Cheese & cooking We are guided by a vision, a focus, a premise at Damafro: for us, cheese is not just something you eat; we see it as the catalyst for creating warm, simple and delightful moments. Though we feel cheese can have a meaning, a history or even reflect a local land, soil, or culture, we do keep in mind that for many, cheese is simply a choice “ingredient” used to add richness, flavour, texture, and a personal touch to recipes, everyday meals, and moments of friendship and togetherness.
This view we have of cheese has brought us to develop Brie Snack, for example. This straightforward, honest, smooth, melting Brie was crafted without compromising the essence of this famous cheese, but we shaped so it can be cut without fail into perfect slices for your sandwiches, appetizers and dishes.
Brie Snack We do not intend to write here a textbook article on the uses and benefits of cheese in cooking, but allow us to go over some of the broad outlines about the subject.
Fresh cheeses: This is without doubt the
family of cheeses we are most comfortable in classifying as an “ingredient”, given it is such common practice to only eat Ricotta or Mascarpone, for instance, when included in sweet or savoury fillings, sauces and puddings.
Firm cheeses: This is another cooking classic – firm cheeses are used to liven up a pizza or a pasta or vegetable dish. You are no doubt familiar with the grated cheeses from Switzerland, a marvellous ingredient that imparts texture and fullness to any dish. But you will make delightful discoveries if you explore semi-hard cheeses, such as Raclette. 4 – The Grand Family

Brie and Camembert type cheeses:
Hints of cream and mushroom are the signature flavours of these cheeses. No wonder they are such a natural when cooking creams sauces and mushroom-based dishes.
Washed rind cheeses: Whether soft or firm, washed rind cheeses are never bland. Your dishes will gain all that makes these cheeses unique and exciting: character, body, and a tantalizing saltiness. They are the perfect complement to your au gratin or comfort food dishes. And here are some delicious pairings to explore: washed rind cheeses with lightly spiced cured meats, such as chorizo, or with grilled sweet red, yellow or orange bell peppers.
Goat cheeses: These lively tasting cheeses
with their meat-like aromas are always a smart choice when you want to add your own special touch to simple dishes such as pizza, pasta or salads.
There is for instance a Goat Milk Raclette that will give you a great alternative and a new twist to this all-time winter favourite. You will find your Raclette to be less chewy, with a more melt-in-the-mouth texture; and you will be pleasantly surprized by the mouth-filling yet delicate and typical flavour.

Yogurts: Nothing beats yogurts when you want to whip up quick, flavourful and fresh verrine type (in a glass) deserts that will thrill your guests. We gave a few pointers on how to make them on page 5 of our Summer 2013, vol. 26 issue.

NATURALLY FLAVOURED DAMAFRO YOGURTS Our 100% milk yogurt family of products is growing once more. We now have two new naturally flavoured fruit yogurts: Natural Strawberry flavour and Natural Lime flavour. INGREDIENTS
1-625 g container of Damafro chocolate yogurt 2 cups frozen berries 2 tbsp. maple syrup 6 fresh mint leaves, minced 8 champagne or lady finger, split in half lengthwise CHO-FEE DIP
½ cup strong coffee 2 tbsp. milk or cream 1 cup semi-sweet chocolate chips 2 tbsp. maple syrup
PREPARATION
1| In a bowl, mix together the berries, maple syrup, fresh mint, and Damafro chocolate yogurt. Set aside. 2| In a microwave safe bowl, melt all cho-fee dip ingredients in the microwave, and mix thoroughly until smooth. 3| Dip the cookies in the chocolate and coffee sauce. 4| Arrange an equal number of cookies in 4 dessert cups and spoon the Damafro chocolate yogurt mixture in the cups. Garlic & Fine herbs Le Crémeux: the ultimate dip for dipable bites LE CRÉMEUX – GARLIC & FINE HERBS Damafro is introducing a totally new recipe and look for this wonderfully smooth and creamy soft cheese. Its rich buttery flavour will perfectly complement all your sandwich and cooking ideas. THIS FRESH, CREAMY, LIGHT CHEESE IS THE PERFECT DIP MAKER OR DIP IMPROVER FOR YOUR RAW VEGGIES AND PARTY PLATTERS, BUT IT ALSO GOES GREAT WITH YOUR SANDWICHES, HOTDOGS, BURGERS, CORN CHIPS, AND ANY OTHER OF YOUR FAVOURITE DIPABLE BITES.
I used it to give a different kick to mashed potatoes: I whipped in some onion and a container of this little Garlic and Fine herbs delight. It’s to die for! But I wanted to push the envelope a little further. This is a surprisingly versatile cheese. The challenge was to come up with a quick and fun recipe without altering its character or nature. Here is what I did. In a non-stick skillet over medium-high heat, I sautéed ½ chopped onion in a tablespoon of butter until lightly golden, then added a tablespoon of maple syrup and continued cooking about a minute extra until slightly thickened. I heated up the Le Crémeux in its container, about 30 seconds in the microwave at high. I stirred in the onion-maple mixture. To finish, I put the warm cheese in the middle of a serving platter, and surrounded it with raw veggies, cooked shrimp, chicken nuggets, corn chips, sausage bites, and mini-quiches. Damafro Lime Yogurt Parfait
Servings: 4 Preparation time: 5 minutes Cooking time: 20 minutes Degree of difficulty: easy
NATURALLY FLAVOURED DAMAFRO YOGURTS Our 100% milk yogurt family of products is growing once more. We now have two new naturally flavoured fruit yogurts: Natural Strawberry flavour and Natural Lime flavour.
INGREDIENTS
1-625 g container of Damafro Lime Yogurt Zest from one lime; then cut fruit into thin slices to decorate ORANGE-FLAVOURED GRAHAM CRUMBLE
2 ½ cups Graham crumbs ½ cup brown sugar 2/3 cup melted butter 3 tbsp. orange marmalade
PREPARATION
1| Mix together all ingredients for the Graham crumble. Spread on a greased cookie sheet. Bake 20 minutes in a 375° F (190° F) preheated oven. Let cool to room temperature. 2| In 4 dessert cups or parfait glasses, put a layer of Damafro Lime Yogurt, top with a layer of orange-flavoured Graham crumble, and repeat until evenly divided up, finishing with a top layer of yogurt. Decorate each cup with some zest and a slice of lime. Refrigerate until ready to serve. Bon appétit! And best regards from a fellow gourmet. Nicolas

Everyone appreciates the wonderful fresh taste of our famous Chèvre des Alpes. So we captured it in this recipe for a cheese spread that reveals all its nuances in a light and delicately whipped texture.

Creamy Bacon and Maple flavoured Chèvre des Alpes and Crémeux Sauce
Servings: 4 Preparation time: 10 minutes Cooking time: 15 minutes Degree of difficulty: easy
CHÈVRE DES ALPES SPREAD Everyone appreciates the wonderful fresh taste of our famous Chèvre des Alpes. So we captured it in this recipe for a cheese spread that reveals all its nuances in a light and delicately whipped texture.
INGREDIENTS
1-150 g container of Chèvre des Alpes Spread 1-150 g container of Le Crémeux creamy soft cheese ¼ cup of 5 % coffee cream ADD-ONS
½ cup crispy bacon ½ red onion, finely diced 1 tbsp. butter 1 tbsp. maple syrup
PREPARATION
1| Heat the cheeses through by thrm putting 20 seconds in the microwave set at high. 2| In a non-stick skillet over medium heat, melt butter, add onion, and cook a few minutes until lightly golden. Add crispy bacon and maple syrup. Cook a further few minutes until slightly caramelized, add cream and let thicken. In a bowl, mix in with the hot Chèvre des Alpes and Le Crémeux. 3| This cheese mix makes a fantastic pasta sauce, and is just as delicious with poultry or other white meats or to give a little oomph to mashed potatoes. NOTE FROM NICOLAS
