It was a very picturesque crossing with great views of the mainland, the mountains, the strip and we also had some great entertainment above us from the Spanish Air force who were performing all sorts of acrobatics from their training base at San Javier airport. After a 45minute crossing we disembarked at Thomas Maestre Port the largest marina on La Manga and started cycling about 12.30 leaving the Port and heading for the one and only road up the strip which has a cycle track most of the way, we cycled for about 15kms then stopped at a really nice sandy beach for a drink, swim and cool down as it was in the 30s. We continued on our trip just following the road , you can’t really go

La Manga and the Mar Menor. If you’ve not done this one before then we thoroughly recommend you do it soon before it gets cooler as it was fantastic being able to swim whenever we felt like it. (The sea was surprisingly still warm) If you think it might be too far then you can always cycle to the top of the strip and cycle back to the port and get the ferry back. (Roughly 40kms) The ferry goes every 2 hours during the summer until midnight however the last ferry back in the winter is 16.30. We were using Strava which is a cycling app for mobile phones that records the route, distance etc. and we cycled for 5 hours, covered 75kms, and burnt 1300calories which was a great achievement for the group as we had 2 people who had never cycled this distance before. We all met at the Arches in Quesada at 9am and arrived back at 7pm. Next month: Overnight at Fortuna.

Food is our passion, service is our pleasure.
I must admit I am a bit of a foodie. I love talking about food and I love trying new ideas. As I have already demonstrated to cook wonderful food does not necessarily need to be hard. Quantities of ingredients are for some food vitally important to achieve the correct result so although I cook quite a bit of the time by instinct I have tried in these recipes to quantify the ingredients for you. The recipes I share with you are tried and tested and used by me on a regular basis both professionally and personally. It doesn’t however always work, I thought I would tell you about my favourite recipe for Yorkshire Pudding but each time I tried to quantify the ingredients the Yorkies didn’t come out right .I normally put the ingredients together without measuring and all is fine. I will see if can get that recipe correct. Although I have been involved in catering for many years there are still many new ideas that I have yet to try. Many people have been trying to contact me, especially after my comments last week about vegetables so I have set up an email chef@vestryrestaurant.com.

For the pastry mix it is really easy in an electric mixer that has a beater. In the bowl put 175 g of plain flour and a pinch of salt. Add 75g of butter and mix. When it is starting to mould together add a couple of spoons of water. The pastry should come away from the bowl and cling to the beater. This only take a few minutes so don’t walk away from it. If it is still clinging to the bowl add a little more flour. 1. Wrap in cling and put in the fridge for 30 mins. Lightly butter a quiche dish. Roll the pastry so that it is bigger than the dish. Gently press the pastry in to the dish so that it is over the top of the sides. It doesn’t matter if the edge looks messy as we will trim it when cooked but make sure there are no gaps for the mix to leak through. Gently prick the base all over with a fork. 2. I line the case with cling and fill with flour but use parchment and rice is just as good. Place this into a preheated oven at 190 and bake for twenty minutes to blind bake. Whilst this is baking take 5 eggs 200 m cream 100m milk salt and pepper and whisk together.

When the pastry has been in the oven for twenty mins take it out and remove the cling and flour and put the pastry back in the oven for 5 minutes. 4. After 5 mins add the cheese and finally the egg mix and reduce the oven temp to 160. Depending on the oven it will take between 30 to 45 minutes. Check after 30 mins you are looking for the filling to be firm to the touch and a slight colouration. 5. If it getting too dark and it is still loose then turn the oven down by 10deg. I can normally smell when it is ready. When the quiche has cooled trim the pastry by holding a knife level with the top and gently cut level with the top of the dish. 6. Enjoy!
