Rhubarb A long tasty stalk which range from pinkishgreen to ruby red. The leaves should not be eaten due to their oxalic acid content. Often stewed with sugar, but orange juice, maple syrup and other sweeteners are also used. It is also made into savory dishes, including relishes and compotes, salads or with c hicken or pork. Bake, steam or boil stem (but be sure to remove and discard leaves—they contain oxalic acid). While sugar is often used to counter tartness, try adding sweetness via apples, berries or orange juice.
NOW IN SEASON Snow peas One of the most versatile vegies, can be eaten cooked or raw, simply spit the pod open and munch on the delicious peas inside, great to get the kids eating something healthy. Also fantastic cooked, you can cook the whole pod or just take out the peas. Cooking also provides a sweeter flavor. Snow peas look great and tastes great on just about any meal hot or cold.

The humble carrot Did you know the first carrots grown were purple, they were genetically changed over time to make them look more appealing. Carrots can be cooked in anything, boiled, fired, roasted, steamed, and fantastic as a standalone vegie or part of a casserole. Carrots are also fantastic raw, a great snack in kids lunch boxes. Carrots are related to parsnips, fennel, parsley, anise, caraway, cumin and dill.
Artichoke Not the most popular vegie going around, you must remove the leaves to get to the edible heart. The easiest way to do this to cut off an inch or so from the top of the artichoke and peel like an orange. Some say the outer leaves can’t be eaten but others say the leaves closer to the heart (petal flesh) once cooked can be eaten.
Lebanese cucumbers Smaller than your regular cucumber which provides a sweeter flavor. Eating them raw is best as it doesn’t lose any of its nutrients. The dark green and white colors of the cucumber provide a great colour splash on salads. Try a slice in your next Gin and tonic.

Blue Berries High in nutrients and low in calories, these little fruits have a big flavor. Blueberries, like strawberries are fantastic for cake toppings, pavs and deserts of any kind. These days Blueberries are considered a superfood as they are also high in antioxidents.

STRAWBERRY NOURISH BOWL INGREDIENTS 1 x 250g punnet of Victorian Strawberries, washed, hulled and sliced 1 cos lettuce heart, washed and chilled in cold water 1 radicchio lettuce, washed and chilled in cold water 1 small bunch of coriander and mint, washed, picked and chilled in cold water 1 red onion, peeled and sliced very finely on a mandolin 4 radishes, sliced very finely on a mandolin 1 cup shelled edamame beans 2 avocados, cut in half 4 tablespoons toasted black and white sesame seeds, plus extra for serving 4 teapoons pickled ginger
For the zucchini noodle dressing 1 tablespoon rice wine vinegar 1 tablespoon tamari 1 teaspoon honey 1 teaspoon sesame oil PAG E 1 6
Serves: 4
METHOD 1. Prepare all ingredients as per ingredient list. 2. Make the dressing by placing all of the ingredients in a jar and shake vigorously.
3. For the zucchinis use a julienne peeler or a spiraliser
to make the zucchini noodles, if you don’t have either of these, no biggie, just peel off long strips of zucchini, stack them up and slice them length ways. 4. Pour the dressing over the noodles and toss well, leave to marinate for 10 minutes. 5. Drain the lettuce and the herbs and wrap gently in paper towel to get rid of excess water. 6. Place sesame seeds onto a plate and press the avocado into them for a great effect. 7. Have 4 wide bowls ready to assemble your Nourish bowls, starting with the dressed zucchini noodles, place ingredients artfully around each of the bowls making colourful little mounds.

CANBERRA LEADING THE WAY FOR RENEWABLE ENERGY
CANBERRA WILL BE EFFECTIVELY POWERED BY RENEWABLE ENERGY FROM OCTOBER 1 — THE FIRST AUSTRALIAN JURISDICTION TO DO SO, ACCORDING TO THE ACT'S CLIMATE CHANGE MINISTER.
October marks the date when the third stage of comes online, from which the ACT has purchased the last trickle of renewable energy it needs to claim 100 per cent renewable power. It fulfils a decade-long promise by the ACT Government to reach the milestone by 2020. "We will be effectively there from October 1," Climate Change Minister Shane Rattenbury said. • The ACT sources most of its renewable energy from reverse auctions • Canberrans pay $5 a week on top of their average power bill to fund the scheme • The ACT Government had pledged to reach the target by 2020 • For every watt Canberra draws from the grid, it will be feeding in a watt from one of its renewable sources. CHOC-CHERRY BLONDIES

150g unsalted butter, chopped 200g white chocolate, chopped 1/2 cup Sugarless Stevia Organic Natural Sweetener 3 free range eggs, lightly beaten 11/2 cups plain flour 1 cup self-raising flour 1/2 cup white choc bits 1 cup pitted cherries, quartered, plus extra whole cherries for garnish 1/4 cup slivered almonds
1 Preheat oven to 180°C. Grease an 18cm x 28cm slice pan. Line base and sides with baking paper, leaving long sides to overhang. 2 Melt butter and chocolate together in a medium saucepan over low heat, stirring until smooth. Remove from heat. Set aside for 5 minutes to cool. 3 Add Stevia, egg, flours and choc bits to pan. Stir well to combine. Spread into pan. Press cherries into surface. Sprinkle with almonds. Bake for 30 minutes or until golden and set. Allow to cool in pan. Cut into squares and serve with cherries.

That’s the question being asked this August by the Australian Dental Association which aims to make everyone aware of the key things they need to do to keep their teeth and gums healthy. You might think it doesn't really matter if you miss a bit of flossing, skimp on the thoroughness of your brushing, live on a diet of burgers and fries or tell your dentist "thanks but no thanks, I'll see you in 2022.” But of course, like anything that's necessary and good for you, it does matter and it's worth adding to your list of daily To Do’s. Now, before you groan inwardly and think to yourself that there’s no way you can cram anything else onto a list as long as a Senate ballot paper, it’s actually pretty easy and straightforward to making dental hygiene a key part of your day.
Brush twice daily, with fluoride toothpaste
BRUSHING If you're like most people, there’s not a whole of brushing going on. In fact, only 52% of Australians brush twice a day. The reality is that a quick, occasional dash along your teeth with a hope and a prayer is not going to cut it. As your dentist will tell you, you need to brush for at least two minutes twice a day, taking care to use a soft-bristled toothbrush (they're less damaging to your teeth and gums than their harder Use floss at counterparts) to clean your teeth systematically along all least once a day surfaces, always brushing in small, circular motions.

FLOSSING Flossing (or using an interdental brush) once a day is important because it removes plaque from between your teeth which goes a long way in helping to prevent gum disease, tooth decay and halitosis (or bad breath). INGREDIENTS 1 tbsp olive oil 500g chicken thigh fillets, trimmed, cut into 3cm cubes 2 punnets Swiss Brown Mushrooms, cleaned, trimmed, thickly sliced 50g butter 35g (1/4 cup) plain flour 1½ tsp mixed spice 500ml (2 cups) milk 1 cup frozen peas 2 sheets puff pastry, thawed in the fridge 1 egg yolk Salt and pepper, to season
METHOD 1. Heat the oil in a large frying pan over medium-high
heat. Season the chicken with salt and pepper. In batches, cook the chicken for 5 minutes, turning, until browned, then remove from the pan and set aside. Add the mushrooms, cook for 4 minutes or until golden, tossing the pan frequently, then remove and set aside. 2. Reduce the heat to medium. Melt the butter in the pan, then stir in the flour and mixed spice. Cook for 1 minute before gradually whisking in the milk until thickened slightly. Return the chicken and mushrooms to the pan and season to taste with salt and pepper. Cook for a further 2 minutes or until sauce thickens. Transfer the mixture to a bowl and allow to cool. 3. Preheat the oven to 190°C. Remove the pastry sheets from the fridge and cut each sheet in half and place one on top of the other. Using a rolling pin, roll the pastry out to a 4mm-thick rectangle that fits the size of a rectangular 1.5-2L baking dish. 4. Stir the frozen peas through the pie filling to combine, then transfer to the baking dish. Place the pastry over the top to cover, pressing down on the edges with a fork to seal in the filling. Make a small cross-incision in the centre of the pie to allow the steam to escape. Brush the egg yolk over the surface of the pie, then bake in the oven for 35-40 minutes or until the pastry is golden. Serve immediately.

INGREDIENTS 2 tbsp Thai red curry paste 500g chicken thigh fillets, cut into 4cm pieces 420g can Campbell’s Condensed Pumpkin Soup 270g can coconut milk 1 red capsicum, thinly sliced (100g)
METHOD 1. Heat a little oil in a wok or large frying pan.
Add curry paste and stir-fry for about 30 seconds or until fragrant. Add the chicken and cook until changed in colour. 2. Add Campbell’s Condensed Pumpkin Soup, ¼ can of water and coconut milk, stirring to combine. 3. Add capsicum and simmer for 10 minutes or until chicken is cooked through.
TIP Add a squeeze of lime juice at the end of cooking for a fresh zingy taste.

INGREDIENTS ¼ cup plain flour 4 large lamb shanks, Frenched 2 tablespoons olive oil 1 brown onion, finely chopped 3 garlic cloves, crushed 2 sticks celery, finely chopped 2 medium carrots, diced 300g small button or Swiss Brown Mushrooms, quartered 1 tablespoon fresh rosemary leaves, finely chopped 2 tablespoons tomato paste 2 cups beef stock 400g can diced tomatoes 2 sheets frozen butter puff pastry 1 egg, lightly beaten, for brushing
METHOD 1. Preheat oven to 160˚C/140˚C fan-forced. Place
flour into a large snap-lock bag. Season. Add lamb shanks and toss to coat in flour. Shake off excess. Heat 1 tbs oil in a large ovenproof pan over medium-high heat. Brown lamb shanks until golden. Set aside. 2. Add remaining 1 tbs oil to the pan. Add onion, garlic, celery, carrots, mushrooms and rosemary. Cook, stirring often, for 3-4 minutes until onion softens. 3. Stir in tomato paste. Cook for 1 minute. Stir in stock and tomatoes. Cover and bring to the boil. Return lamb shanks to pan. Cover. Bake for 2 hour - 2 1/2 hours until lamb is very tender and sauce has thickened. Set aside to cool slightly. 4. Remove lamb shanks to a plate. Remove meat from bones, chop and add to mushroom mixture. Spoon into 4 x 1½ cup capacity greased oven-proof dishes (top 10cm wide). 5. Increase oven to 190°C fan-forced. Place pastry onto a board to defrost. Cut 4 x 11cm rounds from pastry. Top pies with pastry. Press edges with a fork to seal. Brush with egg and cut a small cross into the centre of each. Place pies onto a baking tray lined with baking paper. Bake for 25-30 minutes or until pastry is puffed and golden. Serve.

METHOD 1. To make salsa, cut the cheeks from the
mangoes. Using a large spoon remove the mango fruit from the cheeks and cut into 1cm cubes. Combine with remaining salsa ingredients. 2. Combine avocado, sour cream and 1 tbs lime juice. Season. Cut fish into 3cm wide pieces. Combine seasoning and flour in a shallow dish. 3. Heat enough oil to cover base of a large, nonstick frying pan over a medium-high heat. Dip half the fish in flour mixture, shaking off excess. Add to hot oil. Cook, turning occasionally, for 2-3 minutes, or until fish is cooked. Remove to a plate. Repeat with remaining fish and flour mixture. 4. To serve, spread tortillas with avocado. Top with cabbage, fish and mango salsa.
TIP Any thick white fish fillets is suitable for this recipe like blue eyed or barramundi.

Brownie Base 250g (1 block) Fairy Cooking Margarine, chopped 50g dark chocolate, chopped 220g (1 cup) caster sugar 55g (½ cup) firmly packed brown sugar 4 eggs 110g (¾ cup) plain flour 25g (¼ cup) cocoa powder
Brownie Base 1. Preheat oven to 180C (fan forced). Grease and line a 20cm x 30cm slice tin. In a large heatproof bowl, combine together Fairy Cooking Margarine and chocolate. Place bowl over a saucepan of lightly simmering water. Stir occasionally until melted. Remove from heat. 2. Place the sugars, eggs, flour and cocoa in a large bowl, add the Fairy mixture and mix to combine. Pour in the tin and bake for 30 minutes, the centre should still be moist. Set aside to cool for 15 minutes.
Peppermint Cream 185g (3/4 cup) Copha, chopped 480g (3 cups) icing sugar mixture, sifted 60ml (1/4 cup) milk 5ml (1 teaspoon) peppermint extract 3-4 drops green food colouring (see tip) Chocolate Topping 150g dark chocolate, chopped 75g (1/3 cup) Copha, chopped
Peppermint Cream 1. Melt Copha in a medium saucepan over low heat. Add the icing sugar and mix well to combine. Stir in the milk and peppermint, then carefully add drops of food colouring until desired colour. Pour over the brownie slice while still warm. Allow to set for 5 minutes. Chocolate Topping 1. In a medium heatproof bowl, combine together the chocolate and Copha. Place bowl over a saucepan of lightly simmering water. Stir occasionally until melted. Remove from heat. 2. Pour the chocolate over the peppermint, tilt to cover and put in the fridge to set for 10 minutes. Slice into 15 squares.
TIP You can leave out the food colouring if you prefer a white mint slice.

INGREDIENTS 200g Queensland strawberries, hulled 1 tablespoon strawberry syrup (optional) 1 cup desiccated coconut plus a little extra for rolling ¾ cup rolled oats 1 tablespoon nut butter 2 tablespoons coconut oil Large pinch salt 1 tablespoon chia seeds or chopped toasted nuts
METHOD 1. Place all of the ingredients into a food processor.
2. Process until the mixture comes
together. If the mix is too sticky add a little more desiccated coconut. 3. Roll into balls and coat in coconut. 4. Store in an airtight container in the fridge for 2-3 days.
NOTES • You can make these balls with oven-dried strawberries which have a more intense flavour and a slightly chewy texture • Try one of the other nut butters like pistachio or almond as a fresh change from peanut butter

Fun Ideas... The Big entrance
Put a few streamer across the door so when your guests arrive they go through a banner (of sorts), just two or three should do the trick, that way guests don’t get caught if holding platters and so you can stick them up easily over and over again as guests arrive. Fun for the kids to make and reattach as guests arrive.
Prizes
Every footy party should have some fun competitions, even if it’s just best dressed. As the host you could provide some incentives in the way of prizes for your guests to win, this encourages your guests to get involved, even if they are just token gifts it adds to the fun.
The Footy Finals tips and card
Everyone loves tipping, the tipping card can enhance the party experience as the game goes on. Winner, first score, best on ground, first blood, you can include anything and offer points for each category, most points at the end of the match is the Footy Party Champion—speeches are required by Winners. Colours please
Make sure the guests know they must come wearing their favourite team colours, a scarf, a hat anything that identifies them as a supporter of a club. If it’s your local club ban the club jumper and challenge the guests to still wear their colours in some way.

Select a set of words that can’t be said during the game- “Ball” or “Goal” for example, if someone says it they are out, it’s up to the other game watchers to call them out, about 5 key words makes it tough, 10 really tough.
Footy game
Each guest chooses a player, and they also receive a party popper. As soon as their player touches the ball they must let off their popper, last person to let theirs off WINS.
Balloon handball/passing Get some regular balloons or footy balloons, blow them up about three quarters full and wrap some tape around the middle to give them shape and some weight. Set up a handballing goal either through something like a hula-hoop or doorway and test your guest’s skill.

Cooking food in the shape of footies.
Rather than round meatballs go for a footy shape, rather than pizza triangles, pizza squares with a little V cut into top like a footy Guernsey (V for the head hole). Use your imagination, the guests will appreciate the effort. Colour any deserts in footy colours. PAG E 5 8

BROCCOLINI® & CHORIZO CHIMICHURRI ROLLS Preparation Time: 20 minutes INGREDIENTS 1 bunch Broccolini®, roughly chopped 6 Minicaps® baby capsicums, halved, thinly sliced 2 Truss tomatoes, quartered, seed removed, diced ½ small red onion, finely chopped 4 chorizo, sliced 4 soft long rolls, warmed
Chimichurri Mayo 1 cup flat leaf parsley leaves 2/3 cup coriander leaves 1 garlic clove, crushed 1 long green chilli, chopped 2 tbs olive oil 1 tbs red wine vinegar 2/3 cup whole egg mayonnaise PAG E 6 2
Cook Time: 10 minutes
Makes: 4
METHOD 1. To make the mayonnaise, combine the parsley, coriander,
garlic and chilli in a food processor. Process until finely chopped then transfer to a small bowl. Stir in oil and vinegar. Remove 2 tbs to a large bowl and set aside. Add the mayonnaise to the small bowl, season and mix well. 2. Add the tomato, Minicaps® and red onion to the reserved sauce in the large bowl and stir gently to combine. 3. Add the chorizo to a large, non-stick frying pan. Place over a medium-high heat. Cook, shaking the pan often for 4-5 minutes, or until light golden. Add the Broccolini® and cook for a further 2-3 minutes until tender. 4. To serve, cut the rolls lengthways down the centre without cutting all the way through. Spread both sides of each roll with some chimichurri mayo. Divide the Broccolini® and chorizo between the rolls. Top with the tomato mixture. Serve with remaining mayo.

MINI CHEESEBURGERS WITH FRIED ONIONS A crowd pleasing canape that will have your party guests asking for the recipe!
Preparation Time: 20 minutes INGREDIENTS 500 g beef mince 1 tbsp Dijon mustard 1½ tbsp olive oil 1 onion, thinly sliced 10 small slices cheddar cheese 10 small burger buns, halved 2 cups shredded iceberg lettuce 10 slices of tomato To serve, ketchup or barbeque sauce
Cook Time: 30 minutes
Makes: 10
METHOD 1. Combine the beef with the mustard and some salt and pepper and mix to combine. Form into 10 patties and refrigerate for 30 minutes.
2. Place 1 tbsp of olive oil into a frying pan over a moderate heat and add the
sliced onion. Cook for 15-20 minutes or until nicely coloured and crispy, stirring every now and then. 3. Preheat a chargrill to moderately high. Brush the patties with the remaining oil and cook for 2 ½ minutes. Turn over, place a cheese slice on top of each patty and cook for a further 2 ½ minutes or until cooked through. Set aside. 4. Top the bottoms of the buns with the lettuce and tomato, then place a patty on top. Add the onions and a squirt of sauce. Place the lids on top and serve.

PASSIONFRUIT, CHIA AND COCONUT PORRIDGE WITH TOASTED NUTS Preparation Time: 15 minutes
Cook Time: 10 minutes
INGREDIENTS For the porridge 130g (1 cup) chia (black or white, or a mix) 650ml (2 2/3 cups) coconut milk Pinch salt 1-2 cups hot water (optional) To Top 1/4 cup mixed unsalted nuts (try pecans, walnuts, almonds, or macadamias) 1/4 cup mixed unsalted seeds (try pumpkin seeds or sunflower seeds) 1/2 cup coconut flakes (or shredded coconut) For the passion fruit sauce 3 Tbsp honey 6 passionfruit PAG E 7 2

METHOD 1. For the porridge, place chia seeds, coconut milk and
salt in a pan on low-medium heat. Bring to a simmer, cover, and let cook slowly for about 6 minutes. Set aside and keep warm. 2. Pre-heat the oven to 180C. 3. For the topping, place nuts, seeds, and coconut flakes on a baking tray and roast for 10 minutes until golden and fragrant. 4. For the passionfruit sauce, cut passion fruit in half and place pulp and seeds in a small pot along with the honey. Bring to a simmer and remove from heat. 5. To serve, check the consistency of the porridge and add 1 to 2 cups of hot water to thin to your desired consistency. Top with toasted nut mix and passion fruit sauce.

It’s often the best option as looking after pet’s is their business Booking accommodation should not be a last minute decision, you want to get in so bookings are essential. Plan your pets holiday time when you plan yours. Always a good idea to visit a few places before making a decision. Nothing worse than spending your holidays worrying about your pet, so check it out in advance so you can relax and confident with your decision. Take some comforts from home, a list of your pet’s likes and dislikes, and don’t forget to check in by phone just in case any questions have arisen. These days most of the pet accommodation places have live video so you check up anytime. If you are taking your pet on holiday make sure it is microchipped so they can get back to you if lost. Have the correct travel restraints, this not only protects the pet but also all passengers. Never leave a pet alone in a car. If your pets does not usually travel in a car or spend a lot of time in a transport box make sure you do some acclimatising travel trips so at least they get used to car travel. Nothing worse for a pet that going for a five hour drive after never experiencing car travel before this can cause severe anxiety and you may have problems getting the pet back in the car.

GARDENING
PREPARATIONS IS KEY. The last of the winter chill may seem like an odd time to start sowing seeds, but starting your seeds off in the warmth of the indoors near the end of winter can be ideal to have strong, healthy seedlings ready to plant in the garden when the weather finally starts to warm. Seeds such as spinach, rocket, kale, bok choy and cabbage are ideal to sow now, indoors or in a warm greenhouse and then planted out into the garden once the late frosts have gone. Now is also an ideal time to prepare your soil with a good dig through of organic compost to stimulate the microbial activity and restore lost nutrients ready for the bumper-growing season. Ensure all of the composts and manures you use are fully composted, particularly if you are going to plant into them immediately. Giving your soil a good wake up will also give your new seedlings the best chance when it is time for them to be planted into the soil.
PREVENT THE PESTS Pre-spring is the ideal time to start planting some inviting plants to welcome beneficial bugs to your garden before the nasties wake up from the winter chill! Considering sowing some marigolds, nasturtiums, and borage as a starting point. Fruit flies will also be emerging in warm temperate areas from Queensland to northern Victoria. Early control will reap dividends later in the season, so hang certified organic baits, begin spraying with products containing spinosad, and have exclusion bags ready to protect your early ripening fruit.
PRUNE YOUR PLANTS AND TREES! Pruning gets your plants back into shape and encourages new growth for spring. The end of winter is the ideal time to do it, as most of your plants are dormant or toward the end of their flowering cycle. Your roses and fruit trees will benefit from a hard prune. You can do this by removing any dead, diseased or out-of-place crossing branches. Cut off old flower heads (also known
as deadheading) on young plants and trim back the branches on more mature plants by up to a third. Make sure your cuts are clean so that it is simpler for the plant to heal. After pruning, it is a great idea to give plants a spray with lime sulphur, which stops exposed areas from where cuts were made from getting fungal infections.
