Sweep up the confetti and put away the party hats. The year 2015 is over and out, and 2016 officially has begun. But as New Year’s festivities are winding down, we’re still celebrating here at Dallas Hotel Magazine. It’s our 21st edition, and we’re proud to share it with you. Dallas is well known as a haven for the beautiful people, many of whom have been featured on our front covers. However, few compare to native Texan Brooke Burns. Born right here in Big D, she’s both a glamorous fashion model and an actress in sizzling TV hits such as Melrose Place, Baywatch, and the popular game show Dog Eat Dog. She’s also appeared in films, including Shallow Hal starring Jack Black (School of Rock) and Jason Alexander (Seinfeld). Brooke has traveled the globe, living and working in some of the world’s most exotic locales. We caught up with her to find out why she’ll always consider herself a Dallas girl. Fifty Years of Giving, paying homage to charitable events her parents had sponsored during the 50 years prior. Beginning the next day, and for 49 days thereafter, NorthPark50: Fifty Years of Giving provided funds to 50 organizations, each hand-picked by Nasher and her NorthPark team. Beneficiaries included SPCA of Texas, Genesis Women’s Shelter, Scottish Rite Hospital for Children, the Young Strings program of Dallas Symphony Orchestra, North Texas Food Bank and 45 other organizations. Additional celebratory activities included “Art Meets Fashion: 1965-2015”; the exhibit highlighted looks fashionable during the first 50 years and was presented by the Texas Fashion Collection of the University of North Texas. Also featured were a search by Kim Dawson Agency for male and female models, back-to-school runway show of children’s fashion and runway show of adult fashion. In October, NorthPark and Dallas Symphony Orchestra announced a special music partnership.

Evolution of a landmark After signing a 99-year ground lease with the Hillcrest Foundation in 1961 for land at the northwest corner of Central Expressway (I-75) and Northwest Highway, developer Raymond Nasher began turning his concept for a masterpiece mall into reality. Nasher chose architect E. G. Hamilton of Harrell & Hamilton (later Omniplan) to bring the project to fruition. NorthPark Center held its ribbon-cutting ceremony in 1965 with more than 150,000 in attendance; men were attired in suits and ties, and ladies donned hats and gloves for the occasion. One hundred stores opened that day, including Neiman Marcus and Titche-Goettinger. Thanks to comprehensive media coverage that brought Dallasites and regional residents clamoring for a peek inside, NorthPark was an instant success. In ensuing years, NorthPark continued to grow. In 1974, the mall added 300,000 new square feet of space for a Lord & Taylor

and room for 30 new retailers. Ten years later, Neiman Marcus added a third floor to house additional departments and a Zodiac restaurant, sister to the The Zodiac in Neiman’s flagship store in downtown Dallas. In 1995, Nasher acquired the mall from her father. Four years later, Nasher and Haemisegger purchased the land and continued renovations. To stay true to her parent’s initial vision and maintain the original aesthetic throughout a three-phase expansion, Nasher contracted with the architectural firm that had designed NorthPark. On Nov. 11, 2005, phase one opened, featuring a new Nordstrom flagship store. A year later, phase two opened a new wing that connected Nordstrom to Foley’s, an 88,000-sq.-ft. Barneys New York, a 15-theater AMC cinema, an open cafe area, and CenterPark, a 1.4-acre garden. The completion created a continuous loop that connected all shops and restaurants together, easing circulation.

Fine art in public spaces Since its inauguration, NorthPark Center has featured art exhibitions in its courts and corridors. Art is such a prominent part of NorthPark’s interior that the mall employs an art director. “Sharing art with the public is an important aspect of the NorthPark identity,” notes Abernathy. “Art has been a part of the NorthPark experience from the very beginning.” Today, more than 50 original pieces of artwork are on view, including Beverly Pepper’s “Dallas Land Canal and Hillside” (197172), the first sculpture from the Raymond and Patsy Nasher Collection to be displayed at NorthPark. Since 1995, Nasher and Haemisegger have displayed artwork from their own collection, thus continuing the family tradition. With its first 50 years behind

it, NorthPark remains one of America’s most profitable shopping malls, a success achieved by the rigorous upholding of the Nashers’ original values and timeless aesthetics. “NorthPark will always be improving and adapting to the fast-moving landscape of the retail industry,” says Abernathy, “It is our goal to keep the traditions and standards

Texas-based Southwest Airlines (stock symbol LUV) recently began daily non-stop service to Montego Bay, Jamaica, from Houston’s William P. Hobby Airport. Guests may relax as she prepares the meal or may stay in the kitchen, roll up their sleeves and participate. Of the experience, McGinnis says, laughing, “It’s like Stella & Dot and Pampered Chef had a baby!” Menu items range from $40 to $60 per person. McGinnis provides recipe cards so guests can prepare her dishes at home. “I just want to inspire people to get in the kitchen and cook. If you can read, you can cook,” she says. McGinnis began her culinary 22

career making custom cakes to help out her family after the real estate market took a hit. On a dare by her children, the brunette Texan auditioned for Master Chef (Fox) and was accepted. One day after she was cut from the competition, she says, a title for her business came to her. “I remember doing my hair, and the words just popped in my head, and I thought, ‘If this ‘every girl’ can make gourmet meals, why can’t everyone?’” Soon Every Girl Gourmet was born. However, what started out as a “girls’ night in” soon became a co-ed event, as McGinnis found that men also want to participate. Word spread quickly, with minimal marketing. “Sometimes I’ll have three guests from the same party [who] all want to throw their own Every Girl Gourmet party for their friends. It’s just been word-ofmouth so far.” At the $40 per person pricepoint, McGinnis shows guests to how to prepare Caribbean chicken wings, braised garlic chicken and lemon cupcakes with lavender butter cream. At the $60 price-point, choices include roasted nutmeg cauliflower bites with jalapeno aioli and wine-braised pork tenderloin with mushrooms,

Directions ■ Roast peppers over open flame or grill or in high-heat oven till charred. Rub off most black char and remove stem, membrane and seeds. Chop and set aside. ■ Heat 3 Tbs. butter in a 5 qt. stock pot. Brown over medium-low heat, approx. 7-9 min. Do not strain. Add onions and shallots and cook for 3-4 min. Add garlic and cook for 2 min., stirring constantly. Add peppers and mix well. Using a slotted spoon, remove mixture and set aside. ■ Add remaining 1 ½ c. butter to pot and melt. Add lobster and shrimp and cook over low heat until shrimp turn light pink, turning after 2 min. Remove fish and add scallops. Cook scallops for 3 min. per side. Remove scallops and add to lobster/ shrimp. Set aside.

■ Sift flour into butter remaining in pot. Whisk well while cooking for 3 min. Add cayenne, Old Bay, salt and pepper and continue whisking for an additional 3-4 min. ■ Slowly add 3 c. milk into flour/butter mixture and whisk till no lumps remain. Add cheeses and stir until cheeses are almost melted. ■ Cut fish into 1 ½ in. pieces and add to cheese sauce. Add drained pasta to pot and mix well. Stir in remaining 1 c. milk. ■ Lightly coat 13x9 baking dish with nonstick spray. Pour mac-n-cheese into dish and sprinkle with bread crumbs. Broil on high on next-to-bottom rack for 3-4 min. or until bread crumbs turn golden brown.

Native Dallasite Brooke Burns rises above injuries, setbacks to maintain successful Hollywood career. BY ROBERT PIPER

rooke Burns burns Dallas from start to finish. She grew up muddin’ in a four-wheeler, two steppin’ at the honkytonk, and chowin’ down at some of the finest restaurants in Big D. Viewers know her larger-thanlife personality from The Chase game show, her leading role on The Gourmet Detective, and her appearances in a long list of top television shows dating back to Ally McBeal and Baywatch. What viewers may not know, however, is that, in 2005, Burns survived a devastating diving accident in which her neck was fractured. Although statistics show 90% of spinal injuries result in spinal injury and paralysis, the actress was extremely fortunate; she made a full recovery and was able to return to work and continue a successful acting career. Today, she shares her experience to raise awareness of spinal cord injuries for several charitable organizations, including Life Rolls On, a nonprofit organization dedicated to improving the quality of life for young people affected by

spinal cord injury or living with paralysis. Burns’ childhood, although happy, hid a harbinger of physical woes to come. Burns and her mother Betsy, younger sister Beth and older sister Becky grew up attending Sojourn Church, a church her father Brad founded with a fellow classmate from Southern Methodist University. Burns began ballet studies at age 3 and, from kindergarten through seventh grade, attended Trinity Christian Academy in the Dallas suburb of Addison. From eighth grade through graduation, Burns was homeschooled, as her increasingly demanding ballet studies required scheduling flexibility. The Dallas native knew early on that her life would be that of a performer, not in front of a camera, but on a stage, performing as a ballerina. At age 15, Burns had 12 years of ballet study under her tutu and was performing with the Dallas Metropolitan Ballet when her anterior cruciate ligament was torn in a skiing accident.

Any future she may have had as a professional ballet dancer ended that day. Burns said the loss of ballet as a career was the hardest obstacle she had to overcome. “I think it was because of my age—you know, I was only 15 years old and my identity was as a dancer, and my identity was challenged as a teenager—that I thought life was threatening and devastating,” Burns said. “At the same time, I feel like that was one of the very first things that did give me that opportunity to say ‘Are you gonna crumble here? Or maybe God has another destiny for your life. And it’s a different road than what you may think it is.’” After the skiing accident, the Burns family moved to Europe. Upon her return to the U.S., Burns shifted her focus to a new endeavor, one that morphed into a major milestone for her acting career. Shaking off depression from the loss of dance as a career choice, she became a model with Page Parkes Center of Modeling and Acting. There, Burns built the primary foundation for her

future acting career. She began modeling and appeared in commercials, then connected with agents in Los Angeles, New York and, later, Europe. One of Burns’ first repeat roles was that of Jennifer Higgin in the hit TV show Ally McBeal. A breakthrough role as Jessie Owens in Baywatch followed; she remained in the role for three years, then was cast as Nicole Booth in North Shore. But, in 2005, a devastating accident halted her second career choice. Every night after dinner at her Los Angeles home, Burns would swim in her pool as part of a health regimen designed to keep her fit. One night, Burns decided to dive in, but a light in the black-bottomed pool was out, and she misjudged the angle, hitting the bottom head first. A visiting friend, who was a trained firefighter and paramedic, was on the scene. He immobilized her neck and held her in the

pool, with her head above water, until paramedics arrived. His actions preserved her mobility and were possibly life-saving, as well. The decade following the diving accident held many challenges, including a divorce and news she would never be able to bear children. However, she proved physicians wrong with the birth of her daughter, Madison, declaring it “the most god-like moment I’ve ever experienced.” Now, Burns’ bio on Twitter proclaims, “Above all else…MOM.” Today, the actress enjoys a new outlook on life. She says she has found deeper meaning in her relationships with family members, including her daughter and husband Gavin O’Connor, a Hollywood movie director producer, and screenwriter. Burns continues to work on new projects, explaining, “We

just came out with the fourth season of The Chase for GSN [Game Show Network], and our second Gourmet Detective for Hallmark Movies and Mysteries just aired; we’ll be shooting a third one in October....” Burns also reveals she’s working on a new line of “spiritual jewelry.” Fans should expect to see a lot more of Burns in the future, both on-screen and in her hometown. When returning to Big D for visits, she may be found at favorite haunts Bubba’s Cooks Country, the BlackEyed Pea, Goff’s Hamburgers, Sonny Bryan’s Smokehouse and The Original Pancake House. Although now a California resident, it’s clear that for this Texas girl, Dallas will always be in her DNA.

s whiskies rise in popularity as an investment, aficionados are facing an increasingly hard choice: Should they savor the contents—or maintain the bottle unopened? Some solve this quandary by purchasing two bottles, one to open and one to retain as an investment. By far the most expensive whisky ever sold is The Macallan M Imperiale 6-liter Lalique. In 2014, it was auctioned in Hong Kong for a staggering $628,205, a world record confirmed by Guinness World Records. The price exceeded the previous record of at $460,000, also held by The Macallan, for its 64 Years Old in Lalique Cire Perdue. “To achieve this record for a second time is an outstanding achievement for The Macallan,” says David Cox, director of fine and rare malt whiskies at The Macallan. “M Imperiale is the largest decanter Lalique has ever made and the largest The Macallan has ever filled.” The whisky itself was a combination of three rare vintages, casks filled in 1942, 1945 and 1946. Other high-priced bottles include the $6.2 million Isabella’s Islay from Scotland, which includes a white-gold bottle encrusted in 8,500 diamonds and 300 rubies; the bottle may, of course, be customized. More-affordable four-figure bottles of whisky include the $2,500 Hibiki from Japan. Kentucky is very much the cen-

ter of bourbon production, and prices of premium whiskies from The Bluegrass State easily can top five figures. An online auction in 2014 saw the first bottle of Boundary Oak bourbon produced in Kentucky in 10 years command a final bid of $25,000, said to be the most ever paid for a bottle of American whiskey. Keeping company with the state’s more expensive bourbons are Michter’s Celebration Sour Mash Whiskey, which has been bringing around $5,455 per bottle. The $2,200 Pappy Van Winkle’s Family Reserve 23 Year is part of the Old Rip Van Winkle line, a brand that commands high regard among investors and consumers; prices frequently reach $1,000 or more per bottle. Other premium brands include Angel’s Envy, at $1,000 a bottle, and William Larue Weller, at $5,000. The Universal Whisky Experience is an annual gathering of whisky collectors who meet each March in Las Vegas. The event was conceived by Mahesh Patel, who says, “I own one of the largest private whisky collections and set up this event because no one did an event I wanted to attend. We have 350 people who now attend, including high rollers and connoisseurs.” Among the activities on offer is the Universal Whisky Experience, a tasting that allows participants to sample some of the world’s most unique and interesting whiskies.

Each pour is valued at $300 or more, with the average bottle costing above $2,000. High rollers may enjoy pours from bottles costing more than $20,000. The largest collection in the world contains 3,384 bottles and was created by Claive Vidiz of Brazil. One of his first purchases was the Dimple Pinch, for which he paid $1,000 in 1969. Some bottles, such as the centenary

Strathmill single malt, of which only 100 bottles were produced, are priceless. No Strathmills were sold but, instead, were presented to members of the staff and some fortunate guests, including Vidiz. The Scotch Whisky Experience says it is impossible to put a price on the Vidiz collection, due to the rarity of the bottles. Now owned by Diageo PLC, the liquor giant that owns Guinness, Johnnie Walker and Ketel One, the Vidiz collection is on display at the Scotch Whisky Experience in Edinburgh. Some connoisseurs debate whether the spelling of the savory spirit should be “whisky” or “whiskey.” In Scotland and Japan, it is “whisky,” while most other countries use “whiskey.” But regardless the spelling, the clear gold favorite is fast becoming a major investment asset. Yet the pleasure of the drink should not be forgotten, as longtime connoisseur and investor Patel notes. “My advice is always to buy two of everything—one to collect and the other to drink.”

With more than 30 years of cooking experience under his toque, Holben considers his greatest career accomplishment inclusion in Food and Wine magazine’s list of Best New Chefs in America in 1990. Through the years, Holben has garnered a number of accolades, including selection by Esquire as a “Chef to Watch For,” inclusion on the cover of D Magazine and opportunities to cook for two former U.S. presidents. Although Holben is a worldclass chef, he doesn’t let the status

Holloman is busy, and his dedication to the kitchen has ensured his continued success in the industry, but he spends days off enjoying soccer, disc golf and the finer things in life, including his loved ones. “I spend my free time with my family,” Holloman said. “I enjoy eating out across the city, too. There is so much good food in Dallas right now.”

can share with your culinary team.” A Dallas native, Holloman graduated from Le Cordon Bleu in Austin, then moved to New Mexico, where his first job was in the kitchen of a 5-Star Hyatt resort in Albuquerque. In interim years, he has worked at a variety of other establishments, from fast casual dining to the fine dining, before landing at Del Frisco’s Grille. Holloman says the grille provides him with the best of both worlds, since the casual menu includes the opportunity for him to kick it up a notch when an order for a steak or seafood entrée is placed. He said he feels the diversity of the grille makes it extra-appealing. “The fresh ingredients we use everyday create food that is great, and we have something for everyone and every dining occasion,” Holloman said. “You can come in for a great prime cheeseburger and a DFG Pale Ale or join us for a special night out and enjoy a prime steak or fresh seafood feature and a bottle of wine.” The grille’s unique food isn’t the only thing that makes it appealing, as the ambiance contributes to the experience. Separating the dining room from one patio is an edgy, sexy bar, the perfect place to sip and be seen and a prime vantage point for people-watching. Two patios at the grille provide the perfect place for diners to enjoy nice weather. The grille also serves as a brunch destination, with spectacular offerings that include Red Velvet Waffles and Crab Cake Benedict. Although the Del Frisco’s Grille menu is extensive, Holloman still exercises creative freedom with

Twenty years ago, he founded the Dallas chapter of the Texas Neurofibromatosis Foundation; today, he continues to spearhead Dining Out in Dallas, an annual charity dinner that has raised $1.6 million, to date, for the organization. In addition, Holben volunteers his time and culinary skills for a number of other charity causes. With lofty goals still ahead, Holben maintains balance in his life and stays actively involved in the lives of his family members. When he isn’t working at Del Frisco’s, he says he loves spending downtime with his three children. “To see them happy is my greatest pleasure. What else can a parent ask for?” he says.

John F. Kennedy Memorial Plaza This tribute to an extraordinary man was dedicated in 1970, and in the years since, it has become an integral part of the city’s urban landscape and cultural heritage. Pioneer Plaza In 1995, the Texas Trees Foundation dedicated Pioneer Plaza to the City of Dallas providing a focal point with historical significance for downtown Dallas.
