Servings: 3 This recipe works well on a griddle (remember to spray grill or griddle with non-stick cooking spray.) May substitute chicken breast. 1 protein, 112 fruit 1 pound turkey breast 15 ounces pineapple rings in juice, not drained 4 packets sugar substitute 1 tablespoon I Can't Believe It's Not Butter Cooking Spray, Original 1/4 teaspoon cinnamon 1/4 teaspoon ground ginger 1/4 teaspoon Morton's® salt substitute Drain pineapple, reserving juice. Combine sugar substitute, 2 tbs of pineapple juice, butter spray, and spices to make glaze. Pour remaining juice over turkey and let stand for 15 minutes while grill is heating. Remove turkey from juice and grill for 4 minutes on one side; brushing with glaze. Turn turkey, brush with glaze and brown. While turkey cooks, add pineapple rings to grill, turning to brown on both sides brushing with glaze. Top turkey breast with rings and cook an additional 3 -5 minutes until turkey is no longer pink in center.
Pumpkin Cheesecake Servings: 16 Slices 1 14 oz can pumpkin 3 eggs 1/2 cup Stevia 1/2 tsp optional cinnamon or pumpkin pie spice 2 Fat Free Cream Cheese, softened In mixing bowl, slowly mix cream cheese until blended. Add eggs and pumpkin and mix well. Then add sugar/Stevia (you may also add cinnamon if you like, or pumpkin pie spice 1/2 tsp) Mix well on medium for about 5 min Use oblong glass baking dish and spray with Pam cooking spray. Pour mixutre in pan and bake on 350 degrees for 40 min or until center is firm. Let chill completely before serving.

18 festive ideas to make the holidays a little more memorable BY MARK BOEHLER FOR CROSSROADS MAGAZINE Counting down to Christmas Day means many different things to people in the Crossroads area. Although local families likely have several different traditions they anticipate each year, it can be fun to incorporate some new merrymakers into the festivities. One local favorite holiday tradition is a visit to Pine Mountain Christmas Tree Farm near Kossuth. Scores of families visit Debra

and Mike Marolt to first mark a live tree, then later return to cut it down and take it home. Chainsaws are provided, or the tree farm staff can do it. Staff also assists in loading up the tree. There are five varieties in which to choose on the farm and the Marolts also ship in Fraser fir trees from North Carolina for families to pick up when no more cutting is allowed on the farm. The farm was scheduled to be open on Saturday, Nov. 18 and remain open on weekends throughout the holidays.

The farm also offers live wreaths for sale, holiday music, candy canes for the kids, hot chocolate, plus some farm animals to see to make the farm experience one to remember. “It is a family tradition,” said Debra Marolt. “We have some families who have been coming here for 25-30 years. Some people grew up here and are now bringing their kids. We are working on a second generation.” For many years the farm opened the day after Thanksgiving, “but we had so many families showing

up in the afternoon on Thanksgiving Day, we moved the open date,” she said. Many families get a group shot at the farm to be shared during the holiday. “It’s a good spot for family photos,” she added. Here are several more festive ideas to include in the days leading up to Christmas — a special family calendar of fun finds. 1. Annual memento: Have the kids or adults make one new handmade ornament each year. This way the tree is always evolving, and everyone can track milestones. 2. Cookie day: Devote one day to making Christmas cookies. Invite friends or family members over. Distribute some cookies to elderly neighbors. 3. Holiday classic: Spend a night in and watch a classic Christmas flick you’ve never seen. Streaming movie services often put classics and obscure titles into rotation during the holiday season. 4. Christmas concert: Host a gathering of children where they can sing or perform their favorite tunes for an audience. Take it on the road to a local
nursing home. 5. Dine out: Take a break from cooking, shopping and hosting and stop into a restaurant you’ve been meaning to try. Keep it local to support local businesses. 6. Adopt a child/family: Volunteer with a charitable organization that provides for less fortunate families. Answer the Christmas desires of a needy child or family by purchasing an item on their wish lists. 7. See the sights: Pack the children into the family car to tour nearby areas and look at Christmas lights displays. Bring along cookies and hot chocolate. 8. Trim a tree: Get together with adult friends at a tree-trimming party. Rotate the hosting house each year. 9. Play dress-up: A gentleman can dress up as the man in red and pop into a friend’s holiday gathering. 10. Wilderness walk: Enjoy the crisp air and see an area state park from a winter perspective. Nearby Big Hill Pond State Park and Tishomingo State Park have great hiking trails. 11. Acts of kindness: Choose any act of kindness and make it happen this Christmas. It can include feeding the hungry or helping a disabled person
shop for the season. 12. Kids’ Secret Santa: Spread the joy of giving by having the kids choose a sibling or friend’s name from a hat and purchasing or making a gift for that person. 13. Hand out hot chocolate: Make a big thermos of hot chocolate and give it out to shoppers or workers who have been out in the cold. 14. Read religious stories: Understand the true meaning of the season by reading Biblical passages. 15. Camp-in: The first night the tree is decorated, allow the kids to sleep beside it under the glow of Christmas lights. 16. Scavenger hunt: Plan holidaythemed trivia questions and hide small trinkets for children to find. 17. Surprise box: Put a gender and age nonspecific gift into a box. On Christmas Eve or Christmas Day, the person who finds a hidden gift tag under their chair at dinner gets to open the box. 18. Family shares massive holiday display covering 13 acres

I
t just wouldn’t feel like Christmas without Cotton Plant. The sprawling Christmas wonderland in southern Tippah County is as much a part of my family’s holiday traditions as presents under the tree and a visit from old St. Nick. A labor of love for Christy and Steven Paul and their family, the massive display covers 13 acres with more than 300,000 shining lights. The couple asks no admission fee and accepts only voluntary donations to help defray the costs of electricity. My first visit to Cotton Plant was almost overwhelming. I had heard about it for many years when one cool winter evening my wife and I decided to make the first trip. Words simply cannot do it justice. I was completely unprepared for the Christmas wonder that greeted us as we turned off of Highway 15 onto the property beneath a canopy of lights. Pathways from the parking area take visitors on a

journey into the heart of Christmas as you wander through acres filled with countless inflatables featuring beloved Christmas characters, cartoon critters and much much more. My head was on a swivel as I tried to look everywhere at once. As much as I loved my first visit to Cotton Plant, I didn’t really understand the wonder of it all until I became a parent. My twin boys, now 9 years old, have been going their entire lives, listening to Christmas carols in the car as we make the short trip from our home. Christmas is all about the children and Cotton Plant is a child’s Christmas fantasy come to life. Watching my children’s eyes light up each year as they try to take it all in is one of my favorite parts of the Christmas season. No trip to Cotton Plant would be complete without a visit to Santa’s house at the center of it all. Santa awaits visitors in his cozy cabin and sits patiently as he listens to the dreams of good little boys and girls.

Things to consider before giving
pets as gifts The blissful image of a young child or a significant other receiving a pet as a holiday gift compels many shoppers to give pets as gifts come Christmastime. But pets are unlike any other holiday gift, as pets are living things that require food, shelter and attention. Because pets are unlike video games, diamond pendants and other popular holiday gifts, shoppers must consider a host of factors before deciding whether or not to give pets as gifts this holiday season. “We do not recommend giving a shelter pet as a surprise Christmas gift to anyone,” said Corinth-Alcorn Animal Shelter Volunteer Director Charlotte Doehner. “Just because a cute puppy or kitten looks pretty under a Christmas tree doesn’t mean they make good holiday gifts.” Instead, Doehner said Crossroads area family’s should discuss getting a family pet and then visit the shelter prior to Christmas morning to pick out an ani-

BY ZACK STEEN FOR CROSSROADS MAGAZINE mal that best suits the family’s needs and wants. “Many of the animals in the shelter today are former pets, some because a child lost interest and no one else stepped in and took the time to provide training and care,” added Doehner. “Dogs need exercise every day and a huge time investment is required for both new cats and dogs to new homes.” Doehner said the shelter also makes available gift certificates which people can purchase to give to someone who may have expressed interest in adopting a pet. “This way, you’ll helping the shelter and giving a gift,” she said. “Plus it allows a person the ability to pick out the pet that best matches their personally.” Here are other things to consider before giving a pet as a gift for Christmas. LIVING SITUATION Shoppers who plan to give a pet to someone they don’t live with, whether that person is a niece or nephew or a girlfriend or boyfriend, should first consider

Landlords may forbid apartment dwellers from having pets, so it’s best to confirm with your loved one whether his or her lease allows pets before adopting or buying the animal. If you don’t want to spoil the surprise or you cannot confirm if a loved one’s living situation is petfriendly, don’t adopt or buy the animal. ALLERGIES Some people, including many who profess to love pets, cannot have pets of their own because of allergies. According to the Asthma and Allergy Foundation of America, as many as three in 10 people in the United States have pet allergies. Cat allergies are twice as common as dog allergies, but gift givers who intend to give their loved ones a dog should still confirm if the recipient has a dog allergy before adopting or purchasing the animal. The AAFA also warns against looking for pets that are described as “hypoallergenic.” While some people are more sensitive to certain breeds of cats and dogs than others, there is no guarantee that a particular breed of cat or dog will not cause an allergic reaction. to acclimate to their new environments, so avoid giving a new pet to a family about to embark on a lengthy holiday vacation. Families staying home for the holidays and taking time off from school or work may be most capable of welcoming a furry new addition into their homes. If you want to give a loved one a pet for the holidays, delay giving the gift until things have returned to post-holiday normalcy. FINANCES Pets can be expensive, especially in the first year. According to the American Society for the Prevention of Cruelty to Animals, the first-year cost of owning a dog is nearly $1,300, while the first-year cost of cat ownership exceeds $1,000. These estimates include the cost of food, shelter and medical exams, among other things. Before giving a pet to a child, consult the child’s parents to determine if the family can afford adding a pet to the family. If parents need some financial help to afford the pet, include supplies like bowls, leashes and toys in your holiday gift. The origins of some beloved holiday traditions The Thanksgiving season is here. Black Friday will be the biggest shopping day of the year the day after Thanksgiving. That means Christmastime is just around the corner. Gifts are being purchased. The stockings will soon be hung on the fireplace mantle. Mistletoe is pinned above the front entryway, and poinsettias add rich color to home decor. Tradition is integral come the holiday season in the Crossroads area. Throughout the month of December, traditions fill people’s days and comprise the many reasons why individuals decorate, celebrate and dine the way they do this time of year. Always held on the first Saturday in December, the Corinth-Alcorn County Christmas Parade ushers in the holiday season, followed by many area parades in other towns. Few may know the origins of some of the most beloved holiday traditions. CHRISTMAS STOCKINGS The Christmas stockings of today may be a byproduct of various traditions. One such tradition dates back to a Dutch custom in which children would leave shoes full of food to feed St. Nicholas’ donkeys, and then St. Nicholas would leave small gifts in return. Another origin story of Christmas stockings can be traced to the 12th century, when nuns would leave socks full of nuts, fruit and tangerines for the poor. This is why some people still put tangerines in Christmas stockings. Local families have a host of stocking traditions, either placing gifts from one another or from Santa Claus come Christmas morning. CHRISTMAS TREE Christmas trees will be everywhere during the holiday season, inside businesses and homes and even outdoor decor. They are both live and artificial, big and small. The use of evergreen trees predates Christmas and is associated with the pagan festival of Saturnalia, which celebrated the agricultural god Saturn with partying and gift-giving. Christmas is rife with traditions that date back ages. served as a reminder that spring would arrive anew. Germans are credited with first bringing evergreens into their homes and decorating them. It spread into Europe and then to the United States. SANTA CLAUS Santa Claus’ origin story can be traced to St. Nicholas, a Christian bishop who lived during the fourth century. St. Nicholas was very generous and gave away his fortune to help the needy. He also did various other good deeds. St. Nicholas became infamous and began to be known by various names around the world. The Dutch called him Sinter Klaas, which was eventually transformed to Santa Claus. The jolly persona came later when 20th century advertisers — especially the artists responsible for Coca-Cola ads — portrayed Santa in a red suit with a big smile. MISTLETOE Mistletoe is hung in doorways, and couples who stand beneath are encouraged to share a kiss. The tradition of hanging it in the house goes back to the times of the ancient Druids. Mistletoe was thought to bring good luck to a household and ward off evil spirits. The custom of kissing under mistletoe can be traced to England. Originally, a berry was picked from the sprig of mistletoe before the person could be kissed. When all the berries had gone, there could be no more kissing. CHRISTMAS BELLS Church bells ring for many special services, including Christmas mass. During Christmas midnight mass in the Catholic Church, the altar bells may be rung while the priest says the “Gloria.” Bells are part of caroling, and jingling bells are associated with sleighs and Santa’s reindeer.

Amidst all of the bright lights, Santas, elves and snowman, the true heart of the season also beats strongly in Cotton Plant. A large section of the display is filled with nativity scenes, wisemen and more reminding us all of the savior born on Christmas Day. The Pauls begin putting up the massive display in July and work daily to
have it up in time for their opening the weekend after Thanksgiving. It’s a massive project that’s their way of giving back to others and celebrating the true meaning of Christmas. ‘The Green Thumb’ Preparing bedding plants, lawn for winter season We’re officially in the fall season and much colder weather is on the way. I’ve been receiving several calls lately concerning what a homeowner might need to do to their flower beds or their lawn in preparation for the colder winter days. When it comes to preparing outdoor bedding plants for colder weather, one of the best things to consider is mulching. Mulching not only protects the roots from excessively cold temperatures, but it also helps hold moisture in the soil which in turn helps to feed the plant through its extensive root system. Homeowners now have choices of different colors of mulch to help complement your landscape as well. One thing I always like to mention is to remember that if you are placing mulch around a tree to be sure and leave a gap (say 3-4 inches) between the mulch and the bark of the tree all the way around the trunk. You might have to shape it by hand in order to make sure that it won’t touch, but this will help to prevent rot from occurring around the trunk of the tree due to excess moisture. How much mulch you put out will depend on what types of plants you have, but the majority of the time, 2-4 inches of mulch will suffice. When it comes to your winterizing your lawn, one thing you might want to think about doing is to leave your grass cut a little taller when you make that last cutting. This will aid in protecting those roots if we experience some very cold weather in the Crossroads area. I’ve also received several calls from individuals asking if it is OK to fertilize your yard at this time. First of all, if you haven’t soil tested this year, it needs to be done now. If your pH is too low then fall is the time to apply lime and start the process of raising the pH level. This is necessary so when spring gets here the pH will be within a range that is acceptable for growth in your flowerbed or your yard. You can drop off soil samples at our office and be sure to bring a check or money order for $8 per sample box to cover the lab fees. We have soil www.mycrossroadsmagazine.com

If you get your soil results back and they indicate that you are low in P or K (phosphorous or potassium), then you could put them out right now if you wanted to. These two nutrients will stay in the soil and be available for grass growth next spring. I’m not saying you have to put them out now, but some people do. Most wait until spring and that is fine as well. You do not want to put any fertilizer out right now on your yard that contains N (nitrogen). You don’t want that grass trying to put up new growth when frost hits. This can cause damage to the grass. I also want to touch base on some of the things you need to think about whenever you bring your potted plants inside. Keep in mind that when you bring some plants inside it might take them a little while to get acclimated to the inside environment. Some plants will immediately shed their leaves due to the change in environment. Also be aware that when the heater is running in the house the plants will dry out faster than normal, increasing the need for more water. This goes for plants that might already be in the house as well as those you bring in from the outside. With this in mind, you must also be careful not to overwater as well. Symptoms of overwatering can include brown leaf tips, delayed growth, or root rot which is characterized by the roots becoming brown and soft and in some cases the death of the plant. Directions Mix ingredients together. Pour into 9x12-inch baking dish. Bake at 350 degrees for about 35 minutes.

Directions Combine everything except jelly, chili sauce and oil. Make into tiny meatballs and cook in the oil until done. Take meatballs out of skillet and add jelly and chili sauce to the pan drippings and simmer until jelly has melted. Put meatballs back in pan and cook another 10 minutes. Serve with toothpicks.

People have visited forests to select their Christmas trees for centuries. While tree sellers conveniently stationed in store parking lots and artificial trees displayed in various retailers have led fewer people to venture into the wilderness, the Christmas tree is still an important component of holiday celebrations. Germans who decorated trees inside of their homes are credited with starting Christian Christmas tree traditions during the 16th century. Early Americans were late to adopt Christmas trees because early Puritan settlers thought the tradition — as well as carols and other concepts — were Pagan influences. It took the popularity of England’s Queen Victoria and her German Prince Albert appearing around a decorated Christmas tree to eventually win over much of Europe, Canada and the United States. Trees are very popular today. According to StatisticsBrain, 10 million artificial trees and 34.5 million real trees are sold in the U.S. each year. According to MSU Extension Service Alcorn County Coordinator IV Patrick Poindexter, the biggest issue with live Christmas trees is proper watering. “Once that tree goes up, immediately put water in the tree stand reservoir,” said Poindexter. “The most important thing with live trees is making sure they get plenty of water.” “Don’t forget about it,” he added. “During the winter, the air inside homes is very dry.” People should check the reservoir very soon after the first water is applied, he said. “The tree will really suck up the water at first, so the reservoir needs to be checked again because it will need more water very quickly,” said Poindexter. “Always position presents so there is an easy access to the reservoir.” These beautiful, well-watered trees require decorating, and the following secrets and tips can help celebrants do just that. • Prune the tree first. Be sure to shape the tree as desired, since natural trees will have branches sticking

Wear gardening gloves to avoid sap. • Position trees away from heat sources, such as fireplaces, vents or radiators, which can cause the tree to dry out prematurely and become a fire risk. “This is so very important,” added Poindexter. “You don’t want the tree to dry out because then the needles will start falling off.” • For added safety, anchor a tree to a wall or ceiling, so it will not tumble over onto children or pets. • In homage of the first German Christmas trees, decorate with natural ingredients, such as berries and pinecones. Also, use apples, nuts and marzipan candies. For another German twist on tradition, add a Green Pickle Ornament. Tradition says it brings good luck and is always the last ornament placed on the tree. The first child to find the pickle on Christmas morning always gets an extra gift. Google Green Pickle Ornament for a variety of pickle options. • To free up more space for presents, place a narrow tree stand inside of a waterproof planting container. Place the tree inside. This will provide a more streamlined look that’s neater than a tree skirt. • The more lights the better, especially on dense trees. • For a whimsical approach, match the tree decor to home decor and the color of furniture. • Make handcrafted ornaments with the whole family. Remember the days of popcorn strings and paper chains? Bring them back this year. • Hang the most delicate pieces toward the top where they won’t be disturbed. • Step back and enjoy your handiwork, which will also give you a chance to find any blank spots that need filling in. ‘Bossy’ turns into a blessing BY L.A. STORY FOR CROSSROADS MAGAZINE On the surface we were all cooperative when my youngest sister, Betty Jo, said she had the idea for a family cookbook. Betty Jo is always getting bright ideas. She’s also sentimental — sometimes to the point of impracticality. At the time she proposed her great idea, we thought it was a great idea until she asked us to help. She wanted each of us to submit at least three recipes. It had to be by Thanksgiving because the recipes were to going to be her Christmas present to all of us. The idea was that new recipes would be added here and there throughout the years. This was many years ago and I don’t remember if my other two sisters or our mother turned their recipes in on time, but I think I had mine typed up and ready to hand to her on Thanksgiving Day. “Nope,” she said. “You have to write them by hand and tell the story behind the recipe, too.” “But, my handwriting is barely legible! Everyone knows that! I have the handwriting of a 10-year-old!” I wailed. She insisted. She brought paper. I grumbled, but I sat down and wrote out all of my recipes by hand. Several of us complained. We went on and on about how impractical Betty Jo was and how ridiculous it was ... why, oh why, did she make us do this? She better know we love her! Isn’t she being awfully bossy about PA G E 5 2
this recipe thing? Betty Jo was perhaps a touch hurt that we couldn’t see her vision, just ignored our whining and cracked the whip. “Just think ... one day when we’re all dead and gone there will still be these recipes and in our own handwriting. The kids will be so happy to know those stories and know we wrote them out for them to have,” she said. CROSSROADS MAGAZINE
When Christmas Day arrived, she could hardly wait to give us her present. She had compiled the recipes into “The Story Family Heirloom Cookbook.” She had hand-stenciled it on the front. She had crafted each album by hand with fabric and batting. She made these beautiful albums — one for all four of us sisters and one for our mother. www.mycrossroadsmagazine.com
Recipes from The Story Family Heirloom Cookbook Sister Nettings’ Hot Chicken Salad
Betty Story, Glen Ingredients 2 cups cooked chicken, chopped up 1 cup sliced celery 2 hard boiled eggs, chopped 1 tsp. chopped onion (may use onion salt) 1/2 cup slivered almonds 11/2 cups cooked, cold rice 1 can cream of chicken soup 1/2 tsp. salt and pepper 3/4 cup mayonnaise 1 tbsp. lemon juice Directions Combine ingredients and stir lightly. Put crushed potato chips on top of casserole and bake at 350 degrees for 20 to 25 minutes until brown on top. You can make the day before you need to serve it - put in the refrigerator and bake next day, if you like. Story behind recipe - “This wonderful dish was made for a church fellowship meal in New Kensington, Penn.. Sister Nettings gave me this recipe and I have enjoyed it for years. Joe and I were in full time ministry at New Kensington Church of Christ in the early 1970s.”
Frozen Cranberry Salad Lee Ann Story, Glen
Ingredients 2 (3 oz.) pkgs. cream cheese (These are the small packages) 1/4 cup Miracle Whip 1/4 cup lemon juice 1/8 tsp. salt 1 cup diced walnuts 1 cup diced bananas 1 cup drained, crushed pineapple 11/2 cups Cool Whip 1 cup jellied cranberry sauce (dipped out in chunks and dropped into mixture) Directions With a mixer - mix cream cheese, Miracle Whip, lemon juice and salt until smooth. Fold in the rest of the ingredients, adding the cranberry sauce last, after everything else is mixed well. Stir in the cranberry sauce gently to keep most of the chunks intact. Put mixture into a foil-lined loaf pan and cover tightly with more foil and place in freezer until it has frozen solidly into a loaf. To serve - turn pan upside down on a serving plate and remove foil. Cut into slices and and serve. Story behind the recipe - “This recipe was a staple holiday item in the home of my friend Kathy Kott Born when she was growing up. I loved it so much after she made it for a holiday meal I attended. It has now become a favorite in our family as well.”
Inside the book, she had dividers and copies of all recipes divided into categories. The recipes were on sturdy card stock and copied just as they were written. We were astounded and grateful. I was more than a little ashamed I had complained. Many, many years have passed since the original book was given to me. We
have added recipes to it and now Betty Jo has made many of my own children have their own copies. Betty Jo’s “impractical” idea has become a treasure to me. I use it all the time when I want my grandmother’s homemade banana pudding recipe or Mom’s Texas hash. I looked at the old recipes in my sisters’ handwriting and I run my fingers over it and

Baked Artichoke Dip
Betty Jo Story Hyman, Columbus Ingredients 1 (9 oz.) pkg. frozen creamed spinach, thawed 3/4 grated parmesan cheese, (separated into 1/2 and 1/4 cups) 1 (14 oz.) can artichoke hearts, drained and chopped 1/4 tsp. pepper 1 tsp. lemon juice 1 cup shredded mozzarella cheese Directions Preheat oven to 350 degrees. In medium bowl, combine spinach, 1/2 cup parmesan cheese, artichokes, pepper, lemon juice and mozzarella. Blend thoroughly. Place in ovenproof casserole dish and top with reserved parmesan cheese. Bake until hot and bubbly - about 15 to 25 minutes. Serve with tortilla chips. Story behind recipe - “Jim and I ordered this at Ruby Tuesday in Tupelo one night and loved it. We liked it so much that we went on a recipe search to find a good substitute. A friend from work gave me this one. She had loved the Ruby Tuesday version too and got her hands on this, which actually tastes pretty close. For an extra treat, put your chips on a baking sheet and warm them in the oven.”

Although poinsettias are most often associated with the holiday season, they are actually tropical plants. In spite of their origins, poinsettias can thrive during the holiday season and even last long after the holidays have come and gone. Poinsettias are native to Mexico and Central America. Aztecs called the plant cuetlaxochitl. The flowering plant was first introduced to the United States by Joel Poinsett, the U.S. ambassador to Mexico, and was subsequently renamed the poinsettia. The flowers of the poinsettia are actually the yellow blooms at the middle of the bright red or white bracts that form on the plant. Perhaps due to the bright red of the bracts, the plant quickly became a popular Christmas plant. According to MSU Extension Service Alcorn County Coordinator IV Patrick Poindexter, the biggest issue he sees with poinsettias is “either underwatering or overwatering.” “Adequate watering is the key to a healthy plant,” he said. “They must be maintained.” Many people let their plants dry out, causing the leaves to fall off, added Poindexter. Proper watering is the issue with all indoor plants, he said, “especially those being brought into the home from the outside.” It’s important to note that poinsettias grow in a warm climate and therefore must be kept in tropical conditions to ensure the plant’s health. sponse to shortening daylight hours. That means they will need ample darkness each night in order to simulate the dark nights of short, winter days. To achieve this, folks may need to put the plant into a dark closet for 12 to 14 hours each night. During the day, the plant should be in a sunny window where it will have access to bright light. The more light the better. Keep the soil evenly moist. Misting the plant will help it to retain some humidity. Also, fill the overflow saucer on your flower pot with gravel to allow water seeping through the pot to evaporate from the gravel. Hot temperatures indoors combined with high humidity will help the plant to thrive. Even one day without adequate moisture can cause the leaves to drop. Decreasing temperatures can cause leaves to fall off. The goal is to keep the indoor temperature consistent. While many poinsettia plants are discarded after the holiday season, these plants can actually be cut back and saved for next season. Trimming back any remaining leaves and continuing to care for the plant by keeping it moist can help. To force the blooms next season, start reducing the plant’s exposure to sunlight in mid-September to October. Again, this will mean removing the plant to an area that is shrouded in complete darkness. Even streetlights or indoor lighting can affect blooming. If the plant does not begin to turn color before the holiday season, people may need to purchase a new plant and try again next year. canola oil and salt until coated. Place potatoes on a sheet pan and back at 350 degrees until potatoes are tender. While potatoes are baking, fry bacon in a small pan until crisp, then drain excess bacon fat and set aside. When potatoes are done and cool enough to work with, cut potatoes in large chunks and place in a large mixing bowl. Add bacon, sour cream, green onions, cheddar cheese and butter. Season with salt, black pepper and fold all ingredients together being careful to leave the potatoes chunky, not smooth. Serve warm.
Christine Ray’s Christmas Coconut Cake Christine Ray, submitted by Shelia Mitchell, daughter *”This cake was made every Christmas and enjoyed by everyone who came to her house at Christmas.” Ingredients Cake mix: 2 cups of Martha White selfrising flour 11/2 cups of sugar 1 cup of buttermilk 1 cup of oil 1 tsp. of baking soda 1 tsp. vanilla 2 eggs Directions Mix all ingredients, pour into well-greased and floured pan. Bake in a 350 degree oven until toothpick inserted in middle comes out clean. While cake is cooling, mix the following together: 1/2 cup sweet milk 1/2 cup sugar 1 tsp. vanilla Bring all to a boil. Dimple Mitchell’s Christmas Chocolate Cake Dimple Mitchell *”This has been a tradition at Christmas in the Mitchell house for over 50 years.” Ingredients Cake mix: 1 cup of milk 4 eggs 2 cups of self-rising flour 2 cups of sugar 1/2 cup of Crisco 1 tsp. vanilla Directions Cream sugar and Crisco well. Add eggs one at a time, beating after each. Add flour and milk alternatively. Pour into well-greased and floured pan. Bake at 350 degrees until center of cake springs back (approximately 25 minutes). Frosting: 2/3 cup cocoa 31/2 cups of sugar 1/8 tsp. salt 11/4 cup half and half 1/4 cup margarine 1 tsp. vanilla Combine sugar, salt and cocoa; add milk. Bring to a boil, stirring almost constantly. Cook until mixture forms a soft ball in cold water. Remove from heat; add margarine and vanilla. Do not stir until mixture is cool. Beat by hand until frosting is of spreading consistency.

2 tbsp. chopped onion tsp. salt 1 tsp. garlic powder or fresh chopped garlic 11/2 tsp. Worcestershire sauce 1/4 tsp. red pepper Directions Combine all ingredients. Form into a ball and roll in parsley and paprika. 1/2
Orange Slice Cake Shirlene Collier, Walnut Ingredients 1 lb. candy orange slices 1 (8 oz.) pkg. dates 2 cups chopped nuts 31/2 oz. coconut 31/2 cups plain flour 1 cup butter or margarine 2 cups sugar 4 eggs 1 tsp. baking soda 1 cup buttermilk Glaze: 1 small can frozen, undiluted orange juice 2 cups powdered sugar Directions Chop candy orange slices and dates. Coat orange slices, dates, nuts and coconut with 1/2 cup flour and set aside. Cream margarine or butter and sugar. Add eggs, one at a time, mixing well after each addition. Dissolve soda in buttermilk. Alternately add remaining 3 cups flour and milk to creamed mixture. Fold nut-candy mixture into batter. Bake in greased 10-inch tube pan for 2 to 21/2 hours at 275 degrees. Mix the orange juice and powdered sugar well and pour over hot cake. Let stand until the glaze has soaked into cake.
Holiday Cake Shirlene Collier, Walnut Ingredients 31/2 cups sifted cake flour 3 tsp. baking powder 1/2 tsp. salt 1 cup butter or other shortening

2 cups sugar 1 cup milk 10 egg whites, stiffly beaten Icing 1/2 cup sugar 1/4 cup butter 8 egg yolks 1/4 to 1/2 cup fruit juice 1 (20 oz.) can crushed pineapple, with juice 1 cup nuts, chopped 1 fresh coconut, grated 1 cup dark raisins 1/2 cup maraschino cherries, cut in halves or fourths Directions Sift flour once, measure, add baking powder and salt and sift three times. Cream butter. Add sugar and cream until fluffy. Add flour alternately with milk. Mix thoroughly. After each addition, fold in eggs whites. Bake in three floured, greased 9-inch layer pans in 350 degree oven for about 25 to 30 minutes. Remove from pans, cool. Spread icing between layers and on top. Make icing by cooking sugar, butter, egg yolks and fruit juice in top of double boiler until thick, stirring constantly after it is heated. Remove from heat and add remaining ingredients.
Macaroni Salad Peggy Christian, Walnut Ingredients 1 lb. macaroni 1/2 cup sweet pickles 1/2 cup chopped onion 1 cup chopped bell pepper 1 dozen boiled eggs 4 tbsp. sugar 2 cups mayonnaise 1/2 tsp. paprika 1 tsp. salt Directions Boil macaroni for about 15 minutes. Mix all other ingredients together well. Pour over macaroni and sliced boiled eggs and mix well.
