From the Ranch There I was ministering, in front of a crowd of an estimated 80,000 people in the city of Srikakulam in Andhra Pradesh, India. I was given this amazing opportunity to share my testimony of health and healing by my good friend and international evangelist Dr. Pete Sulack (see pg 64). While this moment was certainly a highlight of my amazing trip, I can’t help but believe that the 10 days spent in India will affect the rest of my life in ways I’ll never truly understand. It was a bit surprising that spending 10 days overseas visiting children’s homes, ministering to people living in the most impoverished conditions I had ever seen, and spending time in prayer and fellowship with an amazing team of 12 passionate servants of Jesus, that the Lord would confirm the amazing mission I have been given in leading Beyond Organic. Even more surprising is the revelation of several powerful health tools yet to be released to America that I believe will do nothing less than positively and potently impact the health of our nation. BIG Seed’s Stranglehold On American Agrigulture
Monsanto is among the Big Six major seed companies displaying seedy behavior, resulting in agricultural takeover, unsustainability and non-renewability of agriculture, and contributing to ill health and food insecurity. Meet the Big Six and see with your own eyes how much ground they’ve taken over during the last several years. The last 40 years have changed the course of agriculture. In that time, the seed industry has gone from a competitive agri-business involving primarily small, family-owned farms to an industry dominated by only a few pharmaceutical/chemical corporations, namely: Monsanto, DuPont, Syngenta, Bayer, Dow and BASF—also known as the Big Six. Even more dramatic changes have occurred since the commercialization of transgenic, or genetically modified (GM), seeds from the mid-1990s on. Since that time, GM seed sales have been dominated globally by Monsanto, DuPont and Syngenta—the three largest biotech companies that continue to take over seed supply. In addition to the stranglehold these companies have on American and worldwide agriculture, they are increasingly taking over market share so that they have no competition and can do as they choose. Truth be told, there have been hundreds of transactions—of glibly, yet strategically, buying and selling of seed companies—so that the Big Six have the market cornered. Economists say that when four firms control 40 percent of a market, then that market is no longer competitive. Estimates indicate that the top four seed firms now control at least 56 percent of the global proprietary seed market—and they continue to take over more territory—consolidating their control of markets and reducing the competition.

The Big Six at a Glance As the world’s largest seed company, Monsanto has gained its #1 ranking by research and development and acquisitions of biotech companies and seed companies, including gaining 50 seed companies during a 13-year period. They have strategic alliances with all of the five other “Big Six,” including a $50 million joint venture with Cargill in 1999.
DuPont has alliances with Monsanto, Syngenta and others and gains access to seed varieties it currently doesn’t own by entering into customized agreements with some of the largest remaining independent seed companies. Syngenta has a 50/50 joint venture with DuPont called GreenLeaf Genetics to sell foundation seed to other seed companies. Syngenta once owned Wilson Seeds, which is now owned by Monsanto’s ASI holding company. In 2003, Syngenta extended its strategy of bundling transgenic seeds and proprietary chemicals to its non-transgenic seeds.

Cross-Licensing: The Big Six’s Unholy Alliance The figure below shows crosslicensing agreements between the Big Six—described as “nonmerger mergers” because they do not involve changes of ownership, although they do resemble cartel behavior. Monsanto has a central position in this unholy alliance, since it’s the only firm to have agreements to each of the other five firms, even though all the firms have one or more connections to the other. One estimate suggests that more than 80 percent of the land planted with major field crops in the U.S. contained transgenic traits owned or licensed by Monsanto.
Bayer has recently become more active in acquiring cottonseed companies, although it purchased Stoneville from Monsanto for $310 million in 2007. Dow has become more aggressive in making acquisitions and developing joint ventures. Dow spokesperson, Ted McKinney, said in 2007: “In our view, you do not have to fully own each segment of the value chain as long as you have access to it. We lead with the idea of partnering, alliances and joint ventures.” Its plans include a shift from 95 percent chemicals and 5 percent transgenic seeds in 2004 to 50/50 by 2015. BASF holds patents on many transgenic seed traits having to do with climate change and has an agreement with Monsanto to spend up to $1.5 billion on engineering stresstolerant corn, soybeans, cotton and canola, for which the two companies currently control almost half the patents.
It appears so. Monsanto executive Robert Fraley, quoted in Farm Journal, says: “What you’re seeing is not just a consolidation of seed companies; it’s really a consolidation of the entire food chain.” Monsanto has been aggressively pushing genetically modified (GM) foods into mainstream America, and biotech companies such as Monsanto sell GM seeds and their GM-seed-tailored herbicides as package deals to farmers. The catch is that the seeds don’t regenerate from year to year, causing farmers’ continual dependency on GM seed and its corresponding, customized chemicals, since by design, the GM seeds require much more herbicide to grow those GM crops. Since the seeds don’t regenerate, the farmer must buy more GM seeds, which require more herbicides to feed these poison-drinking seeds. GMO produce has serious health threats, provides less nutrition and is more vulnerable to climate change, pests and disease. In short, GM foods are a perfect storm for food insecurity and ill health. Don’t put up with Monsanto’s—and the other five of the Big Six—seedy behavior. They are taking over our seed and food supply. Choose organic and stop their seedy, destructive behavior.

to GMOs
Genetic modification of foods takes genes from a completely different species and places them into the DNA of a plant or animal. That alone is a reason to avoid them, but research says that GM foods lead to organ disruptions in animals—and humans may not be exempt. The American Academy of Environmental Medicine (AAEM) has publicly condemned genetically modified organisms (GMOs) in our food supply, saying they pose “a serious health risk.” AAEM has also called on the U.S. government to implement an immediate moratorium on all GM foods and has urged physicians to prescribe non-GMO diets for all patients. The AAEM reveals a long list of disorders associated with GMOs: “Several animal studies indicate infertility, immune dysregulation, accelerated aging, dysregulation of genes associated with cholesterol synthesis, [faulty] insulin regulation, cell signaling, and protein formation, and changes in the liver, kidney, spleen and gastrointestinal system,” they say. GM foods hit close to home, too, and you probably have eaten them because GM corn and soy make up more than 80 percent of all GMOs available and are found in nearly every processed food in the U.S. Additionally, GM food manufacturers don’t have to say on the label that a food contains GMOs. The truth is that if you don’t purchase foods with the organic seal or produce, meat and dairy from farmers using non-GMO seeds, then it’s probably filled with GMOs.

Suero Cleanse Every day, trillion of cells work to keep your body healthy. You should be doing everything you can to keep your cells healthy. If you tried to count to one trillion, it would take you somewhere around 31,000 years. Considering that there are trillions—plural—of cells in your body, it gives credence to just how complex the human body is. Every function the body carries out begins at the cellular level. Trillions of chemical reactions take place every second in the body, a bonanza of cellular activity. It follows that, as the health of your cells goes, so goes your overall health. Rarely do we think of health in such microscopic terms. Out of sight, out of mind is the order of the day when considering cellular health. This is especially true where cleansing is concerned.
Toxic Load Periodically cleansing your body is an important health measure to undertake. In 2009, the Centers for Disease Control (CDC) published its Fourth National Report on Human Exposure to Environmental Chemicals. The voluminous 529page document listed the serum concentrations of 500 different environmental chemicals—chemicals that are man-made and have found their way into our bodies. Five years in the making, the CDC’s report is shocking and alarming—and it doesn’t even come remotely close to uncovering the real issue.
On the surface, the report is useful. The fact that it tracks the increase in various chemical levels in our bodies is incredibly relevant. The problem with the report is this: As stated early on, the chemicals tested were “selected on the basis of scientific data that suggested exposure in the U.S. population.” In simple terms, the CDC tested what they were already looking for—the presence of 500 environmental chemicals and toxins that were already known to be present in our bodies. According to the ToxicFree Foundation, there are over 80,000 chemicals registered in the United States, with thousands more added each year. While the CDC report concentrates on 500 of those, the report ignores the roughly 79,500+ other chemicals that we are exposed to in the United States alone. Another way of putting it is that the chemicals tested for in the report represent less than 1 percent of the chemicals we’re exposed to in the United States.
A River Runs Through You The cells in your body are constantly bathed in fluid, a river that runs through your body. Healthy cells are constantly pulling fluid—and nutrients—in while expelling fluid—and waste—out. In light of the overload of toxins that your body faces, it becomes easy to see why cellular cleansing is so important. If the river that runs through you is loaded with toxins, then your cells are fighting an uphill battle. A closer look at the process of cellular fluid exchange reveals another issue that shouldn’t be surprising—our diets aren’t helping much. The process of fluid exchange is, in part, regulated by both sodium and potassium. Sodium is responsible for bringing healthy fluid into the cells and potassium is responsible for escorting waste—and toxins—from the cells. The problem with most diets is that they contain far too much sodium and far too little potassium.
The bottom line is that man-made chemicals are present in your body, and cleansing is an important step in minimizing your body’s toxic load. The important question is,
“How should you cleanse?”
Macro vs. Micro It is easy to think about cleansing on a macro level. Considering the sheer number of chemicals we are exposed to, it makes sense. Most cleanse programs focus on the bulk removal of toxins. This is vitally important, but it’s not the sum total of cleansing. Most cleanse regimens tend to ignore the micro level of cleansing—cleansing at the cellular level.

The Terrain While I appreciate the science behind the terrain theory—and we’ll get to that in a bit—the reason I truly love the terrain message is more personal. I embrace the terrain theory because it puts us in control. This is why I titled my first book, Patient, Heal Thyself. Bechamp’s theory basically says that germs are opportunistic. They seek out weakened tissue and invade it. Therefore, in order to combat poor health, it is of the utmost importance to support a healthy bodily environment—what came to be called a healthy terrain. A great example of the difference between a healthy and unhealthy terrain is the story of 10 individuals dining at the same restaurant and consuming the same food. If each was served raw sushi that was loaded with germs, and within three hours, five of the 10 develop symptoms of food poisoning, what kept the other five from experiencing the same symptoms? The answer? The health of their terrain—the inner environment of the body’s cells and tissue. The word “terrain” fits perfectly. It creates a potent image of the vast network of tissue and cells that weave throughout the body as terrain on which health either grows or dies. You can almost visualize it. The idea that I can take steps to make that terrain as healthy as possible—and in doing so, can avoid falling prey to ill health—has great appeal to me. The crazy part is that as much as Pasteur’s work has been validated through science, so has Bechamp’s! Weston A. Price, a Harvard-trained

While there are reams of scientific data to support the terrain theory, it may be more useful to apply common sense. In a nutshell, the terrain theory says that overall health is dictated by the health of your cells and the tissue they make up. As long as that terrain is healthy, then you are more likely to experience overall health. The thing is, this is totally accepted. Every medical professional in the world will tell you that eating and living healthy are the keys to being well. Yes, germs can lead to disease— in individuals who already have

While this is certainly true, I don’t believe it’s quite that simple. The reality is that, at the time, the germ theory offered people hope. In the mid-19th century, coming just off the Industrial Revolution and the urbanization of developed countries, disease was commonplace, especially in the densely populated cities. There was certainly a feeling of lack of control. Squalid living conditions, combined with a diet increasingly reliant upon processed foods, exacerbated the terrain issue. For many of the people whose families were struck down by disease, they had little hope of improving their terrain. The germ theory offered hope, and rightfully so. Slowly but surely, though, the hope offered by the germ theory morphed into an utter reliance on it. The idea that you could treat your body and your health with disinterest—that you could essentially ignore your terrain— is born of the germ theory. Fast forward a 150 years, and the results are clear. We are as unhealthy as we’ve ever been. The diseases of modern society are somewhat held at bay with pharmaceuticals. However, Americans live sicker and die younger than people of other high-income countries, according to a new study released by the National Research Council and Institute of Medicine.

Why do we value gold? You don’t eat it. It doesn’t sustain life. It is simply a metal that is relatively rare. Sure, it’s shiny and pretty, but that shouldn’t be enough to give it value. However, judging by the fact that gold prices have skyrocketed over the last several years, it is clear we value it greatly. While gold does have legitimately useful qualities—because it is highly conductive and non-corrosive, it makes for good wiring in electronics—gold is clearly “overvalued.” It says a lot about us that we should value that which directly sustains our life. We should value that which directly sustains our lives. directly. Gold doesn’t really qualify, but there is something known as “liquid gold” that does.
LIQUID GOLD Hippocrates, the Father of Medicine, recommended it to his patients. Galen (131 – 299 A.D.), one of the most accomplished physicians in history, directed a treatment center dedicated to it. From Europe down to Africa, from Asia across to the Americas, whey—known as liquid gold—has been prized for over 8,000 years. Again, our ancestors clearly recognized the health benefits of whey. Throughout history (see sidebar entitled A Brief History of Whey), whey has been prized—it has had value. Today, whey is still valued—but for all the wrong reasons.

FOOL’S GOLD It is likely that you’ve heard of whey, but not as a co-product of cheese production. Instead, you’re familiarity with whey likely comes from the massive amount of it sold, in powder form, as a protein supplement. In an interesting twist, the market for whey protein powder wasn’t created because of consumer demand—it was created because of too much whey. As commercial cheese production ramped up at the turn of the 20th century, whey became a “liability” to cheese producers. They produced a lot of whey, and most of it went down the drain. Some savvy farmers diluted it and sprayed it back on their pastures, but for the most part, the whey was wasted. It wasn’t until the 1940s that enterprising entrepreneurs began to find another use for whey. In and of itself, liquid whey does not contain a large amount of protein. However, if you could dry it and extract the protein, then you might have a marketable product. The rest is history. The whey protein powder market has exploded—you can find it in warehouse clubs, supermarkets, drug stores and every supplement retailer in America.
But is it the best use of whey?

Beef and Cheddar Sausage Omelet Ingredients
Vanilla Ice Cream (Amasai) Pie
• 2 ounces GreenFed Cheddar and Beef Sausage • ¼ cup red onion, diced • ¼ cup red bell pepper, diced • ¼ cup Shitake mushrooms, diced • 3 eggs from pasture-raised chickens • ½ ounce GreenFed Really Raw Cheddar Cheese, grated
Ingredients for Va n i l la I c e C r e a m (A m a sa i ) • 24 ounces Milk and Honey Amasai • 3 egg yolks, raw • 1½ teaspoon organic vanilla extract • pinch of sea salt
Ingredients for Crust • 2 cups pecans or walnuts • 1 cup pitted dates, soaked in water for 5 minutes and drained • ¼ cup ground flaxseeds • ½ teaspoon sea salt • ½ ounce pure vanilla extract
Di r e c t i o n s To prepare the crust, place pecans in a food processor and process or pulse until finely chopped. Add the dates, flaxseeds, salt, and vanilla and process until mixture forms a ball. Turn out into an 8-inch springform pan and press the mixture into a crust. Chill for about an hour until the crust sets. While the crust sets, prepare the ice cream recipe. To prepare the ice cream, combine all ingredients in a blender and blend until incorporated. When the crust has set, pour the ice cream mixture over the crust and place in the freezer for 2-3 hours or until completely frozen. Di r e c t i o n s Heat a small omelet pan over medium-high heat. Add the Beef and Cheddar Sausage and cook through. Remove the sausage from pan but reserve the fat in the pan. Add the onion, pepper and mushrooms and saute for five minutes. Remove and mix with the sausage. Add the eggs to the pan and tilt to make sure the eggs evenly over the bottom. Cook until the bottom has set and flip over the omelet. Add the sausage/veggie mixture and the grated cheese, fold over and slide onto a plate.

It’s hard to naturally raise healthy cattle. This, more than anything, defines today’s reputation of beef and dairy. The chorus of vegans, government pundits, and misinformed health enthusiasts have redefined how the public views beef and dairy. The most disappointing thing is that, in part, they are right. Truthfully, most beef and dairy is unhealthy. Hopefully, that paradigm is slowly changing, thanks to ranchers around the country who are refusing to produce unhealthy beef and dairy. Call it Cow 2.0.
Myth Busting the Cow As with many myths, misconception is based partly in truth. Where beef and dairy are concerned, there are several myths that need to be taken down.
Myth #1: Eating Beef and Dairy is unhealthy. The Half-Truth—Conventionally raised beef and dairy is unhealthy. Simply put, cows were meant to eat grass. They were never meant to eat GMO corn, and they were certainly not designed by God to be pumped full of antibiotics and growth hormones. Eating beef and dairy from cows raised this way is unhealthy. The product is more toxic, has higher fat content, lower levels of key nutrients and an unhealthy balance of omega-6 fatty acids to omega-3 fatty acids. The Full Truth—Beef and dairy from grassfed cattle that have been holistically cared for, without antibiotics

As noted, most, if not all, of the reasons are due to the unhealthy nature of conventionally raised cattle. Debunking a long-held myth is hard; debunking several of them is almost impossible. There are, however, a group of people who are trying to do just that. Dotted across the country are women and men who call to mind the rugged spirit and entrepreneurial mindset of days gone by. They work impossibly long hours, fighting an uphill battle and an avalanche of misinformed public opinion, because they truly believe in what they are doing. They are the true green movement, the grassfed ranchers of the world. Being a grassfed rancher is an undeniable commitment. Raising cattle in a conventional way is all about speed and efficiency—contrary to nature. Grassfed farmers commit to a patient approach. It yields far less beef and dairy per cow, is far more intensive, and, frankly, is less profitable from a business standpoint. But, it is healthier in every sense of the word—for you, for the cows and for the planet. So, what was your first experience with home-based business?
Korey Johnson: My first experience was going to what I thought was a job interview, but I wasn’t sure what I’d find. I went anyway and wound up watching a presentation about clean water and clean air. That’s not what I’d signed up for, so I had an exit plan—I excused myself to “go to the restroom” so that I could leave. Before I left the room, however, someone showed me a copy of a check showing what that person had made in a month, and it was more than I was currently making in a year and a half. As a father with a growing family, that caught my attention, so I stayed to hear more. I thought to myself, “If these guys can do it, then I know for a fact that I can do it!” So, that’s what brought us to the homebased industry—it was the potential for income as well as the freedom that the industry provided. As an electrician, I worked hard and didn’t mind hard work, but I had to explore this opportunity.

What are some of the most important principles and practices you’ve used to build and grow your team?
Korey Johnson: Treat the business like a business because if you treat it like a hobby, then you’ll get hobby results. Likewise, be available. Everyone is important, so answer the phone or the e-mails when a team member reaches out to you. You need to work the process every day, too. It takes enormous effort to prospect, recruit, present and finalize the enrollment of new people in your company. I use a funnel illustration to depict this: the amount of effort needed to achieve the desired results is the top of the funnel and

Candy as Cattle Feed Feeding cattle corn is bad enough, but candy? Believe it or not, this past summer’s drought has many farmers resorting to candy as cattle feed. It’s making headlines, but it’s nothing new: cows are being given candy as feed. The recent drought may be exacerbating the “candy diet for cows” trend, but it’s been going on for a while—even though cows should be eating their natural diet of grasses and greens. In fact, even the USDA Agricultural Research Service (ARS) highlights the fact that forage from grasses, legumes and other greens help cows meet their nutritional needs. The problem, however, is that what is termed forage, according to the ARS, can leave a lot of potentially unhealthy latitude— including candy and more. Some examples include: candy waste from gummy candies and chocolate; bakery waste such as stale donuts, cakes and breads; soybean meal; beet pulp; cottonseeds; brewers grains; citrus pulp and corn gluten.

Beauty’s Chemical Beasts Consumers use several personal care products a day containing more than 200 different chemicals.
Do you know what beasts lurk in your beauty products? You should because, if you’re like most people, you use 15 to 25 different cosmetic products a day containing more than 200 different chemicals. The term cosmetics includes shampoo, conditioner, body lotion, deodorant, hand soap, sunscreen and much more—a range of products that carry loads of chemicals. In fact, some of the chemicals found in personal care products are also used in heavy manufacturing industries to grease gears, stabilize pesticides and soften plastics. However, of the 10,000+ chemicals used in cosmetics, only 11 percent have been assessed for health and safety by the FDA or other government agency. Even worse, the Environmental Working Group (EWG) says that one-third of all personal care products contain at least one chemical linked to cancer.
Here are a few—but certainly not all—chemicals to look out for and to avoid: • Phthalates, chemicals commonly used in nail polishes and in perfume personal care products, cause birth defects in animals, while U.S. testing indicates that phthalates are retained in human tissue at much higher levels than previously thought. • Parabens are chemicals used in makeup, moisturizers, shampoos, shaving gels and more. They can increase the risk of breast cancer and male reproductive problems. When exposed to sunlight, parabens can help set the stage for skin cancer. • Toxic preservatives—including compounds that release formaldehyde, a probable carcinogen—are used to prolong the shelf lives of many personal care products. One of these, DEA (diethanolamine), can cause eye and skin irritations and, at high doses, can cause liver cancers and precancerous changes in the skin and thyroid.
• Sodium lauryl sulfate (SLS) is a surfactant used extensively in shampoo, soap, toothpaste and many other personal care products. SLS can irritate skin for up to a week, causing free radicals and inflammation, while damaging skin proteins and healthy skin oils. • Propylene glycol (PG) is used in antifreeze, degreasing agents and in over 4,000 skin care products and cosmetics— in a supposedly “safe” form. The EWG, however, cautions consumers that it’s linked to cancer, toxicity and allergies. PG is also associated with skin irritations, including contact dermatitis and urticaria. • Certain coloring agents and dyes in cosmetics are common allergens and irritants, while others contain lead acetate, a heavy metal that’s toxic to the nervous system.
• Triclosan is a popular, nonessential ingredient used in many antibacterial soaps and other personal care items such as deodorants and mouthwashes. A study in the Proceedings of the National Academy of Sciences says that triclosan—at relatively low concentrations—is linked to muscle function impairments in humans. Triclosan reduces contractions in cardiac and skeletal muscles, which can potentially contribute to heart disease and heart failure.

Does Your Skin Look
Thousands of Years Old?
How deeply rooted is our desire for healthy looking skin? If history is an indication, it goes back thousands of years. The cosmetic industry was born several thousand years ago. Skin care has been a concern even before man fashioned mirrors, and, from the beginning, civilizations have been conjuring up creams, lotions and pastes with the thought of improving skin health and enhancing people’s appearance. As you might expect, some of the mixtures were ghastly, while some aren’t that far off from what you might find today. Ancient Egyptians, desiring to add color to their skin— especially around their eyes—would mix copper and lead ore in a concoction known as galena mesdemet. As awful as that mixture sounds, keep in mind that these were the same people who, since they lived in the desert, understood the effects of the hot, dry climate on their skin and prepared skin creams made from plants and natural oils. There are even papyrus scrolls that detail the use of aloe vera as both a skin treatment and beautifier. While Ancient Greek women used to apply white lead to lighten the appearance of their facial skin, they also crushed berries and applied them as rouge. Of course, they also made lipstick out of clay and iron. Japanese geisha used safflower petals as lipstick, but sometimes used bird feces to lighten the color of their skin. Concerned about pimples, Ancient Romans applied a mixture of barley flour and butter to their faces. They also made protective skin creams using beeswax and rosewater; however, there were some skin health preparations that used crocodile dung.

In 1862, Charles Wetherill, a chemist, was appointed by then president Abraham Lincoln to a post in the Department of Agriculture. He soon began investigating the adulteration of agricultural products, and, eventually, his division was formally changed to the Bureau of Chemistry. In 1906, the Bureau of Chemistry was tasked with implementing the Pure Food and Drugs Act. In time, the Bureau of Chemistry would become the Food and Drug Administration—the FDA we know today.

It is interesting that the body that governs skin care products today was founded by a chemist, one who was concerned with the adulteration of consumer products. You can imagine him shuddering at the sheer number of chemicals that are laced throughout modern-day skin care products. Throughout history, we’ve seen examples of skin care products that are natural and others that are toxic. While the days of painting our faces with white lead are long gone, we may not be that much better off. Ironically, about the only person who could make sense of the ingredient label on most skin care products today would be a chemist. The vast majority of the ingredients are hard to recognize and even harder to pronounce. You may casually overlook them and assume that they wouldn’t be there if they were harmful. Unfortunately, that’s not always the case. In yet another ironic twist, the FDA, founded by a chemist and born of something called the Pure Food and Drugs Act, is nearly toothless when it comes to regulating the cosmetics industry. Since there are few longterm health studies done on most of the chemical ingredients in skin care products, their effects are often unknown. Although they may be toxic in the long run, the FDA cannot regulate them away. So, manufacturers can use them at will, while the FDA simply publishes guidelines and asks manufacturers to follow them. How bad is it? Remember the “white lead as face paint” example. While we would never think about painting our faces with white lead to make our skin paler, consider this: in early 2012, multiple reports surfaced that indicated traces of lead were measured in dozens of lipsticks. The FDA declared, “We don’t consider the lead levels we found in the lipsticks to be a safety concern.” After thousands of years, we’re still making some awful decisions. And lest you think that the toxins are limited to makeup, think again. In 2008, 1,4-dioxane, a petroleum-based ingredient that the Environmental Protection Agency has classified as a carcinogen, was tested for and found in hundreds of personal care products such as soaps and shampoos. The FDA has asked that manufacturers remove it from all products, but the law does not require them to do so.
There is an almost endless list of natural products that have been used to promote healthy skin throughout the ages. And while there are some not-so-healthy examples as well—thanks to the crocodile dung—this does provide a counterpoint to the use of toxins in skin care. For as long as we’ve been putting toxins on our skin, we’ve also been using ingredients that are perfectly healthy and wonderful as well. Lost Art, Lost Culture Not that long ago, food was crafted. Before the advent of refrigeration, food was the province of local artisans. They were craftsmen who truly cared about the quality of the food. Who had the juiciest tomatoes? Who had the richest dairy? Who had the tastiest beef? The upshot to all this was not only did food actually taste better—it was healthier. The advent of refrigeration changed all of that. Before refrigeration—and especially prior to refrigerated shipping—food had to be protected. That meant that you could produce only what you could sell locally, or you had to culture your food so that it would last longer. In real terms, before refrigeration, a local food producer could only produce only as much food as the local market could handle. Almost every farm was small, and detailed attention was paid to the food grown there. The quality of the food mattered most. It made no sense to grow as much food as humanly possible, because there probably weren’t enough people to buy it. So, great care was taken to fertilize and rotate crops when produce was being grown. If livestock was raised, ensuring the healthiest living conditions and best forage was paramount. Every input to the land or the animals was considered for what it brought to the table. It was time consuming, and it was an art. Culturing food was another necessary art—and one that was far more prone to artistic expression. Culturing foods was the best way to preserve food before refrigeration came along. While the impetus to culture foods came from a need to preserve, the process also had undeniable benefits. For one, culturing creates healthy nutrients that couldn’t be found in uncultured food. From a purely artistic point of view, culturing adds complexity, flavor and taste. Culturing is truly where the artisan food makers found their canvas. Because culturing is a living, breathing process, it is subject to the whims of the inputs, time and nature. To make great cultured foods and beverages took experience, patience and, most of all, creativity. Refrigeration—along with the population explosion that occurred in large cities—slowly, but surely, eroded the art form of growing and culturing healthy foods. Farms could grow bigger. Food no longer needed to be naturally preserved through culturing. An art form was slowly lost—along with the health benefits those products produced.

Intermittent sprinting produces high levels of chemical compounds called catecholamines, which allow more fat to be burned from under the skin and within the exercising muscles. This causes increased fat oxidation which drives greater weight loss. The women from the study lost most weight off the legs and buttocks. Another study published in the Journal of Applied Physiology, April 2007, researched eight different women in their early 20s. They were told to cycle for 10 sets of four minutes of hard riding, followed by two minutes of rest. After two weeks, the amount of fat burned increased by 36 percent, and their cardiovascular fitness improved by 13 percent. This suggests that doing short-duration, high-intensity training sessions may be just as effective, if not more effective, as long-duration, less-intense exercise. As I did so, my back “popped,” leaving me in excruciating pain— pain so intense that I couldn’t even stand up. For a week, I couldn’t do anything. A family friend convinced me to visit his doctor—a chiropractor—who did an exam, took some films and then “adjusted” my spine—which helped immensely. Snack Attack Are your snacks and other foods “living” or from the “dead zone”— attacking your health with their lifesapping ingredients? You must eat to live, but if your snacks and foods aren’t life-giving, then they’re probably life-taking, especially if they’re packed with empty calories and made with typical ingredients such as unhealthy sugars, fats, processed grains and more. In fact, most Americans have a serious problem with what they’re eating—starting at a young age. For example, most kids don’t know what foods give life or take it away, including the 70 percent of polled six-to-eight-year-olds who think fast foods are more nutritious than healthy, home-cooked foods. Maybe that’s why high-calorie, low-nutrient foods and snacks contribute more than one-third of kids’ daily calories. Even back in 1997, kids aged 7 to 12 spent $2.3 billion—while teens spent $58 billion—on unhealthy snacks and beverages. They have a lot to choose from, too, because there are over 320,000 processed foods, snacks and beverages on the market—“killer foods” that are harming their health. Unfortunately, due to their diet, kids now have serious health problems, including heart, liver, blood pressure, blood fat unhealth and other weightrelated health risks. High blood pressure in children has doubled in the last 10 years, and one in eight kids has two or more heart disease risk factors, while 66 |
more than one-third of kids and teens is overweight or obese. Shockingly, The American Academy of Pediatrics now requires pediatricians to monitor calcium and blood pressure at age two and complete a lipid profile between the ages of two and eight. It’s obvious that what’s in these foods is harmful, but what these killer foods don’t have in them makes them unhealthy, too, including no notable nutritional value as far as healthy proteins, carbs or fats, and the lack of vitamins, minerals, enzymes and other important nutrients. Speaking of enzymes . . . processed foods and snacks have few or no enzymes, but without enzymes, the body suffers. In short, your life, health and vitality rely on adequate amounts of enzymes in the diet, but conventional foods can’t supply the enzymes you need. Some foods do provide the nutrients and life-giving enzymes you need, however, including enzyme-activated foods whose nutrition is “unlocked,” resulting in increased levels of vitamin C; carotenoids; B vitamins, including B2, B5 and B6; and other important vitamins, minerals and nutrients. Enzyme-packed foods are also easier to digest, while neutralizing phytic acid, a substance which inhibits the absorption of calcium, magnesium, iron and zinc—all important minerals for health. That’s significant because vitamin C is a powerful antioxidant that supports a healthy
immune system and cardiovascular health as well as protection from toxins. Carotenoids are antioxidants that support heart, cellular and immune health. Vitamin B2 is essential for metabolic processes, normal cell growth and function, and energy production. Vitamin B6 is required for protein metabolism, red blood cell metabolism and for proper nervous and immune systems function. Likewise, calcium assists in activation of enzymes, hormone secretion, healthy blood clotting and nerve impulses, while magnesium helps with energy release, essential metabolic reactions and muscle relaxation. Iron is essential for energy levels and for healthy blood, while zinc is needed for mental development, blood stability, wound healing and more. Examples of enzyme-activated foods to enjoy for their protein, healthy fats, enzymes and other nutrients include almonds, cashews, pecans, walnuts, flaxseeds, sunflower seeds, chia seeds, sesame seeds and pumpkin seeds—among others—which, fortunately, can also be the basis for other healthy snacks, including crackers, cookies and even cereal. Likewise, the enzymes and probiotics in fermented foods and beverages promote healthy digestion, immune function, emotional health and healthy skin as well as providing a rich source of many vitamins, including vitamin C. Don’t let yourself or others fall victim to killer foods from the “dead zone.” Reach for life-giving, “living” foods instead.
Sickening Sweet While we’re at it, don’t forget that the average American consumes excessive amounts of sugar annually through his or her diet—and many sodas, energy drinks, and coffees add to the sugar overload. There’s no way to sugarcoat the unhealthy sugary mess we’ve gotten ourselves into, either. In the year 1700, the average person consumed 7 1/2 pounds of sugar, but today a typical American consumes an astonishing 150 to 170 pounds of sugar each year—and about half of that comes from high fructose corn syrup (HFCS). Simply put, sugar overload is toxic and carries devastating health effects. It can mess up the body, including weight; cellular, immune, cardiovascular, gastrointestinal, mental, emotional, neurological and metabolic health; mouth and teeth; bones; veins; and blood sugar and blood pressure health. Additionally, the skin and internal organs, such as the heart, liver and kidneys, are adversely affected. Even the American Heart Association says that our hearts can’t take this sugar overload, so they’ve advised everyone to cut their sugar intake by 70 percent. We don’t have immune capacity for this much sugar, either. Ingesting 100 grams of sugar (about 8 tablespoons)

Sugar’s everywhere, too—including soda, which has up to 17 teaspoons of sugar (mostly HFCS) per can, and provides more added sugar to a 2-year-old’s diet than cookies, candies and ice cream combined. Likewise, an average teenage boy drinks at least three cans of soda each day, while the average American drinks an estimated 56 gallons of soft drinks, including sodas, each year.  Instead of these sugary beverages, go with delicious, healthy alternatives—sodas, teas and coffees with goodfor-you, nutritious ingredients—and get rid of those sickening sweet beverages that harm your health.

Who Owns Organic The Organic Movement started as an attempt to “know your farmer and know your food.” At its inception, the term organic usually referred to the food coming from small, family farms that were only available locally.
As the demand for organic grew, official standards were applied to the term. Organic was defined to mean, among other things, free of artificial food additives and produced without the use of synthetic pesticides. The combination of an increased market and defined standards enticed large companies to enter the organic market. Today, organic has gone mainstream, as the chart below shows. In fact, companies like Pepsi, CocaCola, Nestle, Kellogg, Heinz, Cargill, Dean, Kraft, Hershey, Cadbury, M&M Mars, ConAgra and General Mills “own” organic.

Beef Roulette: Safety Issues with Conventional Beef and Other Meat Nearly half of the meat in the U.S. is tainted with drug-resistant bacteria, but there are other issues with conventional meat that you should know about. Conventional food has its share of major problems, but adding to the issues of hormones, antibiotics, pesticides and more is the shocking study revealing that nearly half of America’s meat harbors drug-resistant bacteria. The Translational Genomics Research Institute found that Staphylococcus aureus—the bacteria responsible for most Staph infections such as blood poisoning, skin infections and pneumonia—was present in meat from U.S. grocery stores at “unexpectedly high rates.” The researchers determined that 47 percent of the 80 brands of meat and poultry sampled were contaminated with S. aureus. Additionally, 52 percent of those bacteria were resistant to three classes of antibiotics. Dr. Lance Price, senior author of the study, said, “For the first time, we know how much of our meat and poultry is contaminated with antibiotic-resistant Staph, and it is substantial. The fact that drug-resistant S. aureus was so prevalent, and likely came from food animals themselves, is troubling and demands attention to how antibiotics are used in food-animal production today.” Findings published in the journal Clinical Infectious Disease indicated that industrial farms where food animals are fed low doses of antibiotics “are ideal breeding grounds for drug-resistant bacteria that move from animals to humans.” And it does move from animals to humans. Approximately 90,000 Americans die from hospitalacquired infections each year— and about 70 percent of them are antibiotic resistant. Then there’s meat glue, the concoction the meat industry has used for years to fuse scraps of meat together. Meat glue is an enzyme known as tranglutaminase and is produced by the bacteria 76 |

Interestingly, the FDA classifies transglutaminase as GRAS, or generally recognized as safe. Its safety, however, is questionable since bacterial contamination of glued meat is much higher than “normal” meat. Glued meat is also more difficult to cook thoroughly, making it harder to kill the bacteria. Additionally, it’s difficult to tell which meat is glued together and which is not. Likewise, glued meat often comes from multiple sources—which can be problematic, too. That leads us to E. coli. Each year, thousands of people are sickened by E. coli, and hamburger is the main source. Eating conventional ground beef is a huge gamble because the systems in place for making meat “safe” aren’t optimal. For example, most ground beef is a hodge-podge of different grades of meat from various cow parts—as many as 1,000 different cows— and various slaughterhouses, making them especially vulnerable to E. coli contamination. Interestingly, many big slaughterhouses will sell their meat only to grinders who agree to not test it for E. coli—which is surely why E. coli outbreaks continue. Those are just a few of the safety issues surrounding beef and other meat. Don’t play beef roulette. Instead, choose the healthiest beef possible. Jenifer, please tell us about yourself and your vocation.
Jenifer Felan: I have extreme passion for what I do! My days are never duplicated. On Monday, I may be running around in workout pants and a baseball cap from teaching an intense spin class. Next, I’ve donned a Versace suit and am serving raw cheeses and other healthy foods on a private jet—since my job as a corporate flight attendant requires caring for the world’s most exquisite travelers while we’re thousands of feet up in the air. “Food Not Fit for Consumption” Farmers Won’t Eat the Food They’ve Grown There are some things people won’t touch with a ten-foot pole, but Farmer Brad says that he doesn’t know any conventional farmers who eat the foods they raise—because they know the dirty secrets of what goes into them. It’s an enlightening interview, to say the least. In fact, it’s more like a warning sign: farmers who won’t eat the very food they’ve grown because they know how unhealthy it is. Farmer Brad elaborates on this “inside story” by giving an example of a largescale poultry farmer—raising chickens and turkeys—who won’t put his own food on his own table. He knows the genetic freaks that these meat birds are. They can’t even stand on their own two legs, and they can’t live over nine weeks— because their internal organs aren’t even fully formed. They can’t handle it. They’re just freaks of nature.” Farmer Brad continues, “And then not to mention all the feed that the chickens eat—genetically modified corn and soy. It’s not food fit for consumption. And these farmers that are part of that program—they know it—so much that they won’t even serve it to their own families.” 80 |

He adds, “That’s the same way I take my vegetables. If I wanted to sell wholesale and go that route, I’d have to produce 75 percent more than I do now to make the same amount of income. Why would I want to turn this into such a factory system? We want to enjoy what we’re doing in our life here—not turn it into some factory with food we wouldn’t even be happy to eat on our own plates.”
