Epicure’s Great Canadian Burger Prep time: 15 minutes Cook time: 10 minutes Makes: 6 servings Epicure’s salute to great flavours from the Canadian heartland. 1 ½ lbs (675 g) lean ground beef ¼ cup (60 ml) rolled oats ¼ cup (60 ml) prepared Epicure’s Steak Sauce (find recipe online) 2 Tbsp (30 ml) Epicure’s Sweet & Spicy Mustard 1 Tbsp (15 ml) Epicure’s Seasoning for Burgers 1. Combine all ingredients, and mix well.

Canadians like to celebrate our sweet, yet fleeting, summer with one of our favourite pastimes: the backyard barbecue. Enjoy a sunny weekend get-together with Epicure’s Great Canadian Burger and a glass of lemonade with a Mexican twist. And no barbecue is complete without dessert! Finish it off with Epicure’s Frozen Citrus Berry Cloud Pie – a refreshing, no-bake dessert that’s a great alternative to turning on the oven on those hot summer days. Enjoy!

2. With water-moistened hands, form mixture into 6 patties, each about 1” (2.5 cm) thick, or prepare burgers using Epicure’s Burger Press. 3. Place patties on a barbecue grill over medium-high heat. Close lid, and cook for 5 minutes.

4. Flip patties and top with prepared barbecue or grilling sauce. Continue to cook for an additional 5 minutes, or until Epicure’s Pocket Thermometer indicates a Food Safe internal temperature of 160° F (71° C).

1 cup (250 ml) light mayonnaise

1. Stir all ingredients together.

Make it Canadian: Top burgers with slices of Canadian bacon (or back bacon) and grilled onion rings.

1 — 12 oz (340 ml) can frozen lemonade concentrate 1 — 34 oz (1 L) bottle club soda 2 lemons, thinly sliced 4 cups (1 L) ice cubes 1. Combine all ingredients in a large pitcher. 2. Stir and serve. Epicure’s Frozen Citrus Berry Cloud Pie Prep time: 15 minutes Makes: 12 servings Light and airy as a cloud, this no-cook pie (almost a cheesecake, but not as dense) is a surefire crowd-pleaser. Make a day ahead of serving. 2 cups (500 ml) chocolate wafer crumbs /3 cup (80 ml) butter, melted

1 pkg Epicure’s What’s for Dessert? Citrus Berry Cheesecake Mix 1 cup (250 ml) whipping cream 2 tsp (10 ml) Epicure’s Vanilla Extract 1. Place crumbs in a bowl and stir in butter. Turn into a pie dish. Press onto bottom and up sides. 2. Using an electric mixer, beat cream cheese until smooth. Then beat in What’s for Dessert? Citrus Berry Cheesecake Mix. 3. In a separate bowl, beat whipping cream with Vanilla Extract until soft peaks form. 4. Using Epicure’s Silicone Spatula, gently combine 1/3 whipped cream mixture into cream cheese mixture. Gently fold in remaining whipped cream just until mixed. Do not over-mix or you will lose the volume. 5. Spoon into dish. Cover with plastic, and freeze overnight. Let stand at room temperature for 15 minutes before serving.
