein in red blood cells that enables them to carry oxygen around the body. If your body doesn’t have enough hemoglobin, your bodies vital muscles may not be getting enough oxygen. Don’t panic, if you feel you may be suffering from iron deficiency the cures are usually pretty simple and pain free, a simple change to your
diet is often the solution. Red meat, green leafy vegetables, seafood, seeds and nuts are just some of the most common iron rich foods you can eat to reverse iron deficiency. Obviously it’s essential you see your doctor if you feel you may be iron defficient, don’t self diagnose and run off to the chemist and stock up on iron supplements, as too much iron leads to other problems. A blood test is required to show the levels of iron in your blood, and a course of action will be prepared by your GP based on your levels.

We all know veggies are good for us – Mum’s been telling us for years! Eating a healthy and balanced diet can help reduce the risk of many chronic diseases. But did you also know it can help us be happier, and may even help reduce the risk of developing depression? Less than 4% of us eat our recommend five serves of vegetables a day. In fact, the average Australian eats eat only half that. And yet, more than one third of rubbish bins in Australian kitchens contain leftovers and wasted food. That’s nearly $4000 worth of groceries per household per year that can end up in landfill, where food breaks down and emits harmful greenhouse gases. Nutrition Australia senior dietitian, Amber Kelaart says that with a few simple steps, you can discover new ways to add veg to your day and reduce your household food waste, while saving money and the environment at the same time! “Eating your ageing vegetables, and eating the parts you usually throw out (like skins, stalks and leaves) makes every dollar stretch further, and reduces your household’s impact on climate change. It’s win-win!” »

SO HOW CAN WE MAKE THE MOST OUT OF OUR GROCERIES? Amber says to start by using more parts of the vegetables you already have on hand. “Vegetable skins contain fibre, vitamins and minerals. Rinsing vegetables like carrots, potatoes and mushrooms, instead of peeling them, means you keep more of those important nutrients in your body, and out of the bin.” “And don’t throw out things like broccoli stems or the leaves of leeks. You can chop the broccoli stems and use it in a stirfry or soup. And chips, tart and stock made from the leaves of leek will add a unique new ingredient to your repertoire.” If your vegetables are getting a little wrinkly, having some ‘go to’ recipes up your sleeve will help you use up your ageing vegetables. “Give your ageing veg a second life by adding them to vegetable soups, egg frittatas or savoury muffins. Just add a few handfuls of chopped left over vegetables create delicious and colourful new meals or snacks. Plus they freeze well and can be added to the kids’ lunchbox or taken to work.” Nutrition Australia also recommends learning how to store different types of vegetables, so they stay fresh for as long as possible. "If you have bought a lot of something but only need a little, think about preparing the extra vegetables in a way that you can use in future. For example, chop up extra celery and carrots for snacks. And freeze herbs while they’re fresh so you can trim some off each time you need more,” Amber suggests. The latest finding from Neilson also sayAussie men are finding skin care to be an increasingly integral part of their bathroom regime. Usage of products such as facial cleansers increased by 37% over the past five years amongst men aged 25 to 54. NOT ONLY ARE MEN USING MOISTURISERS AND CLEANSERS MORE OFTEN, BUT THEY’RE ALSO INCREASINGLY PREPARED TO INVEST IN MORE EXPENSIVE BRANDS. 37% of men admit to taking care of their appearance at all times. The number of males aged 25 to 54 buying facial cleanser on a weekly or monthly basis has increased 21% over the last year.

Moisturisers and body care are also seeing similar growth, up 8% and 11%, respectively. OVER THE PAST FIVE YEARS, THERE HAS BEEN A 14% INCREASE IN THE NUMBER OF MEN SAYING THEY KEEP UP WITH THE LATEST FASHIONS. Surprisingly, this change in attitudes is being driven by men aged 40 to 55, where we see a 54% increase in agreement with this attitude. Set aside for 5 minutes to cool. 3 Add Stevia, egg, flours and choc bits to pan. Stir well to combine. Spread into pan. Press cherries into surface. Sprinkle with almonds. Bake for 30 minutes or until golden and set. Allow to cool in pan. Cut into squares and serve with cherries.

INGREDIENTS 4 (240g) Portabella Mushrooms, thickly sliced 50g butter 240g truss cherry tomatoes, cut into 4 lengths 1/3 cup olive oil 350g zucchini, grated 100g halloumi cheese, chopped 1 tsp sweet paprika 2 green onions, thinly sliced 6 eggs ½ cup (75g) self raising flour 1/3 cup (75ml) milk
METHOD 1. Heat butter in a large saucepan over medium
heat. Once melted, add mushrooms and cook for 5 minutes or until tender and lightly browned. Remove mushrooms and set aside. 2. Meanwhile, preheat oven to 180°C fan forced. Line a baking tray with baking paper. Place cherry tomatoes on the baking tray and drizzle with 2 tablespoons olive oil. Season with salt and pepper. Cook for 10-12 minutes or until tomatoes are softened. 3. Using hands squeeze zucchini to remove any excess liquid. Combine zucchini, halloumi, paprika and green onion in a medium bowl. Season with salt and pepper. Combine flour, 2 eggs and milk in a separate bowl. Add zucchini mixture and stir gently until combine. 4. Heat one third of the oil in a large frying pan over medium heat. Drop ¼ cups of the fritter mixture into pan and cook, in batches, for 5 minutes each side or until cooked through. 5. Meanwhile, poach remaining 4 eggs in a pan of simmering water for 4-5 minutes or until cooked to your liking. 6. Place zucchini fritters on plate, top with mushrooms, poached egg and cherry tomatoes to serve.

METHOD 1. Heat oil in a large frying pan. Cook chicken until
golden. Set aside. Cook leek in same pan for 2-3 mins until softened. 2. Return chicken to the pan add Campbell’s Condensed Cream of Chicken Soup and cream, stirring until combined. Season to taste. 3. Serve with green beans and rice.
SERVE Serve with steamed green beans.

METHOD 1. Combine yoghurt, lemon juice, 1 garlic clove and mint
in a small bowl, set aside 2. Heat 1 tablespoon olive oil in a medium frying pan over medium high heat, add mushrooms. Cook for 4 minutes, add remaining garlic, cumin and coriander and cook for a further 1 minute or until mushrooms are fragrant and golden. Allow to cool slightly 3. Place chickpea, carrot, parsley and mushroom mixture in the bowl of a food processor and blend until just combined. Shape into 4 patties, dust in flour 4. Heat remaining oil in a large frying pan. Cook patties for 3-4 minutes each side or until crisp and golden 5. Place base of rolls on serving platter, spread evenly with yoghurt, top with lettuce, mushroom patty, cucumber and top of roll to serve.
TIP Drizzle with chilli oil for an extra kick!

METHOD 1. Combine the butter, garlic, chilli and 2
tablespoons of oil in a small saucepan. Heat over medium heat until hot. Set aside. 2. Heat a large frying pan over medium-high heat until hot. Add 1 tablespoon of the remaining oil and the Fioretto®. Cook shaking the pan for 2-3 minutes until the stems are bright green. Add 1 tablespoon of water, cover and cook for 1-2 minutes until just tender. Remove to a plate. 3. Wipe the pan clean and heat over high heat until hot. Combine the remaining 1 tablespoon of oil and prawns. Season with salt and pepper. Add to the hot pan and cook in batches for 1 minute until they change colour. Add the garlic butter to the pan, return the Fioretto® and add the sherry. Cook shaking the pan for 1 minute. Remove from the heat and scatter over the parsley. Spoon into bowls and serve with crusty bread.

METHOD 1. In a pan, heat oil over medium-high heat for
one minute. Add onion and garlic and cook until lightly browned. Add diced pork and cook until browned. 2. Add ginger, bay leaf, celery, pumpkin, sweet potato. Stir to combine. 3. Add diced tomatoes and chicken stock, soy sauce & oyster sauce. Bring to boil then reduce heat to simmer for 30 minutes. 4. Add zucchini, broccolini & simmer for another 3 mins. Adjust seasoning – salt & pepper. Some chilli can be added for more spice. Mix in baby spinach 5. Serve in warm bowl & garnish with fresh rosemary

A twist on the old favourite with the inclusion of fresh dates, cashews and peanut butter. Less sweet than the traditional caramel slice recipe, but equally as delicious. This is a gluten-free slice that everyone can enjoy!
INGREDIENTS
METHOD
Base 120g (¾ cup) unsalted cashews 45g (½ cup) gluten-free rolled oats or quinoa flakes 80g (1 cup) desiccated coconut 6 fresh dates, pitted 70g (1/3 cup) Copha, melted (see tip)
Base 1. Grease and line a 20cm square tin. Make sure the paper has a 2cm overhang. 2. Using a food processor, process the cashews, rolled oats or quinoa flakes, coconut, dates and melted Copha until they resemble fine breadcrumbs. Use the back of a spoon to press the mix firmly and evenly into the baking tray. Put in the fridge to set for 10 minutes.
Raw Caramel Filling 190g (1 ¼ cups) unsalted cashews 20 fresh dates, pitted (see tip) 60ml (1/4 cup) boiling water 70g (1/4 cup) smooth peanut butter (see tip) 70g (1/3 cup) Copha, melted (see tip) Chocolate Topping 100g dark chocolate, chopped 20g (1 tablespoon) Copha, chopped
Raw Caramel Filling 1. Place the cashews in a small bowl and pour over boiling water to cover. Set aside to soak for 5 minutes. Drain. 2. Using a food processor, process the dates, cashews and boiling water for 4 minutes or until smooth. Add the peanut butter and melted Copha and process until smooth. 2. Spoon over the biscuit base and smooth the top using a pallet knife. Chocolate Topping 1. In a medium heatproof bowl, combine together the chocolate and Copha. Place bowl over a pot of lightly simmering water. Stir occasionally until melted. Remove from heat. 2. Pour chocolate mix over caramel and put in the fridge for 1 hour to set. Slice into 48 bitesized bars.
TIPS • Melt the Copha in microwave on high or in a saucepan until fully melted • Any nut butter can be used in this recipe • You may like to roughly chop your dates before adding to the food processor to ensure smoother processing. • You can keep this slice in the fridge for up to a week. Or freeze cut slice for up to 2 months.

AWBERRY & LEMON GLAZE INGREDIENTS Cake 250g unsalted butter, softened 2 cups plain flour * ½ cup almond meal * 3 teaspoons baking powder 1 teaspoon salt 1 ½ cups raw caster sugar 1 lemon, finely grated zest & juice for glaze 125ml thick Greek yoghurt 5 large eggs ¼ cup light flavoured oil (light olive, grapeseed or rice bran oil) 250g fresh Queensland strawberries, finely chopped Glaze 1 cup sifted icing mixture 2-3 tablespoons liquid – try a mix of strawberry syrup, passionfruit and lemon juice
METHOD 1. Preheat oven to 175 degrees C (fan-forced). Grease and line 1.5 litre loaf tin.
2. Sift dry ingredients together, mixing to combine. 3. Using a stand mixer or electric hand mixer on a
medium setting; beat butter & sugar until pale and fluffy, about 4 minutes. 4. Reduce the speed of the mixer to low, add eggs, one by one, scraping down the sides of the bowl after each addition. Add yoghurt, then oil & mix until just combined. Gradually add flour, mixing on low until just combined (do not over mix). 5. Fold in chopped strawberries and lemon zest, spoon into prepared loaf tin and bake in the centre of the oven for 50-60 minutes. The cake is done when a skewer inserted into the middle comes out clean. 6. Cool in tin for 20 minutes, then turn out onto a wire rack to cool completely. 7. To ice, mix icing to desired consistency (thin glaze to thick drizzle) and spoon over cake.
NOTES • The plain flour and almond meal can be substituted with 2 ½ cups wholesome blend (a supermarket pre-packaged blend of wheat, millet, oat and coconut) or 2 ½ cups of cake flour • The acidity in passionfruit and lemon juice work perfectly as a glaze with this cake

Let’s face it, no matter how you look at it, it is a big job, too big to tackle in just one day so the first tip for Spring cleaners is to take it one room at a time. Nothing worse than getting half way through a room then having to leave it until you can get back to it. This is also the opportunity to de clutter and remove things that are simply not being used and taking up space. Some people really feel the anxiety of discarding things they have had for years, even its not being used. If this is you, try and think of it as making room for something new in the future that’s going to make you feel good, or think back to a time when you have given something away and if that made you feel good, you don’t have to throw it away just give things away to friends, family, charities etc. The Spring clean is also a great time to perhaps re arrange the furniture and give the room a fresh look. Make a list as you go of things that need to be done in the next twelve months-fix curtain rails, re grout the bathroom, new curtains in living etc, the list is the start of minor home improvements which is something to look forward to over the next year. For the clean, every year we do mention that for most of interior surfaces the cleaners available today are just fantastic, more environmentally friendly, less chemicals and odours, and they simply do a better job than the chemical peel cleaners of the past. It’s always good to new things, if you have never tried an over cleaner before, give it a go you may be surprised as to how good they are, it could save you hours of elbow grease. »

Use the right product. Yes I hear you, must we buy a ton of different products, the cost is too much. Well if you do want the product to actually remove the carpet stain, use the carpet stain remover, rather than the multipurpose cleaner. Want the glassware or silverware to shine, use the proper stuff. Using multipurpose cleaners just takes longer and may not get the job done. ONE OF THE FIRST THINGS WE DO WHEN SPRING ARRIVES IS TO GET INTO THE GARDEN AND START PLANTING, THIS OFTEN MEANS WEED SPRAY, SNAIL PELLETS AND TOXIC PLANTS. Both dogs and cats eat grass, obviously products designed to kills weeds and snails is not going to be good for your pet if eaten. Sprays can be more problematic as pets can run through sprayed areas then transfer chemicals onto their eyes and mouths through their grooming or playing. Always enclose a sprayed area for 24 hours so the pets can’t get in. Also ensure pets cant get to snail pellets- some Pet’s find these tasty treats. Flowers like Daffodils and Lilies are also toxic for pets if eaten. Ivy, man and pet’s worse nightmare, some ivy’s cause a nasty rash or bring on hives, so if you have ivy keep it high and out of range of dogs, or better still somewhere your pets don’t go. If trimming ivy be careful not to lump it on the lawn for removal later, you might be covered up in overalls but your pets is not, and they are naturally curious and we get into it. Snakes, if you have a reasonably large property or go for walks in bushy areas chances are there will be snakes, and like you they are thinking ahh, Spring let’s get out and enjoy the sun. There is not much you can do about snakes, especially if you can’t see them, so if you dog is suddenly barking at something in the garden call the dog back and do you best to see if there is anything there before letting then back to that area. If your pets is looking a bit green in the gills (unwell) lethargic, vomiting and you are perplexed as to why, it could be a snake bite. Check all legs and underbelly for tell-tale signs of a bite and get straight to the vet if you find a bite. If you do not see a bite that does not mean there is not a bite, but it does make it harder to know what to do, so if a cause is not clear, see the vet. Antihistamine, these are commonly taken by hay fever sufferers, and as they are available over the counter you may think these are pretty harmless, I can leave these lying around in a convenient place for when I need them later. If a pet eats one of these the will get sick, vomit, tremble or similar, if they eat a few they could die. Keep your medication out of reach of your pet. Spring is also mating season, so younger pets that have not been spade may get some extra attention if left along to socialise. You want to enjoy Spring and Summer outdoors with your pet so it always a good idea to invest some time into training so you can go to parks where other people and dogs congregate without having to spend the entire time restraining the pet- that’s not fun for you or them.

SOWING FROM SEED Often the thought of growing something from seed is daunting to beginner gardeners, often opting to purchase small seedlings instead. There is something special about growing from the beginning and with a few simple tips; it does not need to be difficult. Using biodegradable seed pots means you can start your seeds and transplant them with ease. These pots breakdown naturally, and are easy enough for your plants new roots to grow through. Simply start your seed in the little pot and when you see the roots permeating through the pot, you can plant the entire pot in your garden to break down, and you don’t risk the transplant shock of moving your little seedling into a bigger space. Use a good quality seed and cutting mix to start your seeds, and ensure when you plant your pot, it goes into a good potting mix or garden bed prepared with nutrient rich soil.
REPOTTING PLANTS Repotting is important to do a couple of times a year, but at least once in a 12 month period. This is because potting mixes are predominately made up of organic matter which continues to break down while in your pots. As it breaks down it lessens the pore space in the mix, giving your plants less ‘breathing room’ for the roots to move, or for water to get through. Repotting with fresh mix opens up this pore space again (also known as air-filled porosity) giving your plants the best chance to keep flourishing. Repotting made simple; 1. Before re-potting, give your plant a thorough wetting down and choose a bigger pot; at least one third bigger than the initial pot. 2. Place a small amount of your selected potting mix in the base of the pot. 3. Position the plant in the centre of the pot 4. Fill around the edges with your potting mix to within 20 mm of the top of the pot 5. Press down gently and water in well PAG E 7 2
It’s important to remember, that your plants can only be as good as the potting mix you put them in. Often people will spend big money on beautiful plants, only to plant them into cheap potting mixes which are lacking in nutrients and essential ingredients needed to make your plant thrive. Visit your local nursery or garden centre and have a chat with them about which premium quality potting mixes are best for your pots. Also, always remember to look for the Australian Standards 3743 ‘5 ticks’ logo on packs, as this means the potting mix has undergone strict quality testing measures, and check for their packed dates to ensure you’re getting the freshest mix.

Penfolds Wine 175 years Penfolds is marking 175 years of winemaking in 2019 with a limited-edition range of wines called Tribute. The Tribute Range includes South Australian wines from the 2016 and 2017 vintage that pay homage to four Penfolds legends: Founders Mary and Dr Christopher Penfold, Chemist Ray Beckwith and Grange creator Max Schubert. The four wines in the new Tribute Range include: The Esteemed Creator, 2016 Barossa Valley Shiraz Coonawarra Cabernet Sauvignon. A tribute to Chief Winemaker Max Schubert (1948 – 1975): Max Schubert was Penfolds’ first Chief Winemaker. He crafted a dynasty of wines and became the driving force behind some of Penfolds greatest achievements. The Noble Explorer, 2017 South Australian Shiraz. A tribute to Dr Christopher Rawson Penfold. A doctor with an eye for winemaking, Dr Penfold and his wife Mary sought a new
calling in Australia. They found it in the Magill Estate, near Adelaide. Here, Christopher planted vines and set in motion philosophies that would remain with Penfolds to this day. The Commander In Chief, 2017 South Australian Shiraz Cabernet. A tribute to Mary Penfold: Mary Penfold was the original leading lady. A force to be reckoned with, Mary’s progressive attitude catapulted Penfolds forward as winemakers. The Creative Genius, 2017 South Australian Cabernet Sauvignon. A tribute to Dr Ray Beckwith: From 1935 to 1973 Penfolds was his laboratory, where he was instrumental in the development of our leading red wines. His greatest discovery was the use of PH technology to prevent wine from spoiling. This wine bears all the hallmarks of Cabernet Sauvignon, with classic savoury notes supported by well-handled oak and supple tannins.
