Assistant Chef

Job Purpose To assist the Chef Manager with the production of meals and services at the required time to the company’s standards.

Key Tasks Following the planned menu, create meals to a high standard, within budget. Cater for special diets. Ensure the correct methods of preparation, production and presentation of all food. Ensure the prompt service of all meals (and refreshments when necessary). Assist the Chef Manager in creating new menus using innovative ideas for menu and service options and using seasonal produce. In the absence of the Chef Manager and in liaison with the Waverley Operations Manager, plan menus and rotas effectively and order necessary stock from agreed suppliers. Leave all areas clean and tidy day to day. Carry out deeper cleaning as required, ensuring the cleaning rota is implemented and adhered to. In the absence of the Chef Manager, receive, check and store deliveries. In all tasks, comply with company and statutory regulations regarding hygiene, safety and cleanliness. Ensure that external doors and windows of the Kitchen and Restaurant areas are secured after services.
Carry out periodic stock-taking of all food and drink items, as directed by the Chef Manager. Adhere to company policy and procedures and ensure they are met and followed at all times. Ensure the company uniform is worn at all times and a high standard of personal and general cleanliness and hygiene is adhered to. Be fully flexible in terms of working hours, which will often include evening and weekend hours. Follow rota as planned by the Chef Manager. Assist at any special functions, which may sometimes be outside normal working hours. Be flexible in helping to cover other staff holidays and sickness. Be courteous to all guests and other staff at all times. Report any customer complaints or compliments and take remedial action where possible. Attend to any reasonable request by management and be fully accountable for all action and duties you carry out.

Standards by which performance may be measured Prompt delivery, appropriate taste, excellent presentation and correct temperature for all meals. Positive feedback from guests in terms of service and quality of food. Compliance with hygiene, fire and health and safety regulations.
