Nothing says spring like the sight of luscious Australian-grown asparagus on supermarket shelves. With ideal growing conditions and increased plantings, asparagus lovers are in luck this year with the season (August to March) shaping up to be the biggest crop on record. When it comes to choosing your bunch, Australian asparagus grower and President of the Australian Asparagus Council,James Terry shares his advice for ensuring you pick the most crisp,moist and juicy spears. “Look for firm, bright and smooth spears that are uniform in size with closed, compact tips. To keep them fresher for longer,store them similar to fresh cut flowers. Stand the spears upright in a container with 1cm of cold water, cover and place in the fridge,” said Mr Terry.

Not only delicious, the vegetable also packs a nutritional punch. Accredited Practising Dietitian Glenn Cardwell says, “A serve of asparagus, about three to four spears, boasts a quarter of your daily vitamin C needs, and provides B vitamins, potassium, and fibre.” He adds, “Being a versatile vegetable, there are many ways to easily boost your nutrition by adding asparagus to your everyday meals. Simply cook on the BBQ, toss it through a stir-fry, roast in the oven, blanch, steam or boil. Eaten raw or cooked, it is also a tasty addition to soups, salads, pastas, pizza, wraps and dips.” »

TOP TIPS TO ENJOY

Asparagus

PREPARE: Wash and simply snap off any woody ends with your forefinger and thumb.Alternatively, run a knife along the stalk until it meets less resistance, and then cut the end off at this point.

BLANCH: Place one to two bunches in a large heatproof bowl and cover with boiling water. Stand for 30-60 seconds. Remove asparagus and place in bowl of cold water for one minute to prevent further cooking. Remove and pat dry.

MICROWAVE: Place two bunches in a microwave safe dish. Cover and cook on HIGH for two to three minutes. Remove from microwave and set aside for one to two minutes.

STEAM: Place asparagus in a steamer over a saucepan filled with 2cm boiling water.Cover and steam for three to five minutes or until asparagus is just tender but still vibrant green.

ROAST: Pre heat oven to 210°C. Place two bunches in a large bowl and combine with two to three teaspoons of olive oil, chopped garlic (optional), salt flakes and freshly ground pepper. Roast asparagus until just tender, approximately six to eight minutes.  PAG E 1 6

STIR-FRY: Cut two bunches of asparagus into slices to suit your recipe. Heat a wok or frying pan over a medium heat, add a little oil and stir-fry for two to five minutes.

ASPARAGUS, TOMATO AND PARMESAN SALAD Cook Time: 6-8 minutes

INGREDIENTS

3 bunches asparagus, woody ends removed 1 bunch sage, leaves picked off stems Salt and pepper 250g mixed cherry tomatoes, cut in half 1/4 cup chopped chives 4 tablespoons olive oil 1/2 cup Panko breadcrumbs (see Tip) 2 tablespoons white balsamic vinegar or wine vinegar 1/2 teaspoon sugar 100g parmesan cheese, shaved (see Tip)

METHOD

1. Cut the asparagus spears into 3. 2. Chop half of the sage leaves and leave the rest whole. 3. Heat a large non-stick pan until very hot. Add 1 tablespoon or a good lug of oil and toss in half the asparagus. Stir-fry for 2 minutes until hot and just seared. (They will keep cooking so only JUST cook them). Transfer to a bowl and continue cooking the remaining asparagus. 4. Put another lug of olive oil into the pan and add the tomatoes and whole sage leaves and a sprinkle of salt. Toss over a high heat until the sage leaves are wilted, then add them to the asparagus together with the chives. 5. Wipe out the pan, add some more oil and then add the chopped sage leaves, Panko breadcrumbs and some salt and pepper. Move the crumbs around the pan until nicely toasted and then pour into a separate bowl. 6. Mix the vinegar with the sugar to dissolve and then add to the salad tossing well before transferring to a plate. Sprinkle with the shaved Parmesan and sage crumbs and serve at once.

Tips • You can eat this salad at room temperature. Try to make the same day you want to eat it, as the asparagus gets softer. • If you can’t find sage use fresh picked basil. If you use basil leaves there is no need to cook them. • Panko breadcrumbs are Japanese-style breadcrumbs that have a lovely crunchy texture. They are available at Asian grocery stores or the Asian food section of supermarkets. • For those on a gluten free diet, use rice crumbs (available in health food stores) instead of the Panko breadcrumbs. • Use the side of your grater to shave the parmesan cheese or buy shaved parmesan.

Darrel Lea products now Palm oil free. From November 2020 all Darrel Lea products will be palm oil free, instead using sun flower oil in all its products. After reviewed over 200 different ingredients, we felt sunflower oil was the best substitute from an environmental and product quality perspective. Also unlike oils such as coconut, sunflower oil doesn’t require a tropical environment in which to grow, therefore isn’t linked to rainforest deforestation.

Coles replaces print catalogues with coles&co digital channel For many years Coles has produced it’s weekly specials catalogue, around 7 million catalogues a week were printed and circulated. In response to the huge rise in demand for online shopping and digital content Coles has decided to replace it’s weekly printed catalogue with a new digital product called coles&co. Axeing (pardon the pun) the print catalogue would save over 10,000 tonnes of paper every year – the equivalent of an estimated 80,000 trees.

Foreign-owned ad agency paid $3 million for dumped logo

$3 Million “Covid � Logo Dumped by Feds A golden wattle-inspired logo created to spruik Australian products at international trade shows has been dumped after being widely mocked for looking like a coronavirus cell. The design was created by Clemenger BBDO Sydney, 73% owned by global advertising giant Omnicomm since 2010. The design, that looks like a covid-19 virus saw the agency paid $3 million to create something the minister dumped. Please explain why it cost such a huge amount of money and why it didn't go to an Australian agency? PAG E 2 6

The National Brand Advisory Council that commissioned the logo is made up of national business leaders, including mining billionaire Andrew Forrest, Glenn Cooper of Coopers brewery (and The Australia Made Campaign) and Australia Post chief executive Christine Holgate. It finished its work on the replacement logo at the end of 2019. Senator Birmingham said on Thursday the wattle-inspired design had never been intended to replace the famous kangaroo, which has been in use since the 1980s.

Changing social expectation lead to rebrand In an incredibly topsy turvy world that has been giant bushfires and the covid-19 world pandemic the other great change has been black lives matter. This lead to massive riots in the USA and protests around the world including Australia on June 6. Following the massive rebellion a lot of scrutiny has been placed on the name of products that may be overtly or covertly racist.

HERE ARE A LIST OF PRODUCTS THAT ARE LIKELY TO HAVE THEIR NAMES CHANGED.

COON CHEESE Coon cheese will be renamed after a Canadian dairy company Saputo acknowledged the racist undertones of the brand name. “We believe we all share in the responsibility to eliminate racism in all its forms and we feel this is an important step we must take to uphold this commitment,” the company said in a statement. Saputo has previously defended the cheese brand, saying it was named in 1926 after American founder Edward William Coon. Campaigner Dr Stephen Hagan said he was “relieved” to have won the 21 year battle to change the name of our most famous cheese. “I don’t take delight in doing it, but I was offended by these things,” he said. “This is another win I can chalk up.” Dr Hagan said he would continue fighting to change the names of brands, places and landmarks that were discriminatory including Samboy Chips and the banning of golliwogs. SAMBOY CHIPS The iconic chip brand, now owned by Snack Brands, was purchased by Phillipines company Universal Robina Corporation (URC) in August 2016. Mr Hagan, said he is now turning his attention to Samboy Chips! The Australian Made chips sell over 200 million packets per annum and claims 74% of Australian households buy at least one packet every year.

REDSKIN AND CHICOS Nestle said the decision to change the names of the famous lollies “acknowledges the need to ensure that nothing we do marginalises our friends, neighbours and colleagues”. The company said it was yet to decide on the new names but “we will move quickly” to make the change. A redskin is a slang term for Native Americans that is widely considered to be offensive. Chico is the Spanish translation for “boy” and can be offensive to people of Latin-American descent.

ESKIMO PIE Foreign-owned Peters Ice cream is planning to change the name as a result of racially charged logos and marketing. “Peters Ice Cream is committed to being part of the solution on racial equality. Eskimo Pie is a brand within our portfolio that we are currently reviewing to ensure our company and brands reflect our values. We will determine the best way forward and communicate the changes as soon as possible.” the company said. Alaska Natives prefer to be known as Inupiaq or Yupik and “Eskimo” is fading from use but some organizations still use “Eskimo”. This push has clearly come from the US. »

COLONIAL BREWING The Colonial Brewing Co in Western Australia is considering changing its name following pressure from the Black Lives Matter movement due to the use of the word ‘colonial’. A Melbourne bottle shop has banned the beer and said the decision came after discussions with Colonial Brewing Co, customers, and staff. The Margaret River-based brewery confirmed it was reviewing the name and acknowledged the “significant stress and angst surrounding the Black Lives Matter community”.

Attitudes have changed dramatically towards both smoking and same-sex relationships and they were renamed to Fads in the ’90s. CREOLE CREAMS When Coles introduced a home brand Oreo-style chocolate biscuit with white cream filling back in 2009-2013. The public backlash eventually forced them to change the name.

Who Is Buying Australian Agriculture Land? Foreign interests own around 4.6% or 2.5 million hectares of agricultural land in NSW and the ACT, according to the 2017-2018 Register of Foreign Ownership of Agricultural Land. This compares to 13.4% nationally – where the United Kingdom tops the foreign ownership charts, followed by China and then the US. • Sources: Register of Foreign Ownership of Agricultural Land 2018 and Register of Foreign Ownership of Water Entitlements 2018, Australian Taxation Office, Foreign Investment Review Board Annual Report 2017–18 • 9.4% of the Murray Darling Basin’s water entitlements have a level of foreign interest ownership. Surprisingly perhaps, in terms of value, Canada took the lead nationally as the largest foreign investor in Australian agriculture last year, displacing China. Canadian investment was largely driven by pension funds. Canada was followed in 2017-18 by China and the United States, and then by Dutch and UK investors. »

LAND GRAB

In total, 201 foreign interests received approval from the Foreign Investment Review Board to spend $7.9 billion on agriculture, fisheries and forestry assets in Australia – up from $7 billion in 2015/16. Approval is only required if purchases exceed $15 million. Philip Jarvis, managing director of agricultural investment adviser Direct Agriculture, says that Canadians and Americans are by far our largest foreign investors, and that Chinese interest is waning. This year Rifa Salutary, the Australian arm of China’s Zhejiang Rifa Holding Group, began offloading its entire portfolio of 14 rural properties, totalling 44,000ha, which it had amassed since 2014. And with the impact of the current Coronavirus pandemic on our physical and mental well-being, it seems eating veggies is more important than ever! As part of National Nutrition Week, each year Nutrition Australia launch the Try for 5 campaign. This year, Try for 5 is all about vegetables! WHY EATING VEG IS SO IMPORTANT. Vegetables are great for our health. They provide us with important nutrients and can be protective against many diseases including heart disease and diabetes. But it seems in recent years, Aussies are struggling to eat enough vegetables. Only 7% Australian adults and 5% of kids are eating the recommending serves of veggies. The Coronavirus pandemic has certainly impacted our eating habits. More than half of Australians (54%) whose diets have changed in lockdown say they have put on weight, have let themselves go or are feeling sluggish and slow, according to a survey by The Heart Foundation. Aussie’s are also eating more snack foods and consuming more alcohol. The pandemic has also seen more and more people are preparing food at home. Family dinners, breakfast and lunches have resurged, and majority of families are eating together at home. This shift to family meals is one of the few good things happening as a result of the pandemic. Many Australians are really experiencing the joys of eating together with family regularly. VEGETABLES ARE GOOD FOR MORE THAN JUST OUR HEALTH With the state of Aussie’s diets and the increase in home-cooked meals, there’s no better time to increase veg intake. And not only is increasing veg is good for health, it seems more veggies eaten means more demand for growers and a boost to the economy. Third-generation vegetable grower Matthew Young owns Elphin Grove Farm in Tasmania’s north-west. Matthew and his wife Ruth, as well as his parents Ian and Lesley, are all Directors of Elphin Grover Farm. With vegetable consumption low in recent years, the family have shifted to running a mixed farming operation, selling produce to various industries including fresh market, supermarkets, restaurants, and the pharmaceutical industry. The family also plan to undergo further changes over the next decade to maintain Elphin Grove Farm’s profitability and sustainability as a farming enterprise. »

CHARGRILLED CORN, ZUCCHINI AND TOMATO SALAD WITH A YOGHURT LIME DRESSING Serves: 4

INGREDIENTS 3 ears of sweetcorn, husks pulled back and silks removed. 2 zucchini, sliced lengthways 2 tbs olive oil 1cup cherry tomatoes halved ½ cup coriander leaves ½ cup black beans, cooked (tinned and drained is fine) 1 avocado, sliced

Creamy Lime Dressing ½ cup sour cream or creme fraiche or yogurt ½ teaspoon lime zest 2 tbs lime juice 1 small clove of garlic, minced 1 red chilli, seeds removed and finely chopped 2 tbs olive oil

METHOD 1. Preheat a chargrill pan to hot

and grill the corn until it starts to turn a golden colour, turning several times to get a nice even charring, remove from what season with slate and pepper and set aside while you grill the zucchini. Season the zucchini, brush with a little olive oil and cook on the grill until golden, but not too soft a couple of minutes each side should do. 2. When the corn is cool enough to handle, use a sharp knife to cut the kernels off the cob, Discard the code and set aside the kernels. 3. On a large serving platter or bowl, assemble the salad by layering, starting with the zucchini, then the corn, cherry tomatoes, black beams and finish with the avocado slices. Drizzle a little dressing on each layer as you go. Season with slate pepper, drizzle remaining dressing and scatter coriander leaves on top. 4. To make the dressing, combine all the ingredients in a small bowl and whisk together until combined. Taste for seasoning. Add some water, a tablespoon at a time until you get a tin pouring consistency like cream.

INGREDIENTS Lamb Racks of Lamb to make 2 x two-bone portions (one rack = 2 portions) Herb seasoning Equal amounts of rosemary, thyme, sage, oregano, salt, pepper and Colman’s Dry Mustard. Baste Dijon Mustard, honey and a touch of balsamic vinegar Herb crust Fresh bread crumbs, finely chopped parsley, thyme, finely chopped zest of lemon and finely chopped garlic

METHOD 1. Denude the lamb rack (trim all the fat off the bones0 completely

2. S eason with the herb and dry mustard mix. 3. Sauté the herb-covered rack in a sauté pan with olive oil at

high heat for 3 mins on each side to sear the herbs to the Lamb and remove from the heat and allow it to cool down. 4. Once the rack of lamb reaches room temperature, the rack is then brushed with the baste mixture. 5. The top of the rack of is then rolled and pressed into the crust mixture. 6. The fully-coated Crusted Rack of Lamb is then placed on a sheet pan (crust side up) and roasted in the oven at 260°C for 8 minutes 7. Remove the cooked rack of lamb from the oven and let rest for 10 minutes. 8. Cut into double chops – 2 x two-bone portions – and serve

INGREDIENTS Lamb 1 x Butterflied Lamb Quinoa Tabouli Salad 1 cup water 90 grams quinoa, rinsed 3 whole onion springs, finely sliced 1 tomato, whole fine dice 60 grams parsley, finely chopped 30 grams mint, finely chopped 40 mls olive oil 1 whole small zucchini, peeled into ribbons (using vegetable peeler) 5 grams garlic, grated 1 pinch salt 1 pinch pepper 1 whole lemon, zest & juice 50 grams feta 20 grams walnuts, crushed

METHOD Lamb

BBQ/Hotplate

Grill in BBQ plate on high for 5 minutes each side. Reduce the heat, cover and cook for a further 35 minutes. Skewer to test if cooked in middle. Stand for 10 minutes before carving.

Fan Oven

Preheat oven to 180 0C. Place in roasting tin and sit in centre of oven. Cook for 30-35 minutes. Skewer to test if cooked in the middle. Stand for 10 minutes before carving. Quinoa Tabouli Salad 1. Rinse the quinoa under cold water, then combine with water and a pinch of salt in a medium saucepan. B ring to the boil and stir then turn down the heat to a simmer, cook until the quinoa is fluffy and tender about 15-20 minutes. 2. In a mixing bowl add the spring onion, tomato, parsley and mint. In your frying pan toast the walnuts on medium heat and set aside. 3. Return the frypan to the stove over a medium heat, add a tablespoon of oil. Once hot add the zucchini and roll gently in the oil to soften slightly, then remove from heat and set aside. 4. If there is any moisture in the quinoa, drain it in a colander and set aside to let it cool slightly. 5. Return frypan to the stove over a low heat. Add the remaining oil, garlic, when fragrant add the zest and juice. Shake and mix all together then mix with the quinoa and season with salt & pepper. 6. To assemble mix quinoa into the mixing bowl with the herbs toss lighlty, add the zucchini ribbons and serve topped with the walnuts and crumble the feta over the top.

INGREDIENTS • 600g sweet potato, cut into wedges • Spray oil • 100g baby spinach leaves • 1 Lebanese cucumber, chopped • 250g cherry tomatoes, halved • ½ avocado, sliced • 2 teaspoons balsamic vinegar • 500g pack K-ROO herb & garlic steaks • Salt flakes and freshly ground black pepper

METHOD 1. Preheat barbecue to medium high. 2. Spray sweet potato wedges with oil, season with salt and pepper.

3. Place wedges on barbecue grill

plate and cook for 10 minutes, turning often, until cooked. 4. Spray steaks with oil. 5. Cook on barbecue for 4-5 minutes each side. 6. Rest for 10 minutes under foil. 7. Enjoy this easy and delicious spin on the legendary combination of Triple Cream Brie and Maggie’s Quince Paste!

INGREDIENTS 100g walnut 200g Triple Cream Brie 100g Quince Paste roughly chopped 3 Tbspn Verjuice

METHOD 1. Pre-heat a fan forced oven to 180 C. 2. Place the walnuts onto a baking tray and place

into the pre-heated oven and roast for 8 to 10 minutes, remove from the oven and place into the center of a tea towel, bundle up into a pouch and rub to remove the skins. Set aside to cool. 3. Remove the brie from its packaging and place onto a lined baking tray, set aside. 4. Place the quince paste and verjuice into a small pot and place over a medium high heat, stir until the mixture has melted and is smooth, remove and allow too cool for 10 minutes. 5. Pour the quince mixture over the brie and place into the oven. Bake for 10 to 12 minutes. 6. To serve, place the brie onto a platter and sprinkle over the walnuts and serve with melba toast or crackers.

This recipe is quick and easy and completely addictive. The addition of Dark Violet Crumble makes it very Moorish! Recipe by Heneln Mouneimne (aka The Greek Vegetarian).

INGREDIENTS 200g good quality dark chocolate 30g unsalted butter 3 eggs, separated into egg whites and yolks 1 tablespoon caster sugar 1 cup thickened cream 180g Dark Violet Crumble (crushed) - can use original milk choc Violet Crumble if you prefer a lighter flavour.

METHOD 1. Place the dark chocolate and butter in

heatproof glass bowl and heat over a small saucepan of boiling water over a medium heat. 2. Stir until melted and smooth. 3. Remove from heat and stir through the egg yolks and set aside. 4. Using an electric mixer, whisk the egg whites until soft peaks form. 5. Gradually add the sugar and beat until stiff peaks form. 6. In another bowl, whisk the cream until soft peaks form. 7. Add the whisked egg whites through the chocolate mixture and gently fold the mixture together. Then add the whisked cream and crushed Dark Violet Crumble to this mixture. 8. Spoon into serving glasses and refrigerate until set. 9. Top with more whipped cream, crushed Dark Violet Crumble, berries and fresh mint to serve.

Vanilla Cake 125g (1/2 block) Fairy margarine, chopped, at room temperature 165g (¾ cup) caster sugar 1 tsp. vanilla extract 2 eggs, at room temperature 125ml (½ cup) milk 200g (1 1/3 cups) self-raising flour 95g (1¼ cups) shredded coconut 80g (1 cup) desiccated coconut 160g (½ cup) raspberry jam

Vanilla Cake 1. Preheat oven 180°C/ 160°C (fan forced) and grease a 20cm x 30cm lamington pan. Line base and sides with baking paper, extending paper 3cm above pan edges. 2. To make cake, beat Fairy Margarine, sugar and vanilla in a large bowl of an electric mixer until light and fluffy. Beat in eggs, one at a time, until combined. Mixture may look curdled at this stage. 3. Add milk and sifted flour, in two batches, folding until combined. Spoon into prepared pan. Smooth over top. 4. Cook 25 minutes, or until lightly golden and a skewer inserted into the centre comes out clean. Remove. Stand in pan 10 minutes. Transfer to a wire rack to cool.

Raspberry Jelly 85g packet raspberry jelly crystals 250ml (1 cup) boiling water 125ml (1/2 cup) cold water

Raspberry Jelly 1. Meanwhile, dissolve jelly crystals in boiling water, in a shallow dish. Stir in cold water. Refrigerate until jelly starts to set around the edge.

Vanilla Cream Filling 180g Fairy margarine, chopped, at room temperature 2 tsp vanilla extract 330g (2¾ cups) icing sugar mixture 1 tbsp milk

Vanilla Cream Filling 1. Beat Fairy Margarine and vanilla in same, clean bowl of electric mixer until pale and creamy. Gradually add sifted sugar, beating until combined. Beat in milk, until smooth. Transfer to a piping bag fitted with a 9mm plain nozzle. To Assemble 1. Cut cake into 24 equal squares (approx. 5cm squares). One at a time, dip cakes into jelly, allowing excess to drip away. Roll in combined coconuts. Transfer to a wire rack. Refrigerate for about 1 hour, or until set. 2. Cut cakes in half. Spread one half with jam (1 tsp each). Pipe filling onto the other half and sandwich together. Repeat with remaining cakes, jam and filling

TIP • Filled cakes will last for up to two days in the fridge in an airtight container.

INGREDIENTS 65g cornflour 60g Extra Virgin Olive Oil 2 tbsp sugar 1 tsp pink salt flakes 1 tsp each baking soda and powder 220g plain flour 500g cultured buttermilk 1 large egg 100g dark chocolate 70% in pieces

METHOD 1. Place all pancake ingredients except

chocolate into a blender and blend on a high speed until well combined. Allow batter to rest 30 minutes if possible. 2. Heat a little oil in a non stick fry pan. Make sure the pan is hot but not smoking. 3. Dollop some batter into centre of pan and spread with a spoon. Top with a few pieces of chocolate. Spread a little more batter just over the top of the chocolate. Cook until bubbling through centre and browning on edges. Flip and just seal off top. Repeat until all batter is used. 4. Serve immediately drizzled with EVOO and syrup with the grated zest and salt flakes on top.

INGREDIENTS 1 1/4 cups plain flour 3/4 tsp salt 2 tbsp. unsweetened cocoa powder 380g dark chocolate, roughly chopped 5 eggs 240g unsalted butter, cubed 1/4 tsp MasterFoods Nutmeg 1/2 tsp MasterFoods Allspice 1 tsp Masterfoods Ground Ginger 1 tsp MasterFoods Ground Cinnamon 1/4 cup MasterFoods Vanillin Sugar 1/2 cup raw sugar 1 cup brown sugar

METHOD 1. Peheat a fan-forced oven to 180C and line a brownie pan with

baking paper and spray with oil, setting aside. In a medium bowl whisk the flour, salt, cocoa powder and MasterFoods spices (except the Vanillin Sugar) together. 2. Place the chocolate and butter in a bowl over a saucepan of slightly simmering water and stir until both the chocolate and butter are completely melted and combined. 3. Turn off the heat and stir in the Vanillin Sugar, followed by the remaining sugars. Once combined, take the bowl off the heat and allow to cool slightly. 4. One at a time, add the eggs to the chocolate mixture and whisk until combined. 5. Sprinkle the dry mixture over the wet mixture and using a spatula or wooden spoon, gradually fold in to combine. Pour the brownie batter into the prepared pan and bake for 25 – 30 minutes. 6. Let it cool completely, then lift them out of the pan using the baking paper. 7. 6. Cut into squares and serve with whipped cream

The Vegan Society encourages all Vegans to host a vegan food party, with family, friends or work mates, not easy to do this year with Covid ravaging the world, but you can still be active by sharing recipe’s on Social Media or just basically be out and proud. Many people are vegan curious so the more information and exciting eating options out there the more people will embrace the vegan life choices. The great news for Vegans is the amount of Vegan friendly products entering the market making it easier to find vegan friendly foods. Here in Australia Veganism is booming, no doubt aided by the quality of our Australian made food brands producing vegan friendly PAG E 70

goods, and the great news is that Australian farmers are getting on board to produce even more plant based alternatives. Australia’s strong farming industry has the potential to be a powerhouse for production of plant based products and a key exporter. The Australian market for meat alternatives is estimated reach 3 billion dollars by 2030. The economic discussion is also now in full swing as meat is now expensive and rising, the costs to raise and maintain livestock is giving farmers pause to think about the switch to plant based crops which are super low cost to run and maintain. 

HEAT oven to 180°C, line two baking baking trays with greaseproof paper and place VEGIE DELIGHTS CRISPY CHICKEN-STYLE BURGERS on one tray and pumpkin on other tray. TOSS pumpkin with olive oil and sea salt. COOK pumpkin and CRISPY CHICKEN-STYLE BURGERS in oven for 12 minutes. WHISK the dressing ingredients together in a small bowl and set aside. CREATE rainbow bowl by slicing CRISPY CHICKEN-STYLE BURGERS once cooked and arranging ingredients around the bowl, finishing with a sprinkle of dukkah, drizzle of dressing and seasoning with sea salt and black pepper.

VEGAN

VEGAN KIDS Science tells us that a vegan diet is a very healthful approach to nourishing our kids. The World Health Organisation recommends exclusively breastfeeding for the first six months of a child's life as the best way of meeting all nutritional needs and boosting immunity and psychological wellbeing. The Physicians Committee for Responsible Medicine says that after six months of age solid foods should be added by slowly and carefully introducing new foods until a wide variety of fruits, vegetables, grains and legumes, then nuts and seeds are part of the diet. All parents naturally want to ensure their child obtains adequate nutrients to grow into a healthy adult. As long as your vegan child is receiving an adequate number of calories for their size, their protein needs should be being met. Complex carbohydrates from whole grains, beans and vegetables provide the perfect fuel source combined with fibre. Healthy fats can come from soy products, avocados and nuts (ground and butter forms in infancy). Vitamin D is best obtained from 15 to 20 minutes of sunlight on the skin each day, but you may want to consider supplementation depending on the amount of pigment in the child's skin, or where you live. Also ensure an adequate supply of B12, an important nutrient for the brain and growing nervous system. B12 should be obtained from a supplement or from fortified foods, as modern food and water no longer contain the bacteria which produce this vitamin. PA G E 74

Considering that about 95 per cent of Aussie kids are not consuming enough vegetables each day, starting them off with a healthful vegan diet will help them grow beautiful and strong, like the many world-class vegan athletes and the vegan mammals like elephants, gorillas and giraffes. Also the idea of meat replacement products is not just to provide a product that looks like meat but it is supposed to include the same amount of protein as the same serving of meat so if you don’t like research there is plenty on the shelves at your supermarket. Also look for the Australian certification logo to be assured it’s 100% vegan.

Veganism is can also be helpful for people with skin, conditions, allergies to processed products, and even some chronic illness. Some vegans extend their choices to not include any animal clothing, footwear, cosmetics etc. This option is a little more difficult to pull off but it’s important for non vegans to understand why these choices are being made, again another reason why Vegan Month is so important. SPINACH DHAL WITH INDIAN SALAD These simmered lentils and aromatic spices are an oh so tasty delight.

INGREDIENTS

Spinach Dhal 1 tsp oil (optional) 1/2 finely chopped onion 1/2 tsp turmeric 3/4 tsp cumin powder 3/4 tsp curry powder 1 garlic clove, crushed Water as needed 1 cup of cooked/canned brown lentils 1 bay leaves 1 cup of roughly chopped spinach

Spinach Dhal 1. Heat the oil in a saucepan then add the onion and spices and fry on a medium until the onion goes clear. 2. Add the garlic and fry for a minute, then add the water, lentils and bay leaves. 3. Bring to the boil then drop down to simmer, stirring occasionally and adding more water if it becomes too dry. 4. Add spinach just before its cooked and stir through until wilted.

Flat bread 1. Lay one disk at a time into the pan and cook for about 30 seconds or until the underside is starting to turn brown in areas then flip and cook on the other side. 2. MOOGOO IS A TRUSTED FAMILY BRAND THAT HAS BEEN AROUND FOR DECADES. Its no secret that if you have sensitive irritated skin you head straight to the Moogoo stand in chemists for soothing alternatives to body washes, face creams and shampoos. Mothers in particular are fans because of its gentle formulas on their child’s delicate skin. As far as pharmacy brands go, I’d say in my expert opinion, Moogoo is one of the best. When Moogoo released their latest advanced skincare line, I was a little excited. Again, they have delivered a quality product that performs as advertised on the packaging, which is not always common in pharmacy brands.

Seeing their use of actives usually reserved for professional and high-end skincare made me want to get my hands on it even more. The new release skincare is targeted at women who want results from their products. Ingredients like Hyaluronic acid, Lactic Acid and Bakuchiol are essential to skincare formulas to achieve desired results in the skin.

I can hear your first question, what is Bakuchiol? This is a relatively new ingredient that is the latest plant based alternative to Retinol (that got my attention) Moogoo’s is derived from the Psoralea Corylifolia plant (or babchi) and has long been used in traditional Ayurvedic and Chinese medicine for its antioxidant, antimicrobial, and anti-inflammatory properties. But does it work? I can give this serum a resounding YES. In the week I swapped it out from my cosmeceutical Retinal my skin condition remained in top shape. I combined this serum with their Night Restoration Cream and I could definitely feel it working on my skin, while feeling very nourished and hydrated. The Night Restoration Cream again has amazing ingredients like Lactic Acid and Niacinamide included (ingredients usually only found in professional skincare) and it felt just as good as my usual active night creams. Moogoo have released a Creamy Hydrating Face Cleanser and Gentle Exfoliating Micro Powder, which I also tried. I’m a huge fan of natural Exfoliating Micro Powders and this one give a beautiful nonabrasive exfoliation (perfect for sensitive skin) that left my skin soft and smooth. If you’re a fan of chemist brands, Moogoo’s new skincare is a must try. Read the label to check if it is suitable to your skin (I found the products I tried were great for my dry skin, but may be too heavy if you have combination skin) or ask your friendly pharmacist.
