#LETGIRLSPLAY
Barclays and England Football are leading the #LetGirlsPlay campaign which looked to create the biggest ever girls’ football session on Wednesday 9th March – following both the EFL’s Women’s Weekend campaign and International Women’s Day. By 2024, the FA’s and Barclays’ ambition is for girls to have the same access to football opportunities as boys in schools and clubs. #LetGirlsPlay is a campaign to drive, influence and change perceptions, showing that football can and should be played by girls. It is bringing together a growing community of people of all genders, ages and backgrounds who want to champion equal access for girls, helping to create independent, resilient young girls who will be a force for good in all local communities. LOOKING AFTER OURSELVES MENTALLY AND PHYSICALLY IS ESSENTIAL FOR PERSONAL AND BUSINESS GROWTH By Tim Parsons
help from my own personal experience and professional experience. We live in an instant World and with all of the technology we have, it is getting harder to switch off (literally). There is saying my wife often says to me, ‘Rome wasn’t built in one day’ and this has really struck a chord with me as I often find myself not slowing down and taking a break. If something can wait until later, there is nothing wrong in leaving it and going back to it. One of the paramedics I served goes off for a walk once a month on his own with his phone off and engages in nature to re charge his batteries. We may not go for a walk but maybe taking that time away from technology now and again might help us both mentally and physically.
The last couple of years have seemed like one big challenge and have seen major change in the way many of us run our businesses. Sadly a number of businesses have closed and this has taken its toll on a There are many different organisations who are number of people available if you are struggling; the following are physically and just a few: mentally. As a former chaplain to the ambulance service I have witnessed on a number of occasions how stress has played a huge part in the way we can be physically and mentally. Running a business is a big stress and it is essential we switch off from our work and have discipline for taking relaxation. Research has shown that particularly middle aged men are more likely to die from suicide (Samaritans website) and I feel there is still a long way to go in supporting mental health. If you have employees, make sure you are checking on their welfare and yours. If you have the practical space I would suggest a quiet room where you can take a break. When I served as chaplain to the ambulance service the station had a quiet room for all employees and this was a fantastic resource to have as it meant employees could either be alone or chat to somebody in confidence. Talking really does 8

PRACTICE MERGER NEWS
On 1st April 2022 the Orchard and Maple Practices with their doctors, nurses and staff will merge to form The Wellcome Practice. The idea of a merger between Maple Practice and The Orchard was first discussed in September 2021. The practices already worked side by side at Dartford West Health Centre. The name for the Practice was chosen in consultation with both patients and staff after a process of voting and inviting comments. Wellcome was chosen for its historic links and because it radiates a message of warmth and welcoming feel. We are now inaugurating the new beginnings for both practices as ‘The Wellcome Practice.’ The practices share the same values and ethos and believe in delivery of best medical care in a timely fashion and offering the best patient experience. ‘Wellcome’ to our Practice There are four GP partners in the Wellcome Practice: • Dr Clare King has been a GP Partner at the Orchard Practice since 2001. She is a GP trainer and GP peer appraiser. In her spare time she enjoys playing the piano and getting out in the countryside.
• Dr Yuesheng Chen also joined Orchard in May 2018. She is trained in both traditional Chinese and Western medicine and carries out acupuncture for a number of conditions. Outside work she enjoys running and travel. The clinical team also includes 3 salaried doctors. Dr Saad, one of our salaried doctors, carries out minor surgery. We have three practice nurses supported by a health care assistant and two phlebotomists. The practice also has input from a wider clinical team including Care Coordinators, First Contact Physiotherapists, a Frailty Nurse, Paramedics and a Pharmacy team. A new senior prescribing nurse and another salaried GP will be joining soon after the merger. The clinical team are supported by a new Business Manager Shaju Panicker and Practice Manager Sacha Cockerill, and our administration, secretarial and reception team. Collectively the practices will be stronger, offering support to their patients with a larger clinical and administrative team. We want all our staff to be happy and thrive with opportunities to develop their skills so that we can offer additional services to our patients in the future.
• Dr Farzana Shora has been a GP Partner at the Maple Practice since 2010. She has an interest in women’s health and family planning, and fits implants and coils. Outside of the practice she has an interest in aesthetic medicine and enjoys learning languages, salsa, fitness, cooking and cleaning.
How will it work?
• Dr Julie Taylor joined Orchard in May 2018. She is Clinical Director of Dartford MODEL PCN, leading collaborative working between Maple, Orchard, Dartford East Health Centre and Lowfield Medical Practices. The PCN has delivered over 38,000 COVID vaccinations and recruited 12 additional staff to work across the practices. She is also a GP Trainer. In her free time(!) she enjoys ballroom dancing, riding her motorcycle and reading.
Patients at the two practices will still be able to see the doctors and nurses of their choice and will see familiar faces in the reception team. During the first 6 weeks, there will be work going on in the background to merge the patient records into a single system and patients will still be seen in ‘Maple’ or ‘Orchard’. However, staff will be starting to work across the practices. We all look forward to riding on this new journey together.

From 1st April the telephone number will be 01322 223960, the current number for Orchard Practice. Calls to the current Maple Practice number will be diverted to help patients use the new number.

Wild Little Rose
Hello everyone! I hope you’ve had a good start to 2022. I’ve been busy booking craft events for the year ahead, as well as creating some new pieces to add to the Wild Little Rose line-up. I love to add texture to my sterling silver items and often do this using a hammering technique. It creates high and low points in the metal which makes it catch the light beautifully. The new pieces I have been making include my signature hammer texture with an added element I’ve been keen to get into the collection: colour! My new mini collection is called ‘Embrace’. As you’ll see from the picture I’ve now embraced the combination of colour and texture by setting some beautiful stones in my jewellery. The stone set pendant is available in four options; in the form of four different semi-precious stones. These are: rose quartz, rainbow moonstone (amazing rainbow iridescence when it catches the right light!), blue lace agate and green aventurine. The collection also includes some beautifully simple sterling silver pieces (stud earrings and pendants) to wear with anything. My ‘litmus test’ is always: would I wear this with a sweatshirt on the school run and out for dinner with something smart? I think, now more than ever, we all want to purchase items that are versatile and can be worn repeatedly. So, what’s on my workbench this week? I’m working on two special commission pieces. Without giving too much away, I’m setting a beautiful stone into a pendant which is going to be a birthday gift. The second commission is for one of my stacking rings but in gold. I love working with gold too, so if you’re more of a gold person, feel free to get in touch for a
bespoke order. It’s always a pleasure to take commissions on and to create a bespoke order for someone that’s got such thought behind it. If you would like something special made for yourself or someone else, please feel free to contact me. Maybe you already have an idea for a piece, that’s great! Maybe you don’t know what you want, you just know you’d like something unique: that’s great too! I’m here to help with ideas and design as well as the making. I always say to people no question is silly; so if you want to know if an idea can be made a reality, get in touch and we can have a chat about it. Handmade jewellery makes a fabulous gift as well as something a bit different for Easter! Please head over to my website for a look at the new Embrace collection – and all the other items ready to be made. Until next time, here’s how to get in touch: Instagram: @wild_littlerose Email: wildlittlerose@hotmail.com Website: www.wildlittlerose.co.uk Wishing you a marvellous April!

Learn, Laugh, Live Registered Charity No: 1076584 Dartford u3a is a local organisation for people who are no longer in full time employment. It is run entirely by its members and offers people a chance to meet new friends and explore a wide range of interests. We have groups about history, food, crafts and horticulture; and many, many more. There are also opportunities to join walking groups covering the local area and further afield. As well as the groups we also have a monthly meeting at St Anselm’s Church Hall, 89 West Hill Dartford DA1 2HJ, on the first Tuesday of the month at 2 pm. This is a time when members can hear an interesting talk, and socialise afterwards with a cup of tea. A recent talk was from The Guide Dogs Association. Members enjoyed hearing about how to train a puppy and were very interested to hear one man’s story about losing his sight, and waiting during lockdown for his first guide dog. He told us how his guide dog had changed his life, giving him independence and the ability to enjoy trips out and socialising. After the talk we were delighted to be able to pat the dogs and chat informally with the speakers. backgrounds – particularly the Sikh community. There is, after all, a large Sikh population in Kent, with over 4,700 Sikhs making up 9.1% of the local population. Despite this, only 3% of the patients referred to ellenor in 2020/21 were from non-white backgrounds, and, from a nationwide perspective, only 2% of Sikhs in the UK live in care homes. According to ellenor’s contact at the North Kent Gurdwara – the focal point of the Sikh community in the UK – Sikhs tend to prefer caring for family at home, and there is a cultural stigma around accessing hospice care. ellenor is also working with Porchlight, a charity which advocates for homeless people. Individuals in this group often have multiple diagnoses related to sleeping rough, such as cirrhosis of the liver and alcohol-related dementia. Exacerbated by substance abuse and alcohol dependency, these conditions render the need for palliative care services among the homeless community as disproportionate to the actual availability – and visibility – of them. Similarly, ellenor is forging connections with the Martha Trust, an organisation championing the needs of those with learning disabilities. For these individuals, the barriers to hospice care coalesce around a lack of staff understanding of the complexities of these (often profound) disabilities. With nurses at times electing to speak to the carer – rather than the patient themselves – the patient can be left feeling without agency or franchise, and without a proper understanding of the kind of care they can expect. ellenor’s EDI strategy work also involves working with Stonewall – a charity that advocates for the LGBTQ+ community – as well as the Kent Police’s liaison groups, which have established connections with the area’s traveller and gypsy communities. Through better engagement with – and understanding of – these groups, ellenor hopes to break down these barriers to hospice care. But of course, EDI isn’t solely about looking at the diversity of the populations it serves in the community. It’s about looking inward, too, and examining the current profile of ellenor’s staff
and leadership team. Despite a 50/50 male/ female split, ellenor’s Executive Board is 100% white. Cast the net wider, and just 9% of UK charity employees – and 6% of its CEOs – are from BAME backgrounds, although they make up 14% of the country’s populace. Evidently, more EDI work is required at a nationwide level – but locally, at least, ellenor is committed to making progress. Working with the charity’s CEO and Head of HR, Anna will be evaluating ellenor’s recruitment processes, and ensuring that the hospice is not only actively reaching out to BAME communities in its job advertising, but tackling unconscious bias in the interview process, too. Anna will also be producing EDI training sessions – both online and face-to-face – which will be mandatory for all ellenor’s staff and volunteers to increase the understanding of EDI. In the community, ellenor’s outreach work with Gravesend’s Sikh population is already underway. Moreover, this engagement is – at the time of writing – the only work of its kind being carried out by local hospices or healthcare organisations with the area’s Sikhs. Part of the work will involve attempting to tackle the culture’s taboo around hospices by illustrating that care can be a thing that comes to them – in the home – rather than at a separate location, away from the family unit, and in isolation of their support structures. In addition to embedding improved EDI processes across the organisation – most notably in the aforementioned areas of recruitment and training – ellenor will have also increased its visibility to potential patients and job applicants. Individuals from marginalised and minority communities will have a greater understanding of – and access to – ellenor’s holistic form of social, clinical, and psychological care. And ellenor will have also cultivated an even more open, welcoming, and inclusive environment, an organisation where everyone – regardless of class, creed, culture, or condition – can receive care in an accepting, non-judgmental manner. A place where everyone can feel at home.

By Kate Hargreaves
POST PALS If you want to do a good deed while barely needing to leave your home (just a quick trip to the post box), then writing to a sick child through the Post Pals charity might be for you. There is no ongoing commitment and children might enjoy getting involved too – perhaps this could be an extra activity to help fill the Easter holidays.
“How much time do I need for it?” This doesn’t require any ongoing commitment, and it’s entirely up to you what you send to your Post Pal – sending a funny postcard could take two minutes or knitting a woolly hat could take two days. If you love the sound of this role and do want a regular commitment, you can become an Assigned Writer, by emailing info@postpals. co.uk, or alternatively you can repeatedly write to the same child without having a formal commitment in place. “Anything else I need to know?” If you’re unsure of what to send or say, there are some suggestions of conversation topics as well as tips on things to avoid at www.postpals.co.uk/ help/guide-to-writing-a-post/. You can also write to the siblings of a sick child through the Post Pals charity, as their lives are often affected by what their brother or sister is going through too. Note that while you may get a reply from your Post Pal, you shouldn’t expect one.
Post Pals “What is it?” Being a Post Pal requires just five minutes of your time to bring a smile to a sick child’s face. Essentially, you just find a child on the Post Pals website and send them some post to brighten their day.
“This sounds great, how do I get involved?” Go to www.postpals.co.uk/find-pals/ to look at the children’s profiles, where you can learn about their interests and key information such as whether they can read. Then all you need to do is prepare your post, send it off, and sit back knowing that you’ve done your bit to make the world a brighter place.
If you have any questions about Post Pals or “Would I enjoy it?” There are so many ways to other roles I’ve written about, feel free to email approach this that I’m sure anyone of any age kate@dartfordliving.com. As always, happy or background could enjoy it. You could write a volunteering! letter about how your football team is getting on or share a poem, or you could get more creative and draw a picture of your pet or make a card or even a friendship bracelet… Preparing something to send to a Post Pal could be a great family activity or a way to keep your hands busy while watching TV. “What would I get out of it?” Being a Post Pal doesn’t require a lot of effort, and only costs the 24

LIFE UNDER THE STAIRS By Jane Stevenson
CLEARING OUT THE GARAGE – A WARNING!
However, I have a question; what do you do with photos from the past, probably family Hiring a skip is extremely therapeutic; that huge members, but who cannot be identified as they yellow container sitting on the drive prompts are from several generations past, and there is frenzied activity around the garage and shed no-one left to identify them? and indoors, disposing of ‘stuff’ that is kept in case it’s useful (is it ever?) I went through two boxes of photographs and dispensed with some from my youth. I couldn’t At Stevenson Towers we have sorted through 30 remember the people in them or event that took years’ worth of items; from dried up tins of paint, place. These pictures hold no memories and rusting tools, broken toys, to old bikes, brewing are best disposed with. Apart from one large equipment and rotten deck chairs. All have box of sepia tinted photos from the 19th century, gone into the skip along with spiders, roofing felt I’m largely done with the clear out. and an old highchair. It is these older photos that are posing a problem. We watched with amusement the draw of a skip. I am a keen family tree historian, lucky enough Strangers stop and check through it. We have to come from a family of hoarders. I have family had some items taken, from a broken vacuum photos from the Victorian times, with dates and cleaner, and old exercise bike to leftover floor names written on the back. I have crumbling tiles and carpet. If they are useful to anyone else birth, marriage and death certificates, and a then so be it. One man’s trash is another man’s wealth of letters, forms, poems etc detailing my treasure as they say. ancestry. I began to sort out my study; an experience likened to entering Aladdin’s cave. A tired old cabinet went to a friend for a project. A broken cassette recorder lasted a whole day in the skip before disappearing overnight. I found chipped incense holders and broken box files stashed away in my desk. Empty ink cartridges (the fountain pen type) and old wicker filing trays all took their last journey down the stairs and into the skip. 26
I started plotting the family tree with one of the popular genealogy sites. It is fun, absorbing, and interesting; each photo or document provided a further link to my family and I’ve built the tree back six generations. Now I have just this box of old photos. The sensible action would be to put them in the skip too, but the pull of family history is a strong bond. Until her recent death, my surviving aunt

kept me enthralled with stories and anecdotes of my mum’s family, and thankfully I have the evidence to back up much of what she told me. Through her comments I’ve been able to put a couple of names to faces, but that is all. Now I must choose whether to hold onto a box of strangers or consign them to the skip. I doubt my own family will want to continue with the research. They have memories of grandparents, aunts and uncles and cousins, but a blurry picture of an unidentified Victorian lady holds no interest for them whatsoever. The skip is going back next week, having served its original purpose. Alongside the old carpets, wood, bits of toys and the rest, there may well be a box of yellowing photos of stories never told, people forgotten. I haven’t quite decided yet. Stay safe people

have seen them register superb victories over Dorking Wanderers and Chelmsford City, which keeps them in the running as the season reaches its closing stages. As the games come thick and fast, injuries have remained a cause for concern. As a result Jordan Greenidge (on loan from Weymouth) and Jayden Sweeney (on loan from Leyton Orient) have arrived and already made a positive impact with their presence. While manager, Steve King, was unable to travel for the trip to Chippenham Town due to having surgery recently. He was, however, back in the dugout for the visit of Chelmsford City, which was great to see.
Since last speaking with you all, our excellent form at Bericote Powerhouse Princes Park continues in the National League South. Captain Tom Bonner and Co are unbeaten in fifteen league games, but did fall to a 2-0 defeat against a technically gifted Brentford B side in the London Senior Cup at the beginning of March. However, the lads were more successful in their defence of the Kent Senior Cup with a 2-1 win over National League side Dover Athletic. We now travel to Isthmian League Premier Division side Margate FC in the Quarter Finals on the 5th of April. Unfortunately, the Darts appear to be struggling on their recent travels having lost the last three. However, our home form remains outstanding with just that one defeat since the pre-season action last July. The lads’ recent performances

Meanwhile, Connor Dymond’s Womens side has been extremely productive both on and off the pitch. Since the turn of the year, the team has registered an incredible eight victories from nine games in all competitions! They’re still holding on to second place in the London & South East Regional Women’s League table, but face a strong Fulham FC Women side at Fulham’s training ground on the 27th of March. If Connor’s side wants to maintain second place, they must come away with all three points, so please do go along and show them your support. The women’s defence of the League Cup continues, and they now face Millwall Lionesses in the semifinal on the 3rd of April. The game will take place at Bericote Powerhouse Princes Park, so be sure that you don’t miss it, as it’s going to be a cracking game of football. Additionally, as a part of the #LetGirlsPlay session, players from Dartford FC Women’s Team and Dartford FC Community Programme organised a role model visits programme for some primary schools in the Dartford area. SENIOR SNIPPETS By Christina Uppenkamp - Home Instead
Welcome to the latest edition of Senior Snippets: the advisory column with the older members of our community in mind, brought to you by Home Instead Dartford. In this installment, we will be sharing some tips to help boost your mood. It is very important, especially with the current worries all around us, to keep an upbeat state of mind in order to lead a positive lifestyle. Eating healthy foods and exercising are obvious ways to remain fit and healthy, but there are also many other adjustments we can make to improve our mental health and state of mind. Here are a few mood boosting tips: Laugh As adults we often forget to just enjoy ourselves and laugh more. Laughing releases endorphins into our body which increase serotonin levels in our brain, causing us to instantly feel happier. Life doesn’t need to always be taken too seriously!
to your favourite music and light a candle; you may find yourself feeling great afterwards! Take deep breaths We don’t often concentrate on our breathing because it’s a natural function, but consciously focusing on your breathing and taking deep breaths can relieve stress and increase relaxation. Simply place one hand on the abdomen and one hand on the lower ribs and take a breath that starts in your abdomen and works its way up your body. Control your breathing by breathing in for 3 to 5 seconds, hold for the same amount of time and exhale the air out through your mouth slowly. Do this for 3 minutes and you will feel the stress melt away. Some of these simple tips is all that is needed to help us feel better about ourselves.
Practice gratitude It’s important to recognise what we’re grateful for, acknowledge it, and appreciate it. When you wake up in the morning, try and think of a few things that you are grateful for and notice the difference it makes to your mood. Talk to someone Whether it’s a friend, relative or even a neighbour, knowing you have someone you can turn to, can help to put your mind at ease. Don’t forget to be there for someone else too, as this can brighten your mood just as much as you have the satisfaction of knowing you have helped someone else. Surround yourself with positive scents and sounds. Sometimes when we feel our mood dipping it is good to surround yourself with scents which can uplift your mood. Lavender can be seen as relaxing, whereas peppermint can help to soothe your overactive mind. This can work just as well with your favourite perfume. Listen www.dartfordbusinessdirectory.co.uk

FITNESS: WHY A 12 WEEK PLAN? You’ve probably seen 12-week fitness plans advertised… and 8-week plans… and 6-week plans… 30 days… 28 days… Why these timeframes? Is there any logic to them or is it just someone trying to sell you something and out-do everyone else “They do it in 12 weeks, so I’ll do it in 8!”
Then we often switch focus to building strength and a bit of muscle (unless they have more bodyfat to lose and wish to continue with that as a goal), or to work towards a more specific training goal – pull-ups maybe, or sporting performance.

DR SHORA RETIRES A TRIBUTE Many of our readers will know Dr Shora as their family doctor. He has been a GP at Maple Practice, at Dartford West Health Centre (DWHC), since 1997. After long NHS service dating back to 1975, he has retired from general practice. His last working day for Maple Practice was 31st March. He has been the backbone and pride of the Practice. I was offered the opportunity to take on neighbouring Green practice after a few years of joining at Dartford Health Centre. I named the joint practice as Maple Practice . I have seen my practice grow in list size to 4,000 patients to date. During my tenure at the Practice, I have been able to gain the trust and respect of my patients and developed not only a professional relationship with my patients but a personal bond with many. I have witnessed changes in patient consultation from being simple consultation to more complex cases with advancements in treatments and GP access to a variety of investigations. The transition included moving from hand writing medical notes and sifting through paper records, signing paper prescriptions to fully computerised and digital record keeping and sending prescriptions electronically to pharmacies. I continued to work during the COVID period but adapted to remote consultations. In the last 2 years my patient contact has been minimal and I have missed that face to face mode of consultation. Over the years as a GP I have gained the trust and respect of my patients. I have seen families growing and their children become adults having their own families. What a wonderful experience to treat parents and grandparents and their offsprings. I will cherish this wonderful experience for years to come. I have been fortunate to have wonderful staff who have been behind the success of the Practice and I would like to thank them. I am blessed to have worked alongside a hard working dedicated daughter, Dr Farzana, who joined Maple Practice in 2010. I am sure she will fill my shoes and I am confident that she will be able to deliver and make me proud. The Maple Practice is starting a new journey with the Orchard Practice as the Wellcome Practice.

STRAIGHTOUT OF DARTFORD BY SHANNON RANDALL “My wife always tells people I’m the most famous person you’ll speak to that you’ve never heard of” - Dartford Resident, James Karat. Ever wondered how you can go into a shop and pay with a credit/debit card and the funds instantly come out of your account nowadays when it used to take days? Well, James Karat is how. James left school earlier than most and began working in the royal parks renting deck chairs when he was 15. Whilst working he became envious of the businessmen in suits walking past on their way to and from work. He decided to apply for a few bank positions and after one wild interview he got a job as a “runner” in one of the largest investment banks at the time. As a runner, James had to collect tickets from one person, “run” into the pit to give to a trader, who executed the trade and then James had to send the transaction out in the post. However, in doing so, mistakes were often made. “The problem was it was always always wrong. It was either the person who wrote the order down wrong or the trader who executed it incorrectly, or me, the person who sent the confirmation out. As the junior, it was always me that got the blame and never the Traders”. After a while of this exhausting routine, James came up with an idea. The idea for Straight Through Processing - Confirmation, Affirmation and Allocation. I will let James explain what it really is through an example people use every day. “When you go into a shop and put your Credit/Debit card into a machine, you enter your pin number, this is called “Confirmation” in that you confirm you want to pay, the bank instantly checks you have the money in your account and sends a message back to the machine saying “Approved” this is called “Affirmation”, then the money instantly comes out of your account and goes into the shops account, this is “Allocation” and that is the whole process”. It simply takes away any risk of error. Despite inventing something used in hundreds of scenarios every day, used globally and used by each of us every day, James is as humble as
they come. Being 19 years old when it launched, he didn’t think to patent the idea so gained nothing from his creation. However, his friends nominated him for a knighthood in the hopes that he can get a small bit of credit for his work! “The thing is, I just want people to know that someone who lives in Dartford made something that changed the world.” One bonus he did receive from inventing it however is the ability to use Google as an ID. When he forgot his wallet and only had his mobile whilst at B&Q buying superglue a little while ago, he was challenged to prove his age. He did this by Googling himself. “I said, ‘oh wait a minute I can Google myself and prove my identity!” The shop assistant was baffled but agreed that it was indeed James and he could buy his superglue! For more info on James or STP, go to his website, give him a Google or follow one of the links below for more interviews! jameskarat.com assets.sourcemedia. com/35/9b/78f409924285abe54102820493f0/ inn-q2-2016.pdf (pg 34) Linkedin:- uk.linkedin.com/in/jameskarat

What to do: Preheat the oven to 180°C (Fan) For the dough. Pour the warm Water into a large bowl and add the Yeast. Stir until combined, then add the Sugar, Milk, melted Butter, Plain Flour and Egg. Stir together and knead until the mix appears nice and smooth. After mixing in the bowl for a while, you can tip the dough onto a floured surface to continue kneading. Put the dough back in the bowl, cover with a clean tea towel and leave at room temperature to rise for about an hour. To make the custard filling, heat the Milk in a saucepan, stirring frequently until it’s just below boiling point. In a large bowl mix together the Egg Yolks, Sugar and Cornflour until smooth. Let the milk cool for a while then whisk into the egg mix, slowly, until completely mixed and the custard is smooth. Pour back into the saucepan and heat gently, stirring all the time, until the custard thickens. Leave to cool.
SULTANA AND CUSTARD TWISTS
Once the dough has risen, tip onto a floured surface and roll out to a large rectangle.
By Debbie Dickinson
These are so easy to make and delicious, and you’ll see that the fillings could be changed to make lots of different varieties. You could try melted butter with sugar and cinnamon – or mixed berries! What you need:
48
Spread the cooled custard across the surface of the dough and sprinkle over the Sultanas. We now need to fold the dough into three layers so, with the long side nearest to you fold the dough away from you, leaving a third uncovered. Then fold the side furthest away from you back towards you to create the three layers. (I hope that makes sense!)
For the Dough 10g Dried Yeast 100ml Warm Water 10g Sugar 100ml Milk 40g Unsalted Butter, melted 350g Plain Flour 1 Egg
Use a knife to slice the dough into 2-3cm strips.
For the Filling 2 Egg Yolks 175ml Milk 1Tbsp Sugar 1 Tsp Cornflour 100g Sultanas
Brush the top of the twists with a little milk and bake in the preheated oven for about 10 minutes, until they are a light golden colour.
Working on a slice at a time, pick it up, keeping it in 3 layers, and twist. Lay onto a baking sheet, lined with greaseproof paper. Leave for another 30 minutes at room temperature to rise.
Enjoy!!
