We hope everyone has had a great summer and managed to stay cool. For many around the state, Summer is the season for cattle shows. In this issue we celebrate the youth and adults that participated in them. It has been great to get out and see a large number of youth and the animals they have been working with. It goes to show there is still a large interest in the dairy industry and Missouri is full of quality dairy animals of all breeds. This issue of the Pulsator marks the start of our second year in print. We feel that even in just 4 issues we have grown tremendously in our ability and appreciate your patience as we continue to learn and grow. Your feedback has meant the world to us and we have been happy to hear that so many are enjoying our publication. Our biggest obstacle over the past year was without a doubt mailing issues. This was out of our control and we apologize for any delay that you may have experienced. We know that we are not alone in this, as many publications across the country are experiencing some of the same delays. I recently visited my friend George Lee Hays near Tiff City, Missouri and drove down the very rough, unpaved state line road to get there. George lives on the Oklahoma side of the road and his daughter Crystal Clark lives on the Missouri side and it was in her kitchen where we met for a great meal and the following interview.
Q: When did you start state line jersey farm? A: Our parents milked grade holsteins and when my sister Carolyn and I wanted to join 4-H, we wanted jersey calves and bought a pair from Paul Harber (Formal National Jersey Director) for $75 and $125 each. This was in 1969. Q: Fifty something years later, your herd has won nearly every accolade and award out there. How have you managed this kind of “staying power?” A: Good health, luck, and I have always milked my own cows. Seems like everyone who wants to be a dairy farmer doesn’t want to milk cows these days.
equipment. My big expenditures are for fertilizer and weed control… also seed, feed, things that offer a return on investment. Q: Tell me about your herd? A: I milk around 80 cows and since I am the one milking them, I want them to be nice looking. So, I breed for type and I feed for production. I only use proven AI bulls, no young sires and no JX look. Also, I never look at a bull’s milk production index. I don’t care about the numbers. Q: and it works? A: Yes, my cows milk great and I like the way they look and the kids have some to show. It works. I feed for milk production and cull the cows that need it Q: You currently have an excellent 91 cow who is this year’s president’s cup winner, Hilmar Cheese Award Winner, and National Youth Production Winner. You’ve won these awards before with this same cow and others. As well, the leading lifetime production award (2x), and the Joe P. Eves award at the All American (2x) A: Yes, we’ve been blessed with great cow families that just keep getting better. The kids and grandkids have won few shows, with holsteins and jerseys. It’s been a good run. Take care of your cows and they will take care of you. Q: You are nearing the age of 65. Any retirement plans on the horizon? A: No, I’m just going to keep on milking until I drop dead in the milking parlor. That way Crystal and her brother, Brandon will have to sell the cows and I’ll never have to see them go down the road on trailers.
Q: You don’t get much time off from work then. A: No, but that’s how I do it. I do all the milking, and herd care. I see everything first hand. I’m always there.
I Hope that’s not anytime soon George. Thank you for taking the time for this interview and keep up the great work.
Q: How have you survived financially during so many lean years? A: Back when we had good years, I put money aside for the future in case times got hard, and I don’t spend much. I drive old vehicles and

State District Meetings
N I E T HOLS DAY FIELD The Missouri Holstein Field Day was held Saturday, June 26 at Valley View Farms owned and operated by Nathaniel and Rose Graber of LaRussell, Missouri. We had a wonderful day that started out rainy but turned out great as the weather cleared and it was very mild. We had some great sponsors that all of our attendees were able to visit with. Graber's facilities were a main feature of the day. Nathaniel shared about how they decided to build a tie-stall barn and what feature cow families they are working with. The Mayo stall mats were demonstrated as well. Nathaniel performed the egg test on the mats. Cow families that the family is working with include Ashlyn, Redmarker Desire, Redrose and Missouri's Radine Goldwyn Model. Dry cow and heifer pastures were also available for viewing. Purina Farms was our main sponsor for the day featuring Dr. Kevin Dill speaking on how to make sound 'Economic Decisions in Dairy Rations and Management during High Feed Prices.' Dr. Dill touched on many aspects of feed efficiencies and highlighted the roasted soybeans that Clark Farm Products was demonstrating with the farm bean roaster in the background. The day was rounded out with a fabulous meal sponsored by Purina of pulled pork and homemade ice cream and a variety of pies. A special thanks goes to all of our sponsors for providing a variety of door prizes for the attendees. There were even some guessing jars for the youth and adults. A wonderful day was had by everyone who attended and special thanks to the Graber family for an informative day! Thank you to everyone who was able to attend and enjoy a featured dairy in Southwest Missouri.

Feeding in 2021
ver the last 12 months, corn and soybeans pricing have run up to what could be some of the highest in history. The average costs of ground corn can be anywhere from $250 to $300 a ton. Soybean meal averages $450 to $500 a ton which has not been uncommon with the unknown carryover changing with every new government crop report. When looking back at 2012, $8.31 was the top on corn and soybean meal hit $600.00 a ton for a while. This was a bit easier to comprehend, because of the drought that had stricken many areas. Here in 2021, weather has factored in to prices but mostly it’s our export demand that has hit record levels. This leaves the feed manufacturers no choice but to bid up to get raw ingredients. Years like these force producers to pay higher feed prices or look to other options. The livestock producers of this country are getting hit as hard as ever but some wouldn’t know it because doesn’t always make the news like other parts of agricultural commodities. This brings up the question, Are there any other feeding options for livestock producers? Not every dairy can benefit from the suggestions I will be making, but don’t be afraid to research and think outside of the box on feeding options. Anything can be fed, if you can mix it. Just be sure to have a nutritionist who can balance it, locate these alternative feeds and get it all to work together for your specific operation. Grocery store waste is a good place to start. Vegetables and fruit supply have feed value. There are companies that collect this waste every week from grocery chains as a service to them. They have a value and price usually includes delivery. The product is often cleaned of any packaging and can be dumped directly at your feeding site. This is one way to remove some other much higher feeds and also has the advantage of increasing dry matter intake in hot weather. Your only drawback is the time is shorter on feeding before the vegetables and fruit spoil in hot weather.
The feeding of calves is one of the costliest of cattle groups to feed, but you can’t short cut the future cows as youngsters. The milk of choice for years was milk replacer, but it is not the best economical option anymore. The use of waste milk from treated cows can really help the bottom line quickly. Every dairy has some treated cows or shall we say need to be treated or culled. The milk can be pasteurized in a self-contained unit that will usually be paid for quickly and your calf feeders will thank you also! The boost in overall quality of the milk you ship by lowering your SCC can also pay off in quality bonuses. The starter feed for calves is an area that should not be compromised. Don’t attempt to feed calves under 4 months feed byproducts. It is just too soon for them. My last suggestion is to keep an open mind to any feeds available. First, educate yourselves on the limitations and side effects of each product. If things only come in large loads and your herd is small, look to your neighbors’ operations. Could you possibly split a 25-ton load with a beef operation or another dairy nearby? There needs to be more of this if any kind of small or medium operation will survive these times. It leads to more creative works between possible corn planting, haymaking or silage harvesting. The equipment will never get cheaper and cooperation between operations may be key. My thoughts on surviving the times.

Wet feeds can often be a good buy and another alternative. They often have lower costs since time is not spent drying them down completely. Brewers grain feed has been fed as long as civilization has been making beer. Wet gluten and others can usually be delivered like any other feed on a dump trailer. It can always replace some corn grain and or soybean meals and possibly replace or enhance your forages. Another possible wet feed is cottage cheese waste water from a dairy plant. This is usually hauled in a tanker and you must be set up to handle it in tanks, and pump it out to a TMR mixer. I would suggest you get a sample run at the lab, as nutrients can vary due to possible water removal. This makes it more concentrated. My experience has been to feed 10 to 15 lbs per cow. The product has a salt content that has a pickling effect in hot weather and can keep heating up down some in rations. This feed should not be fed to heifers because it can cause edema.

Miss Rosie Lenz Crowned 2021 Missouri State Fair Queen
Miss Rosie Lenz was named the 2021Missouri State Fair Queen in a ceremony held Aug. 12. Miss Lenz received the highest score of 34 contestants vying for the title in the twoday competition. Miss Lenz reigned over the State Fair events and will be an ambassador for the State Fair and Missouri agriculture throughout the coming year. Rosie is 22-year-old daughter of dairy producers Chris and Suzanne Lenz, Prairie Home, MO. Rosie attends William Woods University, majoring in Art Education and will be a senior in the fall. As Queen, she received a $2,000 scholarship to continue her education. Rosie’s favorite part of the Missouri State Fair are the dairy shows. Rosie enjoys working on her family’s dairy farm, creating art, hunting, playing soccer and spending time with her friends and family.

Amanda Brooks competed in Dairy Jeopardy Blake Wright for Area IV was elected to the National Junior Advisory Committee during the National Junior Forum. Lora Wright was elected as the Chairman of the JAC commitee and is serving her second term as the At-Large representative. The JAC is the governing body of the Junior Association and oversees the organization’s activities.

UNE is National Dairy Month, and has been since 1939. “It is our month! We need to be shouting it from the rooftops,” says Ava dairy farmer Ed Wittorff. “I have always felt like it should be a BIG deal. We as producers need to get in front of the consumers as much as possible during this month.”
That is exactly what Wittorff does. He has taken dairy product promotion into his own hands, especially during the month of June. He has been participating in dairy month since the 1970’s when his family would get a cow and calf, go to a bank parking lot and hand out cheese with their local 4-H Club. Over the past few years, he has created his own opportunities to showcase dairy products and works to encourage consumers to buy more. “I wish other people would follow my example. There are 40,000 dairies in the US, if everyone would do something like this, we can get the info out and I believe help make a difference,” says Wittorff. As most of us know, bad press surrounds the dairy industry, especially over the past few years. Negative social media posts, fad diets, animal activists, and milk alternatives all have a huge hand in the information battle right now. We often see it on Facebook, or on tv commercials,

and the consumer is constantly having this “bad press” thrown in their faces. “We know that our product is full of nutrients and vitamins and just how truly great it is. They see the other guys everywhere. We need to step up and counter act that,” says Wittorff. The disconnect between rural and urban just keeps growing. Wittorff expands, “The consumer just doesn’t realize how much work is put into a dairy, and that most of the farmers I know are actually college educated. Not the typical farmer stereotype they are used to seeing.” “The price of milk is low, it has been low,” explains Wittorff. Cheese consumption is up, but consumption of fluid milk is at a 50-year low. Problems in the industry have been blamed on over supply, but Wittorff believes the real issue is underconsumption. It is up to us to turn it around and reach consumers. Promotion is best and cheapest way to do it. “We are all intelligent and passionate about our business, if people see that positive message, it has a positive effect and they develop a positive opinion,” explains Wittorff. Any promotion is good, but Wittorff believes the best thing a producer can do is to get in front of consumers and give them a visual. If you can connect a face with a product, they just might think of that face when buying products and by a little extra milk, or cheese. It gives them a bit of incentive to impulse buy the products you help to create. This is why he made it a point to appear at the local grocery store. He just simply asked if they would be interested in promoting dairy month. The grocery store manager loved the idea of dressing up the dairy case and encouraging people to buy more dairy products. “Things like this are a win-win for everyone. The grocery store sees more sales and the farmer is out nothing while still getting to promote their product,” Wittorff explains. Wittorff finds many ways to get his face and word out to the public. This year he started with an ad in the local paper that ran one week. He then got other area dairies and businesses to continue the ad to run for the entire month. The ad was sponsored by himself, Scribble Dairy, Grison Dairy, and the Animal Clinic of Ava. Joining together allowed for a whole month of publicity in the local paper.
KKOZ, a local radio station in Ava, was more than happy to fill airtime when approached by Wittorff. They brought in Wittorff, local dairy producer Tommy Scrivner, Coach Damon Seiger, and dairy youth Kylie Scrivner for individual interviews. Wittorff, and Scrivners spoke on themselves and their farms, while promoting and encouraging listeners to purchase more dairy products. Coach Damon spoke about fronting his own money to install a chocolate milk vending machine at Ava High School, highlighting the nutrient benefits chocolate milk supplies for young athletes and the income the machine provides for the high school’s athletic program. Their interviews can be listened to on KKOZ radio website under their June calendar. Wittorff thinks the radio is a great place to start. Many areas have local stations that are always looking to fill air time and this makes a perfect opportunity for a farmer to go in and promote their product. It never hurts to call and ask if a station is interested. In addition to the interview, Wittspride sponsored a radio commercial that aired to listeners. The commercial went as follows, “There is a certain satisfaction we get that can only be experienced as we live to care for our land, water, and livestock. Watching our animals grow healthy and fat on the feed we grow, combining science and age-old practices. Dealing with whatever nature sends our way and witnessing her wonder. Our failures and our successes are our own. Achieving our goals and setting new ones all the while providing natures most perfect food to a hungry world. June is national Dairy month, go ahead and put that extra cheese on your burger or pizza, have a little chocolate milk for a snack and have an extra scoop of ice cream. This June dairy month salute from Wittspride Registered Brown Swiss and Holsteins.” A few years ago, the Ava Lions Club organized a 5k. Wittorff stepped in and asked to help with it. He used it as a platform to encourage consumers to buy more products. With the help of Adrian Buff, a nearby cheesemaker and dairy farmer, they worked to help make the 5k dairy friendly. They brought Brown Swiss and Holstein cattle to the run, provided chocolate milk to runners, and gave out hair ties and t-shirts that were donated by Midwest Dairy Association. This let the runners get close and personal to the cattle and many posed for fun pictures with them. “Groups such as Southwest Dairy Farmers and the Midwest Dairy Association have “big” promotions,” explains Wittorff. They have large billboards and they are present at the big baseball games just to name a few of their activities. They attempt to reach the masses. But, one thing we can do that they can’t is promote in our own local areas. We can give consumers that “facetime,” Wittorff explains. Groups like this can provide numerous resources and information to help any producer take steps to create their own local celebration of dairy month. Another source Wittorff relies on quite often is 97milk.com. This site is filled with free information that farmers can use or pass out. He also commends Southwest Dairy and their mobile cow unit as an excellent way to reach people, as well as the Farm Bureau in Mountain Grove with their milkable plastic cow. All great things and ways to reach the public with our message. It all sounds fun but there have been a few frustrations for Wittorff through the years when it comes to dairy month. Luckily, these

have served as motivators and inspiration for him to continue on the track he has created. Social media like Facebook has been one of these. “You never know who you are going to reach so don’t stop using it, but a lot of times farmers spend way too much time preaching to the choir,” says Wittorff. When it comes to social media, you have to think, most of the people you are going to reach already know you and what you do. They know it is dairy month, they know what kind of work you do. Many contacts that are not dairymen will usually skim over dairy posts and not share them with their friends. Although it is a way to reach a lot of people really fast, are we reaching the right people? It lacks that “facetime” and may not be reaching the consumers that you need to reach. As time continues to move forward and the dairy industry continues to struggle, it is partially up to us help turn things around. “If what we are currently doing isn’t working, we need to change things up,” says Wittorff. Promotion is “easy to do and gives you a break.” He enjoys seeing people have a positive reaction to his work and says it can be “a lot of fun!” Wittorff’s challenge to you, “Get on a personal level. June is our month. Let’s get in front of people and prove it!”
Celebrating 50 Years
Wittspride Registered Brown Swiss and Holsteins is celebrating its 50th year with Brown Swiss Cows. The farm started in Illinois as a small 4-H project and grew through the years. In 1974, the dairy was moved to Missouri, finding their home in the hills near Ava, MO. Beginning with their parents, the late Walter Sr and Laura Wittorff, the dairy has been a family affair. Currently operated by Walter Jr, his son Eric, and Ed. All three siblings attended University of Arkansas. Walter and Ed majored in Dairy Science, while Dorothy received her degree in English. They each spent time with off the farm jobs to keep the farm growing and going through the years. In 1995, they built a new double 6 herringbone milk barn and added a few Holsteins to the herd. Today, they milk over 100 cows, mostly Brown Swiss and about a dozen Holsteins. Their farm consists of 250 acres, mainly of hills and trees, but with some open fields that they use for pasture and hay. Walter Jr and Ed currently serve as full time farmers on the dairy. Eric’s wife Ashton helps out on the farm, and their children enjoy spending time with the cattle. Their children, Emilia and Jacob enjoy showing the cattle at various shows.
