had a coffee and tostada at a beach front tapas bar whilst waiting for the ferry to arrive. We boarded the ferry which was the first one of the day (11.30am) and was very busy; the cost was €4 each and a €1 to take our bikes. It was a very picturesque crossing with great views of the mainland, the mountains, the strip and we also had some great entertainment above us from the Spanish Air force who were performing all sorts of acrobatics from their training base at San Javier airport. After a 45minute crossing we disembarked at Thomas Maestre Port the largest marina on La Manga and started cycling about 12.30 leaving the Port and heading for the one and only road up the strip which has a cycle track most of the way, we cycled for about 15kms then stopped at a really nice sandy beach for a drink, swim and cool down as it was in the 30s. We continued on our trip just following the road , you can’t really go

La Manga and the Mar Menor. If you’ve not done this one before then we thoroughly recommend you do it soon before it gets cooler as it was fantastic being able to swim whenever we felt like it. (The sea was surprisingly still warm) If you think it might be too far then you can always cycle to the top of the strip and cycle back to the port and get the ferry back. (Roughly 40kms) The ferry goes every 2 hours during the summer until midnight however the last ferry back in the winter is 16.30. We were using Strava which is a cycling app for mobile phones that records the route, distance etc. and we cycled for 5 hours, covered 75kms, and burnt 1300calories which was a great achievement for the group as we had 2 people who had never cycled this distance before. We all met at the Arches in Quesada at 9am and arrived back at 7pm. Next month: Overnight at Fortuna.

Summary: What a fantastic day out entire route easy and flat with fantastic views and you just want to keep on cycling... All routes are now available from our website: www.cyclogicalcostablanca.com and from our newly published book “ Cycling tips and Advice” with 20 cycle routes around the Costa Blanca. Gary and Lynn are available at Cyclogical in Quesada Monday to Friday from 9.30am till 5.30pm and from 10am till 2pm on Saturdays to assist and advise you on all you’re cycling requirements.

It’s Called LIVING

Simone Segal

You are who you are, you can’t possibly change. Wrong! You are whoever you want to be! It’s all within your mind, it’s as simple as choice. What choice? The choice of believing in yourself, or not. The choice of loving yourself, or not. The choice of doing everything to the best of your ability, or not. The choice of stepping out your comfort zone, or not. The choice of reaching your goals, or not. The choice of thinking you can, or you can’t!

the party! Don’t wait for your dreams to come true, MAKE THEM COME TRUE! Join the party, IT’S CALLED LIVING!!!

You see, whatever choices you are making are determining your every day, your Life! I can’t thoughts are your choice, I can thoughts are your choice. You can stamp out your dreams with your choice of thoughts, or obtain them. Thought patterns, now here’s what can change everything, your choice of thoughts. When you can change your thought patterns toI BELIEVE in myself! I LOVE myself! I CAN do everything to the best of my ability! I CAN step out my comfort zone! I CAN reach all my goals!

Ecstatic to the core

When you can do this, you can’t possibly fail! I’m sure you have heard the expression the world is your oyster, well it is! When you can change your thought patterns to the above, the world will be your oyster! Now, the thing is, if you say you can’t you’re right, go sit back on that couch, switch on the TV and carry on being that voyeur, watching others obtaining their goals, living the highlife. Or, if you say you can, join the party, it’s called LIVING! When you start loving and believing in yourself, doing your best to achieve your goals, Magic starts to happen! Each time you step out your comfort zone to strive for your goals you become stronger and stronger! You realise your capabilities, you get to know yourself and how truly amazing you really are! You start to feel this confidence in you shining out that you never realised you had. You become YOU! Yes that’s right YOU! Who YOU really are! You find strength in you that had been wiped out by your previous way of thinking. I can tell you this with authority! I was that voyeur! Watching others turn their dreams into reality, It was only when I made that choice of changing my thoughts that I joined

my favourite dishes

Food is our passion, service is our pleasure.

I must admit I am a bit of a foodie. I love talking about food and I love trying new ideas. As I have already demonstrated to cook wonderful food does not necessarily need to be hard. Quantities of ingredients are for some food vitally important to achieve the correct result so although I cook quite a bit of the time by instinct I have tried in these recipes to quantify the ingredients for you. The recipes I share with you are tried and tested and used by me on a regular basis both professionally and personally. It doesn’t however always work, I thought I would tell you about my favourite recipe for Yorkshire Pudding but each time I tried to quantify the ingredients the Yorkies didn’t come out right .I normally put the ingredients together without measuring and all is fine. I will see if can get that recipe correct. Although I have been involved in catering for many years there are still many new ideas that I have yet to try. Many people have been trying to contact me, especially after my comments last week about vegetables so I have set up an email chef@vestryrestaurant.com.

and so simple and economical to prepare.

For the pastry mix it is really easy in an electric mixer that has a beater. In the bowl put 175 g of plain flour and a pinch of salt. Add 75g of butter and mix. When it is starting to mould together add a couple of spoons of water. The pastry should come away from the bowl and cling to the beater. This only take a few minutes so don’t walk away from it. If it is still clinging to the bowl add a little more flour. 1. Wrap in cling and put in the fridge for 30 mins. Lightly butter a quiche dish. Roll the pastry so that it is bigger than the dish. Gently press the pastry in to the dish so that it is over the top of the sides. It doesn’t matter if the edge looks messy as we will trim it when cooked but make sure there are no gaps for the mix to leak through. Gently prick the base all over with a fork. 2. I line the case with cling and fill with flour but use parchment and rice is just as good. Place this into a preheated oven at 190 and bake for twenty minutes to blind bake. Whilst this is baking take 5 eggs 200 m cream 100m milk salt and pepper and whisk together.

You can contact me regarding food or let me know if you try and enjoy the recipes. If you are a restaurant I can help to suggest menus. Quick tip for today, I fancied tomato soup the other day so being short of time I mixed tomato frito red wine vinegar sugar and a glug of cream. It was remarkably like Heinz.

3.Grate 50 g of cheddar and crumble50 g of blue cheese. When the pastry has been in the oven for twenty mins take it out and remove the cling and flour and put the pastry back in the oven for 5 minutes. 4. After 5 mins add the cheese and finally the egg mix and reduce the oven temp to 160. Depending on the oven it will take between 30 to 45 minutes. Check after 30 mins you are looking for the filling to be firm to the touch and a slight colouration. 5. If it getting too dark and it is still loose then turn the oven down by 10deg. I can normally smell when it is ready. When the quiche has cooled trim the pastry by holding a knife level with the top and gently cut level with the top of the dish. 6. Enjoy!
